Ham and Scalloped Potatoes
6 tablespoons butter, divided
1/4 cup all-purpose flour
1 teaspoon dried parsley flakes
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper2.5 cups milk
1/2 cup heavy cream
6 cups thinly sliced peeled potatoes
1-1/2 cups chopped fully cooked ham use more if you‘d like
1 small onion, grated
1/2 cup finely chopped Ritz crackers
In a large bowl, combine potatoes, ham and onion; place half of the mixture in a greased 2-1/2-qt. baking dish. Top with half of the milk/cream sauce; repeat layers.
Cover and bake until potatoes are almost tender, 65-75 minutes. Dot with remaining 2 tablespoons butter and Ritz crackers. Bake, uncovered, until potatoes are tender, 1520 minutes.
