6 strips bacon cooked and chopped
1 teaspoon extra-virgin olive oil
2 limes, juiced
1/2 clove garlic, finely grated Kosher salt
4 cups grape tomatoes (red and yellow), halved
2 avocados, cut into 1/2-inch pieces
8 ounces pasta your choice I like corkscrew
1/4 cup fresh cilantro leaves, roughly chopped
Directions
Whisk together the olive oil, lime juice, garlic and 1/2 teaspoon salt in a large bowl. Add the tomatoes and avocados and gently toss in the dressing. Let the mixture sit at room temperature while you prepare the pasta.
Bring a large pot of salted water to a boil and add the pasta. Cook according to the package directions; drain and let cool. Add the pasta and cilantro to the tomato-avocado mixture and toss together. Top with chopped bacon
