WE ARE SO lucky to be in the

season of dizzying choices of veggies and fruits that comprise all the colours of the rainbow. Eating across all these shades provides us with a varied diet and a multitude of nutrients, adding to what is also a feast for our eyes! Liven up your weekly rotation with these eye-popping, colourful recipes!

Shaved Brussels Sprout Salad Apples, shaved Brussels sprouts, toasted pecans and pecorino, combine to make a crunchy, colourful salad. This salad is great on its own for lunch, or add a protein of your choosing for a main meal.

Dressing 3 tbsp. apple cider vinegar 2 tbsp. olive oil 2 tsp. honey ¼ c. fresh dill, chopped ½ tsp. kosher salt ½ tsp. black pepper a pinch of yellow mustard seed

Whisk together and set aside.

Salad 16 Brussels sprouts, outer leaves removed and cut thin 2 red-skinned apples (Ambrosia is a nice crunchy apple, but any apple will work!) 4 tbsp. toasted and chopped pecans 2 tbsp. toasted pepitas ½ c. grated pecorino cheese

The pepitas take six to eight minutes, so pull those out first and then finish toasting the pecans because they take eight to 10 minutes. Once out of the oven, set aside to cool. In a large bowl, combine all the above ingredients, toss to coat the salad with the dressing and dive in!

To toast the nuts and seeds, preheat oven to 350°F and line a baking sheet with two separate pieces of parchment paper: one piece of parchment for the pecans and one piece for the pepitas.

Raspberry & Mango Coconut Yogurt Pops Here’s a colourful, creamy, fruity summer treat that’s easy to make and can be done with either fresh or frozen fruit. 1 c. fresh or frozen mango 1 c. fresh or frozen strawberries 5 tbsp. vanilla sugar, split in half 1 can of coconut milk 1 500g of full-fat Greek yogurt Popsicle mould and sticks

In a bowl, combine the yogurt and coconut milk, whisk until smooth. Set aside. Take two medium saucepans and put strawberries in one, mango in the other. Add half the vanilla sugar to each saucepan. (Note: if you are working with fresh fruit, add about a tablespoon of water just to start macerating the fruit.) Over medium heat, cook these mixtures for five to seven minutes until the fruit has started breaking down and the mixture looks jammy. Remove the pans from the heat. Split the coconut milk & yogurt mixture between the two pans. Stir to combine. Fill up the popsicle moulds and freeze for at least four hours. These will keep for up to a month in the freezer. Each pan with fruit, yogurt and coconut milk should make six popsicles. No worries if you have a bit left over; it is delicious with a bit of granola or just on its own!

Blueberry & Biscoff Blondies The combination of the cinnamon flavour of the Biscoff spread combined with the tart pop of blueberries makes this snacking cake a “not-too-sweet” indulgence. ½ c. butter ½ c. brown sugar 3 tbsp. Biscoff spread 1 tsp. vanilla 1 egg yolk 1 c. all-purpose flour ½ tsp. baking soda ½ tsp. kosher salt ½ c. fresh blueberries, tossed in ½ tsp. cornstarch 6-7 Biscoff cookies, coarsely crumbled

Preheat the oven to 350°F. Line an 8x8-inch baking dish with parchment paper, spraying the sides to ensure easy removal of your blondies. In the bowl of a stand mixer, cream together the butter and the brown sugar. Add in the egg yolk, the cookie spread and the vanilla. Mix to combine. Add in the flour, baking soda and salt, lightly mix. Remove the bowl from the stand mixer and gently stir in the blueberries.

Press the batter into the prepared baking pan using slightly wet fingertips. Crumble the cookies over top and bake for 25–27 minutes. Let cool in the pan for 1 hour before slicing.

Sugar Cookies Sugar cookies are not only tasty; they also have great versatility for flavour change-ups. Sprinkles are always a great addition, but what about freeze-dried fruit or black sesame seeds. The possibilities are endless! 1 ½ c. all-purpose flour 1 tsp. cream of tartar ½ tsp. baking soda ½ tsp. kosher salt ½ c. butter, room temperature ¾ c. granulated sugar 1 tsp. vanilla bean paste or extract 1 egg 2 tbsp. freeze-dried raspberries, crushed to a powder 2 tbsp. freeze-dried blueberries, same as above 2 tbsp. black sesame seeds

Preheat the oven to 400°F. Line two baking sheets with parchment paper and set aside. In the bowl of a stand mixer, cream together the butter and sugar. Add in the egg and the vanilla and mix to combine. Add in the flour, cream of tartar, baking soda, and salt. Mix to combine. Using a cookie scoop, turn your dough into cookie dough balls and then roll the dough balls in one of the three toppings above. Bake the cookies for eight to 10 minutes and let cool completely.

Herb Drizzle with Roasted Beets Honestly this herb drizzle would add a hit of fresh, herby goodness to any vegetable or protein. It would even be delicious as a dip with a fresh baguette. ½ tsp. kosher salt ¼ tsp. black pepper pinch of red pepper flakes pinch of sumac ¼ c. olive oil 2 tbsp. red wine vinegar ½ c. fresh parsley 1 tbsp. fresh oregano 1 small shallot

In a food processor, add all the ingredients together and process to combine. This is best served day of, but it will keep in the fridge for up to a week. Bring it up to room temperature before serving, so the olive oil is back to a liquid.

To roast the beets Preheat the oven to 375°F. Set a sheet pan aside. 10–12 small–medium Golden beets

Trim the ends off, vegetable peel the skins off. Toss the prepared beets in olive oil and wrap three to four at a time in a tinfoil packet. Back for one hour, or until you can easily pierce the beet with a sharp knife. Let them cool slightly and then slice. Drizzle the beets with the herb sauce and any additional protein you might want to add. Dig in and enjoy!

of ingenuity to get out of trouble. Credit science, for instance, which helped mitigate the deadly effects of the pandemic of late. It also helps to be creative, a trait that the Pantone Colour Institute holds to heart, resulting in the concoction of a totally original shade.

This blend of blue, violet, and red answers to catalogue number 17-3938, better known as Veri Peri. According to Pantone, the melded shade is a response to society finally moving from isolation to interaction. “Creating a new colour for the first time in the history of our Pantone Colour of the Year educational colour program reflects the global innovation and transformation taking place,” said Laurie Pressman, the company’s vice president. Pantone also revealed Veri Peri was inspired by digital art, particularly in gaming. Expect a few other products, including what’s in this visual spread, to pick up this baton. t8n

The symbolic significance of Father Lacombe Chapel 1861

DECADES BEFORE SOCIAL jus-

tice warriors made “inclusion” an anthemic buzzword to bandy about, folks from diverse backgrounds put that credo to good use by creating a structure that remains the province’s oldest surviving building. But the result of their efforts, the Father Lacombe Chapel, is far more than an enduring edifice, it’s a symbolic hub of the St. Albert community that saw a tiny hamlet grow over the years to become Alberta’s fifth-largest city. Modest in its construction, but highly utilitarian, the chapel and its history are worth documenting to reflect the essence of what is now one of Canada’s most prosperous urban centres. 34

After years of working in what is now western Canada, Quebec native and Catholic priest Albert Lacombe saw the possibilities of what his faith could do to help unite the local Blackfoot, Cree, Métis and a few newly-arrived settlers. To that end, in January, he convinced his boss, Bishop Alexander Tache that a chapel be built on the mission’s grounds, located on a hill overlooking the Sturgeon River. Lacombe enlisted the services of a few Métis workers from Lac Ste. Anne to build a chapel, using spruce logs and a construction technique previously used in the Red River settlement called “post on sill.” It involved cutting slits into the vertical columns of the frame to accommodate the horizontal log walls and pegs needed to hold the pieces in place. Because of the ingenuity, the chapel— designed to be broken down and reassembled for relocation purposes— was completed in 10 days. The building, measuring roughly 35 feet long and 30 feet wide, served not only as a chapel but a residence for Lacombe, until the following year when a place was built for him.

1864 Because the community surrounding the chapel was growing, the place was starting to get a bit cramped. That’s when Lacombe hired a group of gold miners working on sluices on the banks of the North Saskatchewan River to build an addition to the structure. That section apparently didn’t last very long, as historical records are very ambiguous on its dimensions.

1870 Bishop Vital-Justin Grandin, who arrived at the St. Albert mission in 1868, took over most duties previously under the domain of Lacombe, who by now was spending more time travelling the prairies to settle disputes between the Blackfoot and Cree. With the settlement’s population reaching 1,000, Grandin decided to build a larger church bearing his name on the same ground occupied by the Lacombe chapel. The chapel was moved elsewhere on the mission site and was used as a facility to store grain, machinery and supplies. Years later, the building itself was taken apart and put into storage.

1927–1929 As part of a promise by a local committee to honour Lacombe (who passed away in 1916), by creating a statue, it

was also decided that the original chapel be reassembled and preserved as a museum. However, that task was easier said than done, as much of the wood had deteriorated over time, especially on the butt ends of the logs that joined the other vertical spruce columns. Workers wound up replacing about 40 percent of the original wood. To further preserve the chapel, crews designed and built a protective brick shell around the building, with a perimeter walkway spanning roughly three feet between the shell and the original building exterior. Inside, the museum included artefacts and furnishings from the time Lacombe administered his duties at the chapel as well as several personal items used by the priest.

1969–1972 The chapel undergoes more restorations after the museum contents are further updated and catalogued. These upgrades lead to the changing of the building’s name from Musée Lacombe Museum to the Father Lacombe Museum and the formation of the Father Lacombe Museum Board in 1971. The following year, the board is incorporated as the St. Albert Historical Society with an even larger mandate to not only heighten the profile of the chapel’s spiritual significance in the region but also increase awareness of the city’s history.

tend to conjure an unforgettable feeling, one already known to those who have soaked in the fresh air and landscapes outside Alberta’s cities. It’s a sentiment shared by Liz Poburan, co-owner of the ranch. “The sky over the ranch has been likened to a dome of peace,” she says. “We feel that the peace you feel here is real and keeps people coming back for more.” Images courtesy Putting Horse Ranch

What draws folks to the ranch, two km north of Spruce Grove and a 22-minute drive from St. Albert, is an 85-acre, all-season oasis hosting a variety of leisurely outdoor activities. Several of these activities involve the company of their horses, of which they currently have 18, including wagon or sleigh rides (depending on the season), horseback trail-riding along the banks of the picturesque Atim Creek, riding lessons and the chance for children of all ages to interact with the horses. With more than 30 years of raising horses under the Poburan’s belt, the couple decided to expand the ranch into a public place for leisurely visits. “We chose to develop our property into a place for people to come to for company events and golf, which is perfect for them to have fun together,” adds Liz. “After we had run the putting course for several years and when the three holes of golf was being created, we added on the fenced trail out front at the corrals. That has been great for teaching lessons as well as taking first-time riders out.” Those who enjoy connecting with the earth and reaping nature’s harvest to bring back home might instead benefit from a garden plot rental. Irrigates plots six feet wide and 60 feet long are available for planting by novice and experienced gardeners alike. The result is a mini-vacation retreat of sorts, with the ranch offering patrons the chance to recharge their proverbial batteries in a natural setting close to home. “The property lies right under a major flight path for all migratory birds, and we see thousands upon thousands overhead every spring and fall,” says Liz, adding that visitors might even see red-tailed hawks, deer, moose, muskrats, beavers, squirrels, muskrats and even moose. All that wildlife resides on a property that acknowledges its existence on Treaty 6 territory, recognizing the diverse heritage of Indigenous nations that used to gather in the region. Some of the ranch’s customers prefer to walk around the premises or take advantage of a romantic horse-led carriage ride. Paired with three holes of golf, couples tend to book the excursion as a full date-night package. For larger gatherings like families and companies, the ranch offers a wide variety of group rates. In particular, corporations have sought out the ranch facilities for team-building events, including golf, meetings and

banquets in a barn able to pack 150 people. There, visitors can get together for post-golf festivities and a home-cooked meal with a diverse menu that includes fresh garden vegetables grown right on the property. Smaller groups can take advantage of several relaxation spots, from paved stone patios to fire pit areas near the ponds and golf course. Also open is a clubhouse barbecue concession with a licensed patio. “We have had many tournaments that have become annual events for many groups loving this place,” says Liz, “Horse rides for the children at the corrals or wagon rides for groups while the tournaments are going on keep everyone engaged and happy.” Birthdays are also popular at all times of the year, even during the winter, a time when patrons booking the premises have access to horse-drawn sleighs gliding over the snow. A postride get-together around a bonfire with hot dogs, marshmallows and hot cocoa to help stay warm would be particularly satisfying in Alberta’s colder months. Regardless of what time of year people head to Putting Horse Ranch, the proverbial dome of peace hovers above to accentuate the revelry. t8n

New Operator Same Family Focus

St. Albert Sobeys

hris Bartucci’s success in retail is proof that you can go home again. And to the longtime St. Albert resident, who previously lived in Calgary for five years, home possesses a double meaning. For openers, it’s where he occupies a humble abode in the city with his wife and three daughters. Then there’s the Sobeys grocery store in Mission Plaza, where he spent much of his adult professional life, a place that he and his family are the proud franchise owner operators. The front signage might display the Sobeys signature text that has become a familiar logo to shoppers, but as far as Bartucci is concerned, it’s every bit a part of the city and his life. “I grew up in St. Albert,” he said. “Granted, Sobeys Inc. is national chain, but it’s also a local, family-owned/operated franchise location” Having that family mindset means that Bartucci is frequently visible around the place, performing tasks alongside the 140 teammates working at the store. “You name it,” he said about his daily itinerary. “I do everything from working on the floor in produce and working in the meat department to stocking some shelves. I kind of do everything with the crew.”

Working in the store is his way of demonstrating how much he cares about the grocery outlet, which he says possesses the same community-minded attitude as the rest of the city. “It still has a small-town feel, but is close to the larger centres. It’s a great place to raise a family. I still have lots of friends here, and my whole life has been here. It’s just got that community spirit.” Bartucci began working at the St. Albert store as a grocery bagger in 1999. He worked his way up through the company until he landed a position helping run operations from the Edmonton head office. In 2015, Bartucci was transferred to Calgary, where the headquarters relocated after its parent corporation, Empire Company Limited, purchased the Safeway chain. Five years later, Bartucci moved back to St. Albert helping lead the Retail Operations Teams in the Edmonton area, where he learned about the franchise opportunity of the St Albert Sobeys store at Mission Plaza. He and his wife excitedly reviewed the opportunity and by October were the proud Franchise Operators of the store. “It kind of made a lot of sense after moving back up to St. Albert,” Bartucci said. “It’s where it all started, when I was approached, I knew right away that this was a

fantastic opportunity for my family’s path and to get involved to help support the Community.” This store has very strong beliefs and dedication about supporting the St. Albert community. Sobeys St. Albert regularly donates to the local food bank and is active in supporting and helping to promote the local community organizations and initiatives throughout the year. During the winter months you may just happen to bump into Chris and his family at a local rink supporting his daughter’s passionate interest of ringette. In a way, he now has a hand in two families: one that he’s raising with his wife, the other he owns while working with caring individuals who share his commitment to having the freshest product with excellent value and amazing customer service. That said, the novelty of owning a local Sobeys hasn’t worn off on his children. “My daughters think it’s cool that pop owns a grocery store,” he laughed.

There’s a ton of trails to choose from, for nature newbies and experienced outdoor folk. While there are several more that could have been included, here’s a rundown of some of the more popular and unique spots to hike.

Voyager Park Located near Devon is a 6.8 km. trail that even newbies can trek although it might help to take things slow. One of the more difficult spots is the stairs at the east end of the park that can pose a challenge for less seasoned hikers. A jaunt through the river valley paths is guaranteed to take half a day.

William Hawrelak Park Edmonton River Valley

MacTaggart Sanctuary

Even if you dedicate a summer to hiking in Edmonton’s river valley, it might take a few weekends to cover all of the 160 km of trails that stretch from Anthony Henday Drive in the southwest to Hermitage Park in the northeast. Popular paths within this network walkways include the 3.7-km Riverside Trail, the 8-km. Riverdale-Clover Bar Loop and the 6-km. Walterdale Loop which includes a ride on the 100 Street Funicular.

The deeper you venture into this area via its 2.3-km trail, the harder is to believe you’re still in southwest Edmonton. Donated to the public by philanthropist Sandy MacTaggart, this sanctuary places a priority on ensuring the well-being of the natural surroundings.

Heritage Grove Park Visitors can take their first steps of this network of trails totaling 40 km. and hike to adjacent communities, while taking in the natural surroundings outside the city. At various points of interest, hikers will find a series of outdoor classrooms that document the history and evolution of the area.

Lois Hole Provincial Park Wetlands Trail Located right by St. Albert, this park features nearly 3 km. of trails looping a lake that’s ideal for bird watching. Wooden walkways also take you through the wetlands with the rest of the loop consisting of paved surfaces that are perfect for all skill levels.

Riverside Lot Near the Kingswood neighbourhood at the northern tip of St. Albert and accessible via Poundmaker Road, this is one 6 km. trail meant for the hardier hiker. While the trails can get muddy in bad weather, the payoff is that the pathways aren’t likely to be crowded, making it more likely to watch for larger mammals like moose in the area.

St. Albert River Pathway Both hardy hikers and neophytes can get a lot out of this 16.7 km. set of trails that border the Sturgeon River that run the entire width of St. Albert. Besides promising a view of the river and wildlife taking advantage of the terrain, those who tread these paths can find their way to a number of bordering parks, plus a water park and skateboard facilities.

This park, accessible via Groat Road has one of the easiest and most family-friendly trails with a 3-km. path circumnavigating the lake. The walkway offers a chance to check out local wildlife and passes by the Heritage Amphitheatre and the park pavilion as well as plenty of spots for a picnic after that workout.

Wagner Natural Area The trails in this wildlife conservation spot located a few minutes’ drive east on Hwy 16 are more rustic than most in the region and the volunteer organizers like to keep it that way. The unspoiled surroundings including some wetlands have become ideal homes for plant life from ferns to orchids as well as a wide variety of insects and small animals.

Wood Bison Trail One of the more difficult trails to hike is this 16 km. loop located in Elk Island Park roughly a half hour’s drive east of Edmonton on Hwy 16. But it’s one of the best spots in the region to catch a wide variety of wildlife in the area from bison and elk to deer and a myriad of waterfowl species. t8n

Celebration comeback National Indigenous People’s Day returns after three years

vibe the last time National Indigenous People’s Day celebrations took place in front of a crowd in St. Albert. “My fondest memory was seeing all the love and the laughter and camaraderie and just people having a great time and a great day,” said the First Nations percussionist enterta iner a nd educator. “It was just absolutely beautiful.” That was back in 2019 at the city’s Lion’s Park, where dancers, singers and drummers in full ceremonial shared their ethnic heritages and spirituality to a throng of eager onlookers. Government directives issued during the pandemic the following year had since scuttled the live proceedings. But while variants of COVID-19 remain a going concern, organizer Marc Parent anticipates that this year’s celebrations will still be green-lit to take place Sunday, June 19. 44

“It’ll be a celebration like it was three years ago,” said Parent, the president of the St Albert National Aboriginal Day Celebration Society. “It’ll be a celebration of indigenous and non-indigenous people gathering together, sometimes otherwise they would never gather together.”

that has previously included Inuit throat singers, First Nations drummers and dancers, and Metis musicians resonating across the park, while other participants engage patrons with activities from making dreamcatchers to telling stories about the healing gardens by the Sturgeon River.

Parent was quick to point out that no other day on the calendar provides an opportunity to showcase an event that enables aboriginals to share space with other Canadians. And while the committee is still putting together the affair’s itinerary, he’s pretty confident that the event format will be relatively the same as in previous years.

While the roster might sound packed, the ceremonies stray from a regimented schedule, said Parent. “It’s kind of a different event because it’s very loosely structured,” he added. “One band might play a little longer, one might play a little shorter, that’s kind of the way things roll.”

Traditionally, the event starts at noon with the Grand Entry of 100 dignitaries, followed by speeches from prominent members of the indigenous community as well as politicians from the municipal, provincial and federal governments. The revelry kicks off almost immediately after with an array of entertainment

Previously called National Aboriginal Day, National Indigenous People’s Day first became reality in 1996, when the federal government responded to a request by the Assembly of First Nations to set aside a national holiday to celebrate the accomplishments of its people. They selected June 21 as that day, but given that it’s only a statutory holiday in

the Northwest Territories and the Yukon, indigenous organizations usually select an adjacent weekend for their festivities. While the 2019 running of the event was the last before the onset of COVID19, it also took place on the heels of the final report issued by the National Inquiry into Missing and Murdered Indigenous Women and Girls, a stern indictment of the systemic racism that led to the tragic fate of thousands of aboriginal women in Canada. A march commemorating those women is slated to take place from Lion’s Park before the National Indigenous People’s Day celebrations commence. The indigenous community has also had to come to grips with the grisly discovery of the remains of nearly 1,000 aboriginal children buried on former residential school properties in B.C. and Saskatchewan in 2021 and the simultaneous torching of nearly 50 places of worship across the country, including St. Jean Baptiste Church in nearby Morinville.

Parent believes those incidents indicate that Canadians need to get together for a festive occasion to help all those affected get through those tough times. “It’s been so hard over the last two years, with the Morinville church burning down, and the finding of all those poor kids,” he said. “I just really feel like people just need to get together and dance and sing and drum and pick it up from there.” Arcand, who won an Established Artist award at the Mayor’s Celebration of the Arts in April, believes sharing his culture serves to engage other Canadians by highlighting the more joyous side of indigenous people. “I don’t do it for me; I do it for them,” he said about his motives for entertaining audiences. “I help to show people this is who we are. Seeing the performers light up the eyes of so many people, and the smiles and the amount of love shows respect and honour from the entertainers.” “Those are the people that we’re trying to reach,” added Parent. “We’re trying to give the Inuit, First Nations People, the Métis a safe place to celebrate. A safe place for everybody and turn it into a celebration.” t8n
