La nourriture est une composante importante de notre culture.

Depuis longtemps, manger n'est pas simplement synonyme d'ingurgiter de la nourriture, mais également un rituel social et communautaire au-delà des frontières de la langue, du pays et de la culture. Traditionnellement, la Suisse possède une haute densité d'excellents restaurants, de chefs et de concepts innovants de gourmet. Les Food Festivals constituent une grande tendance des dernières années et sortent du cadre habituel de la gastronomie.

Que ce soit à ciel ouvert, sur les pistes de ski, dans les remontées mécaniques, sur des bateaux ou dans des hôtels et restaurants classiques avec des interventions de chefs renommés: aucune limite ne semble fixée à la fantaisie des organisateurs.

Les montagnes suisses sont non seulement connues en tant qu'excellentes destinations de ski et de sports d'hiver, mais offrent également de superbes expériences durant l'été. Qu'il s'agisse d'un parc aux ours, d'un Flowtrail de VTT ou d'un séjour bien-être: au Tschuggen Grand Hotel à Arosa, vous pouvez découvrir l'univers alpin suisse sous toutes ses facettes. Eating is an important aspect of our culture. Having dinner is not just about intake of food, it is a social ritual shared across language barriers, national borders, and cultural differences.

Switzerland has always been home to an extraordinary number of excellent restaurants and accomplished chefs, and has produced countless innovative gourmet ideas and initiatives.

Food Festivals have arrived on the scene, pushing the boundaries of gastronomy. Today, guests do not only enjoy their meals al fresco; they dine on ski slopes, for instance, on mountain railways, on boats, or in traditional hotels and at restaurants who have invited a celebrated chef to make a guest appearance.

The wealth of ideas of modern event organisers seems immeasurable.

Switzerland’s mountain regions may be famous for their ski resorts and for snow sports fun. However, the same resorts are just as exciting summer destinations. The residents of a bear sanctuary are out and about, there are mountain bike flow trails to explore and spas to enjoy. Arosa’s Tschuggen Grand Hotel lets its guests experience the beautiful alpine world in all its facets, even providing an in-house funicular railway to do so. Generous luxury is the theme at The Alpina Gstaad: Its Panorama Suite, for instance, a sprawling 400 m2 suite on two floors, boasts its own spa. In Crans-Montana, at LeCrans, you may want to discover the bliss of losing track of time. It is a surprising sensation of calm and repose, as if even time was taking a break for a while.

Eating, today, is often a social event. New food festivals have transferred the act of enjoying a meal from the privacy of dining rooms and from closed circles to the streets. A novel event format, they draw and delight countless people. Switzerland, where an unparalleled number of award-winning celebrity chefs seem to push each other to new heights, is a food festival mecca.

«Standard food will no longer do.»

Les enfants des années 80 se souviennent encore de cette époque où, quand ils allaient à la Bénichon, la dégustation de rouleaux de printemps constituait le point culminant de l’exotisme en matière de gourmandise. Depuis, les Food-Festivals ont poussé comme des champignons sur le territoire, et, aujourd'hui, ils régalent les Suisses non pas de saucisses grillées, mais de momos du Tibet, d’empanadas d'Argentine ou de soupe de nouilles du Vietnam.

Les mets considérés en Asie ou en Afrique comme l’ordinaire des gens simples, qu'il s'agisse d'un pad thai, de brochettes au saté ou bien d'un Phở, font partie ici d'un concept culinaire en plein essor.

L'image renvoyée aux visiteurs est souvent caractéristique : foodtrucks, stands soigneusement décorés, guirlandes, lampions, et programme proposant des divertissements pour les enfants et des concerts. L'année dernière, l’«Original Street Food Festival Tour» qui s’est tenu dans 14 villes de Suisse a attiré, à lui seul, plus de 350’000 visiteurs.

Dario Ranza, chef-vedette tessinois, explique le succès des Food Festivals par leur niveau d’exigence de plus en plus élevé. Selon lui, la nourriture fait à présent partie intégrante de la culture de l’expérience. «La normalité, ce n’est plus suffisant» Manger, cela ne sert plus seulement à ne plus avoir faim. «Un produit d’exception, une vue magnifique depuis une terrasse», cela fait également partie du décor. Pourtant, les Street-Food-Festivals ne constituent qu'une partie infime de l’ensemble de ces manifestations. Mais cela fait longtemps que les Food Festivals ont également attiré la haute gastronomie. Cela fait 25 ans déjà que le Gourmet Festival a lieu à Saint-Moritz Ici, tout comme pour le «Taste of Zermatt» ou l’«Excellence Gourmetfestival», des chefs étoilés sont aux fourneaux pour célébrer l’art délicat de la grande cuisine.

Depuis plus d'un quart de siècle, chaque début d'année, le Gourmet Festival de St. Moritz rassemble en Haute Engadine des stars et icônes triées sur le volet de la cuisine internationale. Neuf jours durant, des cuisiniers invités ultra-motivés proposent, en partenariat avec les chefs plusieurs fois primés de l’hôtel partenaire, des voyages culinaires vers les sommets de la grande cuisine internationale actuelle. Le Gourmet Festival de Saint-Moritz n’a pas volé sa réputation : c’est l’une des manifestations culinaires européennes ultimes. Ce qui remporte chaque fois l’enthousiasme tant des invités que des professionnels de la scène mondiale de la fine cuisine, ce sont les chefs-d'œuvre concoctés en commun par des cuisiniers invités à la personnalité marquée et des cuisiniers de haut vol plusieurs fois primés des hôtels partenaires de Haute Engadine. Mais les chefs-vedettes apprécient eux aussi le caractère unique de cet évènement culinaire : «J’étais ravi de participer à ce festival dont j’avais tant entendu parler. Mon ami Julien Royer de Singapour, qui a participé l’année dernière en tant que cuisinier invité, a fait le lien avec Fabrizio Zanetti. Et mes attentes ont été satisfaites : j’ai adoré faire la connaissance de nombreux autres cuisiniers, et c'était l’occasion rêvée de pouvoir présenter ici, à Saint-Moritz, aux invités du festival, mes plats typiques que je sers au Caprice, à Hongkong», explique Guillaume Galliot. Cette année, ce chef trois fois étoilé était cuisinier invité au Suvretta House, chez le chef Fabrizio Zanetti, qui a également pris les rênes culinaires du festival.

Spring rolls were perhaps the one exotic treat you could find at Switzerland’s funfairs back in the eighties. Since new street food festivals have started to pop up everywhere in the country, however, locals have readily traded Tibetan momos, Argentinian empanadas, and Vietnamese noodle soups for the traditional bratwurst. Pad Thai, satay sticks, phở, and other treats from Asian and African cookshops are now part of new, successful food concepts here in Switzerland. The cheerful events all include colourful food trucks, artfully decorated stands, little flags, lights, and of course various kids’ activities and live music. The «Original Street Food Festival Tour» alone drew more than 350 000 visitors in 14 Swiss cities and towns last year.

Tessin celebrity chef Dario Ranza feels that the success of food festivals is a result of increasing expectations and of a new culture when it comes to leisure activities and going out: «Standard food will no longer do,» he says. According to him, food now has to do more than just appease people’s hunger: «A fancy dish, a lovely terrace, a spectacular view» are part of the experience. Street food festivals are just one format of the trend. The idea of staging festivals has been part of gourmet gastronomy for quite a while. St. Moritz, for instance, organised its first «Gourmet Festival» 25 years ago. The stars of this and similar events, including «Taste of Zermatt» or «Excellence Gourmetfestival», are master chefs who celebrate the high art of haute cuisine.

At the beginning of each year, the St. Moritz festival invites select international stars and icons to the Upper Engadine region. Over the course of nine days, they join forces with award-winning head chefs of local partner hotels and take gourmets on a culinary journey around the world. Their creations have earned the festival its reputation of being one of the ultimate culinary experiences. Every year,

242 points Gault&Millau pour le «Taste of Zermatt» Depuis 2011, le «Taste of Zermatt» constitue, année après année, une occasion unique de faire connaissance avec le niveau exceptionnel de la qualité typiquement suisse. Inspirée d'évènements similaires organisés à Gstaad, Lucerne et Saint-Moritz, l’idée de créer le «Taste of Zermatt» est venue à l’esprit de Kevin Kunz. Cette idée n’a pu qu’être plébiscitée par les principaux prestataires de Zermatt, et on a ainsi obtenu un mélange exclusif de concepts culinaires qui rafraîchissent la saison d’été au pied du Monta Cervin. Les plus grands cuisiniers de Zermatt, lesquels totalisent 242 points Gault&Millau à eux tous – nulle part ailleurs en Suisse vous n’en trouverez autant –, concentrent leur savoir-faire lors de la traditionnelle Kitchen-Party du Mont Cervin Palace et du Grand Hotel Zermatterhof. Mais, à de nombreuses autres occasions, dans d’autres hôtels et restaurants, les grands chefs ont fait un véritable défilé. En 2019, la série de manifestations «Rufibach & Friends», pour ne citer qu’elle, a incité d'autre stars à se rendre à Zermatt. Heinz Rufibach, chef au Grand Hotel Zermatterhof, partage ses fourneaux et son restaurant avec des pointures internationales de renom de la gastronomie 5 étoiles. Fin janvier, c’est Irma Dütsch, la grande dame de la grande cuisine suisse, qui a été accueilli au restaurant Prato Borni. En février, les fins gourmets ont pu se réjouir de la venue de Bernard Antony, le pape du fromage venu d’Alsace. En mars, à tout seigneur, tout honneur: Anton Mosimann a honoré de sa présence le Grand Hotel.

And the chefs, in turn, praise the uniqueness of the event: «I had heard so much about the Gourmet Festival. So I was really looking forward to be part of it. Julien Royer, a friend and colleague from Singapore, introduced me to Fabrizio Zanetti.

And the event was just what I had hoped for. It was interesting to meet so many colleagues. And I felt privileged to be able to introduce festival goers to some of the dishes I prepare at the Caprice in Hongkong,» explains Guillaume Galliot. This year, the three-star chef was a guest chef at Suvretta Houser, where he teamed up with Fabrizio Zanotti, who is also the culinary director of the «Gourmet Festival».

«Taste of Zermatt» – with 242 Gault&Millau points The annual «Taste of Zermatt» festival has celebrated high-level cuisine and Swiss quality since 2011. Inspired by similar events in Gstaad, Lucerne, and St. Moritz, Kevin Kunz initiated the Valais festival that combines an exclusive mix of food concepts. He managed to commit local key players who helped him create this new fixture in the town’s calendar of events. In summer, Zermatt’s celebrity chefs, who hold a combined 242 Gault&Millau points, line up to showcase their skill during the traditional Mont Cervin Palace and Grand Hotel Zermatterhof kitchen parties.

The festival includes several restaurants and hotels who all let a series of top chefs take over their kitchens during various festival events. «Rufibach & Friends», for instance, drew several stars to Zermatt in 2019: Heinz Rufibach, head chef at the Grand Hotel Zermatterhof, shared his kitchen and restaurant with internationally renowned representatives of five-star gastronomy. In January, Irma Dütsch, Switzerland’s grand dame of haute cuisine, was a guest at the Prato Borni restaurant. In February, gourmets were tasting treats offered by Alsace cheese whisperer Bernard Antony. And in March, things turned royal, when Anton Mosimann graced the Grand Hotel Zermatterhof with a visit.

Des lieux étonnants à Crans-Montana Les «Crans-Montana Guest Tables» propose quatre manifestations gastronomiques, tout au long de l’année. Les meilleurs cuisiniers locaux, dont le cuisinier étoilé par le guide Michelin Pierre Crepaud, de l’hôtel LeCrans, ont présenté leurs créations. En outre, ce qu'il y a d'étonnant ici, c’est que le lieu de ces expérience culinaires est tenu secret jusqu'à la veille de l'évènement. Que ce soit depuis le sommet d’une montagne, sur les rives d'un lac, sur un green de golf ou bien en plein cœur d'un vignoble, le lieu spécial de l'évènement gastronomique crée une atmosphère unique, et présente les produits dans un contexte insolite dont on se souvient encore longtemps après. De plus, en hiver, CransMontana, propose le «Ski Food Safari» sur le magnifique domaine skiable de Crans-Montana, qui offre des expériences culinaires pour les gourmets sur différentes stations. Pour s’y rendre, on peut prendre ses skis ou ses raquettes.

Pique-nique de luxe Les plus grandes stars de la gastronomie se retrouvent lorsque GaultMillau, sous la houlette d’Urs Heller, lancent une invitation à la garden party du parc du Grand Resort de Bad Ragaz. Date de la prochaine édition : le 18 août 2019. «Nous n’organisons pas un festival, nous concrétisons un vieux rêve», affirme Urs Heller, «Les amateurs se rencontrent au parc par un beau dimanche midi pour déguster la meilleure cuisine du pays, voleter de stand en stand, manger, boire, se détendre.» Tout le monde a adoré cette «Idée pique-nique» dans le jardin et sur les bords de la piscine extérieure du Grand Resort de Bad Ragaz. «Et les chefs-vedettes n'étaient pas en reste lors de ces fêtes informelles, où le port de la cravate n’était pas obligatoire et où il n’y avait pas de plan de table», ajoute le directeur de l’hôtel, Marco R. Zanolari.

Cette année, «Food Zurich» entre en lice pour la quatrième fois à Zurich. En mai 2019, Zurich et ses alentours se transformeront une fois de plus en un haut lieu de la gastronomie, avec plus de 100 manifestations, qui recouvrent les concepts de «fine food», de «slow food», en passant par le «street food», avec des dégustations, des ateliers et des visites. Temps fort à chaque fois: la «Wurst Battle», lors de laquelle les chefs de l’hôtel 5 étoiles de Zurich se mesurent les uns aux autres lors du concours de la meilleure saucisse. De plus, à l’hôtel Baur au Lac, il y a la «Fresh Caviar Night». Le chef étoilé Laurent Eperon convie des cuisiniers de haut niveau et des gourmets à la grande ruée vers l'or au Pavillon

Surprise festival venues in Crans-Montana Over the course of the year, the «Crans-Montana Guest Tables» offer four gastronomic events: The best local chefs, including LeCrans’ Michelin star chef Pierre Crepaud, present their creations. The venue of the unique dinners remain secret until the eve of the events. Gourmets might be served a culinary delight on the top of a mountain, a river bank, a golf course, or in a vineyard. All locations add a fitting context to each event and help create surprising, memorable experiences. In winter, ski food safaris take guests through Crans-Montana’s beautiful local ski area. The ski and snow shoe tours include several gourmet stops.

Picnic de luxe Urs Heller invites a particularly star-studded team for the «Gault&Millau Garden Party» at the Grand Resort Bad Ragaz Garden Party. This year’s edition will be held on Sunday, 18 August. «It’s not a festival. We are letting an old dream become true,» he explains. «Gourmets gather in the park on a Sunday to celebrate the work of the country’s leading chefs. They take a stroll through the garden, taste the food, enjoy some drinks, and chill.» The picnic in the park and at the outdoor pool of the Grand Resort Bad Ragaz was an instant success. «And the star chefs were all for a relaxed get-together without dress codes and formal seating arrangements,» Hotel Director Marco R. Zanolari adds.

Zurich’s «Food Zurich» was held for the fourth time this year.

In May 2019, the Zurich region once again became a culinary arena. More than 100 events were celebrating fine food, slow food, and street food in tastings, in workshops, and during food tours. In the «Wurst Battle», one of the festival’s highlights, the chefs of the city’s five-star hotels were competing for the best sausage recipe. In addition, the Hotel Baur au Lac holds its «Fresh Caviar Night»: Starred chef Laurent Eperon invited top chefs and gourmets to participate in a great gold rush at the Baur au Lac pavilion, paying tribute to the «black gold» in seven courses and prove the versatility of caviar.

Widder Hotel, located in Zurich’s historic part of town, is a creative and surprisingly youthful food festival host. An official hotel partner and venue of the after party of the «Menu 1 to 6» festival, Widder supports the rising stars of the global chef community.

Nine guest stars travel to Zurich to cook with local heroes. Six Zurich chefs turn their kitchens into festival stages and share their stoves with one of six international teams for two nights. The «entry list» each team will not be disclosed in advance. «Guests find out where they will dine about two weeks ahead of the event.

And they discover who will be cooking for them on the night itself,» Patrick Schindler, event organiser and Bauernschänke co-owner, explains.

1'000'000 visitors at the «Fête des Vignerons» The undisputed highlight of the 2019 gourmet and festival year of the Vevey region on Lake Geneva is the «Fête des Vignerons». The vintage festival, held only every 20 to 25 years, is a tribute to winemakers of the region, a celebration that features spectacular performances and award ceremonies for winemakers and vineyard workers. The «Fête des Vignerons» is an important part of local cultural heritage and a tradition that has been passed on from one generation to the next ever since the 18th century. The unique and unusual festival spans the entire Lausanne and Chablais region. It was added to the UNESCO list of intangible cultural heritage on 1 December 2016.

The «couronnement des vignerons-tâcherons» – the crowning of the winemakers – had prompted the «Fête» in 1797, and is still its most important element today. The 2019 edition will be held between 18 July and 11 August. Organisers expect 400’000 spectators in the arena and 1’000’000 visitors overall.

Making room for times gone by Waste wood collected from old chalets of the area was the defining material architects used to build the Panorama Suite and entire The Alpina Gstaad. In combination with select antique furniture, original farmhouse cupboards, and handmade paper cuts, the precious remnants of times gone by add patina to the design. Every element is original, authentic, and ingeniously combined with state-of-the-art technology. The two large fireplaces are lit with real wood. Waste wood, leather, and stone dominate the interior of the hotel. The designers of Hirsch Bedner Associates from London mastered the balancing act between tradition and modernism perfectly. They steered clear of kitsch and clutter, created a stylish and tasteful atmosphere, and made room for a surprising spectrum of contemporary art.

A close look will reveal an additional curtain rail in the penthouse bedroom of The Alpina Gstaaad Panorama Suite. It was fitted upon the special request by a guest, who needed blackout shades in addition to the elegant Alpine-style curtains for total darkness and perfect sleep. Nothing is ever impossible. Guests staying at the two-storeyed suite on the fifth and sixth floors of the luxury hotel in Gstaad, are quite welcome to make special requests: «The suite is often booked, especially during the main season,» explains Tim Weiland, General Manager at The Alpina Gstaad. «We have many regular guests, who come back every year and who consider the Panorama Suite their home away from home.»

The suite's in-house spa A spa area equipped with gym machines, a steam bath, a sauna, a massage table, a Jacuzzi on the terrace, and an open fireplace beneath a glass roof is no doubt the most spectacular feature of the Panorama Suite. The freestanding bathtub in the open bathroom space is made out of a single piece of marble. The precious piece is so large and heavy that it would not fit through any door of the hotel. Foresight and prudent planning were necessary to be able to heave it onto its spot with the help of a helicopter before completing the roof.

Laurence Graff analysed the Lesedi La Rona rough diamond, and saw a square emerald cut diamond like no other on earth hidden within its depths.

Found at the Lucara Karowe mine, Botswana, the rough diamond was the largest gem quality rough diamond discovered in over 100 years and the second largest ever found. Graff was confident that buying the rough stone would result in sensational gems, following the acquisition of 373 carat rough diamond in 2016 from the same stone. Familiar with the properties, they could predict how the Lesedi La Rona might behave similarly for the master craftsmen.

Even with their experience, the Lesedi La Rona presented a unique challenge to Graff ’s expert gemmologists. They had never analysed a stone of such a prodigious size. A scanner had to be custom built, with brand new imaging software capable of probing its vast expanses.

Using the new technology, gemmologists mapped the maze of imperfections, using this information to plot which cuts would yield the largest and highest clarity diamonds possible.

At first, the analysis concluded that a 300 carat diamond wasn’t possible. However, with the expertise surrounding the transformation of the rough stone, Laurence Graff was convinced that this exceptionally rare weight could be achieved.

It took 18 months for the process to be completed – from the initial cutting with precise lasers, followed by the shaping, faceting and polishing by Graff ’s highly skilled diamond artisans.

The GIA confirmed that The Graff Lesedi La Rona, weighs an awe-inspiring 302.37 carats and is a top D colour – the largest square emerald cut diamond in the world and the largest highest colour, highest clarity diamond ever graded by the GIA.

Le Grand Hotel Les Trois Rois de Bâle fête son 175ème anniversaire Sur ce site attractif au bord du Rhin à Bâle, où le commerce est présent depuis toujours, il existait déjà des pensions et des hôtels au Moyen Âge.

Construit selon les plans de l'architecte bâlois Amadeux Merian, l'actuel Grand Hotel Les Trois Rois trône sur l'embarcadère depuis 1844 et va fêter son 175ème anniversaire. En plus, il ne s'est encore jamais senti aussi jeune!

Restaging the Grand Hotel of 1844

Nouvelle mise en scène du style de 1844 La philosophie du Grand Hotel Les Trois Rois repose sur la tradition de plusieurs siècles de la maison qui remonte à avant 1844. Les trois sculptures de rois grandeur nature qui trônent toujours au-dessus du portail de l'hôtel ont été posées dès 1754 sur l'ancien bâtiment. De nos jours, elles sont encore soignées et entretenues chaque année. Durant la grande rénovation de l'hôtel entre 2004 et 2006, un principe spécial a été respecté. Le style, les matériaux et l'esprit du Grand Hotel de 1844 devaient être conservés et rester perceptibles, mis en scène avec des technologies innovantes, les connaissances d'aujourd'hui et l'artisanat de l'époque. Grâce aux bouts de tissu découverts lors de la rénovation, les tapisseries ont été reconstruites via des procédés élaborés tandis que les murs des interminables couloirs des cinq étages ont été marbrés à la main. Un art que seules quelques personnes maîtrisent encore et un processus qui a duré des mois.

The philosophy of the Grand Hotel Les Trois Rois draws on the centuries-old tradition of the hotel that – in part – dates back to even before 1844. The three life-sized king statues still sitting enthroned above the gate to the hotel were already watching over the previous building in 1754. To this day, they are being cherished and kept in good condition. One important basic idea guided a major renovation project between 2004 and 2006: The early days of the Grand Hotel were to remain palpable. Style, materials, and the spirit of 1844 where to be preserved, and all these elements would team up with state-of-the-art technology a brilliant combination of modern expertise and ancient craftsmanship. Wallpaper patterns were carefully restored. The walls of the seemingly endless hallways on all four floors were marbleized manually; a craft that few people still master and a process that took months.

One of the oldest city hotels in Europe – it had been established as an inn for gentlemen in 1681 and was rebuilt as a Grand Hotel in 1844 – the Les Trois Rois still welcomes guests from all over the world. «Almost all royal families stayed here at some point,» explains Les Trois Rois General Manager Tanja Wegmann. And indeed, the list of illustrious guests includes the likes of the Empress Michiko of Japan, Queen Elizabeth II, Napoléon Bonaparte, The Rolling Stones, and also Pablo Picasso who has been celebrated in a Fondation Beyeler special exhibition this year. The artist is said to have once spent a night on the balcony of his room at Les Trois Rois. He did not sleep for fear of missing the sound of the city awakening in the morning...

Au bord du Rhin, la vue et l'ambiance sont véritablement magiques. Ce n'est pas pour rien que la terrasse de l'hôtel, située sur le Rhin, a été honorée comme «la plus belle terrasse d'un hôtel de ville en Europe». Lors du petit-déjeuner, du dîner ou du goûter, on admire le grand fleuve européen en observant les bateaux de la Mer du Nord passer. Le nom «Trois Rois» de l'hôtel provient du lieu du fleuve où se retrouvaient les commerçants, la «Schifflände» (l'embarcadère) où les navires marchands richement chargés accostaient et déchargeaient leur cargaison. Aussi richement chargés que les Trois Rois qui avaient trouvé le chemin jusqu'au lieu de naissance de Jésus. Cette bâtisse située au bord du Rhin a vu passer tant d'histoires qu'elle fait elle-même partie du patrimoine mondial. Le fait que durant la Première et la Seconde guerre mondiale, l'installation permettant de faire sauter la Mittlere Brücke (un passage d'importance stratégique vers la frontière germano-suisse) était située dans la cave de l'hôtel, fait également partie de la légende. Heureusement, ce dispositif n'a jamais servi.

The view and the atmosphere on the banks of the Rhine are magical indeed.The Rhine terrace of the hotel was awarded the title of «Europe's most beautiful terrace of a city hotel» for good reason. Guests overlook one of Europe’s great waterways and watch ships arriving from the North Sea during breakfast or dinner, or while enjoying a cup of coffee and a slice of cake.

The hotel’s name is reminiscent of the former trade area on the riverbanks, the pier, where deeply loaded merchant ships landed to discharge their shipments. Their cargo reminded people of the three Kings of the East bearing their valuable gifts when they arrived at the birthplace of Christ. The hotel on the Rhine has provided the setting for many stories, and at times housed world history. Its basement, for instance, accommodated a mechanism to demolish Mittlere Brücke – a strategic bridge on the GermanSwiss border during the Second World War. Fortunately, it never had to be put to use.

The Grand Hotel Les Trois Rois is rich in history and still brimming with energy and visions for years to come. Tanja Wegmann, who returned as General Manager in 2018, after she had managed the hotel from 2007 to 2009, is navigating the «grande dame» on the Rhine towards an inspired future.

«Young at heart» is the motto, and Les Trois Rois lives up to it: Rheinschwimmen (a river swimming experience), new celebratory formats, new business ideas in the area of catering, and the flower boutique are all part of the hotel’s joie de vivre.

Some traditions, some spots remain small, well-kept secrets, however: the Chef ’s Table in the hotel’s basement, of instance, or the rooftop terrace with jacuzzi. «Allowing people to dream, stirring up their curiosity, inspiring them – that’s my job,» says Tanja Wegmann, her eyes sparkling with enthusiasm.

Georg Zimmermann est chef cuisinier au Bellevue Palace de Berne où il a effectué son apprentissage de cuisinier en 1988. Il est le chef cuisinier officiel de la Confédération suisse et en tant que tel, membre de l'honorable club «Chefs des Chefs» qui regroupe 35 chefs de présidents et de gouvernements dans le monde.

Gregor Zimmerman is Head Chef at the Bellevue Palace hotel in Berne and the official chef for the Swiss government. Le talent et la vocation de Gregor Zimmermann lui ont été transmis dès sa naissance. Ses parents dirigeaient déjà un restaurant et ont légué à leur fils la passion de la cuisine gastronomique. Zimmermann a effectué son apprentissage en tant que cuisinier au Bellevue Palace où il est désormais depuis plus de 12 ans chef d'une brigade d'environ 30 cuisiniers et où il encadre annuellement environ 2'000 banquets et manifestations.

Ainsi, après des années d'apprentissage et de voyages en tant que compagnon, Gregor Zimmermann est revenu aux origines de sa carrière. Lorsqu'un grand banquet d'état est prévu dans le cadre du protocole diplomatique officiel, il suffit d'un court message par texto au cuisinier d'Etat du pays concerné pour que Gregor Zimmermann soit au courant des préférences de la délégation correspondante. Lorsque l'on a déjà cuisiné pour d'innombrables chefs d'Etat et présidents, plus grand chose ne fait peur ou n'étonne. «Quelquefois, quatre différents goûteurs sont présents dans la cuisine avant que nous servions un menu», explique Gregor Zimmermann en souriant, «et pour l'instant, tous ont survécu...» Les exigences d'un banquet d'État peuvent être très strictes et complexes. Les menus sont discutés plusieurs mois à l'avance, le déroulement du protocole est répété et la planification du personnel est mise en place. Lors d'un banquet d'Etat, la «Table Royale» regroupant jusqu'à 84 invités doit être servie en seulement deux services, ce qui signifie que 22 serveurs s'occupent rien que de la table principale avec les invités d'honneur.

Le Bellevue Palace est un hôtel classique de banquets et d'évènements qui, en plus des hommes d'Etat de la capitale suisse de Berne, accueille également de nombreuses festivités privées.

Durant les pics, Gregor Zimmermann et sa brigade gèrent jusqu'à 12-15 manifestations par jour.

Gregory Zimmermann inherited his talent and the calling for cookery: His parents had their own restaurant and passed their passion for haute cuisine on to their son. The starting gun for his professional career, however, was fired when he started his professional training at Bellevue Palace in 1988. Today, he leads the hotel’s team of about 30 chefs and oversees 2'000 banquets and events every year. After several inspiring years of working elsewhere, he returned to Berne 12 years ago. His work has earned him numerous major awards, including three world championship titles with the Swiss national team at competitions in Chicago, Singapore, and Basel.

Food tasters and the «table royale» Gregor Zimmermann is a star without airs and graces, a quiet, humble worker with an impressive international network. When preparing for an official state visit, a text message to the official chef of the respective country is all it takes for him to find out about any food preferences the members of a delegation may have. He has prepared banquets for countless heads of state and presidents, so there is not much that could surprise or shock him: «Sometimes there is an entire, four-level team of food tasters in my kitchen checking meals before allowing us to serve them to our guests,» Gregor Zimmermann explains, grinning. «So far, everyone has survived...». The requirements of states banquets can be demanding and sophisticated: Dinner courses are discussed months in advance, protocol procedures have to be practiced, staff rosters drawn up. At a state banquet, 22 attendants will make sure that up to 84 guests of honour at the «table royale» are served in just two service runs.

Bellevue Palace is a traditional event and banquet hotel and hosts many private events in addition to the Swiss capital’s diplomatic functions. On peak days, Gregor Zimmermann and his team work on 12 or even 15 events.

Solar energy and fine dining in Gstaad’s Walig Hütte

Gastón Acurio opened Yakumanka in Geneva Mandarin Oriental in Geneva is joining forces with celebrity chef Gastón Acurio to open Yakumanka, an authentic cebicheria (ceviche restaurant) serving Acurio’s acclaimed Peruvian cuisine. The restaurant will provide a vibrant, modern setting and is a perfect addition to the hotel's international cuisines, that also include the Rasoi by Vineet gourmet restaurant. To celebrate the Peruvian culinary venture, the hotel has launched a luxurious Taste of Peru at Yakumanka accommodation package that will allow guests to relax in style and to savour this extraordinary cuisine. César Bellido, a talented 29-year-old chef and disciple of Gastón Acurio, is in charge of this second Yakumanka restaurant in Europe (the first one was opened in Barcelona). César honed his skills as head chef at the acclaimed gourmet restaurant Astrid y Gastón in Lima before overseeing the launches of Yakumanka in Barcelona and La Mar in Doha. Franz W. Faeh, Executive Chef at the Gstaad Palace and internationally renowned top chef, is systematically rearranging things in the hotel’s kitchens: As Culinary Director, he is busy with creating an entirely new food and restaurant concept. And he is breaking new, sustainable ground at Walig Hütte, the Gstaad Palace’s rustic yet elegant tourist attraction high above the village of Feutersoey. At 1'700 m above sea level, he prepares exquisite dishes using only his solar cooker and an open fire on several occasions during the season. The cooker is an heirloom of sorts. His predecessor Peter Wyss had bought it from a pastor in Lauenen. Originally, the cooker had served in an aid project in Africa. The plain wooden box generates heat from sunlight, and Franz W. Faeh uses it to create impressive three-course meals. The chef is a star in the league of Switzerland’s top chefs. A Gstaad native, he started his professional career with an apprenticeship in his hometown. Today, he is both a connoisseur and an artist when it comes to sophisticated gastronomy. Three years ago, he took over as Executive Chef of the Palace kitchen and now leads a team of 55 members of staff. «A lifetime dream,» he confirms, whenever asked.

Swiss Deluxe Hotel chefs score high once again Swiss Deluxe Hotels are known and respected as innovative, modern, and fashionable establishments. The hotels' chefs no doubt do their bit to underline the excellent standing. One glance at the latest Gault&Millau and Michelin gourmet guides reveals that many of them scored high again last year, a visible recognition of their work. Here are some of the highlights: In being presented with the Gault&Millau award, Chef Fine Dining Heiko Nieder was crowned «Chef of the Year 2019», and was awarded 19 points for his culinary art.

Laurent Eperon, chef at the Pavillon restaurant at Baur au Lac in Zurich, was recently awarded a second Michelin star. This comes in the wake of his being named «Rising Star of the Year». He was also awarded with 18 points by Gault&Millau in 2017.

Berlin-born Tim Raue at The K restaurant at Kulm Hotel St. Moritz received 17 Gault&Millau points as well as a Michelin star in recognition of his cooperation with Kulm Hotel St. Moritz.

The Park Hotel Vitznau has received three Michelin stars once again. Patrick Mahler at the focus restaurant scored two stars. Philipp Heid, his successor at Restaurant Prisma, followed in Mahler's footsteps: His focus is on fusion cuisine, for which he already has been awarded one star in his first year.

Pastry Chef of the Year Sébastien Quazzola

In search of the best artists in the dessert category, Gault&Millau found its «Pastry Chef of the Year» in a Geneva palace: His name is Sébastien Quazzola, and he creates spectacular final courses to the menus of Le Richemond. Trajet confortable grâce au train de Gornergrat, jusqu'à Riffelalp. C’est de là que démarre la randonnée des 5 lacs. Comme son nom l’indique, vous vous promènerez près de 5 lacs, et il est même possible de se baigner dans deux d’entre eux. Cette boucle vous emmène à la même altitude, à la station de Sunnegga. En chemin, vous avez le choix entre différentes formules de restauration dans les nombreuses restaurants de montagne.

Via Alpina Via Alpina is a classic among the long-distance hikes in Switzerland and crosses 14 of the most beautiful Alpine passes. Une même passion pour la musique lie Nemo de Bienne et Dani de San Salvador.

Les deux musiciens ont tissé une belle amitié lors de la visite de la CROIXROUGE SUISSE au Salvador.

The same passion for music unites Nemo from Bienne, Switzerland and Dani from San Salvador. The two musicians have forged a wonderful friendship during the visit of the SWISS RED CROSS to El Salvador.

Daniel Lopez, 22 ans, rêve d’une carrière dans la musique. Depuis tout petit, il écoute du rap. Plus tard, il crée ses propres rythmes et écrit des textes de chansons dans sa maison en tôle. Un logement d’une seule pièce qu’il partage avec sa grand-mère de 86 ans et sept autres membres de sa famille à Ciudad Delgado, un quartier défavorisé de la capitale du Salvador.

Daniel Lopez, 22, dreams of a music career, and was listening to rap from a very young age. He later created his own rhythms and writes lyrics in his hut, built with corrugated sheets of iron. A one-room dwelling he shares with his 86-year-old grandmother and seven other members of his family in Ciudad Delgado, a poor ghetto in the capital of El Salvador.

Non sans fierté, il fait découvrir aujourd’hui ses compositions à Nemo Mettler, le jeune rappeur biennois de 19 ans devenu célèbre en Suisse. Nemo avait le même rêve que Dani. Tout récemment, il l’a réalisé en raflant quatre Swiss Music Awards et en plaçant sa chanson « Du » dans le top 10 du hit-parade suisse.

Même si les deux ne se comprennent que par l’entremise de la traductrice, la passion de la musique les unit. « De quoi parlent tes textes ? » demande Nemo à Dani. « De la vie en ville, de la violence, de la drogue mais aussi d’amour », répond Dani tout en jouant quelques beats sur lesquels il se met à rapper. Nemo balance la tête en rythme. Dans ce morceau, Dani évoque trois de ses amis disparus, « le premier est mort d’overdose, le deuxième a eu un accident et le troisième a été abattu ».

Not without a sense of pride he’s now showing his compositions to Nemo Mettler, the young 19-year-old rapper from Bienne has become famous in Switzerland. Nemo shared the same dream with Dani, which he recently achieved by winning four Swiss Music Awards and his song “Du” made it into the top 10 of the Swiss charts. Even if the pair don’t speak the same language, through the translator they can understand the passion for music that binds them. “What are your words about?” Nemo asks Dani. “Life in the city, violence, drugs, but also love”, says Dani while playing some beats he starts rapping over. Nemo moves his head to the rhythm. In this piece, Dani describes three friends he has lost; “the first died from an overdose, the second had an accident and the third was shot.”

Impressed At home, Daniel Lopez plays some of his songs to Nemo: “You’re really talented”, the Swiss musician assures him.

San Salvador is one of the most dangerous cities in the world, with an average of ten homicides every night. In a country half the size of Switzerland, gangs make the law and terrorise the population.

Au Salvador, un quart des jeunes sont des «ninis – ni trabajan, ni estudian», ni salariés, ni étudiants. D’une part il est trop dangereux de passer de l’école obligatoire au lycée si ce dernier se trouve sur le territoire d’un autre gang, et d’autre part les employeurs n’offrent que peu de chances aux jeunes issus des quartiers défavorisés. Compte tenu de cette situation, la CRS soutient des projets qui permettent d’améliorer les perspectives d’avenir des jeunes avec des offres de formation à leur disposition. A San Salvador, ils sont 3400 à profiter de ces programmes.

A quarter of young people in El Salvador are “ninis – ni trabajan, ni estudian”; neither working nor studying. On the one hand it’s too dangerous to go from compulsory school to the high school if the latter is located in a rival gang’s territory and, on the other, employers offer few opportunities to young people from poor neighbourhoods. To remedy this situation, the SRC (Swiss Red Cross) is supporting projects to improve the future prospects of young people by providing training opportunities. 3,400 youngsters in San Salvador have benefited from these programmes.

« Mes chansons témoignent des difficultés que rencontrent les jeunes au Salvador », explique Dani. Il raconte que sa mère est décédée lorsqu’il était enfant et ajoute : « Mon père n’était pas un exemple à suivre. » A 12 ans, Dani quitte l’école. Pour survivre, il vend dans la rue téléphones portables et autres appareils électriques : « Personne ne se souciait de mon avenir. » Les jeunes comme Dani sont des proies rêvées pour les gangs – les maras – qui font d’abord office de famille de substitution avant de les exploiter pour leurs basses œuvres.

“My songs reflect the difficulties young people face in El Salvador,” says Dani. His mother died when he was a child and he adds: “My father was hardly a role model.” Dani left school at 12 years old and sold mobile phones and other electrical devices on the street: "Nobody cared about my future.”

Young people like Dani are dream prey for gangs, the maras, who initially act as surrogate families before proceeding to exploit them for their criminal acts.

Il y a trois ans, lorsque la Croix-Rouge suisse commence à travailler dans le quartier de Dani, il y voit une chance. Avec ses amis et le soutien de la Croix-Rouge, il y construit une place de jeu. Grâce à ce projet, Dani rencontre des gens qui croient en lui : « Ma vie a alors radicalement changé. » Il commence par retourner à l’école et, aujourd’hui, il suit une formation d’aide-soignant.

Il aimerait ensuite poursuivre des études avec « la musique comme plus grand rêve » en tête. Avec son amie Janida, qui travaille à l’hôpital, il élève son bébé de 4 mois. « Je veux que mon fils s’en sorte mieux que moi », déclare le jeune papa.

He seized his chance three years ago when the Swiss Red Cross started working in Dani’s district and built a playground with his friends and the support of the Swiss Red Cross. This project enabled Dani to meet people who believed in him: “My life then changed radically.” He started attending school again and is now training to be a caregiver. He would then like to pursue his studies with “music as my biggest dream”. He’s bringing up his 4-month-old baby with his partner, Janida, who works at the hospital.

“I want my son to have better opportunities than I did,” says the young dad.

Né à Lucerne, Peter Kämpfer vient d'une famille d'hôteliers et a pu dès ses jeunes années découvrir dans l'entreprise de son grandpère le parfum du grand univers mondial de l'hôtellerie internationale. Après sa formation de cuisinier, sa carrière l'a amené à la gestion hôtelière via des formations continues et séjours linguistiques.

Peter Kämpfer, General Manager of the Bernese Oberland belle époque gem is the quintessential hotelier – skillful accomplished, a perfectionist when it comes to combining outstanding quality with flawless hospitableness. Being a host, quite literally, runs in his blood: The native of Lucerne was born into a family of hoteliers, and he got his first taste of the international hotel industry universe at his grandfather’s hotel early on.

Hotel management, it seems, is an almost natural sphere for Peter Kämpfer, who is also a chef and who acquired professional experience and an impressive record of achievement abroad before returning to Switzerland.

Pourquoi avez-vous choisi de travailler dans l'hôtellerie?

J'ai grandi au Seehotel Kastanienbaum qui était tenu par mon grand-père. Dès mon enfance, j'ai donc découvert l'hôtellerie.

Même si d'une manière générale, l'architecture et le graphisme m'intéressaient plus, mais les gènes ont finalement pris le dessus.

Qu'est-ce que l'excellence du service signifie pour vous?

Lorsque je suis perçu en tant que client, quand ce qu'on me propose me fait me sentir totalement bien et que je retourne volontiers au même endroit. Cela peut être le cas dans un restaurant simple ou un hôtel de luxe, c'est totalement indépendant des points, étoiles ou d'autres récompenses.

Quelle est l'expérience qui vous a le plus marquée au cours de votre carrière?

Je suis toujours fasciné par ce qu'on peut apprendre des nombreuses rencontres intéressantes avec les clients ainsi qu'avec des collaborateurs de différents pays et de cultures variées.

Naturellement, les innombrables voyages dans le monde entier élargissent énormément l'horizon.

What brought you into the hotel business?

I grew up at Seehotel Kastanienbaum, my grandfather’s hotel.

The hotel industry was part of my childhood. I did consider architecture and graphic design, but in the end, my genes gained the upper hand, I suspect.

What do you consider excellent service?

Great service requires appreciating your guests, making them feel comfortable and at ease, making them want to come back any time. This can happen in simple restaurants and at luxury hotels; it does not depend on points, stars, or any award.

Is there an aspect of your career that has influenced your work in particular?

It keeps fascinating me how much I learn when meeting or working with guests and employees from various countries and cultures. And, of course, travelling the world broadens my mind.

What principles and values do you share with young colleagues?

We do not sell finished products; we work in the service industry. So we serve people. And we should do it with a great sense

Quels principes et valeurs aimeriez-vous partager avec les jeunes collaborateurs?

Nous ne vendons pas des produits finis, mais travaillons dans le secteur des services, un terme qui vient de «servir». L'ouverture, la tolérance et le respect sont indispensables. Il faut aimer les gens et toujours rester soi-même.

Dans quel pays ou quelle ville souhaitez-vous diriger un hôtel?

Je ne me vois plus travailler dans un hôtel citadin. A quelques exceptions près, j'ai toujours travaillé dans des resorts. J'ai trouvé le métier de mes rêves et après seulement peu de temps, je me sens déjà très bien dans l'Oberland bernois. J'adore voyager en Italie et je pourrais imaginer y vivre ou y travailler.

Quelles sont les évolutions qui auront le plus d'influence sur l'hôtellerie de luxe à l'avenir?

La question est de savoir ce qu'à l'avenir, nous comprendrons sous le terme luxe. Est-ce qu'il s'agira encore du traditionnel glamour ou bien plutôt d'autres valeurs particulièrement importantes pour les clients plus jeunes? Comme avoir du temps libre, ne pas avoir d'obligation, découvrir de nouvelles choses, vivre des expériences surprenantes... Et naturellement, la numérisation va avoir un énorme impact sur l'ensemble de la branche.

Quel est votre conseil personnel pour découvrir la belle ville d'Interlaken et sa région?

Lors d'une visite du Harder Kulm, on comprend très bien pourquoi Interlaken s'appelle INTERLAKEN. La vue sur les deux lacs ainsi qu'Interlaken au milieu est à couper le souffle.

Pour profiter des paysages alpins autour de la ville, une excursion sur la Schynige Platte est parfaite pendant l'été. Avec une magnifique vue sur l'Eiger, le Mönch et la Jungfrau ainsi que de l'autre côté le lac de Brienz et sur un jardin botanique alpin, la Schynige Platte constitue également une destination idéale pour une balade ou un point de départ de randonnées.

Is there a particular country or city in which you would like to open a hotel?

I do not see myself at a city hotel anymore. With a few exceptions, I have always worked with resort hotels. I have found my dream job. And I feel at home in the Bernese Oberland, even though I only arrived here a short time ago. But I do love to travel Italy, and can picture myself living and working there.

What development or trend will have the greatest impact on the future of the luxury hotel business?

The question with this will be how we define «luxury» in the future. Will it still be «glamour» as we know it, or will values change? Will young people in particular attach much more weight to notions like having time at their hands, being free to do nothing, discovering and exploring new experiences...?

And, of course, the digitalisation of our world will represent an immense challenge for our industry.

Where would you send guests who would like to explore the Interlaken region?

A visit to Harder Kulm will illustrate beautifully why Interlaken was called Interlaken. The view of the two lakes and Interlaken between them is breathtaking. Guests who would like to explore the alpine region surrounding Interlaken in summer might want to start with a trip to Schynige Platte. They will no doubt enjoy the beautiful view of Eiger, Mönch, and Jungfrau on the one hand, and Lake Brienz on the other. Schynige Platte also has an alpine botanical garden, and is an ideal place to start a hiking tour.
