Which local restaurant, roaster, or maker do you swear by? Send us your tastiest picks.

Q1: We always have some Cold pressed Alberta Canola around. It’s like the olive oil of the North! We use it to cook with, in salads and any types of emulsions. It has a rich nutty flavour from retaining more nutrients during extraction.

Q2: I really love chocolate, so I would probably go with anything produced by Delavoye Chocolatier! Their ingredients and techniques really showcase the differences between single origin cacao.

Q3: I think Warren Jonston has been a positive player in the industry through his promotion of The Edmonton Midnight Cocktail Club, which showcases up-and-coming bartenders, continued collaborations with other businesses, his company, Above Average Drinks, and his general optimism. Given the difficult climate for the industry, there’s a tendency to retreat into isolation, so this type of collaborative energy is really essential to move things forward.

Edmonton’s food scene never really hibernates, but spring feels like a reawakening. As the snow starts to recede (or at least thin out), our appetites shift. We linger longer at farmers’ markets, scout the first open patios, and start craving dishes with a little colour, a little crunch. It’s the perfect moment to celebrate what Edmonton does best: local flavour with heart, heat, and creativity.

This issue dives fork-first into the world of Alberta-sourced eats and drinks, with features on fermentation-forward kitchens, roasters and distillers who know their farmers, and the menus that prove “local” isn’t just a buzzword; it’s a way to cook, eat, and connect. You’ll also find spotlights on Chef Tyson Wright of the Old Red Barn, a new sandwich shop turning heads in the west end, and a new chef to the south.

Q2: If I could eat only one Edmonton-made thing for the rest of the year it would be any soup from Drift Food Truck—especially the Beef Barley. Drift's soups have that homemade quality that makes them stand out!

Q3: Right now I am impressed with the Sawmill Caesar and Steak at the Sawmill Prime Rib & Steak House. The Caesar is bold and well balanced, made with quality ingredients that make it stand out, pairing perfectly with their steak! What makes it even better is that Sawmill proudly carries our Garlic Vodka product which makes the experience feel even more special!

According to Chad Boddez, Senior Vice President, Office Leasing & Sales at JLL, affordability is one of Edmonton’s biggest differentiators. “Edmonton has some of the lowest average house prices and rents in the country,” he notes, adding that the city’s size also works in its favour. “It can be relatively easy to build relationships in the business community by attending networking events,” supported by organizations like Edmonton Global and Edmonton Unlimited.

That sense of connection is something visitors notice quickly. “Edmontonians have a genuine love for their city,” Boddez says. “People who travel here often comment on

how friendly and welcoming the community is.” Downtown energy is especially noticeable during major events at Rogers Place, particularly when the Oilers are in town.

dmonton’s food and drink scene has never been shy about embracing the prairies. Here, menus wear their ingredients with pride—citing ranches, farms, forests, and fermentation labs like badges of honour. Whether it’s wild mushrooms foraged from the river valley, bison brisket from just outside Red Deer, or sourdough started in a local basement, Alberta-grown and Alberta-made is more than a trend—it’s a calling card. And across the city, chefs, brewers, and roasters are building menus that dig deep into the province’s edible identity. This is local not as a marketing gimmick, but as a philosophy—one rooted in flavour, sustainability, seasonality, and a sense of place.

FROM FARM TO FLAME

Few restaurants embody that approach like RGE RD. With a name borrowed from Alberta’s rural grid system and a kitchen committed to whole-animal butchery, RGE RD has built its reputation around prairie-forward cooking. The menu evolves constantly, reflecting what’s available from nearby farms and foragers. That might mean root cellar carrots and barley risotto in March, or wild elk loin and saskatoon berry sauce in the fall. Its companion space, The Butchery by RGE RD, takes this ethos even further. The butcher shop and kitchen combo sources animals directly from Alberta ranchers and processes them in-house. It’s not just a showcase for premium cuts—it’s a

statement about transparency and traceability. Want to know where your pork chop came from? Ask, and they’ll tell you the name of the farm and the farmer.

Lessig Ferments, co-owned by Christine Sandford and Roger Létourneau, takes a complementary approach to local-sourcing through condiments and ferments. Their horseradish condiment is made using root vegetables grown in the rich black soil of Fifth Gen Gardens in Wetaskiwin, combined with organic dairy from Vital Greens Farms in Picture Butte. Based in Edmonton, the company is committed to using local produce whenever possible— even fermenting prairie-grown cabbage, carrots, and herbs into hot sauces, krauts, and seasonal preserves. While not everything

can be sourced within Alberta (chili peppers, for instance), Lessig Ferments aims to bridge the gap between local farmers and curious eaters by transforming familiar ingredients into bold, unexpected staples.

At Homefire Grill, Alberta-sourcing takes on a distinctly Indigenous perspective. Bison, bannock, and berry-rich sauces form the backbone of a menu inspired by First Nations traditions, prepared with a focus on local ingredients and fire-roasted cooking methods. Long before farm-to-table became a culinary movement, Indigenous communities were practicing it out of necessity and reverence. Homefire Grill brings that legacy into a modern context, celebrating the region’s natural bounty with every dish.

WHAT COUNTS AS LOCAL?

In an era where “local” is stamped on everything from jam jars to juice bottles, it’s worth asking—what does it actually mean?

For some restaurants, “local” means within 100 km. For others, it stretches across the province. A few cast the net wider, counting anything Western Canadian. In Alberta, where food production is vast but growing seasons are short, sourcing hyper-local ingredients often comes down to availability.

Top local-sourcing regions in Alberta:

• Peace Country: Renowned for grains and legumes

• Red Deer area: Beef and bison producers

• Southern Alberta: Hothouse vegetables, root crops, honey

• Lacombe & Camrose: Heritage grains, dairy, pastured pork

Edmonton’s chefs navigate this landscape season by season, shifting menus to reflect the rhythm of Alberta’s land. Local doesn’t just mean physical proximity—it’s about relationships, freshness, and accountability.

As diners, asking questions—Where was this grown? Who raised this animal?—helps keep those connections strong.

Roasted Close to Home

Alberta can’t grow its own coffee, but Edmonton’s roasters take care of everything else—sourcing beans ethically, roasting in small batches, and delivering blends with a distinct local touch.

Transcend Coffee was among the first to take specialty roasting seriously in the city, working directly with growers and roasting beans in Edmonton. Their shop doubles as an education space, helping customers connect the dots between global farms and local cups.

Iconoclast Coffee, based in the Oliver Exchange Building, supplies beans to many of the city’s most food-conscious brunch spots. Their roasts are often

featured alongside Alberta-focused breakfast menus, creating a seamless local experience.

Just outside the city in Sherwood Park, Roasti Coffee Co. has built a loyal following. Their aesthetic is minimal, but their approach is anything but—focusing on freshness, direct sourcing, and small-batch precision. You’ll spot Roasti beans at farmers’ markets and in cafés across the Capital Region.

Ace Coffee Roasters adds a bit of flash, with chic cafés and limited-edition collaborations. Their partnerships with local bakeries and makers often result in themed blends or coffee-inspired treats.

While the beans may come from halfway around the world, everything else—from roasting to serving—is done right here.

A Taste of Place

What unites Edmonton’s Alberta-sourcing kitchens, brewers, and roasters isn’t just a love of quality ingredients. It’s a belief that food should reflect where it comes from—through flavour, through tradition, and through the relationships that make it possible.

This movement is about more than labels. It’s about knowing your rancher, shaking hands with your grain grower, or swapping fermentation tips with your local brewer. It’s about respecting what the land gives you—and making something remarkable out of it.

Alberta’s seasons may be short, but its food stories run deep. And in Edmonton, those stories are on the menu.

Just south of Edmonton, The Old Red Barn in Leduc turns Alberta-sourced ingredients into immersive dining experiences. Their “Farm to Flame” dinners—held outdoors from May to October—feature six-course meals cooked over open fire using Argentine grills, smokers, and stone ovens. Every dinner highlights a different Alberta producer, with farmers on hand to share the story behind the meal. Sample dishes have included smoked hang-frame chicken tacos with coal-cooked tomato salsa and cast-iron tortillas, wood-fired red fife sourdough with handmade honey butter and saskatoon preserve, and petite tender beef steak with bacon jam, root vegetables, and salsa verde. It’s a celebration of Alberta’s agricultural bounty, served with smoke, storytelling, and a view of the rolling prairie.

A few other standouts worth noting: Woodwork, where a wood-fired grill anchors a locally leaning menu; and DOSC, a steakhouse/café hybrid where Alberta beef stars in both classic cuts and inventive small plates.

ALBERTA ON TAP

The push for local doesn’t stop at the plate. Edmonton’s craft brewing scene has become increasingly conscious of sourcing, with many breweries working directly with Alberta maltsters and hop growers.

Alberta is known globally for its two-row barley, and local breweries are taking full advantage.

Blind Enthusiasm Brewing Company continues to push the boundaries of local sourcing in Edmonton’s craft-beer scene. Operating out of The Monolith, a purpose-built facility for spontaneous and barrel fermentation, the brewery highlights Alberta-grown ingredients in nearly every glass. Their “1923” release, for example, was brewed using 100% Alberta ingredients—including wheat grown on head brewer Rob Monk’s own family farm. They regularly source unmalted wheat and

specialty malt from Red Shed Malting, located just down the highway in Penhold, Alberta. Blind Enthusiasm’s brewers see Edmonton not just as home base but as part of one of the world’s most productive grain-growing regions—a place where beer can be brewed with a true sense of place and soil.

Just south of Edmonton, Rig Hand Distillery brings Alberta’s fields into the glass with spirits that reflect the province’s agricultural bounty. A craft distillery with roots in the region, Rig Hand sources key ingredients from nearby growers — including corn from Spruce Grove and barley from Camrose — and even works with Schneider Farms, a fourth-generation farm located just two miles from the distillery, to supply grains for many of its vodkas, whiskies, gins and sugar-beet “brums.” Their tasting lounge and kitchen in Leduc County offer tours, samples and meals that pair perfectly with locally made spirits, underscoring Rig Hand’s commitment to farming partnerships and prairie provenance.

Campio Brewing Co., located downtown, makes a point of using local ingredients in their seasonal brews. Honey from urban hives, berries from nearby farms, and even spruce tips from regional forests have all found their way into limited releases. One past favourite: a raspberry wheat beer made with fruit grown just outside the city limits.

Meanwhile, Alley Kat Brewing, a veteran of the scene since 1995, continues to feature Alberta malt and hops in its smallbatch Dragon Series and anniversary ales. Newer players like Sea Change Brewing Co. have also embraced Alberta grains while building strong community ties through collaborations with local artists and food makers.

These aren’t just breweries—they’re edible archives of what it means to drink locally in Edmonton.

Edmonton’s farm-to-table scene made a national impression this winter when Chef Tyson Wright, resident chef at Old Red Barn in Leduc County, represented Alberta at the Canadian Culinary Championships in Ottawa. fter nearly a decade under Chef Tara Solon’s leadership, Beaumont’s beloved Chartier has entered a new era, one that promises fresh ideas, collaborative energy, and a deep respect for the legacy that came before. Executive Chef Crystal Higgins, who stepped into the role earlier this year, brings with her a grounded, team-focused vision: one rooted in prairie tradition, shared experience, and everyday joy.

“I wanted to respect the leaders and cooks that have been in the Chartier family for so long,” Higgins says. “The menu is a group project. I’m an outsider, and I need to build their trust.” That team-first ethos is already shaping her approach to the kitchen. “The menu will showcase the employees who have been loyal to the community. We’re going to keep it nice, fresh and always fun.”

It’s a welcome evolution for Chartier, which opened in 2016 with a mission to honour French-Canadian prairie food. Higgins embraces that foundation, while aiming to elevate its humble roots. “Humble food for humble people” is how she describes it; a cuisine shaped by hearty proteins, pulses, and fresh herbs. “These ingredients require a level of technique and understanding,” she says. “Respect and skill will elevate any dish.” That sense of elevation, not in price, but in passion and pride, is central to her culinary point of view. “We focus on technique, execution, finesse. Most importantly, teamwork,” Higgins explains. “If we love the people we work with, you’ll feel it in the food.”

It’s clear that this is a chef who values connection, not just with her team, but with the broader food community. “Edmonton has a strong foundation of high-level multicultural food,” she says. “Olia, Bernadette’s, Anejo, Juu-Ku—the list goes on. It’s exciting for young chefs to have so many options, and to be able to work and eat with some of the top chefs in the province. It’s awesome.”

Outside the kitchen, Higgins’ tastes are simple, especially when it comes to her children. “My son will only have cheese and crackers,” she says, laughing. “My daughter loves anything her mom cooks.” That honest, unpretentious energy is the same she brings to her cooking: a celebration of what’s real, shared, and made with care.

If you’ve been waiting for the right moment to spend a few hours with great art, this is it. The Art Gallery of Alberta (AGA) is rolling out a stacked slate of spring exhibitions that capture the full breadth of what Edmonton’s largest public art gallery does best: celebrate diverse voices, provoke new conversations, and surprise viewers with the power of visual storytelling.

Top of the list is 5 Artists 1 Love: 20 Years of Fierce Art & Soul, marking a milestone year for one of the city’s most celebrated cultural showcases. What began as a one-night art and music event two decades ago has evolved into a cornerstone of the gallery’s annual programming. This year’s exhibition features work by 20 alumni artists—painters, sculptors, photographers and more—whose practices reflect the richness of the African and African diasporic experience in Canada. It’s bold, emotional, political, and joyfully creative.

TWO WEEKENDS OF ISLAND FLAVOUR & COMMUNITY VIBES

Edmonton gets a blast of sunshine and spice this March with not one but two Caribbean-inspired festivals. First up is the Caribbean Winter Food Festival on March 21 at the Alberta Avenue Community Centre. Featuring a vibrant lineup of food, fashion, art and live music, this indoor vendor market celebrates the flavours of island nations including Cuba, Trinidad & Tobago, St. Vincent & the Grenadines, and more. The event runs 3 p.m. to 11 p.m., with free food hampers offered to low-income families between noon and 1 p.m. Early-bird tickets are available with a 2-for-1 deal. It’s a family-friendly, alcohol-free afternoon packed with Caribbean warmth. Then on March 28, the Caribbean Winter Festival returns with a full day of cultural performances, community celebration, and more Caribbean cuisine. By the time this issue hits hotel desks and brunch counters, the first hints of spring will be underfoot. Bare sidewalks, longer light, and that particular slush that signals both optimism and wet socks. It’s a weirdly hopeful season in Edmonton, full of small triumphs: glimpses of grass, the first patio beer, and someone spotted in shorts when it’s still snowing in the shade.

It’s also a season that changes how we eat. The cravings shift. Suddenly, it’s all about lemon curd and salad greens, brighter flavours and lighter steps. We start paying attention to where things come from. Is that beet from Leduc? That honey from Spruce Grove? Even the pickiest brunch crowd starts to wax poetic about eggs if the menu says “farm fresh.”

That connection, to ingredients, to land, to makers, is something Edmonton’s dining scene has been leaning into for years. But lately, it feels like the volume’s been turned up. In this issue, we’ve tasted our way through Alberta-sourced menus, fermentation-forward kitchens, Indigenous dining, local distilleries and coffee roasters, and a dozen hidden gems along the way. Edmonton’s culinary identity is sharper than it’s ever been, and proudly rooted here.

Of course, food is just the start of the spring season.
