In our family we celebrate a family tradition where we read a Christmas story every night over dinner, during the Catholic season of Advent. My favorite story is about a boy named Wallace Purling, described as a nine year old second grader who should have been in the fourth grade. He was “big and clumsy and slow of movement and mind.”

In the story, he plays the Innkeeper in the school’s Christmas pageant that year.

His only job was to turn away from the inn, Joseph and his wife Mary, who were seeking lodging for the night. At first, Wallace said forcefully, “No! Be gone!” Joseph asked again, and again, he is refused. Joseph placed his arm around Mary and started to walk sadly away. Wallace could hardly stand it as he watched them go. WHILE MOST LITTLE GIRLS were playing dolls and dress-up, Shalea Asaro Madorin and her sister Stacey Asaro spent their childhoods immersed in real-life fairy tale weddings. Southern Oaks Plantation is not just the family business; it is where the girls and their parents spent countless hours together, while unexpectedly becoming familiar faces in the New Orleans wedding industry. There, they mastered this unique niche of the customer service business from the ground up. More importantly, Southern Oaks Plantation is the place where they formed the tightly woven familial bond they still have today. “It was great for us because it was our second home,” says Stacey. “We

When Shalea was eight years old and just before Stacey was born, their parents, Bobby and an expectant Sue Asaro, left the security of their medical careers, and took a giant leap of faith. When you receive a text clearly not intended for you—let the sender know, immediately. Do not ignore people you are with by carrying on private texting conversations.

Think of texting as documentation. The Ten Commandments came to us by way of texting. When you text, you are creating a record and as such, statements about others could be misconstrued as libel. The seeming anonymity of texting is disarming.

To verify time of text, phone records may be accessed. In traffic violations, this documentation can be helpful or potentially damaging. Fanny or Face: Prevent Aging, Stay Lean

RECENTLY I READ a fitness magazine and an article quoted a famous actress, whose name now escapes me, saying, “As a woman gets older she has to chose between her fanny or her face.” What does that mean? She was referring to the fact that as women age, or anyone for that matter, we lose collagen, that plumpness that makes us look so radiant and youthful. Then, as we age and we work harder to stay fit and maintain low body fat, we lose more fullness in our faces that can make us look drawn and older than our chronological age.

But, what if I were to tell you that you didn’t have to choose between having the body of your dreams or a beautiful youthful face? Collagen production slows as intrinsic aging begins in our early to mid 20’s. Typically, we are not supposed to notice these signs until decades later but with society’s lifestyle today, people are aging even more rapidly. Since collagen fibers are made mostly of protein, hydroxylysine and hydroxyproline (also known as lysine and proline), there is support showing that foods high in lysine and proline can be of great aid in collagen support.

So, where can you find it? Look for these amino acids in mostly lean proteins with fish being especially concentrated in lysine. Also in egg whites, soy products (edamame, silk milk, tofu), beans, legumes, salmon, lean fowl and wheat germ.

Overall protein content is very important and you will most likely need to go above standard Food Pyramid guidelines of 46g a day for women and 56g a day for men. Avoid any kind of processed meat, such as bacon, hot dogs or deli meats that are loaded with preservatives and salt that will do nothing but pull moisture from your skin.

If shopping unleashes your seasonal folly, Covington’s Christmas in the Country, which kicked off in late November, offers “old world” shopping every Saturday through Christmas Eve. For the art lover on your list, the Slidell Art League made up of 200 local artists, will host its annual Christmas in the Depot Art Exhibition every Tuesday through Saturday from December 3 through the 21. ANYONE WHO HAS EVER experienced an orthopedic injury knows that physical therapy is a vital component of the rehabilitation process. Well, the same principle holds true for animals.

At the South Paws Veterinary Rehabilitation and Sports Medicine Center, pet owners now have a place to help their animals recover from orthopedic and neurological surgeries.

The new rehab facility is part of the South Paws Veterinary Surgical Specialists center, where Robert Hancock, DVM, ACVS Board Certified Surgeon (better known as “Dr. Bob”) and his team have practiced since this last April.

“The rehab center is a perfect complement to the surgical practice,” Dr. Bob explained. “We perform so many orthopedic surgeries that it makes sense be involved with transitioning from post-operative recovery to full rehabilitation.”

He joked that the paint had barely dried on the walls of South Paws when everything fell into place—from both a staffing and a space standpoint. When surgical resident George Edwards, DVM and his wife, Sara Catherine Edwards, DVM joined the staff in July, Dr. Bob knew the time was right to move forward on the expansion.

“We made the commitment that if we were going to do it, we were going to go all out,” Dr. Bob said. In addition to an underwater treadmill, the facility also boasts a laser unit, ultrasound and dry treadmill. South Paws is one of only a handful of facilities in the Gulf South that features all of these technologies in one place.

Yet, its technology is only a small component of what sets South Paws apart. Sara Catherine, a licensed veterinarian, has also been specially trained in animal physical rehabilitation through intensive coursework at the University of Tennessee.

Animal physical therapy is so new that the American College of Veterinary Medicine has just recently established a specialty discipline in this area. “Veterinarians now realize that in many cases, physical therapy is as important as the surgical procedure itself,” Sara Catherine said.

Owners may accompany their pets during all therapy sessions. The underwater treadmill is encased in clear glass, allowing the owners a direct line of sight to their pets.

Both Dr. Bob and Sara Catherine stressed that physical therapy is not exclusive to surgical patients. They see sporting animals (field trial/agility dogs) to help with their conditioning and strength.

Additionally, South Paws offers weight loss/exercise programs to help animals with obesity issues.

“If you think your pet would benefit from physical therapy, consult with your veterinarian for a referral to South Paws,” Dr. Bob said.

Sara Catherine added that referrals can come by and tour the facility anytime for a first-hand look at the animal rehabilitation process.

“We have an open door policy,” she said.

South Paws has developed rehabilitation packages based on 30-minute multi-modal sessions to make it more convenient for the pet owners.

Sessions may be divided using multiple modalities for each patient. For instance, one typical package allows for ten 30-minute sessions over a 3-4 week period. During this time, the physical therapist uses multiple modalities tailored to each pet’s specific health condition.

Packages are broken down into two, five and ten session packages.

Additionally, there are weight loss/conditioning packages available.

Discounted boarding is also offered for the convenience of out of town owners.

“The rehabilitation facility is the perfect adjunct to the surgical excellence we provide at South Paws,” Dr. Bob said. “It fits our philosophy of extending care beyond the surgical procedure and giving our patients the best possible recovery.”

“Physical therapy was something that was barely covered when I was in veterinary school just two years ago,” she said. “I became interested in it during my surgical rotation when I had a dog with a slipped disc (a small dog with a sudden onset of neurologic dysfunction in the rear). While I worked with him to regain motor function of his pelvic limbs, through movement exercises, I fell in love with both the dog and the process.”

At South Paws, Sara Catherine provides consults for all orthopedic and neurological surgical cases. After assessing a patient, she puts together a detailed plan of therapy utilizing a variety of modalities— ranging from low level passive range of motion, laser therapy and therapeutic ultrasound to the underwater treadmill.

“Both the laser and ultrasound generate heat, but they also serve different functions,” Sara Catherine said. “Laser therapy is most often used to promote bone and wound healing and faster return to function for soft tissues. The therapeutic ultrasound brings heat to muscles and tendons, which allows for better range of motion and pliability of the muscles.”

According to Sara Catherine, the underwater treadmill is the best tool in rehabilitation therapy. The buoyancy it provides takes the weight off the joints, as well as the surgical repairs, thus reducing pain and helping support mobility. “We are able to exercise post-op patients safely in the underwater treadmill, with less concern for injury or damage to the surgeon’s repairs,” she said.

In order to encourage pet owners to utilize the recommended therapy regimen, South Paws offers one free underwater treadmill session to all orthopedic/neurologic surgical patients. “Once they see how well their pet responds to the therapy, most people are committed and excited about our physical therapy recommendations,” Dr. Bob said. “These dogs have so much fun here. It’s something new and different for them.”

Mandeville— A Modern City With an Old Soul

AS ONE OF THE oldest inhabited cities on the Northshore, Mandeville holds an abundance of history—both storied and scenic. Historically known as weekend and summer getaways for wealthy New Orleanians, and then as a bedroom community for Northshore commuters, Mandeville has since evolved into a city with its own identity.

Its nationally recognized public school system and pristine parks and recreation facilities make it a haven for young families. And while it is still home to commuters, many people are choosing to live and to work in Mandeville. AS 2011 QUICKLY approaches, Slidell continues great progress in 2010. More than five years after Hurricane Katrina, Slidell is coming back stronger than ever.

In March, the first of two new municipal offices was completed. Slidell City Council and Administrative Center, a 32,970 square-foot, 4.3 million facility was the first to open its doors to the public. The Slidell Technology and Cultural Arts Center, is currently under construction on Bouscaren Street and is scheduled for completion in early 2011. In April, the Slidell Municipal Airport opened a new 16 unit tee hangar. In June, the Slidell Animal Shelter opened its doors. The $2.5 million facility was made possible by Noah’s Wish with funds administered by the Greater New Orleans Foundation.

In July, the curtains fell on the Slidell Municipal

Auditorium. Former Mayor Ben Morris, diligently fought with FEMA for two long years to receive funding for a new facility. Now, a new $6.9 million FEMA funded, state-of-the-art auditorium is currently under construction. Completion is slated for the end of 2011. In August, we dedicated of Fleur de Triomphe—a sculpture that sits in Memorial Plaza at Heritage Park. The memorial was created and donated to the city by John Doherty, a former Slidell resident who now lives in Colorado.

The new $2.3 million FEMA funded Slidell Senior Center should open in the first quarter of next year.

‘Tis the Season in Ponchatoula

THE RESULTS OF the Census are scheduled for release in early 2011. Many are anticipating the population growth in Ponchatoula and the surrounding area. With the new numbers, comes the need for new district lines to be drawn. The city has begun preparing for the process. Tangipahoa is currently served by three State Senators and five State Representatives. State Senator Jack Donahue and State Representative Steve Pugh spoke to a full house at a monthly business luncheon in November. Senator Donahue addressed state budget proposals, while Representative Pugh addressed the anticipated changes the census will bring. Once the proposals are delivered on redistricting, a road show is planned to bring awareness to the public and what it means in terms of their representation.

Friday Night Lights is an opportunity for those who enjoy the downtown shops and the glow of the lights.

The community is invited to attend the Christmas Lighting on December 3. Downtown businesses will extend shop hours on the 3, 10 and 17 for this event.

Visitors are welcome and encouraged to bring their friends and family. The unique offerings of the smaller businesses are affordable and unusual. Santa returns to the Collinswood Museum for the 10th and 17th, along with choirs and other entertainment. Snow is even planned for the Collinswood courtyard. Lights, the parade, extended hours and the warmest season’s greetings await you in Ponchatoula.



OUR ANNUAL WINTER on the Water event will be held on Saturday, December 11. Free horse and buggy rides along the lakefront, sponsored by the City, will be offered from 11 a.m.– 2 p.m. Entertainment begins at the gazebo at 3:30 p.m. Santa’s Christmas Parade is back this year and will begin at the harbor at 4:15 p.m. Local high school bands, ROTC, scout troops, dance teams, the City Council and myself will all participate. This year we honor Officer Silky Sullivan. He will ride with me in the parade. After the parade, Santa will distribute candy to all the children. Both Mandeville and Woodlake Elementary schools will perform, opening for the show’s main headliner, Benny Grunch and the Bunch. I will turn on the Christmas tree lights and illuminate the

gazebo area at 5:15 p.m., as we anticipate the boat parade. This free event is open to everyone, and will wrap up at 6 p.m.

Old Mandeville Business Association’s Christmas Past Festival takes place the same day on Girod Street from 9 a.m.–3 p.m. The festival will offer fun for the entire family, including entertainment, crafts, vendors, contests, Christmas caroling and more. Get in the holiday spirit by making Mandeville your destination on December 11!

THE END OF THE year is always a wonderful time to enjoy many of the special events the season has to offer. We have a number of holiday concerts and events throughout St. Tammany. Our parish boasts celebrations ranging from The Nutcracker ballet, to high school holiday concerts, to a performance of A Christmas Carol at a local theater. Check the Fall/Winter Cultural Season Guide for St. Tammany, or visit the calendar at www.stpgov.org for upcoming events. In the anticipation and rush of the holiday season, we often get caught up in the preparations and shopping. These are enjoyable and certainly make the holidays fun. Sometimes, however, it’s nice to slow down and take time to remember what this season ultimately means to us.

Regardless of religious affiliation or the way you may celebrate the holidays, it always comes down to the people in our lives being the most important thing.

Family and friends are who we count on, who we spend time with, and who we love. The holidays should be a time of refreshing for us and a time to appreciate those people in our lives. Take some time this holiday season to slow down and enjoy what our home has to offer.

Take a stroll on the Mandeville lakefront. Browse the shops in Olde Towne Slidell. Visit one of the Christmas tree farms in Folsom. Most of all—enjoy each other. LAST MONTH I wrote about the upcoming Internet fundraising campaign for the Covington Boys and Girls Club. The Unit Board has been working closely with the new Corporate CEO Joe Cordova who recently relocated to New Orleans to rebuild all the clubs in the Southeast Region. The Boys and Girls Club is there to provide kids from six to 17 with a safe, positive place to be after school. Programs include; Power Hour where they get tutoring and homework help; Club Tech where they learn about digital literacy; and Smart Moves, Smart Girls and Passport to Manhood, where their self esteem is strengthened and they learn handle the challenges teens face. The arts, health and fitness, character building and many other aspects of positive self-development are promoted at the Boy and Girls

Club. The Unit Board is also negotiating for a new and improved location.

Funding for our club is sought through the United Way, foundations and other grants, and community support. We need to broaden that base of support.
