RF: Magic and Mystery in Tibet by Alexandra David-Neel.

SW: What do you consider your greatest accomplishment?

RF: My greatest personal accomplishment is the birth of my first grandson, William.

My greatest professional accomplishment is the construction of the St. Tammany Oaks Shopping Center on 190, including Home Depot, Lowe’s and Albertsons (now Rouse’s).

RF: I get up around 6:30 and answer correspondence, then I go to the council offices around midmorning before heading to teach a class at Southeastern at noon. My afternoon activities include boxing and tending to my 30,000 bees.

IN JUNE WE are all about the men! From our Enterprising Man, Reid Falconer to our fashion editor’s picks and local businessmen, we honor and celebrate the men in our lives.

At our cover shoot we got to spend time with Reid, where he showed us everything from his rich family history to his apiculture. Getting a behind the scenes look of his bee keeping was a lot of fun, although I am not sure our cover photographer, Steve Randon enjoyed getting quite so close to the bees, for some behind the scenes pictures go to our website at sophisticatedwoman.com.

We also spent an idyllic afternoon with Matt Voelkel along with his dogs Jack and Gray. The dogs adorably wanted some attention and took off with the cheese and grapes, then decided they wanted to be part of the photo shoot. You can see Jack posing proudly in the picture on page 28.

The very next day we were off to the new Friends in Madisonville to meet up with a group of men to shoot our fashion feature for this month. The restaurant and river served as a great backdrop for the men’s custom clothing.

We thank Alex Carollo for his feature on Slidell, as a native of Slidell and Director of the Department of Cultural and Public Affairs he was very happy to share the treasures that Slidell has to offer.

Value of Teeth WHAT IS THE VALUE of having teeth? What sacrifice will one make to maintain a healthy functioning smile? Few can go through life with the “right genes” to avoid dental disease.

The reality is we can “get by” without a full dentition. No one wants to lose their teeth.

Many young people take a healthy, smile for granted. However, without proper planning and goal setting, one can find themselves a dental cripple by their 40s.

Although we can restore teeth with implants and crowns, early prevention is always preferred.

Covington Heritage Association President Sharon Nunez and Covington Mayor Mike Cooper present the 2015 Excellence in Preservation Award to Jack Terry for his efforts in preserving and recording the history of the City of Covington.

that my mom acquired was River Road Recipes published by the Junior League of Baton Rouge in 1959. Over 1.3 million copies of this recipe collection have been sold. I cannot imagine a Louisiana kitchen without a copy of this textbook of Creole cuisine. I recall that there was a small, yet not insignificant, section in the book called “How Men Cook.”

The image of the restaurant chef in the culinary world at that time was typically a man.

I had never thought of how men may cook or even what they may cook at home. My mom owned her kitchen. My dad steered clear of her territory except when he was beckoned to the table to eat. Each of my grandfathers, however, had a couple of specialties that they prepared that I fondly remember.

My Popee Toca spent many hours at our summer home in Clermont Harbor, boiling freshly caught crabs and making Creole cream cheese ice cream in his hand-cranked freezer.

My Grandpa Walker was a country boy who grew his own veggies in a small sunny plot at his home in Metairie. Field peas and sweet cornbread baked to perfection in cast iron corn shaped pans are what come to mind when I think of Grandpa.

“How Men Cook” opened up a whole new world for me. Recipes

with wild and exotic ingredients such as quail, venison roast, smoked wild duck or turkey, turtle stew, and sauce piquant.

Enter the modern enterprising man or men: The Ancient Order of Southern Gourmets.

Founded five years ago by Cajun gourmand and raconteur, Chris Dautreuil, this group of 40-plus men share a love of camaraderie, good food, cooking and a taste for fine wine. The “Ancient Gourmets” as I fondly refer to them, meet once a month on the Northshore for an evening of home cooked creative cuisine.

Members rotate responsibilities in the kitchen and create a monthly menu with appetizers, entrees, salad and desserts. Most importantly, the Acquistapace’s, Eric, Steve and Adam, supply the wine pairings.

At a recent event hosted by chef de cuisine Leonard White and sous chefs Gayden Robert and Cal Zenor, the menu featured Donald Links’ smoky oyster stew for a first course, Len’s stuffed chicken legs and thighs with Israeli couscous for the entree, and Cal’s chocolate mousse with a fresh raspberry Cointreau sauce for dessert. As I said, the Ancient Gourmets take their cooking and their eating seriously. This meal is not for the faint hearted, weight watchers, quiche eaters or those on a Paleo diet.

Ingredients: 1 pint shucked oysters 3 ounces thick sliced smoked bacon, cut into ¼ inch cubes 4 tablespoons butter 1 small onion chopped 1 bunch scallions 2 celery stalks cut into ¼ inch cubes 1 small potato diced 1 cup chopped fennel bulb 2 garlic cloves, minced 5 bay leaves ½ teaspoon salt ¼ teaspoon cayenne pepper 1 teaspoon ground black pepper 1 teaspoon thyme 1/3 cup flour 2 cups heavy cream 2 tablespoons Herbsaint or other anise flavored liqueur.

Directions: Place half of the oysters in the food processor and puree until smooth. Transfer the puree to a bowl and refrigerate along with remaining whole oysters until needed.

Heat the bacon in a large pot or Dutch oven over low heat until fat is rendered and bacon is just starting to sizzle, 2 to 3 minutes. Add 1 tablespoon of butter and the onion, scallions, celery, fennel, garlic, thyme, bay leaves, salt, pepper and cayenne.

Cook slowly stirring frequently, until they are tender, about 10 minutes. Add 2 more tablespoons of butter to pot. As soon as butter melts, add flour and stir until ingredients are evenly coated. Add 2 cups reserved oyster liquor, the potato and pureed oysters and bring to simmer gently for 15 minutes. Add 1 cup cream and simmer for 5 more minutes.

To finish the stew, add last cup of cream, remaining tablespoon of butter, Herbsaint and whole oysters. Cook for 5 more minutes and serve.

Alcoholism UNHEALTHY ALCOHOL USE encompasses a spectrum of alcohol use that increases the risk of health consequences to Alcohol Use Disorder. However, the leadership values that were instilled in him then— independence, respect and fostering the growth of individuals within a community— have been the internal compass guiding him along the career path leading to his current position, Executive Director of Beau Provence Memory Care Assisted Living.

Corey joined the Schonberg & Associates team in 2012 with the opening of Vista Shores Assisted Living and Memory Care in New Orleans. Corey served as Vista’s memory care director, increasing continuity of care and improving the cognitive activities programs. DURING THE RENAISSANCE,

falconry was the most popular sport in the land. Knowing the critical role that those in charge of training the birds of prey—the falconers—played in society, it is entirely fitting that Mandeville businessman Reid Falconer bears the same surname. Reid is a true Renaissance man in every sense of the word.

Most people know Reid from the two terms he’s served on the St. Tammany Parish Council, representing the citizens of District 4 and working to improve roadways, drainage and public works projects. He’s been a community activist since first moving to the Northshore in 1984, creating developments that were environmentally responsible, advocating for children and those suffering with mental illness and serving on boards and commissions in support of the business community. Many are not aware, however, that Reid is not only a devoted family man with deep intergenerational ties to Louisiana, but that he speaks French fluently, is an ardent beekeeper and avid history buff.

His day may just as easily include a boxing class as a Parish Council meeting. He’s as comfortable teaching a corporate finance class to juniors at Southeastern as he is cultivating a beehive. Whether negotiating on the Regional Planning Commission or attending one of his weekly French immersion gatherings, Reid Falconer is a commanding presence.

Never one to watch from the sidelines, Reid was first elected to the Parish Council in 2008. “As a real estate builder, I had to come before the Council on numerous occasions.

Sometimes, I would become frustrated that our local government wasn’t in tune to the needs of the business community,” he said. “Rather than complain about how I wanted things to be, I decided to do something about it.”

Reid noted that most of his friends and family considered him an unlikely candidate when he told them of his plans to run for office. “I was in business as an architect and builder for 30 years, so to switch gears took some people by surprise,” he explained. “I really felt like I was being called to make a positive impact. I could bring a unique perspective to the council, offering my experience as an entrepreneur, as an employer who had a staff counting on him, and as someone who was taking financial risks in the community.”

With the blessing of his wife of more than 30 years, Celeste, and the guidance from their pastor, Reverend James Mitchell of St. Timothy’s United Methodist Church, Reid followed the path toward public service. The Council position suited him and he was reelected without opposition to his second term in 2012. In 2014, his colleagues selected him as Chairman of the Council. In March, 2015, Reid publicly announced his candidacy for the Louisiana Legislature.

“Service has always been a part of our family and our culture,” Reid said. Their Louisiana roots run deep, with his ancestor, William Ramsey Falconer coming to Louisiana almost 200 years ago. Celeste’s family immigrated to Southeast Louisiana from the Canary Islands in the 1700s. “My great-great grandfather, part of the first generation of my family born in the United States, served in what would become the Louisiana Legislature. And, my father in-law, Celeste’s father, was involved in politics in St. Bernard.”

While serving in public office may have been a natural progression for Reid and his family, he admits that for a linear thinker, politics can be a challenging endeavor. “Ultimately, the skills I bring—my business acumen and the ability to build consensus—are vital to the process.”

Although there are no term limits for the Parish Council, Reid said he always knew he would only serve two terms. “I believe in term limits. We have been able to accomplish a lot of great things during my tenure and now it’s time for me to move on. I can take what I’ve learned on the local level and use this experience in Baton Rouge,” he said.

“I will continue to fight for physical improvements, address drainage and traffic

congestion,” he continued. “But I’ll also be able to make an impact on larger concerns like education, mental health and the state’s budget crisis. We have come a long way locally by saving the Southeast Mental Hospital. That project had so many layers, beginning with the need for continuing mental health service but also encompassing traffic infrastructure with a Pelican Park bypass to Highway 1088, and the development of a wetlands bank that will help with development in the years to come. It was humbling to be a part of that process.”

Noting that Celeste’s background is in social work, her role as a board member of National Alliance on Mental Illness (NAMI) St. Tammany has made him acutely aware of the changes that need to be made in the area of mental illness. “The need is so great and the history has been to treat mental illness in the jails.

The coroner is making great strides, working to create a respite center as an alternative to jail as well as establishing a Chaplain Corps to help with follow up in the aftermath of a mental health crisis. We have STOPS that provides great assistance to people during a crisis, but we really need to provide ongoing support once that crisis has passed.”

As Reid embarks on his next journey in public service, the resemblance to the medieval falconers is evident. Just as the falconers

taught birds of prey that the return home was a critical component of their mission, Reid understands that service to his hometown is an important part of his own mission.

A Summer Sanctuary

MY MEMORIES of summer on the Northshore are filled with endless pool days, snowballs dripping from my chin, sudden afternoon thunderstorms followed by slightly cooler, misty evenings and barbecues with family and friends. Matt and Mimi Voelkel’s lush, outdoor living space brings all of these summer memories to mind.

Nestled in the tall pines, a simple, whitewashed brick fountain cascades into the crystal blue pool, contrasting with the wild wisteria, white oakleaf hydrangeas and the closely cropped green lawn.

As the owner of the architecture and design firm, Studio MV in Covington, Matt Voelkel designed and built their River Road home 18 years ago as a place to raise their three children, Caroline, Charlotte and Christian. His concept then was of a “Sophisticated Farmhouse” complete with sliding barn doors and rustic wooden beams (15 years before they were popularized, I might add). Since then the house, especially the outdoor living area has evolved into what it is today. “My friends joke that every time they visit something will be completely different,” says Caroline. The outdoor area began with a deck and pergola. The pool was built five-years afterward and later the tin roof was added.

Matt’s aesthetic of form, color and space is reflected in the overall design. The sturdy pergola is covered in wisteria and draped with classic Italian string lights. The tin roof keeps the heat off the deck on a hot summer day while a wood-burning fireplace keeps it warm on a cool night. “It’s the perfect place for your morning coffee or an after dinner drink,” says Matt. The Voelkel’s dogs seem to agree. Jack, an 11-year old dachshund perches atop the chevron-patterned outdoor rug and Gray, a 6-year old black lab plunges into the cool, rectangular pool for an afternoon swim.

The space is perfectly laid out for summer activities like lounging, dining and swimming. Matt designed the heavy, cement tabletop and the large round candelabra himself in keeping with the modern farmhouse concept, and the rest of the contemporary yet rustic patio furniture is available through their design firm.

While their children are now grown, with the youngest in college, the family still makes a point to gather in this area whenever they can.

“We’ve had many family dinners out here. We’ve even added a few tables to accommodate Thanksgiving dinner,” says Matt. You can be sure that their home will continue to evolve over time and this outdoor living space will remain a constant source of summer memories.

legal Affidavit of Small Succession IN ADDITION TO the big changes to Louisiana’s laws of

Small Successions in 2009, we had even more significant changes in June of 2012. So many attorneys, and others, are unfamiliar with what can now be accomplished through an “Affidavit of Small Succession”. This simplified procedure may now be used to pass title to a deceased person’s real estate (the law no longer requires that it be your residence), and other assets, without needing the assistance of an attorney or the Court, if certain conditions are met. Without this simplified process it would be necessary to do a “judicial” succession which must go through the Courts and, of course, need the assistance of an attorney at a much greater cost. There is nothing that needs to be filed (or paid) with the Louisiana Department of Revenue.

For most cases, the following provisions are applicable: 1) there must not be a Last Will and Testament (the decedent must have died “intestate”); 2) the total gross value (do not subtract debts and mortgages) of the estate must be $75,000 or less (if any of the assets are community property then you would only include one-half of the fair market value in the calculation of assets of the first

spouse to die); and 3) the surviving heirs must be a very close family relation, e.g. spouse, children, grandchildren, parents, siblings, nephews and nieces.

However, the recent changes have allowed for some exceptions. 1) If a decedent died living in another state and had a Will that was probated in that state, we may use the Small Succession to transfer title of Louisiana real estate valued up to $75,000. We use this procedure often to handle time shares. 2) If the decedent died 25 years ago or more, then the decedent’s assets, regardless of value, may be transferred through the “Affidavit of Small Succession.”

This procedure is quick, easy and inexpensive (as compared to a full judicial succession) and may be accomplished simply by using the services of a qualified Notary Public in lieu of an attorney. However, we attorneys would be happy to help you with this process, as well.

A great way to experience and explore Louisiana is a tour of the Honey Island Swamp. Swamp tours allow visitors to see fish, turtles, birds, snakes, alligators and other wildlife in their natural habitat. There are many great tour companies in the Slidell area.

Camp Salmen Nature Park located off Gause Blvd. West is another perfect place to explore nature. Nature trails winding along Bayou Liberty are a great place to see indigenous plantlife and wildlife. The park also features a large pavilion that’s perfect for family picnics, an inclusive playground and pavilions that are available for special event rentals. The Southern Hotel hosted the inaugural Southern Hotel Cup at Innisfree Farm in Folsom on Sunday, May 3. The polo event served as a fundraiser for the newly created Public Art for Covington Fund whose mission is to place art in Covington that “reflects the rich history and culture of the city.” Its first commission is a monumental bronze “Ox Lot” sculpture by local artist Bill Binnings. The elegant event raised money through ticket sales and a silent auction featuring several works from renowned local artists while guests were served mint juleps in commemorative engraved glasses and a jazz brunch provided by Ox Lot 9.

reopened with fanfare on April 24, following an $8 million reconstruction of the venerable restaurant along the Tchefuncte River in Madisonville. Owner Ryan Richard, Operations Manager Jennifer Adams and Executive Chef Matthew Standefer greeted hundreds of partygoers who came out to celebrate the occasion.

Guests enjoyed Rockin’ Dopsie, Jr. and the Zydeco Twisters while noshing on a diverse sampling of Friends’ signature items.

of spring turn into summer green, wouldn’t it be nice to peek out at the garden and see a burst of color? A special tuber can do that for your garden. Nope, not a potato! This tuber is named Caladium!

No flowers on this plant, only heart-shaped colorful leaves on long stems that will color your garden all summer long and even into early fall. Most of these colorful plants originated in South America.

Caladiums come in a wide variety of colors— many shades of pink, green, red and white.

They normally grow to a height of 18-24 inches, but there are now dwarf varieties available as well. Many varieties prefer partial to full shade, but new cultivations are more tolerant of the sun (these sun-lovers will probably need a little more watering and tend to be a little shorter in height and maybe deeper in color).

What is a tuber? It is a part of a plant that stores nutrients necessary for a plants growth and reproduction. Tubers are usually found underground and you should always determine the top and bottom of a caladium tuber before planting. The top side will probably have little stemmed sprouts and look knobby.

The bottom side will be more rounded and smooth. At local nurseries, most will already be sprouted so that will make your determination a little easier! Caladiums can also be ordered as

tubers without sprouts at many online nurseries. Just search them and see all the wonderful varieties available.

Now let’s work on preparing the bed so we can get our tubers planted. As always, turn the soil in the area to be planted and add compost or peat moss with a little sand. That will help promote good drainage. A caladium bed should never be soggy or the tubers will rot. After planting the tuber, sprout up, add some timerelease fertilizer to the bed and water thoroughly. Careful bed prep will insure that your caladiums can stay in the ground during their winter dormancy and return again next year.

They will begin to go dormant as the nights grow longer and the leaves will collapse and turn brown. When you do your fall cleanup, remove these brown leaves carefully as not to pull the tubers out of the ground.

One more tip—this beautiful plant will also do well in a porch or patio pot by itself or with an underlay of drapey plants. Just be sure to choose a variety that fits the placement of the pot—sun or shade loving that is! Follow the same prep instructions as above for planting the potted caladium. Okay, get to work on coloring your yard. Patience and proper watering are all you need to enjoy caladium’s gift to your garden all summer!
