Salmon Salad 2 SERVINGS

• 1 ½ Tbsp. Sysco Imperial Flavoured Cooking Oil

• ½ cup Sysco Imperial Caribbean Mango Vinaigrette

• 1 Tbsp. ginger, minced

• 2/ 6 oz. salmon Fillets, skin off

• ½ tsp. cumin

• ¼ tsp. cayenne pepper

• ½ cup mango, diced

• 1 avocado, diced

• 1 cup tomato, seeded and diced 1 Tbsp. scallions, sliced

• 2 Tbsp. each red onion and cilantro, diced or put as two separate entries

Combine oil, cumin, and cayenne pepper, rub salmon, and marinate for 10 minutes.

Heat a pan medium high, spray well with pan coating, season with salt and pepper, sear, and roast salmon until desired doneness. In a bowl, combine the mango, avocado, tomato, scallions, red onion, and cilantro.

Mix the ginger and Caribbean Mango Vinaigrette dressing together, toss the mango mix and greens. Serve alongside the salmon.

Sysco Classic Chicken Breast Strips, fresh baby spinach, shredded Parmesan cheese, fresh tomato and a vegetable rice blend all rolled up into a Sysco Classic Tortilla Wrap that has been drizzled with a balsamic glaze.

Warm Sysco Classic Tortilla Wrap, drizzle with balsamic glaze. Place fresh spinach on lower 1/3 of tortilla.

Warm Sysco Classic Chicken Breast Strips and place on top of spinach.

Add rice and sprinkle with shredded Parmesan cheese. Add sliced tomato.

Wrap tortilla using the burrito fold. Cut in half. Garnish with a grape tomato.

Serve with a side of French fries.
