3pounds Brussels sprouts, halved 6 bacon strips, chopped 2 tablespoons olive oil 1/2 teaspoon kosher salt 1/2 teaspoon pepper 3 tablespoons extra virgin olive oil 2 teaspoons minced fresh oregano 1 teaspoon minced fresh sweet basil 4 tablespoons balsamic glaze 4 tablespoons freshly shaved Parmesan cheese Preheat oven to 450°. In a large bowl, toss Brussels sprouts, bacon, olive oil, salt and pepper. Transfer to a 15x10x1-in. baking sheet. Roast, stirring halfway through cooking, until sprouts are tender and lightly browned, 20-25 minutes. Sprinkle with extra olive oil if leaves are not crisping up. In a saucepan, heat the extra virgin olive oil over low heat. Remove from heat; mix in oregano and basil. Transfer Brussels sprouts to a serving toss to coat. Drizzle Brussels sprouts with balsamic glaze and sprinkle with Parmesan; serve warm.
