What a year 2015 has been, starting off with a cattle market full of enthusiasm like never before.This energy in the cattle business led to a record setting bull sale season that many had not even dreamed of. There was starting to be a feeling of the industry being bullet proof, but then a dry spring and start to summer had many worried of a wide spread drought. Humans are greedy by nature and that quickly began to appear in feed prices. Most producers did not jump the gun though, if the decade of BSE did anything for producers it taught them patience and ingenuity. Luckily in most areas, rain started to come in late July and most producers have reported unbelievable forage and pasture growth late in the season. In fact in many areas the fall is wet and has even hindered harvest, again good news for those of us with a little water and grass mixed together on our boots. We actually have clients who were planning to reduce their herd size who now have greenfeed for sale due to late germinating crops and less than ideal harvest weather. Out of the gate this fall, the calf market was wild, again higher than most of us could even imagine. Of course this led to record numbers of calves being sold for later delivery, which essentially kicked the calf run into motion quicker than usual. The last couple of weeks has seen the calf market moderate, which it always does when big numbers are on offer. Also some strength in the dollar as well as a few other factors have forced the market to level off, but definitely not crash. I recently had one producer call me up and say “man is this market ever ugly.” This same guy sold calves for the same money a year ago and called me ecstatic thinking he had just won the lottery! Again that damn human tendency to be greedy! Remember, every sector of the industry had a phenomenal turn last year and this year will be very profitable as well.
Ted has a saying “there is money for the bulls and money for the bears but there is no money for the hogs,” I think that fits as there is no place for any negativity in our industry today. As for the future, my recommendation is, put your sunglasses on! Our cow herd is still contracting and our markets only look to have the potential for expansion. After a great deal of trade negotiations it has been announced that Canada is part of the ground breaking Trans-Pacific Partnership. A free trade agreement including twelve Asia-Pacific nations including three of Canada’s largest trade partners, the U.S., Mexico and Japan. The later of these three is the most significant as we already have trade agreements with the other two. Japan imports 60% of the agricultural products they consume, which makes it a larger market than the entire EU market, all twenty eight countries. Canada already had Japan as a major customer but this agreement can only help us to get a larger portion of this huge and growing market. Around the world Canada is viewed as a country that will be prime to take advantage of a growing global food market. Canada has the ability to increase production in a sustainable way, due to our arable land, natural recourses, skilled producers, ability to process our products and our transportation infrastructure. All things point to a bright future in the Canadian cattle business.

It was kind of a tight knit community out at the ranch. There was a cluster of a few ranches within a mile or two that were, as a group pretty much out of the way. So, when Shorty’s neighbour Doug asked for help one early summer evening, Shorty responded without hesitation. “Doug…what’s up?” Shorty asked as Doug approached. “Well Shorty, I kinda need some help clipping Chase’s 4-H steer.” “I didn’t know Chase was in 4-H! Isn’t he kinda little?”
“Oh no,” Shorty didn’t like where this was going. “You can hold him, I will clip.” “Whatever Shorty. quiet.”
He will be fine, Chase has him pretty
Hercules was standing in his pen, all alone, chewing his cud looking like a true 4-H steer, just little. Doug grabbed the bright blue nylon rope halter from the gate post and caught the mighty Hercules without incident. Shorty sighed with relief; maybe this was going to be okay after all.
“Geez Shorty, you sound like my wife. He’s 9 years old, he can start this year. The wife thought he should start with a lamb, but shit Shorty, lambs are kinda girly. I figured he needed something a little more manly, like a steer.”
Doug was able to drag Hercules to the clipping chute relatively easily.
Shorty looked at Doug like he may agree with the wife on this one.
“Sure he does.” Shorty assumed the pushing position and between the nearly 400 pounds of men they were able to maneuver roughly the same weight of steer into the chute.
“Come on Shorty. A lamb….really.
I got to thinkin’”
Doug looked at Shorty, Shorty was shaking his head. It was never good when Doug got to thinking. “I thought” Doug continued, “that if I could find a little steer, I could get him halter broke and quiet and Chase would be good. So I went down to that hippy dude at the bottom of the hill, you know, the ones that has Lowlines and bought Chase a steer.” “Geez Doug, are you sure? I ‘ve watched some of those at the fair and they can be downright nasty.” “What the hell? Have you and my wife been planning to gang up on me or what? Hercules is fine.” “Hercules?” Shorty was following Doug to the barn. “Yeah, Chase wanted to call him Hercules.” “So why am I here?” “Well, Chase is at ball practise tonight and I have to clip the steer.” “Geez Doug, you’ve got a Lowline steer because your kid is young and small and it takes two adults to clip him? Seriously?” “Shorty the little bugger won’t fit in the clipping chute, he can scoot from side to side in there under the side rails. I just need someone to hold him.”
“He leads better for Chase.” Doug had noticed a bit of trepidation in Shorty.
Doug looped the lead shank over the bar and tied a loose knot. It was obvious that head catch wouldn’t work on Hercules’ tiny noggin so he didn’t even try. “Shouldn’t we tie him a bit tighter?” Shorty asked. “Naw…he’s good. You sure you want to clip Shorty, all ya gotta do is hold him so he don’t swing out of the chute?” “I’m good Doug.” Shorty had plugged in the clippers and was standing back a few feet from the chute. He flipped the switch on the clippers, which flipped the switch in Hercules. Doug had moved around to the right side of the steer as he talked to Shorty and, when Shorty turned on the clippers, Hercules jerked his head straight back away from the clippers. Doug’s reaction was swift and instinctual; he lunged towards the steer’s head in order to grab the ill-fitting and now untied rope halter. About half way through that lunge, he realized that he was not going to be able to secure the halter, so he grabbed the steer’s neck in what can best be described as a head lock. The force of said head lock, coupled with the suddenness of the arrival of Doug at his head, caused the steer to lunge sharply to his left and forward. Because Doug was securely attached to the steer, this movement caused Doug and the steer to loose balance and the whole mess collapsed in a heap.

Hercules was the first to his feet, which was unfortunate for Doug, because Doug was now flat on his back, still clutching the steer around the neck, looking up at a Lowline. Hercules let out a death bellow followed by what Shorty figured was a nervous pee, right on Doug’s chest. Both the steer and Doug were trying to catch their breath and decide the next course of action. Hercules decided first. He figured he would jump straight up , but he didn’t factor in Doug’s body mass attached to the front end. That miscalculation caused his rear end to fly up while the front end remained on the ground. Shorty wasn’t sure where the steer’s rear end came down…until he heard Doug’s soprano squeal. The two wrestlers were once again in rest mode; this time Doug’s face was decidedly pale. Shorty looked at his friend, now wet from his waist to his shirt collar with what Shorty was pretty sure was not sweat, his jeans covered in a mixture of mud and steer manure, and his left arm firmly clamped around the steers neck. The steer was slobbering all over Doug’s head and both man and animal were panting heavily. Shorty hadn’t noticed that Doug’s family had returned during the match and it wasn’t until Chase spoke that he realized they had company.

Doug released his grip tentatively and Chase calmly led Hercules back to his pen. He looked up at Shorty. “You were a helluva lotta help Shorty” Doug’s voice was almost back to normal. Shorty just smiled at his dirty, defeated friend. “You’ve got nothing to say Shorty?” “You got any beer in the house?” Shorty responded. “Yeah.” Doug was now on his feet and walking beside Shorty towards the house. ”Thanks for the help Shorty” Doug made no attempt to hide the sarcasm. “Well Doug… Hercules still has all his hair, he still ain’t clipped. What now?” “I dunno”
Doug was clearly beaten.
The two men were nearly to the house by now. Shorty looked over at his friend and began to sing… “Mary had a little lamb, little lamb…”
“Dad…what the hell?” Chase squeezed between the rails and ran towards the two of them. “Herc.. are you okay?” By now Chase was gently rubbing the steer’s head. The steer

Can data sharing help producers manage change?
Change is a constant—so the saying goes. And it’s a saying that seems particularly appropriate for the beef industry right now. BSE changed the cattle industry forever, along with computers, the Internet, and social media. With social media has come “Value Branding” which relates to changing public values around health, the environment, and animal welfare.
As a producer, I know this issue is not going away. And the best way to respond is to become more connected to others within the industry, and to communicate more effectively with consumers. This is an industry that likes tradition, but change can be a challenge, or an opportunity—depending on how you look at it. As Cherie Copithorne-Barnes, a producer and Chair of the Canadian Roundtable for Sustainable Beef says, the trick will be to respond in a way that is manageable for the entire industry, and at a speed we can all handle. One program that’s helping the industry respond to changing consumer demand is the McDonald’s Verified Sustainable Beef program. Starting next year, in 2016, McDonald’s will begin purchasing a portion of its beef from verified sustainable sources. Besides working with a diverse set of stakeholders in the Canadian beef community to develop a way for producers and processors to demonstrate what “sustainable beef” means, the program has focused on gathering producers to participate in the program. Their goal is to have 300 operations verified by next spring, including cow/calf, feedlots and processors. But the biggest focus of the program has been on the verification side of the process—finding a consistent way to demonstrate sustainability outcomes specific to Natural resources, Community and People, Animal health and welfare, Food and Efficiency and Innovation. These issues are important to not only consumers and McDonald’s, but should be important to all Canadian beef producers. Being verified is not a pass or fail situation, it is a journey of demonstrating improvement within your operation, the willingness to improve in respect to the animals, the environment, safety and efficiency. I can’t think of many producers who don’t try every day to do the right thing by their animals and operations. One of the truths about sustainability is that it’s a journey and not a destination. Ironically, you can never actually “arrive” because the focus is on continuous improvement. Part of the reason McDonald’s picked Canada to pilot the
VSB program is because in many ways, we’re well ahead of other countries. “We’re not the only ones working on sustainability, but we’re significantly further ahead,” James Bradbury, Marketing Manager for Canada Beef told me. “As beef prices increase, consumers will become more selective about what they buy. If we’re deemed at any point to be unsustainable in any sense, that could be a real problem for beef producers. We’re already a leader on sustainability—and have been for years. Now it’s a matter of measuring it, verifying it, and communicating it consistently.” James adds that consumers don’t need to know all the details, but there are certain topics like animal welfare they’re concerned about. “For a consumer, just knowing this stuff is being looked at and measured and that farmers and others in the supply chain are regulating what they do, and that it’s being verified by an independent third party—that’s the information they’re looking for, and it’s not going to change.” Matt Sutton-Vermeulen, project manager for McDonald’s VSB program also told me that the pilot has been gaining momentum largely because of Canada’s existing systems such as the Verified Beef Program, the Canadian Cattle Identification Agency and The Beef InfoXchange System. It’s exciting to realize that these systems are allowing us to measure, verify and track sustainability in ways that no other country is yet able to do. “From an information sharing standpoint, we’re now three months into running reports using BIXS. The capacity that BIXS is demonstrating is beyond our expectations and continues to improve every month,” he said. “BIXS is demonstrating that we can share information efficiently while maintaining confidentiality. That’s good news and critical to the success and credibility of the pilot. We need to have data that is value driven, and action oriented, so that people upstream and downstream can access it appropriately without getting into privacy issues.” As a member of the BIXS team, I’m proud that Matt has been impressed by our efforts. “Your team is demonstrating their capacity at a high level and that’s not easy,” he told me. “You don’t buy these programs off

the store shelves and you are making it easy for other IT providers to beef producers to share animal tracking information without compromising their own value propositions with their clients.” Economics is the center-point of sustainability, and Matt added that Canada’s ability to offer verified sustainable beef will create the long term opportunity to differentiate Canadian beef on a local, national and global basis. “The new team at BIXS is walking the talk when it comes to continuous improvement and traceability is critical for the long term viability of the Canadian beef industry,” he said. He also mentioned that the McDonald’s pilot is creating opportunities for collaboration between the Canadian roundtable for sustainable beef and its US counterpart south of the border. What’s the bottom line from a producer perspective? It’s that it’s time to get in the game. “Producers are highly trusted by consumers. It’s vitally important they have a
hand in measuring, verifying and reporting their sustainable outcomes,” said James from Canada Beef. Matt echoed that sentiment. “The voice of the producers who are involved in the pilot will drive the future of the program. If you’re participating, your voice will be amplified.” This is an industry that likes tradition and resists change the way we all like our favorite pair of boots, and we usually wear them beyond the point they should be retired. Participating in BIXS and VSB is a little like putting on new boots, once broken in they feel as good as the old ones.” So what are you waiting for? Chef Frank Peters begins each day at Hobart’s Steakhouse with one thing on his mind: serving consistent quality meals that leave his customers hungry for more.
To pay the bills, he took a part-time job with a restaurant working in the kitchen. As his culinary skills grew, the future chef’s passion for cooking began to develop.
Passion is key
After college, he worked as an entry-level commercial cinematographer, but something was missing and it led him back to foodservice. Most of his culinary skills were learned at the cutting board watching other chefs prepare food across a wide spectrum from boxing up chicken at KFC to managing a group of fine dining restaurants.
That’s what happens each day in the Kawartha Lakes region northeast of Toronto, Ontario, but it wasn’t always on his mind. With a degree in cinematography and no formal culinary education, there was a time when owning and operating a steakhouse didn’t quite make sense. “My parents were firm believers in being the best you can be in whatever you do,” says Peters. “The mandate was to work, and to work with all your passion.” Beef cattle were part of life growing up, but not in a traditional way. His family lived and worked on a 40,000-acre Canadian Experimental Range Station in Alberta, where ranch work included all that goes with range management and crossbreeding cattle. His father, Hobart Peters, was a PhD geneticist who oversaw beef projects on the range station, working closely with neighboring ranchers.
“The cowboy mentality I grew up with is you work until the job is done, then you get up and you do it again” “When I got into the management side of the restaurant, it just grabbed me,” Peters says. “I enjoy the people, the crazy hours and the everyday variety that comes with a restaurant.”
“My father was not your typical rancher,” Peters says. “He was a scientist who was also a cowboy.” In the early 1960s, his father was charged with evaluating all the European breeds for importation into Canada. By the mid ’60s, the elder Peters had moved the family to Rome, where he worked with the United Nations Food and Agriculture Organization as an agricultural advisor to developing countries. In the 1970s, back in Canada, the oldest son completed schooling and went off to college in Ottawa to study filmmaking.

In 2000, he and longtime business partner, Ken Found, found themselves with the chance to open their own restaurant. The idea of Hobart’s Steakhouse was born, obviously named after the scientistfather-cowboy and his unique involvement in the beef community. “My father stood for a lot of the qualities and standards of raising better beef that we hold for the restaurant,” Peters says. “It seemed suiting at the time, and still does today.” He knows the hard work it takes to make a go of it, whether that’s a family running a remote research ranch or a family restaurant. The values he learned as a child have carried over. “The cowboy mentality I grew up with is you work until the job is done, then you get up and you do it again,” he says. “To do that, you have to have a passion. If you are going to do something, you do it all the way.”
Casual fine dining
The comfortable atmosphere of Hobart’s can be viewed as casual fine dining. Staff focuses on comfort and satisfaction. “We hope our customers leave with a good feeling and a full belly,” says Chef Frank. It’s not just about the food. Hobart’s has developed a loyalty from customers beyond quality of the food, but also from the level of service.
Beef is the defining product on Hobart’s menu, featuring only the Certified Angus Beef ® brand. Frequent customers and visitors alike know what to expect. “When our customers come through the door, they recognize that we serve a great brand, but also part of their satisfaction is how we cut the steaks, undeniably better than most,” Peters says.
“When people come to your restaurant it’s about their experience, not about you,” he says.
Building relationships
A small or independent restaurant can be at a disadvantage to the large chains, but that’s no problem in this case. The chef and restaurateur cultivated a lasting relationship with Toronto-based distributor MacGregors Meat and Seafood. The two family-owned-and-operated companies appreciate getting their beef from a brand owned by family farms and ranches. “They [MacGregors] have worked with us like we’re every bit as important as any chain that they would deal with,” Peters says. “It is an important relationship that we are very fortunate to have.”
Hobart’s staff makes sure to let customers know they genuinely care. Every table is provided with a level of service that has a feeling of “down home” hospitality. “The way I was raised in southern Alberta was that the door is always open,” Peters says. “You meet people, you give them a full plate of food for their money and you give your best quality to them. That is how I run my restaurant and that is why our doors are still open after 15 years.”
Deeply rooted in those family values, he stays close to the community in Lindsay and nearby Peterborough, Ont., where Hobart’s opened a second location in 2013. That means building relationships with beef producers in those areas and keeping up to date on issues involving the beef community. “They know I’m not just some guy that can cook a steak or flip a burger,” he says.

GUELPH, ONTARIO— Generations of Canadian cattlemen have supported their families and beef lovers from coast to coast. Nowhere could be found better husbandry applied to produce the most pounds of beef from herds well adapted to the prairie ranges, mixed-wood plains and maritime paddocks. But what about the beef under those hides? Traditionally, that was left to feedlots and packers to sort out. On the other side of the packinghouse door, beef salesmen seldom gave much thought to the process of harvesting, Brian Pogue transforming cattle into beef. That began to change with Ontario’s first Carcass 101 Seminar at the University of Guelph (UoG) on August 25th, presented to 100 producers, packers, foodservice and retail meat professionals. It was a one-day course presented by the Beef Farmers of Ontario (BFO), Beef Improvement Opportunities (BIO), Certified Angus Beef (CAB), the Ontario Ministry of Agriculture, food and Rural Affairs (OMAFRA) and UoG. OMAFRA Beef Lead Brian Pogue helped organize the seminar and planned well in advance to obtain video and profile photos of eight finished steers for evaluation and projected carcass values. Guelph meat scientist Ira Mandell began with a review of grading and sorting by age based on ossification and the lack of fat cover on rib bones of older animals. He discussed discounts for dark cutting beef and also compared fat color, showing the white from grain-finished and amber from grass or forage-finished cattle. “Grass-fed having higher amounts of conjugated linoleic acid (CLA) really does not have the health benefit that the grass-fed followers believe,” Mandell said, citing several studies and adding, “it has become a lot of hype.” Pogue began a video “live cattle” discussion that had participants
ranking animals for weight, marbling, yield, maturity and fat cover. Then he and Gary Hasson of the Canadian Grading Agency led a telling excursion through the meat cooler for similar scoring on the eight carcasses. Meanwhile, CAB meat scientist Phil Bass conducted a concurrent session on carcass fabrication based on the main “steakhouse cuts” of rib eye, strip loin and tenderloin. He Ira Mandell & Phil Bass talked about other relevant trends as well. “As a beef community, we’re trying to add value to the cattle you produce,” Bass told attendees. “Part of that is a refocus on bonein cuts and some alternative regional cuts such as introducing the tri-tip and sirloin flap to areas that are less familiar with those.” Another aspect is better utilization, or selling more steaks like the flat-iron and other chuck cuts at a premium to ground beef, Bass added. Hasson explained how CGA grades Gary Hasson beef carcasses, pointing out the key variations in marbling between AA, AAA and Prime grades. His interactive demonstration on yield grade included fat measurements at the 12th rib, backed up by a cutting test on steak off that rib section. “Seeing the yield test data confirm the measured results of the yields really helps convey the value of the yield grade assignment,” Hasson noted. Back in the classroom, actual data were revealed. “For the most part, the crowd failed miserably,” Pogue said. “We expected that—it’s difficult to tell what’s under the hide. I can do a fairly good job assessing the muscling and fat cover, but I defy anybody to look at the live cattle and tell what level of marbling it will have.” He provided individual feedlot performance and profitability as well (see tables). “We weighed the cattle the morning they were harvested so we had feedlot average daily gain and individual feed conversion,” Pogue said. “We showed lean meat yield and percentages by grade as AA or AAA, and actual marbling scores. Then we looked at the

economics.” One of the most surprising results was the difference between the typical Canadian market price and the wider range if marketed on a U.S. packer grid. “We took starting and mid-term weights, figuring what the cattle were worth then, compared to the finished carcass value to get at profit,” Pogue said. “We had a fairly significant range, from about $4 to $300 per head profit for the top steer that qualified for the Certified Angus Beef ® brand.” Just as significantly, that range in value is of little concern in the Ontario finished cattle market, he said. “Our producers have very little incentive today to produce AAA over AA, but I think the U.S. type of grid is coming to Canada.” To that point, he added, “We have done a great job of tracking cattle through the supply chain, but where we fall short is in sharing the data with producers who hit the high-quality mark so they can see how genetics have affected that quality.” Mike McMorris, BIO general manager, agreed. “We talk a lot about how we need to do a better job raising better beef, but we get protective of our data and find it hard to let it out of our grip,” he said. “We fear that our success should be held close to our chest and not shared for everyone to take.” Optimistic that the future will look different, McMorris said, “It’s in our best interest as producers to share what has worked best, genetically and financially, for the good of all the producers. We have room to grow in producing a better beef supply for the consumer.” Perhaps a fifth of the group attending Mike McMorris came from foodservice and retail. Brian Langley, Longo’s director of meat and seafood, brought a large contingent of staff and explained the latest initiative at the CAB-licensed retail chain. “We have made a strategy change in the last few years to target the millennial shopper,” he said. Recent survey data shows the younger generation enjoys cooking and represents a growing market for the retail meat case. “We are bringing Larry Corah
in programs to Longo’s that resonate with the millennial consumer.” Pogue said as more retailers look for higher marbling in the beef cuts they are offering to increasingly quality-minded consumers, “We will need to get more of our cattle to qualify for the AAA grade.” CAB’s Larry Corah noted Canadians produce just half of the total tonnage of the brand’s sales in the country’s hundreds of CABpartner restaurants and retail stores. “Quality has really gone up in Canada over the past five years, and yet the value of that greater supply of AAA beef has grown faster than that of the lower supply of AA,” Corah said. “That’s a huge opportunity for producers who can hit the premium AAA and Prime grades.” He also provided examples of dramatic increases in quality grade in U.S. herds based on a single generation of calves sired by bulls near the breed top for marbling, which Corah noted does not limit progress in selection for other traits. Joyce Parslow, Director of Consumer Relations for Canada Beef, agreed adding quality could create more beef-brand loyalty, whether that’s in the province or around the world. She presented a video and discussion on how the world is hungry for Canadian beef and the story behind its “world-class standards.” However, Pogue said the Canadian industry seems to be at a stalemate when it comes to increasing the share of cattle that achieve higher quality grades. “Packers would provide more information on cattle if producers would pay for the data, but meanwhile they are less interested in paying producers for better cattle,” he said. “If information adds value, there should be opportunities to share more dollars. “This industry of ours is so segmented that if beef were not the preferred meat, we would hardly have an industry at all,” Pogue said. “How can you have 20% unsatisfactory eating experiences and still survive? We have a long ways to go, yes, but that means there’s a huge amount of potential.”

Practical Tattooing By Roy Lewis DVM
With fall fast approaching and purebred calves close to being weaned now is a good time to review proper tattooing techniques as most calves get tattooed by now. I will also insert good ideas I have gleaned over the years from those producers, which consistently have very readable tattoos in their cattle. Even with RFID tags or microchips the tattoo is the recognized permanent and literally unalterable identification for purebred animals whether cattle or dogs. There are a few simple do’s and don’ts, which lead to a successful tattoo. A successful tattoo is simply one, which is very readable for the entire life of the animal. There are several steps to do before actually tattooing. The cattle have to be properly restrained in a chute and the ear thoroughly cleaned. Especially in older cattle the ears will have lots of wax on them and if that is not removed with cleaning (either a wet rag or the best is an alcohol soaked rag) the needles drive the wax in. The results are wart like projections, which grow out of the holes and obliterate the tattoo. So if you see any of these wart like growths coming out of the needle holes you are not cleaning the ears enough before tattooing. Location of the tattoo is critical for readability. You don’t want it out in the hairline as it makes reading difficult. You are stuck with the herd letters the breed association assigns you but two herd letters are better than using four. The more letters or numbers to drive needles through at one time the harder and depending on a persons strength the outside ones may turn up fainter. A shallower needle impression allows less tattoo ink in. Tattoo in between the ribs doing the herd (breeders) letters between the first and second ribs. The numbers and year letter go between the second and third ribs. Hitting the ribs causes lots of bleeding and lots of bleeding will wash out the ink and give a poor tattoo. It is proper to have the tattoo number followed by the year letter. I find a lot of the French people have a tendency to reverse this. As an example 26X is the right way not X26. You all know the tattoo letter for 2015 is C. The tattoo ink comes in roll on or paste and I find the paste much better at penetrating and giving a clearer tattoo. The
two primary colors are black or green and with lots of black cattle out there green is the only color to use. Charolais because of their white color always have the most visible tattoos. Even the red factor Charolais present a very good tattoo if applied properly. Years ago a Black Angus client pursued finding a white tattoo ink. I thought this would be perfect a white tattoo in black cattle would be extremely visible. The idea came from people getting every color they want at tattoo parlors why couldn’t we get the same for cattle. The white ink even though it was German made was very watery and most tattoos were unreadable. I do hope in the future another lighter color will be developed for the darker cattle and I am surprised no smart person has researched this. Even with a well-placed and applied green tattoo on Angus cattle they can be hard to read. If hard to read a good light shined from behind may facilitate reading it. My personal preference on age of tattooing is to do cattle from weaning to yearling age. I find that cattle done as young calves the tattoo gets too big and spread out making it harder to read. The tattooing is also another stress they don’t need at a young age. The negative is if a calf looses its ear tag before tattooing. I personally like two tattoo guns one with the herd letters in and another with the numbers and year letter in it. The reversible ones wear out. Always check the tattoo before applying it as numbers like 6 or 9 can be interchanged. Keep the numbers organized and if the needles get dull replace them. Put the ink onto the ear after the tattoo is applied and work it in with either your finger or old toothbrush which ever works best. If bleeding work in more ink. Always apply ear tags including RFID tags on the opposite ear as the tattoo if possible. I have seen many mistakes over the years including a producer would sit on a calf and tattoo from the back. They were all perfectly upside down tattoos. Mistakes can happen but be careful double check and be proud of your tattoos. A good tattoo is really a sight to behold. There is some push to have legible freeze brands take the place of tattoos. There is no doubt on black cattle the white hair following freeze branding makes them extremely easy to read. Lets all do the best job tattooing as it reflects well on the quality of cattle we produce.
