Seafood for the Holidays
The holidays are a time for celebrating old traditions and creating new ones. While most holiday feasts are centered around a roast or a turkey, seafood also plays an important role in many holiday traditions. As a country rich in many diverse cultures, Canada has had the fortune of inheriting and carrying on a great deal of holiday feasting traditions.
Australia, Italy, France, Mexico, Portugal, Norway, Sweden and Spain, all celebrate the holidays with seafood based dishes. So, no matter what your heritage or traditions are, why not mix up your traditional roasts and turkey with a bit of seafood this year.
For an elegant holiday meal, salmon and shrimp are a winning combination that will be sure to delight everyone.
Grilled Sweet Salmon & Shrimp Tempura
(Serves 25 portions)
Ingredients
25 each Pacific Salmon Loins, 114 g, frozen 1 x 10 lb 3 oz (SF04845), 4 oz (SF04846) 10 ml Lemon pepper seasoning 8 ml Garlic powder 250 ml Soya sauce, reduced sodium 330 ml Brown sugar, lightly packed 250 ml Water, tap 50 each Tempura Shrimp, raw, 21 25 ct 5 x 2 lb (SH02467) 60 ml Canola oil
Directions
• Place the thawed salmon loins in a pan and season with lemon pepper.
• Stir together soya sauce, brown sugar and water. Pour over the salmon loins, coating both sides. Marinate in the refrigerator for at least 2 hours.
• Remove salmon from the marinade. Place remaining marinade in stock pot and bring to a boil; reduce heat and simmer for 5 minutes.
• Cook tempura shrimp according to package directions on a lined baking sheet.
• While the shrimp are baking, heat oil on grill top over medium heat. Place salmon loins on the hot grill and cook for 3 5 minutes per side or until the salmon flakes easily with a fork.
• Transfer to a pan and cover with heated marinade.
• Serve grilled salmon loin with 2 pieces of shrimp tempura along with your choice of sides and dipping sauce.

Chilean navels are showing better signs of quality and volume at higher markets and a smaller carton. Navels should start by the end of the month.

Western supplies are extremely limited due to a production gap in CA due to heat, coupled with a harvest delay due to rain in Mexico. Expect prorates.
