19 There is one thing that gets my blood pressure up quick these days and that is when the “tree huggers” start blaming cows for climate change! The whole “climate change” thing gets me too; climate has been changing since the dawn of time but that is another rant for another day! All my life we have known that the burning of fossil fuels; oil, gas, and coal has been a major polluter and cause of greenhouse gases. We know that modern industrialization is responsible for 80% of the earth’s greenhouse gases but now suddenly people with a platform in the media or social media have decided to blame most of our pollution problems on cows. When in all reality cattle produce 2% of the total greenhouse gas produced in North America. Transportation is responsible for 28.5%, electricity production is responsible for 28.4%, industry contributes 21.6%, commercial is 6.4% residential is 5.1% and agricultural crops 4.7%. These same people who blame cows for pollution say that cows are eating up food supplies that could be eaten by humans. In fact, two-thirds of all agricultural land in the world is classified as “marginal” and is not suited for crop production. This means two-thirds of all agricultural land in the world would be wasted if not for animal production. Take this one step further and you will also recognize that forage on these marginal lands captures carbon, which cows consume and only contribute a percentage of that back into
the atmosphere. There has been past research showing that before civilization the land was covered with Buffalo and wild game and that they produced nearly as much methane gas as the modern-day cow herd does, 80% as much. So how is it that cows are suddenly the cause of all our problems? Again, these people up on their high horses, are telling us to eat more plants and less meat… 50% of all fertilizer used in the world is in the form of manure… resulting from animal production. Basically 100% of all fertilizer used in the production of organic foods, which seems to be all the buzz… is manure. The rest of the fertilizer used is manufactured with huge energy consumption. 90% of what a beef cow eats is not fit for humans to consume and it comes from land not fit to produce human edible foods. Plus, cows consume all the bi-products from processing plant-based foods for humans. If it were not for cows, we would have an even bigger methane gas problem in the world from all these bi-products rotting in landfills. Food waste and rotting foods are already a problem in our landfills, one-third of all food produced in the world is wasted, (40% in the USA) of this 82% of all food wasted is non-animal: fruits, vegetables, and grain products. This is a staggering number on its own but then factor in all the energy and resources it took to produce and process that food and you have identified a much bigger problem than cow burps!

At that time, I wished I had been there then, when things were simpler and less hectic. A couple of years ago, I returned to the ranch and witnessed what the ranch had become. It was different now and not in a good way. I realized that I had been

From Insights to Solutions Feeding Quality Forum shares perspective on future demands Story and photos by Morgan Boecker
32 Years of progress in efficiency and genetics may not be enough to satisfy the demands put on cattle producers moving forward. That was the message from speakers at the 2021 Feeding Quality Forum, hosted by Certified Angus Beef (CAB) Aug. 24 to 25 in Fort Collins, Colo. They say there’s more demand for beef than ever, new challenges, too. Sustainability Sustainable beef production was at the forefront of conversations, with a caveat: emotion and science are on equal footing, noted Kim Stackhouse-Lawson, director of AgNext at Colorado State University (CSU). Data concludes beef can be a sustainable product, but often consumers are faced with a polarizing narrative that challenges their values and emotions towards animals. “Emotion wins every time” when it comes to a food brand, she said. “The beef industry still has an incredible story to tell from an impact on a product-produced basis,” she shared. “But we’re starting to lose control of that narrative because overall emissions are still increasing.” Stackhouse-Lawson said livestock’s contribution to total U.S. greenhouse gas emissions (GHG) is only 3.8%. But that’s up 20.7% since 1990. This evolving landscape of customer expectations directs regulatory changes. It’s why JBS joined other beef processing companies and announced a climate goal to reach global Net Zero GHG emissions by 2040. “This wasn’t just an idea on a whim of something that we wanted to do,” said Nikki Richardson, head of communications for JBS USA. “I think that the sky is the limit when it comes to identifying ways to have collaborative projects and things in place where we’re benefiting producers and ultimately getting closer to reach our goal.” The ambitious goal will require working together. For now, Stackhouse-Lawson said cattlemen should focus on land management and improving efficiencies around performance.

Technology gives producers that opportunity, said Justin Sexten, strategic and product lead for Performance Livestock Analytics, a part of Zoetis. When managing more than one pen, not one single animal represents the average, yet decisions are made in groups to increase average performance. From a sustainability perspective, some cattle in a pen may need additional resources. However, in most cases all animals receive the same resources, whether or not they’re needed. “We have to find a way to manage from an individual perspective,” he said. Global Impact Dan Basse, president at AgResource Company, said China’s bout with African Swine Fever reduced that country’s pig population, and therefore more beef moved into the country. This year’s beef exports to China are at 10-year highs, despite exponentially higher costs to get it there. Basse said managing feed costs will be difficult for beef producers. Severe drought challenges in the U.S., Russia, Brazil and Argentina have brought a shortage of corn in the world, even though world corn trade is still strong. “I don’t think corn prices are going back to anything with a sub-five in front of it for the years to come,” Basse said. On the bright side, beef demand is the highest in more than a decade. More disposable income, thanks to COVID-19 relief, means consumers are eating more beef. “The long term for cattle looks really quite extraordinary and bullish for the next couple of years,” he said.

Inking “Real World” for this late fall issue, I find that those of us who live in the real-world producing food for the nation can be frustrated by our political leaders. This past election proved nothing except that the Western Canadian provinces have little to no clout in national economy decisions. As we try to put covid behind us, climate and environment has hit center stage. As leaders from around the world gather in Glasgow to make plans of how to change the environment and who’s to blame, they are promising huge amounts of funding… funding that they do not have thanks to the pandemic. Consider alone that these officials did not carpool… each seemed to have their own luxury equipped aircraft and entourage support staff… now that’s leading by example! But here in our real world, the market is steady as this hardy group of producers have adapted their programs to move forward after a hot summer with little rainfall. Canadians are sourcing and consuming more Canadian beef. The Canadian Roundtable for Sustainable Beef reported that certified sustainable beef had an increase of 17% over the previous year. The rapidly increasing demand by Mrs. Consumer to know where and how her food is produced and sourced, is more and more common place each year. No doubt, the pandemic has driven most families to “at home dining” and that leads to exploring different types of meat for protein. The over-the-counter price of beef has skyrocketed while farm gate prices remain the same but that’s a topic for a later date. The consumer requires taste and tenderness which goes hand in hand with carcass quality. As beef producers we have little to no control of what happens to our stockers when they leave the farm gate and go to feedlots and processors. But farmers and
ranchers do have control and influence on the type and kind of livestock we raise. In the years to follow, carcass values will be a huge marketing factor. Over the past few decades, beef breed associations along with government and university support have designed expected progeny differences (EPD’S) which estimates an animals genetic merit as a parent. To most breeders, EPD’s are not new and today many commercial producers use them as a sire selection tool. In the early stages of the development of EPD’s, calving ease, birth weight, weaning and yearling weight, milk and total maternal were looked at… as British breeds slanted to maternal traits while exotic breeds looked more at performance. Carcass EPD’s have rapidly moved to the forefront in the past decade or so with the American Angus Association and their CAB program the leaders. Here in Canada, carcass values in EPD’s do not have the accuracy merely because of numbers as to those of our friends in the south but this will rapidly change. Simply put, we as producers will have to increase rib-eye and marbling in our product using a bull and a cow, if we want to retain Mrs. Consumer’s loyalty to the product we produce. Hopefully this long warm fall has helped everyone get ready for the climate change coming in the next four months. Now is a great time to evaluate your cow herd, bull battery and program especially if you have marketed your calves. The hot, dry summer has helped shrink our national cow herd numbers even more and replacement females will become dearer in the years to follow as we will have to restock inventories. Your cow herd evaluation should lead to tax planning… we all know how much we would like to send to Ottawa.

Sometimes I write out a to-do list just to see what I accomplished. Write news release. Wash the laundry. Order groceries. Check, done. What’s next? Life is about phases. Some occur just once and some are on repeat. We tend to spend a lot of time and energy trying to build momentum to summit the final arc of a cycle. When it ends, space is created for something new to start, and off we go again. Raising cattle is cyclical, too. Each year we face the same decisions between which bulls to use, heifers to keep and how to market calves. Even cattle prices ebb and flow at an expected pace year to year. We’re in a cycle many cattlemen have faced before: tough markets and bad weather. The drought of 2012 was hard in the central part of the country and today it’s hard on the west. Just like in 2012, the cow herd is plentiful, but inventory will begin to decline as drought forces ranchers to liquidate their herds. First, the bottom string of cows will be sold. If conditions don’t improve, better quality cows may have to leave the herd. That begins a tale as old as time: tighter supplies equal higher prices. That’s something to look forward to, even though right now it may feel like things can’t get any
worse. The time waiting for things to get “better” is the hardest. Still, the message we keep hearing is hold on, leverage is coming. When it does, there may be time for growth and improvement. A fresh start often indicates opportunities. Will you seek new, better genetics to increase the quality in your herd? Will you try something new, like backgrounding or retaining ownership of calves? Will you find time to analyze data you’ve been holding onto? There’s more demand for high-quality beef than ever before. There are more mouths to feed and consumers across the world are buying beef, an entire market ready to be served. A new cycle is just beginning. Change often imitates similar motions as the past, but that doesn’t mean history has to repeat itself. Maybe the to-do list just needs adjusted. Read my bible. Talk with my family on the phone more often. Workout in the morning. Check. But our job isn’t over, it’s just beginning again.

The Last Chapter
A few people have asked me if the stories about Shorty, really happened to me. The only one that I will admit to is this last one, in that case I was both Shorty and the old man.
It has been a sometimes frustrating, but always rewarding journey, but age is catching up.
When I was Shorty, the old man showed up one day and talked about all the things that he had done on the ranch while he worked there. At that time, I wished I had been there then, when things were simpler and less hectic. A couple of years ago, I returned to the ranch and witnessed what the ranch had become. It was different now and not in a good way. I realized that I had been I will start my thanks in chronological order. When we started the business, we made three phone calls. Those calls were to Brylor Ranch, Mountainview Farms and Six Mile Ranch. The support from those three operations was instant and overwhelming. Thank you to all of you. incredibly lucky to have been there and experienced what I had all those years ago. We cannot go back in time, and often we do not appreciate what we have until it is gone. Which brings me to this...I am retiring this fall.
I could not have started without the technical expertise and continuous support and friendship of Rhonda Peterson. She has been a huge support for all these years and remains a close friend, thank you Rhonda.

I would like to thank everyone that has used my services over the years, whether it was purchasing a photo or photographing animals every year. Many of you have let Lauralee and I into your homes to share a meal or a drink, and that act of kindness has not gone unnoticed. We have shared a laugh or two over lunches in the barn as well, and those are the things that I remember now as I write this. So, to everyone, especially those who helped us every year, thank you! I would like to thank T bar C, both senior (sorry Ted) and current for all the support over the years. Ted and Mina were incredibly supportive when we started, and the advice he shared was much appreciated over the years. Chris and the current T bar C crew have supported as well, and a special thanks to Bryan Kostiuk. Bryan made space for me to tell my stories and, I hope, bring a smile to the odd person’s face. He and I have had many phone calls over the years, most of which started with “Hey ...have you got a story and a cover shot, the book goes to press in the morning!” Thanks Bryan! I wouldn’t change a thing. I would like to thank Craig Scott. Craig stepped in when I needed help and became a good friend and a better partner. The next person I want to write about is someone that none of you have ever met and yet her work has benefitted everyone. Amy Scott has been my photoshop worker for a long time, eight or nine years. She has worked on just about every photo that I have taken over that time and done an amazing job. I have only met her in person a few times, but I can say that she is one of the hardest working young people I know, and to most of everyone’s
surprise, she knows nothing about cattle. Amy you are amazing, thank you for everything! I want to thank Ty and Shania Dietrich for their help the last few years. You guys have made an enormous difference as well and all your work was very much appreciated. I would like to thank Brian Good. Brian and I have spent a lot of time together over the years, on the road, at shows and just hanging out. I value his advice, his friendship and know that the Canadian Angus Association is not the same without him. The last person I want to thank is Lauralee. She has been my travel agent, my bookkeeper,
my meal arranger, my psychologist, and the best damn attention getter in the country. She deserves far more than I can describe here. She spent countless nights in hotel rooms, falling asleep in the wee hours of the morning, to the romantic glow of a computer screen while listening to a constant click of a computer mouse. The only interruption of that mouse would be a frustrated operator cussing, sometimes under his breath. Cattle were never Lauralee’s thing, they were my thing. I grew up with them and am very comfortable around them. Lauralee’s family were and still are involved with horses. So, even though she would never admit it, she went to work every day, just a little bit scared.

She didn’t trust any of the cattle we worked with, but she did her job every day despite that fear. Without her ability to get the animal’s attention and then hold that attention, I was unable to take the photograph. We have had some animated rides in a rental car after another particularly frustrating photo shoot, but we always understood that “what happens in the picture pen, stays in the picture pen.” The best example illustrating our relationship happened a couple of years ago on a cold winter day doing bull pictures. The owner of the operation did a great job with the product and the bulls were generally quiet. I always watched the bulls in the alley as they entered the picture pen and would give Lauralee a warning if the animal was a little nervous. On this occasion the subject appeared to be a little nervous and I warned Lauralee in our code. “Lauralee stay by the fence.” That meant be careful and she took the appropriate action. Lauralee always carried a harmonica and in the last few years has armed herself with a child’s toy umbrella, in this case a bright pink child’s umbrella. She was able to get the bull’s attention and, with the help of noise from the harmonica, kept the attention while I got into position and took the photo. Once I was finished, I
told Lauralee to “let him go”. I have done exactly that thousands of times over the years and never had an issue, until this time. The sound of my voice alerted the bull to my presence and once he noticed my location, he took offence to both. He turned to me and took off towards me. As some of you know, my defense when I am trapped, is a quick offence. The bull was not impressed with my sudden movement towards him, and he knocked me down. Usually, in my experience, once I am down the bull will leave you alone as he has accomplished all he wanted. In this case he decided to inflict further damage. I was laying on my side, attempting to protect several thousand dollars of camera equipment while the bull worked on driving my body into the ground. Suddenly, out of the corner of my eye, I saw a flash of pink and watched a child’s umbrella being forcefully applied to the bull’s head. The beating was accompanied by the sound of Lauralee describing the bull, his parentage, and her perception of his ability to breed in loud and unflattering terms. The bull turned and fled. I struggled to my feet and turned towards Lauralee. She was standing a few feet away, fumbling with what was left of her pink umbrella, as she watched the bull leave the pen. Once she was satisfied it was safe to do so, she turned towards me. She was visibly shaking; her face was covered in tears, and she looked up at me and said.

“Is your camera okay?” Now, some people might have been hurt by that question, I am sure most of you chuckled at that, but to me it made perfect sense. Both she and I knew that I could work hurt, but we could not work without a fully functioning camera. She understood what was important to me. Well, this is my opportunity to let everyone know that
Lauralee is the most important part of my life. I know that I have missed thanking a lot of people, like Doug Henderson and Rob Holowaychuk, that were a part of the success of GRP Ltd, and I apologize to everyone for my short coming. We have missed a lot of birthdays, holidays, weddings, funerals, and family time over the years, and we need to start looking after some of those times before the opportunity is gone. I want everyone to know that this decision was the most difficult one that I have ever made, but it is time for Lauralee to live without the fear of getting run over by someone else’s bull. We are incredibly grateful to all of you. We wish health and prosperity to all of you, good luck in the future.

From Insights to Solutions Feeding Quality Forum shares perspective on future demands Story and photos by Morgan Boecker
Years of progress in efficiency and genetics may not be enough to satisfy the demands put on cattle producers moving forward. That was the message from speakers at the 2021 Feeding Quality Forum, hosted by Certified Angus Beef (CAB) Aug. 24 to 25 in Fort Collins, Colo. They say there’s more demand for beef than ever, new challenges, too. Sustainability Sustainable beef production was at the forefront of conversations, with a caveat: emotion and science are on equal footing, noted Kim Stackhouse-Lawson, director of AgNext at Colorado State University (CSU). Data concludes beef can be a sustainable product, but often consumers are faced with a polarizing narrative that challenges their values and emotions towards animals. “Emotion wins every time” when it comes to a food brand, she said. “The beef industry still has an incredible story to tell from an impact on a product-produced basis,” she shared. “But we’re starting to lose control of that narrative because overall emissions are still increasing.” Stackhouse-Lawson said livestock’s contribution to total U.S. greenhouse gas emissions (GHG) is only 3.8%. But that’s up 20.7% since 1990. This evolving landscape of customer expectations directs regulatory changes. It’s why JBS joined other beef processing companies and announced a climate goal to reach global Net Zero GHG emissions by 2040. “This wasn’t just an idea on a whim of something that we wanted to do,” said Nikki Richardson, head of communications for JBS USA. “I think that the sky is the limit when it comes to identifying ways to have collaborative projects and things in place where we’re benefiting producers and ultimately getting closer to reach our goal.”
The ambitious goal will require working together. For now, Stackhouse-Lawson said cattlemen should focus on land management and improving efficiencies around performance. Technology gives producers that opportunity, said Justin Sexten, strategic and product lead for Performance Livestock Analytics, a part of Zoetis. When managing more than one pen, not one single animal represents the average, yet decisions are made in groups to increase average performance. From a sustainability perspective, some cattle in a pen may need additional resources. However, in most cases all animals receive the same resources, whether or not they’re needed. “We have to find a way to manage from an individual perspective,” he said. Global Impact Dan Basse, president at AgResource Company, said China’s bout with African Swine Fever reduced that country’s pig population, and therefore more beef moved into the country. This year’s beef exports to China are at 10-year highs, despite exponentially higher costs to get it there. Basse said managing feed costs will be difficult for beef producers. Severe drought challenges in the U.S., Russia, Brazil and Argentina have brought a shortage of corn in the world, even though world corn trade is still strong. “I don’t think corn prices are going back to anything with a sub-five in front of it for the years to come,” Basse said. On the bright side, beef demand is the highest in more than a decade. More disposable income, thanks to COVID-19 relief, means consumers are eating more beef. “The long term for cattle looks really quite extraordinary and bullish for the next couple of years,” he said.Yesterday’s most valuable feeder calf may only be average moving forward. That’s because buyers still look for groups with uniform weight and hide color, but verification is gaining importance. The market may soon require certified pre-weaned and vaccinated, age-source-and-genetics verified, records for performance and carcass history, along with animal welfare claims. When it’s time to head down a new road of marketing, learn from others who have made the trip before you, Blasi suggests. Those are the lessons from peers and mentors, he adds. Participate in a marketing network, or join local and state beef association meetings to learn from each other.

Beef Supply If you’re on the sale side of that equation, more demand means higher prices. To those buying beef, that means it’s getting more difficult to source product. “The customers think that we have printed menus that are disposable because of COVID,” said Dale Zimmerman, owner of two North Dakota restaurants. “It’s because we don’t know what we’re going to have in the cooler that day.” Victoria Philips, president of Lombardi Brothers Meats, agreed: “Our biggest issue is definitely the supply.” Her business model is constantly shifting due to inconsistent supplies. When restauranteurs cannot get their regular product, Philips and her team help them find beef and develop creative ways to apply it on menus. In many cases, price point is no longer the biggest obstacle, she said. “Our job is to make sure we get the product restaurants need,” she said. “And that can change overnight.” Changing Carcass Trends Clint Walenciak, CAB director of product services, and Daniel Clark, CAB meat scientist, shared data from nearly eight million Angus-type fed cattle to see how increasing hot carcass weights (HCW) affect CAB acceptance. “We see HCW at 40- to 50-pound swings to 70-pound or greater swings between those seasonal lows to seasonal highs,” Walenciak said, noting 20 pounds is a big adjustment within 12 months. Black-hided cattle must meet 10 carcass specifications to qualify for the brand. The data revealed a positive trend between HCW and marbling, but also with ribeye size and backfat (the four CAB specifications most missed). “When average fed cattle HCW gets above 900 pounds, we’re going to start kicking out more and more cattle,” Clark explained. “Below 850 pounds, then the cattle probably just aren’t reaching
their genetic potential.” The pandemic created a backlog of fed cattle where feedyards saw what happens when cattle have more days on feed, and consequently higher HCW. The use of feeding technologies, such as ractopamine, abruptly stopped for cattle with no guaranteed slaughter date. That came with the unintended consequence of helping researchers answer questions cattle feeders otherwise may never have tested. Just feeding cattle longer can have the same response as feeding beta agonists for lean gain the last month of the feeding period. Brad Johnson, meat scientist at Texas Tech University, shared survey results that ractopamine usage is not back to pre-pandemic levels and is not expected to return. In a future market with stricter requests, he warned not to give up on technology yet. “I’m not just talking about implants,” Johnson said. “All technology, data management and maybe some natural feed additives that can improve marbling and reduce GHG emissions.” The future will be about finding good relationships, sound science and sharing a story that resonates, said Keith Belk, CSU head of animal science department. “You can’t do a good job of addressing industry issues with research or educating the next generation of students unless you have good partners to work with,” Belk said.
