With over 19 years of experience in the culinary industry, Rachid Zaouia has cultivated a deep understanding of food, nutrition, and service excellence. His career began in the kitchen, where he honed his skills as a chef. Rachid’s passion for creating meals that are both nourishing and comforting has made him a trusted figure in environments where dietary needs and wellbeing are paramount.

Transitioning from the kitchen to the corporate side, Rachid now serves as a National Account Executive at Sysco, where he leverages his culinary expertise to support care providers in delivering high-quality food solutions. His unique blend of hands-on experience and strategic insight allows him to build strong partnerships, tailor offerings to client needs, and drive improvements in food service across the healthcare sector.

Catherine holds a PhD in Human Nutrition and is a registered nutritionist with over 20 years’ experience spanning the food industry, public health, and academia. She brings a unique blend of scientific expertise, consumer insight, and communication knowledge to support multidimensional nutrition strategies and plans. Catherine is passionate about tasty, nutritious foods that are good for both people and the planet.

Jonathan joined Sysco in 2022 and has six years’ experience specialising in catering supplies and beverages. With 18 years’ previous experience as a chef, working from small cafés to hotels and Michelin-star kitchens, he brings strong operational insight to every customer conversation. His consultative approach focuses on delivering efficient, compliant, and cost-effective solutions across catering supplies and beverage categories.

Since joining Sysco in 2017, Donal has developed strong working relationships with many of Sysco’s key customers. With over 18 years in the industry, he knows the sector well and is on top of trends and the newest products. He is adept at identifying customer needs and helping them to achieve their businesses potential. Donal will always be on hand to offer advice and support where needed and is committed to ensuring all customers’ expectations are surpassed. He enjoys a wide range of hobbies including golf and football.

More than 32 years’ experience in the food industry in Ireland gives Brendan a deep understanding of the sector. Previously working as a Chef and a pastry chef in 5* Hotels, Brendan has a wealth of knowledge to share with his customers. He works closely with customers to understand their goals, developing tailored solutions that enhance quality, creativity, and commercial performance while maximising the value of their culinary offering for diverse hospitality businesses. Brendan’s career has taken him to London, Sydney, Auckland & into the heart of Dublin. With a strong passion for patisserie, he actively seeks out new global innovations, techniques & emerging trends.

Neil has been in the industry for over 30 years and has over 21 years service with Sysco. He provides his customers with expert information across the centre of plate category to add value to their business. Neil is committed to providing excellent customer care to ensure that our customers’ needs are not only met but exceeded daily. Outside of work Neil enjoys spending time with his family and friends.

Simon has been with Sysco for over 10 years and is known for his down-to-earth approach and genuine love of good food. After more than two decades in professional kitchens, he now works closely with customers to create dishes that are practical, flavour-driven and sustainable.

With an MSc in Food Product Development and Culinary Innovation, Liam brings academic insight and hands-on kitchen experience to help chefs craft menus that are both inventive and practical. He combines creativity and skill with a deep respect for high-quality ingredients.

With more than 15 years’ experience, Kyle has held senior roles in some of the region’s most respected kitchens, including the Europa Hotel and positions with Malmaison, The Doyen, and the Balloo Inns Group. At Sysco, Kyle blends creativity with real-world kitchen insight to help chefs thrive in a fast-changing industry.

Chef and culinary instructor whose cooking is rooted in a genuine love for local, seasonal ingredients. Over the years, Keith has led kitchens such as No. 1 Pery Square and Oak & Apple, earning a reputation for dishes that feel both honest and thoughtfully crafted. Keith is known for his approachable style, mentorship, and genuine enthusiasm for elevating Irish cuisine.

While this general information is invaluable, it still remains important to seek clinical guidance from a GP, Dietitian or the appropriate healthcare professional to support the management of each specific case.

Dysphagia

Catering for special diets

Dysphagia is a term which refers to swallowing difficulties. It can impact residents’ ability to eat and drink safely, and is commonly associated with underlying conditions including dementia, stroke, and head & neck cancer. If unmanaged, dysphagia may lead to complications including malnutrition, dehydration, and aspiration-related risks.

Texture-modified diets and management of swallowing difficulties

As part of dysphagia management, a Speech and Language Therapist may recommend a texturemodified diet. This can involve recommendations to modify food and fluid consistency, as well as advice for the resident about swallowing techniques and positioning to help reduce possible risk of aspiration.

The International Dysphagia Diet Standardisation Initiative (IDDSI) sets out a globally standardised framework for describing the consistency of modified texture food and liquids. Additionally, guidance on testing methods to confirm the flow or textual characteristics of food and fluids is also provided. At each eating/ drinking occasion, following IDDSI guidelines, the consistency of the food/ drink should be tested and in line with the residents’ individual needs.

Tips for the nutritional management of dysphagia in care homes

• Ensure the catering team know how many residents require a texture-modified diet, IDDSI levels required, and by whom

• Consider skills and equipment needed to produce texture-modified diets suitable to meet the requirements of each resident living with dysphagia e.g. staff upskilling, food processors, blenders

• Optimise presentation; ensure modified meals are visually appealing to residents by serving individual food items separately on the plate

• Check that food and drinks are served at the appropriate temperature

• In addition to checks by catering staff, care staff should also check the texture of modified options as per IDDSI guidance before serving to each resident; texture can change over time, especially if the temperature changes

• Offer a variety of suitable texture meals, snacks and desserts to residents who require a modified texture diet.

Dysphagia affects individuals differently and recommendations made by a clinician regarding food and drink consistencies are based on a comprehensive clinical assessment. Always ensure the foods and drinks served are of the appropriate IDDSI level for each resident with dysphagia and follow the advice of a qualified healthcare professional when selecting foods or products.

Malnutrition

Catering for special diets

Malnutrition can present when the body doesn’t get the right balance of nutrients it needs. It can negatively impact a person’s health and wellbeing by contributing to muscle loss, increased frailty, impaired immune function, slower wound healing, higher risk of infection, and reduced ability to recover from illness. Several factors can contribute to malnutrition, including poor appetite, compromised dentition, underlying health conditions, certain medications, and swallowing difficulties.

Signs of malnutrition to look out for in residents:

• Unintentional weight loss (more than 5% body weight within 3 to 6 months)

• Reduced appetite or general lack of interest in food

• Low body weight (body mass index of less than 18.5kg/m2)

• Generalised weakness and fatigue

• Delayed wound healing

• Recurrent illness and prolonged healing time.

The most effective way to identify malnutrition in residents is to undertake regular malnutrition risk screening using a validated tool such as the ‘MUST’ tool.

How to support residents with malnutrition

Enriching a diet with nutrient-dense or energy-dense ingredients – a practice known as food fortification – is commonly used to provide additional nutrients and/or energy without increasing actual food volume.

Examples of

food fortification:

• Addition of 3-4 tablespoons of skimmed milk powder to 1 pint of full fat milk and use to make tea, coffee, milky drinks, desserts, porridge, soups, sauces or add to breakfast cereals

• Addition of full fat grated cheese to hot vegetables, meat dishes and potatoes; or cheese sauces can be poured on meat, chicken, fish or vegetables

• Addition of butter or full fat spreads to foods such as sandwiches, vegetables and potatoes or spread generously on bread, crackers and scones

• Addition of double cream to dishes such as porridge, soups, desserts, curries, stews and casseroles

• Drizzle vegetable oil (e.g. olive oil) over vegetables, pasta or breads

• Addition of nut butters or milled seeds to porridge, rice puddings and curries

• Serve full fat Greek yogurt as a dessert accompaniment or add to porridge, milk-based desserts and curries

• Addition of ground almonds when making biscuits and cakes or as a topping on breakfast cereals and porridge.

Nutritious snacks

Ensuring nutritious snacks and drinks are available throughout the day may also help boost nutritional intake, especially among residents with smaller appetites. Nutritious drinks support meeting both nutrition and hydration needs.

Examples include:

• Full fat cheese and crackers

• Full fat yogurt or full fat yogurt with fruit

• Custard or rice pudding

• Egg-based snack e.g. French toast, hard-boiled egg

• Scone with butter and jam

• Small sandwich or toast with pate/ nut butter

• Breakfast cereal with full fat milk

• Milk-based drinks e.g. hot chocolate, warm milk, milky coffee

• Smoothies made with full fat milk/ full fat yoghurt

Food fortification should be personalised to each resident’s needs and preferences, and should complement their eating behaviours, abilities, and any additional requirements.

Dementia

Catering for special diets

A person living with dementia can often experience challenges with eating and drinking. Nutritional challenges vary depending on the type or stage of dementia experienced. However, there are a number of ways to support residents affected by dementia to meet their nutritional needs. Every resident living with dementia is different so it is important to remember that the suggestions provided below offer general advice which may not be suitable for everyone.

• Offer preferred foods and drinks, being mindful that taste changes can occur

• Create a comfortable and calm dining environment

• Minimise surrounding distractions and disruptions

• Avoid patterned plates, bowls and tableware

• Allow sufficient time and focus on one course at a time

• Offer words of encouragement

• Gently encourage eating with others

• Identify if a time of day when appetite is best; encourage eating at this time

• Provide finger food options*

• Aim for ‘little and often’ approach of nourishing foods/ snacks

• Provide gentle reminders and prompts to eat

• Placing cutlery in hands may encourage eating

• Support eating with ‘hand-over-hand’ help

• Assist with the cutting of food

• Allow eating with hands and provide finger food options*

• Consider adapted cutlery**

• Consult a Speech and Language Therapist for further assessment and specific guidance

*For residents with dysphagia, please consult a Speech and Language Therapist before offering finger foods.

** Refer to/ Consult with an Occupational Therapist for further assessment as appropriate.

Tips for creating supportive mealtime environments:

• Create a calm and sociable environment in a dedicated dining room to help develop familiarity

• Keep the dining table simple; limit cutlery and tableware to only what is needed

• Use plain plates and bowls with a solid colour that contrasts with the tablecloth or placemat

Finger food inspiration

• Ensure the resident is prepared; for example, comfortable and sitting upright, doesn’t need the toilet, all tableware is within reach, and has glasses, hearing aids, dentures etc., as needed

• Consider adapted cutlery or tableware e.g. non-slip placemats, high-sided plates - consult with an Occupational Therapist for further assessment, as appropriate.

• Meats – sliced or cut into manageable sizes

• Chicken fingers / goujons

• Burgers

• Fishcakes / fish fingers

• Baby boiled potatoes / small roast potatoes / potato wedges / waffles

• Vegetables – cooked or raw as appropriate e.g. carrot sticks, turnip cubes, broccoli florets, cucumber sticks, sliced peppers

• Finger sandwiches / toasted sandwiches

• Mini pizzas / quiches / vol au vents Meal-focused options

• Scone / tea cakes / crumpet with butter, jam and/or honey

Type 2 Diabetes

Catering for special diets

Type 2 diabetes is a medical condition where the body is no longer able to respond appropriately to increasing levels of glucose (sugar) in the blood. Over time, poorly controlled diabetes can result in damage to the eyes, kidneys and nerves, as well as contributing to increased risk of cardiovascular disease.

A healthy diet and regular physical activity are typically recommended as part of type 2 diabetes management.

Tips for residents with type 2 diabetes:

Maintain a regular meal pattern where possible; aiming for at least 3 main meals to help keep blood sugar levels stable

Include a similar sized portion of a starch-based food such as cereal, rice or pasta at each meal

Select wholegrain/ wholewheat varieties of carbohydrates where possible, e.g. wholemeal bread, wholewheat pasta, wholegrain rice

Aim for a balanced approach with carbohydrates, protein and a source of healthy fats

Reduce salt consumption; avoid adding salt to meals or in cooking, try flavouring with pepper, herbs and spices instead

Avoid sugary drinks or adding sugar to food and drinks; small amount of sugary food is permitted and should be kept to special occasions

Stay hydrated: women should aim to drink 6–8 glasses of fluids every day and men should aim for 8–10 glasses. Drinks such as water, no added sugar squash/ cordial, tea and coffee all count.

It is important to note, in care home settings residents may also experience other health conditions such as malnutrition or frailty, making individualized care plans essential. In such residents, Dietitians, working alongside other healthcare professionals within a multidisciplinary team, are best positioned to determine nutritional priorities, requirements, and appropriate supports.
