INSTRUCTIONS

5 ea. Roma Tomatoes (smoked or roasted)

1. Place Ancho Chili in hot water for 10 minutes.

1 ea. Ancho Chili

2 Tbl. Lemongrass, Sliced

2 Tbl. Ginger Root

2. Roast Roma Tomatoes and Garlic in smoker or oven @ 350 Degrees F until Garlic is light brown and tomatoes are starting to get soft approx. 20 min.

¼ cup White Wine

4 quart Seafood Stock

1 Tbsp. Fish Sauce

2 ea. Roasted or Smoked Garlic

1 ea. White Onion, Diced

1 Tbsp. Dried Oregano

1 tsp. Smoked Chili Powder

1 tsp. Smoked Paprika

1 tsp. Cayenne

2 ea. Bay Leaves

7. Remove Bay Leaves and add Seafood and Simmer for 5 minutes or until Shrimp have turned white.

Salt/Lemon Juice to taste

8. Season with Salt and Lemon Juice to taste

8 Large Shrimp

4 Large Scallops

½ pound Lump Crab or King Crab

3. In a large pot, sauté roasted Roma Tomatoes, Lemongrass, Ginger, roasted Garlic, Onion, and Ancho Chilies until they start to sweat and become translucent. 4. Deglaze pot with White Wine and reduce wine by half. 5. Add Seafood Stock, Fish Sauce, Dried Oregano, Smoked Chili Powder, Smoked Paprika, Cayenne, and Bay Leaves to the pot and bring to a boil. 6. Reduce to a simmer and allow to cook for 40 minutes at a slow simmer.

9. Serve with some garlic parmesan crusty bread.
