Frozen 2 Though it may be impossible to remember, there was a time, not too long ago, when you had never heard the song “Let It Go.” This was a simpler time, and long before FROZEN fever ripped through the public consciousness, and before, as John Travolta famously gaffed, “the lovely and talented Adele Dazeem” (real name Idina Menzel) belted out the most infectious Oscar winning earworm of all time. I can hardly believe it’s been six years since FROZEN released, as its brand seems as popular as ever. From toys, to costumes, to apparel, the images of Elsa (Menzel), Anna (Kristen Bell), and Olaf (Josh Gad) are still everywhere. This never-ending barrage of swag is unlikely

to cease any time soon, as to the delight of children across the globe, FROZEN II was unleashed upon the world in November. One of the key components of the success of FROZEN was its ability to take audiences by surprise. It was a production that, by Disney’s standards, hadn’t built a ton of buzz or fanfare before its release, and yet became an absolute juggernaut. With catchy songs, strong characters, and lots of laughs, it checked all the boxes of a successful family film. Obviously, it was an impossibility for the sequel to fly under the radar, as it was easily one of the most anticipated films of the year. After six years of anticipation, FROZEN II may not be the masterpiece that some had hoped for, but will likely satisfy its core fan base. In the aftermath of the events of the first film, the folks of Arendelle are living in blissful harmony. Elsa, Anna, Kristoff (Jonathan Groff), Olaf, and Sven spend their time playing charades and chillin’, though Elsa is plagued by a mysterious melody that only she can hear. Convinced that the haunting music is beckoning her towards a greater purpose, she sets off to discover its origins. Considering what happened Ale N’ Angus Gift Certificates Make GREAT Gifts! last time Elsa gave in to her questionable impulses, Anna reminds her that they are supposed to tackle all obstacles together, and refuses to let her sister set out on her own. Elsa, Anna, Kristoff, Olaf, and Sven travel towards the sound of the song, and find themselves in front of an impenetrable mist. This mist has covered the forest of Northuldra (located just beyond the border of Arendelle) since the inhabitants of both angered the elemental spirits of fire, Your Holiday Office Party! lands earth, water, and wind. With a little help from one of these elements, our heroes find themselves plunged into the mist, and their adventure truly begins. FROZEN II may not carry the same clout, or reach the same creative heights as the original, but it gets the job done. The 2018 2019 2012 2013 animation is absolutely beautiful, showcasing a number of awe-inspiring and dazzling set pieces. Much like the original, Frozen 2 showcased dazzling set pieces out loud moments throughout the duration FROZEN 2, most of which are provided by Olaf. In fact, the pint-sized snowman’s soliloquy on the events that unfurled in the first film was the highlight of the entire sequel. Most importantly, as they did with TANGLED, FROZEN and then in MOANA, Disney has continued to provide strong, independent women as its main protagonists. While Kristoff is there to lend a helping hand in times of peril, he spends most of the sequel trying to propose to Anna. Olaf provides comedic relief and brevity, but it is the sisters who heft dramatic weight. Their journey (and Elsa’s in particular) is the focal point of the story, and this carries enough clot to keep audience members, old and young, thoroughly engaged. MS: I had a plastic guitar and used a vacuum cleaner as a mic stand when I was 5, so it was apparent what I wanted to do. I took piano lessons first, and like most teenagers, I got into the guitar in middle school playing popular rock tunes. CS: Please elaborate on you music history and growth. MS: It’s amazing the path we all take. I played in pickup bands, until I saw the University of Miami jazz band perform at my high school and I’ve been hooked ever since. CS: What brought you to Syracuse? MS: I got the chance to come up to Syracuse performing a few shows and immediately

CS: What are your preferred gear choices? . MS: Musicians are notoriously partisan and I am no different. My preferred guitars and amps are Gibsons, Fenders and Marshalls from 1968 to 1980 and custom shop issued from 1988 to1998. CS: I think you play bass, as well, yes? MS: Yes. Some of the areas best guitarists also play bass and I can’t let them have all the fun. CS: With whom are you working since you arrived to the area? MS: In addition to the Funky Blu Roots I’ve started working in large scale productions like the Ridge Tribute Series, Home Bound Harmonies and the final Beatlecuse, both produced by Paul Davie as well as guesting in some of the area bands. On November 12, 2019 a new streaming giant was unleashed upon the world. With over 10 million users added on the first day, any lingering questions about the viability of Disney Plus were immediately dispelled. Any reservations I had in the months leading up to the release were also dashed, as the lure of a live-action STAR WARS series was far too great for this nerd to handle. I, like many others, had believed that the saturated market that includes Netflix, Hulu, HBO Now, and Amazon was already providing more options than any one person could possibly consume, and throwing another entity into the mix

was simply overkill. I harbored these feelings right up until the moment I signed up for Disney Plus, and cast then cast them aside almost immediately. Much has been made about the bumps in the road that have plagued the first few weeks of the fledgling service. From a system crash in is opening hours, to a few technical issues and glitches that some subscribers have taken umbrage with

(particularly in regards to the widescreen presentation of the THE SIMPSONS), the launch of Disney Plus wasn’t exactly smooth sailing. In my initial experience, however, I (and, more importantly, my children) were enamored with the vast catalog of familiar favorites and engaging originals that are now at our disposal. Though I have thoroughly enjoyed much of the original content created by Netflix, Hulu, and Amazon, Disney Plus provides the opportunity to bask in gleeful nostalgia in a way that none of the aforementioned services can even remotely approach. Aside from the classic films that generations have grown up on (SNOW WHITE AND THE SEVEN DWARVES, PINNOCHIO, 101 DALMATIONS, ROBIN HOOD, ALADDIN, LION KING, etc.) it boasts a bevy series that will delight anyone continued on pg 8

CS: What are some of your better memories regarding your music path? MS: I have had the opportunity to play the New York State Blues Fest twice along with Chenango, Lilac and Alexandria Bay Blues Fests, but Mont Tremblant holds a special place for me. CS: Got any funny war stories clean enough to share? MS: War stories that won’t get me arrested? Ha. When I started gigging out professionally, I had the chance to jam with Prince who was a very gracious, thoughtful guy and a better guitar player than he gets credit for. CS: What is your advice for budding musicians? MS: I realized right off that you will need additional income and resources to exist as a musician. Do your research and decide whether a career in music is the right path for you. Learn to play the piano. That will teach you all you need to know about the fundamentals of music, so whatever instrument you decide to play, the learning will be that much faster, the going that much easier. CS: I know you’re busy. What’s coming down the line for you, musically? MS: We are putting the finishing touches on the new Funky Blu Roots record “Riding The Razors Edge” to be released in 2020. I was invited to play on the Tom Emmi produced segment “Lest We Forget” featuring George Rossi, along with the new Shuffling Hungarians record co-produced by Jeff Moleski at Moletrax Studio, which is also slated for 2020. I will also be making my debut appearance as part of The Great Salt City Blues Fest, a Greg Spencer production to be held at The Palace Theater on December 27th -In conjunction with The Salt City Blues Fest, I will be deckin’ the halls with a Christmas vibe on Channel 3 during the holidays – so tune in. In between, you can catch me at the 443 Social Club on Burnet Avenue with the Revue Review Songwriter’s Series on December 4th with John Cadley and Anna Troy. Disney + continued from pg 6 who, like myself, grew up in the late 80’s, and early 90’s. From a theme song standpoint alone, the ability to summon DUCKTAILS, TAIL SPIN, CHIP AND DALE’S RESCUE RANGERS, and DARKWING DUCK with a simple click of the remote, transports me back to my grandparents’ living room where I would lose myself in the high-octane adventures of these animated crusaders. Other series like GOOF TROOP, GARGOYLES, and X-MEN are all available as well, opening the door for an entirely new generation to discover a method of animation and storytelling Pixar’s short film titled Float that is largely lacking in modern television. Since the release of TOY STORY in 1995 Pixar has stood as one of the most revolutionary studios in cinematic history. This is stunningly apparent when perusing that Pixar catalog that is now available through Disney Plus. Though it is missing recent titles such as INCREDIBLES 2 and TOY STORY 4, the rest of the library is there, and ready to be explored. Displayed in stunning 4K clarity, films like FINDING NEMO, INSIDE OUT, RATATOUILLE and my personal favorite, WALL-E, feel entirely new. If you haven’t seen these films in the highest

definition possible, it’s likely you weren’t able to grasp the inconceivable attention to detail that is contained in each and every frame. Perhaps even more exciting than the prospect of revisiting the feature films, the Pixar Shorts are worth the price of subscription alone. With a catalog of over 40 shorts available, the service presents audiences the ability to discover gems that they never had access to before. From classics such as GERI’S GAME, ONE MAN BAND, and FOR THE BIRDS, to recent masterpieces like PIPER and BAO, these stories are every bit as ingenuitive and brilliant as their feature-length counterparts. Much like its competitors, Disney Plus is also offering a number of new series and films that are only available through their platform. Upon its launch, the most notable of these is THE MANDALORIAN. Set in the STAR WARS world and taking place after the events of RETURN OF THE JEDI, it was created by Jon Favreau and its first three episodes have been every bit as engaging and entertaining as I had hoped. Other original content includes a live action remake of LADY AND THE TRAMP, and a number of Pixar Shorts including the hilarious FORKY ASKS A QUESTION, and the heart-wrenching FLOAT. The launch of Disney Plus could not come at a better time for us here in Central New York. With the promise of snow days and freeze-outs right around the corner, the vast library now available to children and adults alike ensures that there will be no shortage of viewing options available. Aside from everything listed above, you have a number of other STAR WARS titles available, the majority of the Marvel catalog, and a litany of gorgeous and enthralling National Geographic tales just waiting to be discovered. Priced at only $7.00 a month, and boasting the ability to have 7 different profiles with 4 screens simultaneously playing, it’s hard to argue that Disney hasn’t immediately become a major player in the ever-evolving streaming world.

Winter is Coming… … Or perhaps it’s already here. (yay snow and 20-degree temps in mid-November …) Either way, as I was getting ready to write December’s article, I thought about winter, Christmas and had a VERY random passing thought about St. Lucia. (Any Swedes here?) I personally am not Swedish, nor Scandinavian, but during 4th grade (I think it was) we learned all about different Christmas and winter traditions around the world, and for whatever reason, my class project involved the Swedish tradition of St. Lucia’s Day that included wearing a white robe and a crown of evergreens with candles. (Thanks for putting that costume together, Mom!) And those random thoughts naturally led into my thinking about traditional winter beers from that region. (No, I was not drinking in 4th grade … I waited until 7th grade at a slumber party to sneak my first beer, ha!) But, call the thoughts a divine intervention from the heavens above for this month’s article, perhaps even from St. Arnold, the patron saint of hop-picking and brewing! Many years ago, the Norse people & Vikings who occupied the Scandinavian countryside celebrated their own winter solstice traditions and festivals, which comprised of bonfires to ward off evil spirits. Eventually the Norse people were exposed to Christianity and the celebration of St. Lucia was adopted into the winter festivals. Today’s St. Lucia’s Day, on December 13, a “festival of lights”, is comprised of both early Norse pagan traditions and Christianity that is celebrated in Sweden, Norway and Finland. St. Lucia (St. Lucy) was one of the earliest Christian martyrs to be killed for her beliefs in 304 CE by the Romans. St. Lucia was also the patron saint of Syracuse, (Sicily) and of virgins. Just before the actual St. Lucia festival, every town elects a girl or adolescent “St. Lucia,” who parades through each town in the traditional outfit described above as other children follow in procession singing traditional Scandinavian songs. It is meant to bring hope and light during the darkest period of the year. Families also celebrate individually,

having the eldest daughter in each household dress in white and serve coffee, tea, traditional baked goods and sweets to members of her family. In addition to the St. Lucia festival the Scandinavian countries celebrate Christmas and enjoy many good strong “winter” brews to accompany their holiday season during the month of December. Since most Scandinavians are descendants of the Viking and Norse people, they continue to celebrate the pagan traditions that have been accepted into current culture and this includes the brewing of celebratory beers. During the winter months, Vikings in particular brewed a strong and malty beer known as “Jul” or “Yule” (not to be confused with that weird log thing), that they produced as an offering to their Norse gods. One of the most renowned Scandinavian beers is Juleøl, a brew that grew out of the Vikings form of Jul. Juleøl is closely associated with Norway and is touted as a Christmas beer. Juleøl is dark, rich, and strong, even though it only clocks in at about 4.5% ABV. The dark colored beer is from the caramel malts used in the brewing process, with most brews boasting roasted-or spiced-notes on the sweeter side. Kongen Bryghus Julemumme out of Denmark, a seasonal brew at 6.6% is brewed according to a 200-year-old recipe and is associated with all the spices and sweetness associated with the Christmas season. KB Juleøl is brewed in Denmark with an ABV of only 1.7%, but still has tasty roasted caramel notes. Nordlands Juleøl, at 4.5% touts itself as a “modern version” of the Viking version, mahogany in color, and slightly more bitter than a traditional version complete with malty notes of bread, nuts, caramel and toffee, and they suggest pairing this beer with lamb, pork, and fish. Lucky as I would have it, I’ll be getting as close to Scandinavia as Cologne, Germany and Bruges, Belgium at the end of November. I’ll be on the lookout for these beers and I hope that they’re available for me to sample in the regions I’ll be visiting! I also have yet to peruse the aisles of Wegmans in search of these imported goodies. Santangelo’s It’s the most wonderful time of the year to have a great meal at Santangelo’s! I can only describe Santangelo’s in this way: The entrees are mouth watering, the desserts are decadent, and the service is impeccable. Santangelo’s is conveniently located at 673 Old Liverpool Road in Liverpool, a short 5 minute drive from downtown Syracuse and they accept reservations at 315-457-4447. They are open for lunch and dinner Monday through Thursday from 11:30 am to 10 pm, Friday from 11:30 am to 11 pm, and dinner on Saturday from 4 pm to 11 pm and Sunday from 4 pm to 9 pm. We were happy to and I even had enough left come in from the cold into the warm and inviting atmosphere that you can find all year over for lunch the next day (it was fantastic as leftovers). For Kyle’s entree he finally decided on the Shrimp Ala Fina, another gigantic portion of cavatelli piled high with shrimp and broccoli all topped with a seasoned cream sauce. Kyle loved this dish so much he ate every last bite! Although we were full from dinner we just could not pass up one of the delectable Shrimp Ala Fina desserts that Santangelo’s has to offer. I went with my all time favorite, the lemon berry marscapone cake and Kyle delighted in a gigantic piece of homemade carrot cake. I never could quite understand how perfectly they anticipated what I’d want to read next, but I quickly came to trust their judgement. And now, of course, I get a package or two a day and the UPS delivery person and I are best friends. eBay and Match.com were both “born” in 1995, and offered a similar service (that’s a joke, of course …); Craigslist challenged the local Pennysaver as well as the national classifieds in 1996; and that same year Hotmail changed email from an ISP based, paid service to a free web application. And in 1998, Google changed the world as we know it – at least, online. I won’t travel back in time with you the entire 50 websites worth. Some of the sites are still with us, and some have either become obsolete or lost their audience. Forever Orange I recently sat down with longtime sports journalist and author Scott Pitoniak who has a new book out, Forever Orange: The Story of Syracuse University. Scott is an alum of SU and this book is a must for any Orange fan during the holiday season! ML: Scott, you love history, and now you have co-written (with Rick Burton) a book about your alma mater called Forever Orange: The Story of Syracuse University. How special is it to do this considering your love of history and your school? SP: It was a true labor of love because, as you said, I love researching and writing about history and because of the impact SU had on me. Syracuse truly was a place where I blossomed as a student and a person; a place that launched this fivedecade-long story-telling career of mine. Those SU years were some of the best years of my life. I was blessed to make lifelong friends and to learn from some world-renowned professors. To be able to do a deep-dive, and tell the story of this place that’s influenced my life and the lives of countless others was an amazing Crouse College at SU experience.

SP: I’ve been blessed to write more than 25 books, and I’d rank this one near the top. It was an awesome responsibility because you’re writing a book with a quarter-of-a-million alumni in mind. The problem was never about having enough material, but, rather, having too much material. ML: What do you remember most about your days on The Hill and when did you graduate? SP: I graduated in 1977. I remember outstanding professors, such as David Bennett, who took a theatrical approach to teaching American history. Monitoring Your Sugar Intake I was going to write this month about detoxing and I think it is a very important topic. However, I think there is something that is probably just as important and easier for you to discuss with your doctor. That is – measuring your sugar. Not just pricking your finger but checking your glucose level whenever you want … especially after meals so you can see for yourself immediately the effect of the food you have just eaten on your glucose level. I am talking about CGM (continuous glucose monitoring). If you think you have a good diet, if you think you are taking care of yourself, why not prove it to yourself and your health care provider by applying a monitor that can, for 2 weeks: check your blood sugar whenever you want; as often as you want; without having to prick your finger. I don’t think this is just for diabetics either although obviously this is very important for them to really understand the relationship between what they eat and their bodies response. This isn’t the same as checking your insulin level but it is very readily available and easy to understand. If you are diabetic or have metabolic syndrome or are overweight or just wonder about the interaction between the food you eat and your sugar it is finally easy to have this monitored. I am currently recommending this monitoring to every one of my diabetic patients. I also recommend the monitoring to anyone who is curious about their diet and its effects on their health. Do you really think that

peanut butter and jelly sandwiches are healthy? Check your sugar afterwards and see for yourself. Do you really think that ice cream is an innocent treat? See for yourself. If you really think those sodas are not harmful check your sugars after a can and actually measure your own bodies response. There is a continuous glucose monitor called the Freestyle Libre which is inexpensive and often covered by insurance. You apply the sensor to your upper arm and use a monitor to be able to measure your glucose level anytime. The tiny needle in the sensor really is not painful and its much better than pricking your finger. The sensor is pretty durable and can handle showering, etc. Now we have been talking for some time about the so-called closed-loop system where diabetics could have their sugar monitored by this device and then have insulin administered to keep their sugar levels normal. I think this is going to be a disaster. People will eat whatever they want knowing that this system will handle their sugars but it will result in them continued on pg 28

The Madness of Crowds: Gender, Race and Identity The Madness of Crowds: Gender, Race and Identity by Douglas Murray 2019 It’s the best testimony to the power of Murray’s thesis in this thoughtful and thought-provoking book that I write this review tentatively. “We are going,” he writes in his introduction, “through a great crowd derangement. In public and in private, both online and off, people are behaving in ways that are increasingly irrational, feverish, herd-like and simply unpleasant.” Haven’t we all read or seen something on the news, or just driving down the road, that evokes the “what the heck was that?” reaction in us – and generally speaking, most of us prefer to not be part of the crazy. But it’s the second part of Murray’s thesis that is increasingly inescapable: the “derangement” seems to touch most of our lives, directly or indirectly, all the time. We must deal with it, no matter where we fall on the spectrum of right to left, conservative to liberal, young to old, this to that. The purpose of his book is to explore why this is happening, and what, if anything, any individual or group can do about it other than endure. And, most confoundingly, if there is anything we should do – is it possible to find the “right” answers? In a way, Murray has taken a stand in the simple act of decrying it. It might be supposed that there are individuals who like the conflict, or feel that the time has come

to, as one group insists, “Resist.” And anyone who’s a student of history will agree that there have been times when, even if only in retrospect, it was necessary to rebel or fight back against a “sea of troubles.” Murray would prefer to understand it, and in understanding, perhaps find ways to reach if not agreement, then at least peaceable co-existence. One by one the narratives we had were refuted, became unpopular to defend or impossible to sustain.” Religion, family, politics, nationalism, social order – one by one the things that we took for granted fell away, leaving a vacuum into which new “ideas began to creep.” “When you believe in nothing, you’ll fall for anything.” (variously ascribed) One element that is new and that has added jet fuel to the “creeping” is, of course, the computer and the Internet. I’m reminded of the printing press and how it added tinder to the fire of the Reformation – a change that swept the Catholic Church from the centerpiece of the home, town, art, architecture, language, even the calendar, and replaced it with a splintered approach to life and eventually a reliance upon science and “the Enlightenment” for Truth. Our instant, many-to-many communication style has certainly resulted in the current struggle for cultural control seeming more important, if not actually making it so. Murray divides his book into four primary “crowds” of dissonance: Gay, Women, Race, Trans, with a reflection in between each section.

On the topic of “Gay,” Murray deals with such issues as the actual numbers (how many people are distinctly and singularly gay?), hardware vs. software (are you born that way, or programmed that way, or perhaps some of each?), once gay was accepted as an open option was the continuation of the battle needed (political driver, marriage, parenthood, praise?). Or perhaps gay isn’t as accepted as we’d like to think? In his first reflection, he considers the political forces behind our current way of thinking, delves into Post-Modernism in the classroom, and calls out Marxism as one powerful source of our discontent. A central tenet of Marxism is that an imbalance of power will result in exploitation, and an imbalance in power is a basic evil to be defeated. His argument suggests that if we are all convinced that we belong to some group that has been exploited in one way or another, we will want to crash the system that has allowed it. His section on “Women” is equally challenging. What is a woman? Is it merely the physical, or something unique to the experience of that physical being? How do we reconcile the blatant sexuality that has gone far beyond the “bullet bra” of the 50’s to the apparent current demand that a woman be able to “lap dance before … any man she chooses … then change the game completely.” If it is true, as IMF head Christine Lagarde has said, that “if it had been the Lehman Sisters rather than the Lehman Brothers, the world might well look a lot different today,” then does that mean women are not the equal of men but their betters? And what about the aims of the various waves of feminism: once women could vote, live alone, and earn competitively, was there really another mountain to climb, or is occupying the control center the real aim of modern feminism? And, if so, is it not only fair that those who once were merely passengers get a chance behind the wheel of social order? His next interlude addresses the idea I mentioned early in this review: the impact of Tech on what we think, why we think it, and even how we think. He warns that just because it’s technologically delivered doesn’t mean that an idea isn’t biased – deliberately or because the AI has been taught to “think that way.” He addresses the fact that we have a world of information in our hands at all times, yet perhaps lack the ability to be discerning in ingesting it, careful about trusting it, and falling for our own natural propensity for confirmation bias. “Race” is yet another problem many had thought we’d put to rest when a generation grew up working hard to see beyond the color of skin and into the “content of character,” yet which remains a problem because, as he quotes one professor, “white people who

are avowedly anti-racist may still be racist. It is just that they are racist in ways that they have not yet realized.” He contends with the question of whether or not the race question can ever be fully settled to everyone’s satisfaction, whether it’s a “hardware or software” issue, and whether it’s been adopted as a political football to keep tossing around to determine advantage and “right-think.” Can someone who has lived as a person of one race even understand how it would feel to be another, and make just evaluation of the situation? Murray’s next interlude is perhaps his most powerful: Forgiveness. He writes: “… we have allowed ourselves no mechanisms for getting out of the situation technology has landed us in. It appears able to cause catastrophes but not to heal them, to wound but not to remedy.” Technology, he said, has allowed for the “pure gold for a network addicted to shaming and schadenfreude. We all know the glee at watching someone fall from grace; the righteous feeling that can come with joining in the punishment of a transgressor.” With the unmovable memory of the Internet, and the joint disdain of millions who “see” our errors, any hope for our sins being erased is lost – especially when continued on pg 43

Monitoring Your Sugar Intake continued from pg 24 getting much more insulin and, as you know, I believe that excess insulin leads to heart disease, dementia, generalized inflammation, arthritis, increasing cancer risk, etc. So I do not think treating your elevated sugar with insulin is the best option. Of course here I am talking about type II diabetics type. Type I diabetics are dependent on insulin. They are much less common and this is not the article for them although obviously monitoring their sugars are very very important for them and this sensor will apply to them as well. I have just ordered the system for myself because I am curious as to what really happens when I have my pork fried rice for lunch and whether my late night pretzel snacking is raising my sugars or not. Also I am curious as to how low my sugar will go during the long periods when I do not eat. What effect will sauna use have on my sugars? What effect will strenuous exercise have on my levels? All of these questions I will soon have an answer to … once I get past my insurance company. For me this is just intellectual curiosity but for you, if you are diabetic or prediabetic, it may affect how you eat, what you eat, the dosing of your medications, etc. If you are overweight and you wonder whether your current diet is really the best for you you can measure your sugar levels. You can have instantaneous reliable and reproducible answers. This is not magic. This is nothing particularly new. This device has been around for months now and every primary care doctor should be familiar with it and be recommending it. I never understand why more patients do not ask me for this device. It’s your health … you should be and can be in the driver’s seat in terms of monitoring your health and this is one more device to assist you. Go – partner with your health care provider to improve your health one measurement at a time! Until next month … Get well … Stay well. P.S. But with a few tools and a bit of planning, you can breeze through the holiday season like an entertaining pro. Janice Mondavi knows this all too well. As a mother of four girls and a member of the iconic C. Mondavi wine family, Janice hosts her large, extended family throughout the holidays. She gets through the season by keeping some go-to recipes on hand and a few quick tips for the perfect wine pairing. Janice’s go-to’s include her favorite roast recipes and easy, no-nonsense wine pairings. She finds that roasts and steak recipes feed her large family without breaking the bank. Her favorite holiday recipe is the family’s “Steak Sliced Thin” New York Strip Steak recipe that was created by Rosa Mondavi, the wife of Cesare and the family matriarch who started the Mondavi wine legacy in the Napa Valley in 1943. When pairing wines, Janice says it’s all about pairing similar flavors together. For instance, Janice pairs sweet wines with spicy foods, simple fare with lighter wines, and bold flavors together. She also points out that rules are made to be broken, even with wine. “Wine is simply a matter of personal preference and sometimes it’s fun to mix things up, especially during the holidays,” she adds. Some people prefer to pair opposite flavors together, and will pair a dry, acidic wine with a rich creamy sauce. Olive Oil - Steak seasoning (The Mondavis prefer a simple seasoning of oregano, salt and pepper)

Directions: Pound both sides of the steak slices until they are somewhat thin. Season each slice with oregano, salt and pepper (or your steak seasoning of choice). Set aside. Slice the cloves of garlic. Heat 2 tbsp. of the olive oil in a frying pan on very low heat. Add the garlic and sauté for a minute or so. Be sure not to burn the garlic slices. Add the wine and cook until the wine has evaporated. Turn up the heat to medium and begin to sauté the steak slices for about 2 minutes on each side for medium rare, a bit longer if you like your meat well done. Place on a serving platter and pour the excess sauce on top. Serve hot with any of your favorite side dishes.

Even if you only have the time to fit in twenty minutes a day, it’s better than doing nothing at all. • Be active with family and friends. Sedentary activities, such as sitting on the couch, are common holiday traditions for many families. When this is accompanied by eating excessive amounts of food it’s a recipe for disaster. Get out and do seasonal activities the whole family can enjoy. • Learn to manage stress. Stress associated with the holidays can be a huge trigger for people with little or no self-control. Make sure you carve out some time for an activity that helps you relax each day. • Watch your portion sizes. When the holidays arrive, it can be easy to overload your plate. Those who eat larger portions tend to gain weight more easily than those who do not. The best way to overcome this is to control portion sizes or use smaller plates. Remember to eat mindfully, chew slowly and thoroughly, and minimize distractions. • Draw the line. During the holiday season, many people have an “I’ll start tomorrow” mentality, which can end up prolonging unhealthy habits. If you’re serious about controlling your weight, it may be helpful to draw the line, set limits for yourself, and stick to your goals regarding food intake.

Don’t hold your breath while measuring. • Check the number on the tape measure right after you exhale. For your best health, your waist should be less than 40 inches around for men, and less than 35 inches for women. If it’s larger than that, you will most likely need to consume fewer calories and get to the gym more often!

Taxi Drivers & Fairness In the mid 1960’s I went to work for the Western Union Telegraph Company in Syracuse. City Taxi, located just around the corner was our after-hour agency. As such, I made many friends in the taxi business. In the 1970’s I decided it would be a great idea to get a taxi license. I have worked off and on in the business for nearly 50 years. There is sad irony associated with the taxi business. It is work that requires healthy, intelligent, mentally agile, kind and good people. I have known hundreds of drivers over the years and, with exceptions actually less than in most other professions, these qualities have always held true. Yet for some undefinable reason taxi drivers are viewed in a light that does not measure up to who they are. I have heard little discussion about the scope of their plight and the damage done to their businesses, careers and

Syracuse City Taxi families. Some really good people and reputable companies are affected by the retention of many policies that in the age of Uber and Lyft are genuinely unfair and obsolete. I thought I would write about this as the unfairness is just wrong. The taxi licensing bureau cannot tell you why this regulatory disparity exists between local taxis and ride sharing companies such as Uber and Lyft. As well those in charge of costly police oversight that applies only to taxis cannot honorably explain their mission. They should be particularly concerned as they are required to enforce one law for taxis and another for ride sharing company’s which are simply taxis. No one can explain why this has not been addressed. Drivers and taxi companies have made city hall very aware yet there is still no champion. I cannot help but wonder: What if a private police force or a private fire-fighting company came to Syracuse, taking jobs and leaving remaining local fire and police buried in regulation that does not apply to the interlopers? I think this would be addressed with fervor and fairness would quickly apply including all forms of compensation for losses. This is why I wrote the first paragraph as it is. No one seems to think taxi drivers are that important. In view of the

grave wrongs in place the taxi profession should not just be listened to, but heard. It is my hope that elected official will agree that this nearly powerless group has been left behind. No effective effort has been made by any city officials to pursue new, equal and fair regulation in keeping with the authorization of these ride sharing companies in Syracuse. The city retains a licensing bureau where local taxi drivers are required to secure or annually renew a costly taxi license. Accumulated costs are about $300.00 plus renewal fees with serious unalterable, regardless of circumstance, exorbitant late fees. I queried the licensing section and was advised late fees are fixed and unalterable even if you are one day late and regardless of the validity of your reason. This is simply cruel enforcement especially considering you must apply two weeks before your license expires. That attitude in itself is reflective of how cab drivers have been treated in Syracuse. Taxi’s are subject to costly registration fees and annual rigid inspections with requirements that Uber and Lyft don’t have. Apparently, Uber and Lyft have shown these requirements not to be necessary and to be unfair burdens on local drivers and companies. Syracuse taxi drivers are subjected to stringent policies that ride sharing drivers are not. Drivers must pay a $50.00 fee for their license. Renewal is $50.00 annually, plus photos and needed physical updating. If you do not apply for renewal 10 days in advance you are charged an additional $25.00. No variables even if you have good reason. They do this because they can. Syracuse taxi drivers must pay for and be fingerprinted, and they must pay for and secure a physical signed by a doctor. They must pay for and secure photos. Local drivers must have a Class E chauffeur’s license endorsement on their driver’s license. This makes it legal to carry up to 15 passengers and drive vehicles up to continued on pg 42

My Mind To Yours

Listening To Ourselves Long ago and not so far away, I heard someone in a support group say that people often say the things that they need to hear. Writer Flannery O’Connor wrote, “I don’t know what I think until I read what I say.” In a recent interview on “Q,” a Canadian show broadcast on WRVO, British musician Peter Townshend stated that, following his recovery from drinking too much alcohol, he found it difficult to create. “The Artist’s Way,” by Julia Cameron, helped Townshend to tap into himself again. Shortly after “The Artist’s Way’s” publication in 1992, an acquaintance suggested I read the book; I did and for a brief time, I attempted Ms. Cameron’s

basic recipe: for twelve weeks, one should quickly write three longhand pages every morning and then discard those pages. I worked full time so writing every morning would require me to get up earlier and I didn’t want to. Also, the idea that I should commit three pages of work to paper only to toss it seemed wasteful. I suppose, and I suppose I should read the book again, that writing three longhand pages was itself intended to push someone past not writing. Ms. Cameron suggested daily writing overcomes “blurts.” My take: blurts are the negative self-talk that trap people stuck in self-destructive neurochemically-wired patterns associated with depression and related issues.

I have an inner critic who tells me both to not write and then, to not toss out anything I do write. (Toss out?) Epiphany here: as I write these words, I am suddenly aware that it was in the early 1990’s that I first sought therapy only to be told I was in denial and unwilling to deal with my issues. That is a crazymaking observation for a person seeking therapy to deal with her issues to hear from her therapist. Around that time, I journaled when I could, in notebooks, sometimes using my non-dominant left hand to write, because yet another writer, John Bradshaw advised in his 1988 “Healing the Shame that Binds You,” that writing with the non-dominant hand opens up neural pathways in the brain. Bradshaw suggested that writing affirmations with the non-dominant hand might override early negative learning. Now, as I write these words, the religious song “Oh Come Oh Come Emmanuel” has started playing in my head. Long ago, I would sing “… Emmanuel” to myself while imagining falling snow and windows lighted against the dark. “… Emmanuel” does seem to connect to and flow naturally from the subject matter I’m writing about right now: thoughts, thoughts committed to paper, and personal history. I share with Julia Cameron and John Bradshaw a Roman Catholic upbringing and a journey into recovery. Anyway, who is this Emmanuel whom we’re calling to help us? The Hebrew translation of “Emmanuel” is “God is with us.” Some people might believe Emmanuel is a person who was once here and might again return. Others might see Emmanuel as a personal or collective higher power or a connection to that power. I know what I believe. It’s not my job to convince anyone of anything.

I believe most personal growth involves challenging overlapping physical, emotional, mental and substance, including food, issues. Many issues stem from trauma. Trauma requires a multifaceted individualized response. Healing takes time. Today, I do discard much of what I write. When, too late, I find typos or confusing wording in writing intended for someone else to read, I feel anxious and I tell myself that I should never write again. And, then I write again. From the moment the first writers scratched the first symbols or words onto papyrus or a cave wall, readers have ignored, disagreed with, and “tossed” what they read. In Table Hopping’s “My Mind to Yours” column, I’ve written about my brain, the brain, and the 2009 NIH Human Connectome Project whose purpose was to map the neural pathways that wire all human brains. I just read Harvard Professor Anne Harrington’s “Mind Fixers,” a history of “Psychiatry’s Troubled Search for The Biology of Mental Illness.” Professor Harrington’s chapter “False Dawn” reports divisions between the American Psychiatric Association’s DSM-V diagnoses and strictly biology-based neuroscience. Neither fields, alone, have lessened human suffering. And, how can scientific method account for all individual circumstances and experiences? Many ideological groups suggest the cure for troubled minds is stronger faith in God, in authority, and sometimes, in the practice of listing and discussing one’s flaws with clergy or other authority. Some faith-based groups are more likely to speak the language of “tough love.” Love should not feel tough to either the subject or the object. Happy solstice. Peace on earth.

It takes four to six weeks to acquire a license including license section processing time, and that is providing you can get a timely physical scheduled. Ride sharing companies do not require a physical, they do not charge a license fee and a renewal fee and late fee, they do not require a chauffeur’s endorsement, they do not charge for fingerprinting and their vehicles are not inspected. -(A 10-year-old vehicle with pictures suffices). Ride sharing companies are not required to carry a taxi license as are local taxis. They have no city licensing section and they are not regulated by the Syracuse Police Taxi Section with zeal in which taxi drivers and companies are. Uber is a far more dangerous venture for the public yet they exist with far less (almost no) local oversight. There is virtually no local human participation outside of the driver that views

local taxis and enforcing stringent regulation on them, while ride sharing drivers and companies go barely noticed. You will find the ride sharing companies receive almost no scrutiny while taxis have always been required to meet stringent standards with stringent oversight including inspections and ticketing and licensing. Only by carefully reviewing and coming to understand current oversight in both of the city and police oversight sections can you get a picture of the extraordinary unfair disparities between Syracuse taxis and Uber and Lyft taxis. I strongly urge the Mayor and the Common Council to secure in writing from independent drivers and local companies a list of the disparities and unfair application of oversight that applies. New regulation could be drafted from this vital information (which will closely parallel this article). I also urge a review of city regulation that governs unexpected loss of work and

I don’t know how else unknown criminal and safety patterns can be identified. For fairness to be, the entire taxi license section and their duties must be reviewed and compared to Uber and Lyft. The Syracuse Police Department Taxi Section should be completely reviewed as well. Such comparative review would show these to be total redundancies applying to taxis only, and for fairness to prevail should be closed. The Police Taxi Section is an obsolete section tasked with unfairly profiling and burdening

careers and perhaps develop recompense for the those in the taxi industry that silently suffer with their lives shattered as a result of ride sharing companies. I say the following from the heart as I already know the intent of this column will be reviewed and respected. City hall —something like Washington D.C.— was poisoned for eight years during the previous administration. A sense of cruelty permeated the hallowed halls each day. It was a sad era and many were unduly harmed. This is a new day. The sun is shining on our great city. True patriots once again walk the hallowed halls of 233 East Washington Street. The course has been reset and the potential under this new leadership is full not just of hope, but hope that will reach fruition. I wish the mayor and his administration the very best in all that they do. -The best to the new Syracuse leadership as you forge our path to the future.

Worse, we cannot really believe what we see with our eyes and hear with our ears, because technology has enabled a lie to live on as a truth. His final “difficult subject” is “Trans.” In spite of what we think, sexual/gender ambiguity isn’t something just invented. Murray goes back to Ovid, and the character Tiresias, who could shift between sexes, and reminds us of the many references throughout time and across cultures to those who are neither this nor that gender, but something in between. He then explores the difference between “intersex,” a biological variant of XX/XY, and the decision to adjust one’s biology to conform to one’s sense of oneself. Red Pepper Cranberry Sauce: 1 tablespoon olive oil 2 medium red bell peppers, finely diced 1 cup red wine 1/4 cup red wine vinegar 1/3 cup white sugar 2 teaspoons yellow mustard seeds 6 tablespoons dried cranberries 6 tablespoons dried currants 1/4 teaspoon salt

Roast:

butcher’s twine Omaha Steaks chateaubriand roast (2 lbs) 2tbs, plus 2 tsp, canola oil, divided Omaha Steaks Private Reserve Rub 1

Directions

To make roast: Heat oven to 250 F. Using butcher’s twine, tie roast to maintain shape. Coat all sides with 2 tablespoons canola oil and season with rub. In medium skillet, heat remaining oil. Sear all sides of roast 2 minutes each. Place roast in roasting pan and bake 1 hour, 30 minutes. To make Red Pepper Cranberry Sauce: Heat medium skillet on medium-high heat. Add olive oil and diced red pepper; saute 3-5 minutes. Add red wine, red wine vinegar, sugar, mustard seeds, cranberries, currants and salt. Bring mixture to boil then turn temperature to low and simmer 20 minutes, or until liquid is mostly evaporated and thickened. Top each serving of roast with Red Pepper Cranberry Sauce. Note: Mostarda can be made up to 3 days in advance.
