WELCOME TO 2025 CSA - Week 8 Highlights

(S) - Small Share, (M) - Medium Share, (L) - Large Share

This key indicates which share sizes get what produce. Different share sizes will often receive different produce. We will vary what goes into the share each week to spread the bounty equitably to all members.

There are times when mother nature puts a kink in our plans, so while we can't guarantee that all of these items will be in your share, you can expect to see most of them and sometimes a few extras.

Beets

Slice cucumbers, onions, carrots and other veggies from your CSA to make an amazing salad

Cut into medallions, sautee’ (ideally in cast iron) @ meduim heat in butter and S&P until slightly charred & fork tender.

Wrap in foil with S&P and EVOO. Roast until fork tender @ 400 Let cool and the skin peels right o Perfect roasted beet!

Perfect for salads or pickling

Zucchini S

Slice zucchini lengthwise into 1/4-inch-thick planks and toss them with some EVOO, S&P. Grill them over medium-high heat, ipping once, until charred and tender, 3 to 4 minutes per side.

Slice onion, cucumbers. Mix with 1/4 cup white wine vinegar, honey, S&P

Chill for 20 minutes and enjoy.

Rich, garlicky, strong, robust with easy to peel jumbo cloves which are easy to use in the kitchen

Eggplant M,L

Pregnant or not, you will love this infamous Eggplant Parmesean dish!

Bell Peppers L

Slice peppers, onions and sautee’ in a sauce pan

Add Crushed tomatoes, EVOO and zesty Italian sausage, herbs, and S&P

Forget about it!
