Keeping Up with Liz Fiddle When we see her perform, most of us view Liz Fiddle as a force. The kind of force that makes all the papers in the room start flying around in gale-force wind. There is nothing passive about her approach when wielding her fiddle with deliberate intent.

Liz thinks of herself, simply, as a multi-faceted folk fiddler with a thirst for new ways to communicate with music lovers and musicians alike. Her music explores contemporary American culture and draws from musical forms outside the Western classical tradition.

Involved on a number of levels regarding music and community, she also operates a music school out of her studio in Verona. She performs in a variety of bands and projects, such as: Opus Black String Quartet, Remsen Social Club, Dave and Liz, Bradish and O’Rourke, Ed Vollmer, Chuck Dorgan, TumbleWeed Gumbo, Mohawk Valley Strings, Big Easy Duo, Liz and Al, and Fish Creek Rodeo. Further, you can find her at open jams, and open mics around the Central New York area. She’s out there.

Liz Fiddle: My pleasure, Chuck! Thank you.

CS: Ok, let’s roll … uh, one, two, tee, fo! How did you get started in music? How long have you been playing?

LF: I started playing violin at J.D. George Elementary in Verona, New York under the direction of Joan Batson. I was, and still am, in love with the violin –25 years. I used to follow bands around, and after high school spent my time following Phish quite a bit. I’d bring my violin to the parking lots of concerts and find people to play

with. I worked for a local music store, so I got to meet all the musicians in the area, and realized how much I enjoyed talking and learning from them. Mom told me, although she approved of my vagabond, bohemian lifestyle, that I should go to college. So I did … for music. At OCC in Syracuse. Great experience. I studied classical music with Kit Dodd, got to play in the latin ensemble under direction of Dr. Rob Bridge. Studied Jazz improv with Joe Carello, and took some violin lessons off campus with Diamond “Joe’’ Davoli. My last teacher was the great Andrew Zaplatynski before he retired. Before going to college, I used to attend open mics in Rome, and go learn to play like Papa John Creacher as blues was the first thing I had attempted to play after years of classical training. SO thankful for people like Hans Stuy, Larry Jordan, Jeff Beam and John Keller that weren’t afraid to help a young musician out. This has been very important to me, and the reason I still and will always continue to host and support open mics. Talent needs to be encouraged.

CS: Is violin your only instrument?

LF: I play many styles of music on the violin. I do play other string instruments; viola, guitar, ukulele, mandolin, bass as well as sing.

CS: Who do you listen to for inspiration … listening specifically as it applies to your instrument, and also for just general fun.

Fantastic Beasts: The Crimes of Grindelwald It’s been 11 years since the final book in the HARRY POTTER series was released, and yet the franchise remains as popular as ever. In fact, as new generations are being introduced to author J.K. Rowling’s incredibly rich magical world, the brand has become even more prevalent in popular culture. Products with the Potter brand (toys, clothes, bedding, games, etc.) can be purchased in virtually every major retail store you walk into, and those who grew up reading the novels are now sharing the stories with their children.

Though we may have seen the last of Harry, Ron, and Hermione, the wizarding world lives on. Rowling delivered a prequel of sorts in the form of a screenplay with 2016’s FANTASTIC BEASTS AND WHERE TO FIND THEM. It featured Eddie Redmayne as Newt Scamander, and took place decades before Voldemort attempted to assassinate The Boy Who Lived. The film was a massive hit, and looked to launch a franchise that would accompany POTTER to form the foundation of the magical world that audiences and readers had already fallen in love with years previously. FANTASTIC BEASTS: THE CRIMES OF GRINDELWALD, Rowling and company look to add to the lore and further develop the backstory to the universe that we (I’m including myself in your ranks, Potter nerds) simply can’t get enough of.

CRIMES OF GRINDELWALD takes place mere months after the events of the first FANTASTIC BEASTS film. After being captured, thanks in large part to the efforts of Newt, Grindelewald (Johnny Depp) has been kept under lock and key, and his tongue has been removed in order to prevent him orchestrating any sort of daring escape. He is set to be transferred to England, where he will have to face a litany of charges due to his dangerous and dastardly deeds. Despite the best efforts of the Aurors who were to transport him, Grindelwald escapes, and the world becomes a much more dangerous place for wizards, witches, and muggles alike.

Meanwhile, in England, Newt is striving to have his travel restrictions lifted. Always down to jam, so often you will find me out in new and different collaborations with other musicians. I have wicked music A.D.D. so it would be impossible and not satisfying for me to play one style of music forever.

CS: Super cool. I admire your ambition. Please share some of the highlights of your career.

LF: There have been so many totally rad moments in my career, thus far. First and foremost, opening up my own teaching studio. Music With Liz. I have had a studio storefront in Verona, NY for 4 years until recently acquiring a property in State Bridge. This new property (former restaurant) is currently undergoing renovation to become my new studio, with a twist. More on that later. Other notable moments that stick out are getting to jam with Professor Louie at the Ridge in Chittenango last summer. Also, I took requests and played dinner music for Canned Heat, which was totally awesome (also at The Ridge). Every few years I get to teach clinics at The fiddlers Hall of Fame in Osceola. That is such a cool place, and great honor. I have been among many great talents to perform at some amazing events in Syracuse, Taste of Syracuse, Ladies Night, and Salt City Waltz, both 2016, 2018. Salt City Waltz put me on stage with Levon Helms horn section, which was fantastic, not to mention the amazing talents in and around Syracuse. Lots of collaborations with super incredible people. I did also get to perform as entertainment with Opus Black for Alec Baldwin and family during their Carol Baldwin breast cancer gala event. I got to play Hal Casey’s parts in the last Kentucky Moon reunion at the Dinosaur BBQ upstairs. I was shakin’ in my boots. His son came up to me and told me his dad would’ve been proud.

CS: What do like doing outside of music?

LF: Snowboarding.

Fantasic Beasts: The Crimes of Grindelwald ontinued from pg 4 the only person who can topple Grindelwald, is unable to do so based on a bond that the two had when they were students together. Newt continues to search for Tina, and after finding her, hopes to track down Credence before his powers can be utilized for evil.

Despite his affection for Tina, he is still conflicted in his feelings for Leta Lestrange (Zoe Kravitz) who is currently engaged to Theseus. Meanwhile, Leta may share a connection to Credence that could define the very nature of his existence. And finally, Jacob (Dan Fogler) and his girlfriend Queenie (Alison Sudol) attempt to navigate their perilous union as relationships between witches and muggles are deeply frowned upon and downright dangerous.

Even with a running time that approaches two-and-a-half hours, Rowling has crammed so much story into one film that at times, it threatens to overload the audience. There are very few wasted moments, and the whimsical delights from the first film (mainly Eddie Redmayne as Newt Scamander and Katherine Waterston as Tina in the form of beautifully elaborate creatures) are few and far between. With the exception of a brief jaunt around Newt’s home/laboratory, the creatures are utilized solely for the purpose of advancing the scene that they are a part of. The rest of the time is spent rapidly advancing the storylines of all of the major characters that grace the screen.

It’s hard to believe that the second film in the FANTASTIC BEASTS franchise will win over any new converts, but at this point, that shouldn’t be a surprise. Fans of Rowling’s wizarding world, however, are likely to be as enamored as I was. Despite the multitude of subplots and storylines, I was enthralled from start to finish, and quite honestly, couldn’t get enough. As I watched, I couldn’t help but wonder how much Rowling had planned out at the time she wrote the POTTER series, and how much of this she is making up as she goes along. Regardless of what the answer is, I love seeing how all of this will fits in with the HARRY POTTER canon.

Johnny Depp as Grindelwald The production design of director David Yates’ (who was at the helm of four of the HARRY POTTER films) team was magnificent, and filled with enough magical eye-candy to keep the viewer engaged at all times. The special effects were seamless, and the action sequences were thrilling. Tales from the Vine

Winter in Wine Country As most of you also experienced, we got our first winter storm quite early this year. On the night of November 15th, vineyards received anywhere from 6 to 12 inches of snow, depending on their location. This snow gives the vineyard team some mixed feelings. At this point in the year, it provides insulation for the soil to keep it from freezing. On the other hand, the soil not freezing at this time of year makes it difficult to bring equipment into the vineyards to finish hilling up and trellis work. (Hilling up is when dirt is gathered around the base of the vine to provide further insulation.)

Soon, bud gathering will commence. The vineyard teams gather buds to check for damage. Though it’s too early to see any winter damage from the cold, they’d be checking to see how they “came through” the summer and fall seasons. Pruning begins soon with the most cold-hardy grapes, such as Catawba, then moving to varieties like Cayuga and Seyval Blanc, saving the most cold sensitive for last, like Chardonnay, Riesling, and Cabernet Franc. Those varieties are pruned soon after the extreme winter temperatures have passed.

The Cayuga Lake Wine Trail is open year-round, though some wineries cut their hours back to accommodate the slower traffic season. This is dubbed as the “off-season,” and here in the office, we also call it “event season.” Our last event of the year, Holiday

The off-season doesn’t mean the wineries are sitting with idle hands! Behind the scenes, many are already starting their prep for the coming summer; creating events, booking musicians, and figuring out how to give you their best experience. Speaking of best experiences, did you know that winter is the best time to visit a winery? It is, for many reasons! For starters, the wineries aren’t as busy so it’s less crowded and the staff is able to focus more on you. And since it’s a slower season, the winter staff likely consists of the winemakers and owners. How truly awesome would it be to get a tasting from the person who made the wine? Oh, the knowledge they’d give you!

All in all, winter isn’t so bad. Many wineries offer mulled wines to warm you up, and the slower-paced tasting room offers you a chance to truly learn about the wine you’re sipping. Though I can’t speak for everyone, but the more I’ve learned about the wine making process, the more I’ve come to enjoy the wine I’m sipping. So bundle up and come visit us this winter!

Holiday Gift Suggestions Instead of harping on your usual holiday behavior of stuffing your face with whatever you want and using the excuse … ”its the holidays!,” I have decided to give you some gift suggestions that will improve the health of anyone you get the gifts for.

Let’s start with some reading material for those few of you and your friends that still read books. Of course there are YouTube versions of all these authors for those of you who have given up on reading. For me there is nothing like the print version that I can dog ear, markup and review again but I know the idea of a buying a physical book is fading like the memory of most 90 year olds.

First is a magnificent book on vaccines

by Dr. Suzanne Humphries entitled Dissolving Illusions. I too thought that vaccines had saved more lives than any medication but after reading this book, and others, I now have a different view and so will you!

Dr. Humphries was a practicing nephrologist (kidney specialist) when she started to investigate why her very sick patients were being given flu shots routinely when hospitalized and that changed her life forever. The book is not about her … the book is about the science and history of vaccination.

Second is another book by a nephrologist but this one focuses on diet. Dr. Jason Fung wrote Intermittent Fasting after watching one too many diabetic patients end up on dialysis after pill after pill did nothing to affect their disease progression. Other longevity specialists call it time limited eating but the basic idea is there is nothing easier or more straightforward than fasting to improve your health. Gluten issues?

Try fasting. Money issues? Try fasting.

Food allergies? Try fasting.

Limited food choices? Try fasting.

Fasting has been used for thousands of years to lose weight and improve your health. Dr. Fung lays out the when, where and whys in a very straightforward and simple manner.

This book is not just for diabetics either. Anyone who has an interest in improving their health, their immune system, their mitochondria, etc. will benefit from this book.

Two other books I highly recommend are Dr. Thomas Levy’s Death by Calcium where he lays out the real cause of osteoporosis and

details how dangerous calcium supplementation (other than through diet) may actually be. This book is not about his opinions … it is a scientific exploration of the actual effects of calcium in your body. If calcium supplements are as good for you as your health professional urges … why are drugs that block their effect so beneficial in dealing with hypertension and heart disease? The final book I recommend is by the great Dr. Robert Lustig who wrote The Hacking of the American Mind which lays out exactly why so many of us are addicted and depressed. It’s a fabulous read which will leave you very worried about the current health situation and future generations as well.

The Skinny on Holiday Weight Gain Twas the night before Christmas, when all through the house, not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care, and wait, is that a scale? Yep, it’s another year and another holiday season is upon us.

Ahh, the holiday season. A time for friends, family, fun and a whole lot of feasting.

Did you know that the average American consumes 4,500 calories and 230 grams of fat on just Thanksgiving Day alone? While the seemingly endless meal of turkey, potatoes and stuffing is anticipated by so many, the holiday season can be a real nightmare for someone who is trying to control their weight.

The holiday season doesn’t represent one day of overeating. You have this period that begins at Thanksgiving and extends through the New Year. Since the average weight gain during adulthood is about one to two pounds a year, it’s safe to say that much of our midlife weight gain can be explained by holiday eating. The bad news is, most of us don’t ever lose the pound of weight we put on during the holidays.

For people who are already overweight, the holiday weight news is worse. Although

the average gain is only one to two pounds, people who are already overweight tend to gain a lot more. One study found that overweight people gained five pounds or more during the holidays.

We all know that one of the best ways to lose weight is to eat less and move more. Accomplishing both of these tasks at the same time can be an uphill battle for most of us this time of year. Here are a few tips on how to keep your weight and your sanity in check this holiday season: • Bring a healthy dish to share. Holiday parties can be a common setback in the battle against holiday weight gain. In these instances, you often have little or no control over the food that’s served. The good news is, you can have control over what you eat. Simply bring your own healthy dish for yourself and to share with others.

Since the average weight gain during adulthood is about one to two pounds a year, it’s safe to say that much of our midlife weight gain can be explained by holiday eating.

• Get plenty of Zzzs. Sleep deprivation is quite common during the holidays, and it can help contribute to weight gain. This is because those who do not sleep enough tend to be hungrier, consume more calories and get less physical activity.

• Keep meals balanced with protein. Holiday meals are typically rich in carbs and lack protein. Include some protein with every meal, as it promotes fullness, helps controls cravings and is useful for maintaining your weight.

• Don’t skip meals. Eat your normal meals at their regular scheduled times. You will be less likely to overeat if you keep yourself satisfied throughout the day.

• Go easy on dips, chips, sauces and desserts. These food items can be deceptively high in calories and fat. Instead, concentrate on fresh fruits, veggies and lean meats.

• Go easy on the alcohol. Sorry guys, but alcohol can increase your appetite and lower your resolve to resist overeating. In addition, many holiday drinks have as many or more calories than a dessert.

• Move! Here’s a fact for you. Thinking about going to the gym burns between zero and zero calories. Even if you only have the time to fit in twenty minutes a day, it’s better than doing nothing at all. Take a walk or hit the gym after your holiday meal. continued on pg 12

For those of you less erudite let me recommend that instead of another sweater you consider a gift certificate this year … not to Dicks or Destiny … not that there’s anything wrong with that but what about a gift certificate for a massage for someone who works out all the time. A certificate for an hypnosis or acupuncture session for the person you love that still smokes or is in chronic pain. -That may be the gift that keeps on giving!

Finally, give the gift of time and yourself … spend some time volunteering … spend some time in the nursing home … spend some time with your wife … your kids … your aunt Em. • Be active with family and friends. Sedentary activities, such as sitting on the couch and watching sports, are common holiday traditions for many families. When this is accompanied by eating excessive amounts of foods it’s a recipe for disaster. Get out and do seasonal activities the whole family can enjoy. Go sledding with the kids, build a snowman, ski, or have a snowball fight.

• Learn to manage stress. Stress associated with the holidays can be a huge trigger for people with have little or no self-control. Make sure you carve out some time for an activity that helps you relax each day. Read a magazine, take a warm bath, or walk the mall with a friend.

• Just say NO. Say no to the doggie bag. Taking home table scraps will only encourage late night snacking. Save the leftovers for someone else.

• Slow down. It takes your body about twenty minutes to realize that you are full, and you can eat a lot of extra food in those few minutes. The slower you eat the less food you’ll consume.

• Stay conscious. Be aware of what you’re eating. It’s easy to get carried away when you are in the company of friends and family. If you’re not really hungry, don’t eat.

Measure Your Waist

Get a measuring tape, wrap it around your waist, and check your girth. Do it while you’re standing up, and make sure the tape measure is level.

For optimal health, your waist size should be: • Less than 35 inches for a woman • Less than 40 inches for a man If your waist is bigger than these measurements you are at a greater risk of developing high cholesterol, heart disease, diabetes, and other health related disorders.

In Conclusion:

Our sedentary lifestyles and poor convenient diets are the real culprits of our holiday battle against weight gain. If we as a nation want to improve our health and extend our lives, we must make healthy food choices, eat less, and exercise regularly. Above all, we must take personal responsibility for our own health!

This doesn’t mean you can’t celebrate special occasions or indulge of in your favorite treats.

Beet and Lotus Root Salad house made kimchi and gochujang butter), admittedly I was a little skeptical of this dish and I was unclear of how the kimchi would work with the salt potatoes. I was pleasantly surprised by the awesome flavor combination and this dish was probably my favorite of the night! I also had an order of the Kasai Meatballs, angus prime house meatballs with truffle soy hot sauce and yuzu ginger aioli garnished with pickled red bell pepper. I loved everything about this melt in your mouth dish of exquisite flavor! We also had a Mushroom Steam Bun, a traditional dish served on an adorable plate with hoisin exotic mushroom blend with kimchi pickles and crispy tumbleweed onions. Jackie just had to try the Miso Braised Eggplant gyoza, a seated Kasai Meatballs, angus prime house meatballs with truffle soy hot sauce and steamed dumpling served with house ponzu sauce. This dish was bursting with flavor! and yuzu ginger aioli garnished with red bell pepper We also split a gigantic bowl of Veggie Ramen. This dish was a medley of flavors that was both beautiful and scrumptious. This steamy bowl of deliciousness was full of ramen in roasted veggie brother and incorporated dashi, soy tare, miso soy eggplant, enoki mushroom, baby bok choy, bean sprouts. Jackie loved slurping the noodles! We also did out best to split a shared plate of Roasted Eggplant and Tofu. This dish, meant to be shared by up to four people, was gorgeously plated with roasted Japanese eggplant served with ginger scallion pancakes, pickled vegetables with soy truffle, pineapple ghost, and roasted red pepper coulis.

Just for kicks I also ordered the Kasai Chicken Sandwich, a modern and inspired take on an American classic! This marinated and double battered fried chicken with kimchi pickles and ghost aioli was absolutely outstanding and the togarashi fries may be my new favorite “French” fry! We ordered much more food than we could possibly consume in one sitting but we were so glad we tried everything! Each dish was plated like a work of art and introduced truly unique flavors to our pallets!

Outlaw King As Netflix continues to expand its brand more profoundly with each passing year, the streaming service is looking to have a huge impact on this year’s award-season landscape. From the Coen Brothers (THE BALLAD OF BUSTER SCRUGGS), to Sandra Bullock (BIRD BOX), to the buzzy ROMA (directed by Alfonso Cuaron), there are big names that are foregoing the typical path to an Academy Award, and giving audiences the opportunity to see lauded films from the comfort of their own home immediately upon their release. Before any of the aforementioned projects debut, the period drama OUTLAW KING looked to be the first to toss its name into the Oscar mix.

OUTLAW KING features Chris Pine as Robert the Bruce, the Scottish king who looked to rid his land of the treacherous English in the late 1400’s.

Despite an initial inability to amass the type of army that would be needed to overthrow the reigning king, he is fueled by a love for his land and its people. Constantly outnumbered and working with the knowledge that his wife and child are in peril, he forges on, slowly building followers as he goes.

Undeterred by savage sneak attacks and a lack of soldiers and supplies, he believes that he and his people will find a way to prevail.

Chris Pine as Robert the Bruce, the Scottish king

with Pine in the thrilling HELL OR HIGH WATER. The modern western was an intense, intelligent and sublimely acted masterpiece that ranked amongst the best films of 2016.

Building off of the success of that production, there was every reason to have incredibly high hopes for OUTLAW KING. Pine, as King Robert, proves once again that he is a leading man that perhaps doesn’t always get the credit he deserves. He projects a quiet fierceness and avoids the grandstanding you typically see in ventures such as these. Sympathetic, yet more than willing to slay those who stand in his way, he is a tender soul with cold-blooded tendencies.

The visuals in OUTLAW KING are stunning. Watching the sprawling scenery in high definition is undeniably awe-inspiring, and it is apparent that Mackenzie and crew went to great lengths to deliver a product that is meticulous in virtually every conceivable way. Despite Pine’s excellent turn, and the beauty the film bestows upon its audience, in the end, it is largely forgettable. In a way, this is no fault of the cast and crew. Had this movie been made 10 years ago, it would have seemed far more impressive. Paired with BRAVEHEART (whose character William Wallace is referenced multiple times throughout) it would have been seen as a period drama with plenty of highs, and very few lows.

Unfortunately, we now live in an era where GAME OF THRONES has entered the entertainment landscape, and whether you are a fan of the series or not, you are familiar with its visuals and structure. Because of its massive success, and the fact that every episode is wholly cinematic in nature, it overshadows any of its counterparts and competitors.

Try as I might to watch OUTLAW KING on its own accord, I couldn’t help but think of THRONES during every single scene. From its merciless violence to its obligatory sex

scene, it played out like an average episode of the HBO series. The battle sequences in KING are bombastic, and there is plenty of going on. Skulls are smashed, throats are pierced, and fleshed is carved. Swords cause blood to constantly spurt over hero and villain alike, and neither horse nor human are safe once the fighting commences. And, despite the grand scale of these scenes, once again, they fail to project any type of feeling of originality. This isn’t a condemnation on the abilities of Mackenzie as a filmmaker, but rather, it serves as an observation on the current state of films such as these. With the ingenuity that THRONES bestows on the small screen on a weekly basis, it seems increasingly impossible for a product such as OUTLAW KING to emerge as anything other than a forgettable footnote in the annals of Netflix history.

Snowflakes in the Sun The Oxford English Dictionary recently announced its selection of toxic as THE word of 2018. Oxford’s Online English Dictionary defines toxic as “poisonous” as in, much public discourse has become toxic. Other words in close contention for the honor were gaslighting, defined as the “action of manipulating someone psychologically into accepting a false depiction of reality or doubting their own sanity,” and incel, short for “involuntary celibate.” Incel is a new word. Oxford defines incels as “young men who consider themselves unable to attract women sexually who typically hold views that are hostile toward men and women who are sexually active.” Supposedly, incel rage prompted a member of the Canadian incel community to drive into a crowd of pedestrians in Toronto last April.

The online Oxford English Dictionary defines each of the above words and uses each of them in a sentence. I’ve constructed this sentence: Many males and females have been gaslighted through ideology, culture, and toxic sexualizing media, into seeing people as objects, giving rise to extremist thinking such as today’s purity and incel movements.

Sometimes the edges pull at the middle.

Taught not to discuss her body and any physical ills, Ms. Klein grew up believing that wanting to feel happy and physically good was inherently bad, while physical suffering and feeling bad was somehow good. The evangelical purity movement does not operate alone.

“The Dark Box – A Secret History of Confession,” by John Cornwell, discusses how generations of young celibate seminarians, studying in closed communities and settings, learned how to guide and judge the physical and moral purity of the boys, girls and families under their clerical authority.

Spreading the word, whatever that word may be, results in culture clash.

In the 1997 film, “The Education of Little Tree,” a Cherokee boy required to attend a religious residential school to be “Americanized,” is asked to describe a painting of two deer walking in the woods. Little Tree points out that he sees a male deer, a buck, approaching a female, a doe, probably to jump and mount her. Little Tree’s clear, concise, values free observation, in the context of a strict Christian school, is politically incorrect, and the authorities punish Little Tree for his assessment. Judging words as politically incorrect is often associated with left-leaning groups. The fact is, standards of political correctness reflect acceptable speech as defined by the most dominant and powerful group in the immediate and/or general vicinity.

I am writing, or rather, rewriting, this article on Thanksgiving, a holiday not celebrated worldwide. Our close neighbor Canada celebrates Thanksgiving on the date New Yorkers celebrate Columbus Day, the holiday the newly elected Bronx/Queens US Congressional Representative Alexandria Ocasio-Cortez wants the US government to replace with a national voting holiday. Perceptions change. I used to believe that the greeting “Happy

Holidays” encompassed all the end of this year/beginning of the next year celebrations being celebrated. Close to Thanksgiving, “Happy Holidays” served as shorthand for “Merry Christmas” and “Happy New Year,” and could include “Happy Hanukkah” where needed.

In some circles, people feel that acknowledging other peoples’ holidays constitutes a war on Christmas. Truly, the first ideological attack on Christmas I personally experienced occurred in a biblical, literalist, evangelical fellowship where members told me that the Christmas holiday was the devil’s cover for pagan solstice decadence. At that time, I’d been trying to find and heal myself on one of the several spiritual and ideological paths I’ve explored. As fate would have it, I was also studying creation myths in a night class at Syracuse University. My diverging pursuits caused me some cognitive dissonance.

Cognitive dissonance is the mental stress or discomfort experienced when one encounters and is forced to consider two or more contradictory beliefs, ideas, or values at the same time. To get through cognitive dissonance, beliefs and perception must change with observation and information.

How we understand language changes.

The word snowflake, both the word for a meteorological phenomenon and a metaphor for individuality in creation, is now used as a slur. According to one science website, the truth about snowflakes is this: “to have two snow crystals or flakes with the same history of development is virtually impossible, so, basically, it’s true that no two snowflakes are alike, but also true that two snowflakes could be alike, if they were nanocrystals with no differences in development.”

Most of us like be feel valued and respected as individuals, so, metaphorically speaking, most of us are snowflakes under the sun. And, no matter how we greet one another this holiday season, in our part of planet earth, after the winter solstice, the daylight portion of our 24- hour cycles will last longer.

menu and up to 7 specials a day —at each meal— but with staff that has been with The Gem since LaLone opened in 2011, it’s also clearly a labor of love.

LaLone told me proudly that he has “the best cooks in the city.” Those same cooks helped the Doug LaLone-Len Montreal team test menu items for the New York City style grille and tavern that they recently opened as The Preserve, down near the Creek Walk. “They’d try a recipe, and the ones that worked made the menu.” Versatility is clearly one of The Gem cooks’ specialties.

If you were to poll Syracusans about their favorite Gem dish, some would insist it’s the fretattas (you can get them with mixed meat and vegetables, veggie only or meat lovers style), and others like the home-made comfort foods, like meat loaf, or the veal parm, or chicken riggies. “We have customers who eat here four or five times a week,” LaLone told me.

“We found our niche,” he continued. “Our theory is, if it ain’t broke … our customers love to come here, and they come here expecting The Gem experience. My cooks have carte blanche to try out new things, and they do. But we also continue to serve the things people expect.”

The Gem truly is a part of the Syracuse community. Besides fulfilling people’s expectations of “fine diner,” and filling their appetite with good, hearty food, The Gem is involved in community projects of all kinds. “Breast cancer is one of our causes, and the Veterans. But one of our biggest is Challenger Baseball.”

The Challenger League in Syracuse is the oldest Little League program for special needs children (from 4-year-olds to “kids” of 65!) in the country, and has its own “Field of Dreams” in the Willis Carrier Recreation Park, and The Gem is a proud sponsor and participant in the program.

“We’ve been busy since we opened,” LaLone said. “We employ 45 people, serve 1400 meals a day on the weekends, and we love what we do.” For the great American diner business, and for a Syracuse tradition known as The Gem, it doesn’t get any better than that!

The back of the diner is covered in a mural celebrating the players of Challenger Baseball. In April of this year there was an unveiling of the mural and Doug and the Gem continue to receive donations to Challenger Baseball from patrons who are inspired by the photos.

The Next Big Thing Technology is a funny thing. Even those most tuned into it don’t have much of an idea of what will come next – nor how it will impact our lives.

The one thing we can be sure of is The Law of Unintended Consequences. Dietrich Dorner, emeritus professor for General and Theoretical Psychology at the Otto-Friedrich University in Bamberg, Germany wrote a recent analysis of systems (technologies) that explained why system can be so difficult to understand – and thus why the consequences of their adoption so difficult to anticipate. These include: Complexity Dynamics Intransparence (the hidden parts and operations we can’t see and don’t even realize are taking place) Ignorance and mistaken hypotheses To this list I would add the excitement and enthusiasm about the evident benefits —or simple thrill— of a new technology that encourage its rapid, unquestioning and overwhelming adoption.

and behavior. But this is just the tip of the iceberg. Just as we think we have a handle on things, along comes another tool that simply didn’t exist, and now it does, and suddenly the world has changed. Utterly, permanently, and in ever-expanding ripples.

This was brought home to me in a couple of ways recently.

Concrete, an invention of the Romans, revolutionized the way a building was constructed. Prior to its being employed, stone was laid upon stone in intricate and perfect ways, but concrete, literally “cemented” things together, allowing for remarkably durable buildings, even up to and including our modern skyscrapers. But since buildings could go up and not just out, greater concentrations of people would live together in smaller areas, encouraging disease, pollution, and social stratification.

The printing press did more than simply enable the reproduction of the written word: it encouraged literacy, and fueled a religious reformation. As Mark Twain memorably remarked, “What the world is today, good and bad, it owes to Gutenberg.”

It goes almost without saying that refrigeration was another technological advance that sped man forward at an astounding pace – but perhaps carried in its wake the obesity we now suffer in advanced nations? With refrigeration, food could remain fresh longer, the labor to procure it reduced, and the amounts consumed increased without danger. Refrigeration also meant new drugs that needed to be carefully preserved, and ultimately, living longer, and in places in large numbers that were otherwise inhospitable (think of desert climates, for example).

Or take something as seemingly innocuous as the microwave oven. A great time saver – even power consumption reducer. But think of the ways in which it changed the dynamics of human interaction. Now, rather than sit at a table together with a family or friends and consume a meal prepared laboriously for the group, each individual can heat and eat whatever and whenever he or she chooses. The daily ritual of meal time has virtually disappeared for most of us.

Power, travel, communication, visual media, all have had profound and extreme impacts on who we are, how we live, and ultimately where we’re headed.

But while we can look back with great pride and amazement at the many technological innovations for which the human mind can be congratulated, we also have to admit that there have inevitably been unexpected —and sometimes negative— consequences of these innovations as well.

And we rarely have the prescience to imagine what the next Big Thing will be. A few minds have imagined the impossible, and simply lacked the ability to make it happen (think of Leonardo da Vinci and his flying machines; and have you ever heard of Cornelius Jacobszoon Drebbel, who, in 1620 made a working model of a submarine?) on a large scale or for any practical purpose. And when an innovation is embraced, like Rockefeller’s kerosene, derived from oil, that utterly changed the way we lit streets and homes, and ultimately fueled the internal combustion engine, or Henry Ford’s assembly line that sped the production of goods —lowering their price— the flip side of the coin of great value is almost inevitably the “tails you lose” other, usually unanticipated “other” side.

What will be next? Cryptocurrency and blockchain technology have the potential to disrupt financial transactions. Medicine and particularly the replacement of failing body parts with artificial but functional replacements have the potential to alter our concept of lifespan.

And those phones in your pocket – well, who knows what power lurks there, waiting to be unleashed?

Of one thing I have no doubt: we’ll end up thinking, “I didn’t see that coming!”

Lily Dale

by Christine Wicker My great grandparents, Tint and Emma Champlin, had a house in Lily Dale, New York. Like many in their generation —including Sir Arthur Conan Doyle— they were Spiritualists. Which is to say, they believed that the spirits of the dead could be contacted, and that there were spirits of all kinds, human and otherwise, lingering about us, influencing us, typically for the good if we had the interest to listen.

I even have a few letters received from Tint’s deceased mother from the other side, transcribed from automatic writing, which some psychics or mediums claimed to be able to perform.

So when I was given the book, “Lily Dale,” by a friend, I was naturally excited and curious to read it.

The writer visited Lily Dale in the early 2000s, long after its heyday, but though it is a shabby remnant of its late 1800s and early 20th century popularity, it continues to attract believers, tourists, the curious and those who remain convinced they can channel guides and the dead.

The writer, while billing herself a reporter, has entered her story as a full-blown character, which makes for interesting reading, but a certain edge. She goes to Lily Dale with the intent to remain skeptical; but seems to be drawn into its energy —often against her will and better judgement— and finds herself confounded and maybe even a little concerned.

for the arts as well as investigation and learning. Lily Dale dug in its heels and remained as it had been when it was founded in 1879. Originally incorporated as Cassadaga Lake Free Association, a campground for Spiritualists and Freethinkers, the place changed its name to City of Light in 1903, and eventually to Lily Dale Assembly in 1906.

The “big question” with all investigations into the paranormal is simple: “is it real?”

Such famous persons as Harry Houdini were convinced it was not; and spent a great deal of time and energy using his famous talents for trickery to demonstrate that, in fact, it was all tricks and illusions, used to gull the gullible. Among the many so-called “mediums” of the Spiritualist wave that swept across New York State in the late 1800s were the Fox Sisters – who later admitted that they had devised tricks such as cracking their big toes loudly enough to convince visitors that they were hearing “raps” from spirit visitors.

Wicker “outs” one famous medium’s trick (a medium is a person who claims to have developed special powers to receive and transmit messages from The Other Side). This one is the “billet” message. In this game, someone in the audience is in league with the medium. People in the audience are asked to write a question on a “billet,” or slip of paper. These are folded and dropped into a basket. The medium is handed one of the questions, and, without reading it, holds the billet to his or her forehead, eyes closed. The

medium then channels the question, and the answer, and often the dead person who has sent the message to the audience member.

The partner in the audience screams in joy, weeps, and is released from grief as the question is “answered.” Then the medium opens the question, glances at it, balls it up, and throws it away —meanwhile, the medium reads a real question— and then the game, as they say, is afoot. The medium is one question ahead of the answer, but from that point on, knows what questions have genuinely been asked, THE FOX SISTERS and is able to at least hint at an answer.

But, as Wicker tells us, not all mediumship is trickery. Yes, many of the so-called psychics and mediums at the height of the Spiritualist movement were charlatans and essentially, street magicians – using tricks and misdirection, as well as a deep knowledge of human psychology, to convince often grieving, confused and unhappy people that their deepest doubts and questions have been answered from beyond. But some of them, she simply could not explain or understand, except to admit that they had something going on.

Her story is told in a quixotic fashion – leaving you hanging at the end of a chapter only to change up subjects at the beginning of the next, returning to the thread several chapters later. While it’s an interesting trick, it’s almost akin to the tricks she attempts to disprove: distract, and then if the reader doesn’t have the patience to go back and find the original story that was dropped mid-tale, he or she is likely to ride along with the second and even third parts as they appear later in the book, without consulting the setup.

But she writes in a personal, easy to read, first person narrative style, and leaves you feeling that you’ve been on her adventure with her – meeting the mediums, dismissing the obvious fakes and intrigued by the more subtle, or possibly even real communicants with the other worlds that perhaps, just maybe, swirl all around us all the time.

The Sears-Crouse Project In 2014 this city —essentially due to shortsighted irresponsible Mayoral narcissism— lost out on a project worth 495 million dollars. Yes, nearly a half billion. The Mayor’s (Miner) disagreements caused the Governor to pull the project. All that was needed was leadership and a desire to work together.

The DOME was going to be relocated on East Fayette Street adjoining downtown. Imagine the jobs, the growth, the infrastructure.

This was a project with a recurring venue of such massive scope that it would have With such loss there should have been a take away and lessons learned. This caused the city to pursue a course of educating the people and

I am a strong advocate for the poor and have worked hard on political campaigns supporting candidates that would have championed their plight. It is my opinion that the South Side and the City of Syracuse just lost out on a rare and wonderful

opportunity for amazing growth and improvement. This article addresses the truth verses the exaggerated concerns that cost us the project.

I am stunned and disappointed again. Along comes one of the finest employers in Syracuse: Crouse Irving Hospital. They are the place of birth for 10’s of thousands of our children including mine, and have served with the finest of contribution and distinction since their founding in 1887. All they do is give life, save life, heal injury and give value to the finest that human beings can be. And in this spirit, they wanted to completely renovate the Old Sears building, beautify the area and carry on their noble mission. The project was to establish a rehabilitation facility caring for addicts.

A mission of hope and compassion.

Because leadership did not consider the lessons of the DOME, a reckless noisy approach was undertaken with many negative meetings over one false and destructive concern that leaders should have addressed up front.

I researched similar facilities trying to find difficulties caused by their mission.

There were none. There is no increase in violence or drug activity around State-ofthe-Art Rehabs. Drug dealers don’t hang around State-of-the-Art facilities where less than one in a hundred slips near the facility. This is so clear. Why did leaders fail this continued on pg 36

This is “now” a neglected area where the drug business currently flourishes with minimal police interference. The current owner has had no offers in 30 years. Sears left a half century ago.

Because leadership did not consider the lessons of the DOME, a reckless noisy approach was undertaken with many negative meetings over one false and destructive concern that leaders should have addressed up front. Initially a false emotional perception was accelerated that recovering addicts would add to blight.

This project was lost due a few leaders that did not capture the truth and (rather than present real benefit) they portrayed old fears that did not apply. They caused many in the community to believe another dreadful project was being forced upon them.

Some Opponents envision shops and restaurants similar to North Salina. With neighborhood compatibility. What they are missing is that hope keeps us going but deeds only fulfill. No one has even begun such things in 50 years. First you must have appeal and safety. This is the first time a high-quality project has desired to invest and may well have been the catalyst for what they are seeking. Danger would have become safety and blight attractiveness and then they would have come.

I understand the history of the area. I believe that justified emotion and lack of understanding had some concerned. -And I get it. There were concerns over the Oxford House (which, with leadership, would have relocated had this project gone forward) moving just a few blocks away to Clinton Street and a bad taste after the City located the sewage treatment plant on Blaine St. It was the responsibility of City and Community leadership to show this project is far removed from taking advantage. It was up to leaders to show the only negative was false connotation - nothing real. This was likely on the road to approval. If Crouse was taking advantage, they would have stayed with it. They left because they felt that opposition was on a path equating them with Community abuse. Nothing could be further from the truth. Leaders could not see the value of twenty million dollars, and the great compassion within this project, and they did not trust this elite organization founded on compassion and human well-being to operate with its highly established expertise and not only contribute to the quality of the area but provide beautification and attractiveness to spur additional growth. This is what our leaders did and that is why they left.

It is likely too late but this is an enormous loss. Perhaps an appropriate meeting could be convened. Perhaps critical naysayers may come to terms with the cost of up front negativity. Perhaps a call could still be made to Crouse.

The City needs to take a look at how they do business. I strongly urge the City to develop a first response team. An up front team to research and evaluate any major project before those that embrace negativity first, cost us another massive improvement. Today, when you drive down East Fayette Street where the DOME itself could be, you look for any sign of vibrancy. As you pass the old Sears you will continue to feel the destitution and recall better days and wonder what happened. And I hope we remember that it is the life and dreams of our citizens that lose and are left behind when leaders fail on such large scale.

CS: Please share a funny war story (like the time you were in the middle of Pachelbel and a spider landed and started crawling up your bow....)

LF: Oddly enough, this story will include Pachelbel. Ed Vollmer and I were playing a wedding. Somebody told us to start playing. So we did. Pachelbel: Canon in D. There we are, this beautiful little church, and we are playing. Nothing is happening.

We keep playing. Nothing. Now we are through probably our 3 or 4th time … and they start processing. If anyone has ever played Canon in D, rarely do you complete the whole thing, let alone more than one. I consider this a battle scar, having to play through Canon in D like 5 times. lol.

CS: Advice for new musicians: LF: Always be yourself. Always. AND! Practice with a metronome.

CS: Thoughts on the CNY music scene: LF: So much talent. I find that certain areas of CNY are more receptive to live music than others. I am hopeful that more places pop up that are music first venues.

CS: Amen! What’s new or coming soon for you Liz Fiddle (and Co.)?

LF: I am in the process of restoring an old building to be my new teaching studio.

It will also be a music first venue. I am very excited to bring this kind of community center/venue to my area. The plan is to hold workshops, yoga, make art gallery space, and bring in a few more teachers to make more of an alternative school of music. The grand room, will also be available for rent for parties, and events. I am always hopeful to create my own original music, maybe 2019 will be the year I finally do that. Unfortunately that gets put on the back burner, always. Coming soon I will be creating an up to date YouTube channel.

This Month’s Recipe Prime Rib

Ingredients

7 lb Beef Prime Rib bone-in (aka Standing Rib roast) - you can use larger or smaller roasts Salt (I used fine sea salt) 1/2 Tbsp black pepper freshly ground 1 tsp rosemary leaves from 1 sprig or 1/2 tsp dried rosemary 1/2 tsp fresh thyme leaves from 1-2 sprigs, or 1/4 tsp dried thyme 6 garlic cloves finely chopped 3 Tbsp olive oil

Sprinkle meat all over with about 2 tsp salt, cover loosely with plastic wrap and let it rest on the counter for 3 hours to come to room temperature.

The roast will bake more uniformly if it is near room temperature.

Preheat Oven to 500˚F with rack in the lower third of the oven.

In a small bowl, stir together: 1/2 Tbsp salt, 1/2 Tbsp black pepper, 1 tsp chopped fresh rosemary leaves, 1/2 tsp chopped fresh thyme leaves, 6 finely chopped garlic cloves and 3 Tbsp olive oil.

Pat the roast dry with papertowels then rub all over with seasoning mix. Place into a roasting pan. Put a meat thermometer into the thickest portion of the meat and bake at 500˚F for 15 minutes.

Reduce heat to 325˚F and continue baking following these guidelines: 10-12 min per pound for rare, or 13-14 min per pound for medium rare, and 14-15 min per pound for medium. Roast until the thermometer registers: 120˚F for rare, 130˚F for medium rare, 140 for Medium, 150 for medium well. Keep in mind a colder roast or a thicker roast will take more time to cook and oven strengths can vary- that is why a meat thermometer is ultra important since no 2 roasts and no 2 ovens are alike. Also, the meat temp will continue to rise 5-10 degrees even after it’s out of the oven so don’t over-bake it. You can always put it back in the oven if you want it more done. Mine baked at 500˚F for 15 minutes then at 325˚F for 1 hr 30 minutes for medium doneness.

Transfer to a cutting board, tent loosely with foil and rest 30 minutes before carving. If you don’t rest the roast, it will juice out and become chewy.
