Let's travel back in time to 1254 when Parmigiano-Reggiano first strutted onto the cheese scene. Legend has it that over 900 years ago, Benedictine monks living in Italy's Parma-Reggio area whipped up this cheese to stop their milk from spoiling. What a delicious solution to a big problem!

Makes 12 Cups

1 cup 7249042 Arrezzio Classic Cheese Parmesan Grated 100% Pure

Preheat the oven to 400º F (200º C).

Prepare a baking tray by lining it with parchment paper.

To bake the crisps, sprinkle a few tablespoon of cheese to form a round of about 3 inches.

Bake for approximately 3 minutes until melted and just golden. Remove from the oven and let cool on the baking tray to harden. Mold the cheese into cups if desired.

Once cool, Parmesan crisps can be carefully stacked and stored in an airtight container.

They are best fresh.

INGREDIENTS Serves 4

CRISPY PARM WAFFLES

FOR THE WAFFLES: 1 cup all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon freshly ground black pepper, plus more for sprinkling 1 1/4 cups buttermilk 3 tablespoons butter, melted, plus more for brushing the waffle iron 1 large egg 1 1/2 cups finely grated Parmesan cheese, plus more for sprinkling

FOR SERVING: Maple syrup or Spicy Buttery Maple Syrup (below), for serving FOR THE SPICY BUTTERY MAPLE SYRUP: 8 tablespoons (1 stick) unsalted butter 1/2 cup maple syrup 1 teaspoon red pepper flakes 1 teaspoon kosher salt

Method

Get that oven preheated to warm (or as low as it'll go). Meanwhile, in a large bowl, whisk together flour, baking powder, baking soda, pepper, and salt.

In a medium-sized bowl, whisk together buttermilk, melted butter, and egg until it's all mixed up. Pour the wet ingredients into the flour combo and give it a quick whisk (don't worry if it's not smooth). Now, stir in the Parmesan and voila!

Get that waffle iron heated up and give it a quick buttery brush. Pour 1/2 to 2/3 cup of batter onto the iron and cook following the iron's instructions until crispy and deep brown on top and bottom, about 5 to 6 minutes.

Carefully remove the waffle from the iron and pop it on a baking sheet in the oven to stay toasty while you cook up the rest of the batch.

Lay a golden waffle on a plate and crown it with a sunny-side-up egg and two crispy bacon strips (optional). Drizzle it with sweet syrup and a sprinkle of Parmesan cheese and pepper for that extra oomph!

FOR THE SPICY BUTTERY MAPLE SYRUP:

Get your small saucepan out and heat up the butter over medium-low heat. Add the sweet maple syrup, a pinch of red pepper flakes, and some salt to the mix. Let them all come together in a simmering party of flavours, then turn off the heat. Serve the syrupy goodness warm or wait for it to cool down and let the flavours fuse further. If you need to reheat it later, do it slowly over low heat and give it a good stir for a smooth blend.

In Italy, when it comes to meatballs and pasta in the same dish, they are typically served as "Polpette al Forno," meaning "baked in an oven." While spaghetti and meatballs are not a common dish, a pasta and meatball casserole-style dish, such as baked ziti, is a more traditional way of serving them together.

While the pan is still on heat, incorporate the drained pasta and lemon juice into the skillet, along with the parmesan cheese and the pasta water that was reserved.

Toss well with a pair of tongs until the sauce forms and coats the pasta. Then stir in the chopped parsley.
