The Sun Valley Culinary Institute (SVCI) is more than a culinary school—it is a gathering place for food enthusiasts, aspiring chefs, and lifelong learners who share a passion for great food and hospitality. Through professional culinary training, community education, and unique dining experiences, SVCI has become an integral part of the Wood River Valley’s vibrant food culture.

At the heart of the organization is SVCI’s one-year professional training program, which combines classroom instruction with paid industry externships at leading restaurants throughout the region. As a nonprofit culinary school, SVCI provides students with handson training, mentorship from accomplished chefs, and a pathway to rewarding careers in the culinary and hospitality industries.

Led by Education Director Jorge de la Torre and Culinary Director Chef Paul Brown, SVCI also serves the broader community through year-round cooking classes, chef dinners, guest chef experiences, and special events designed to inspire culinary curiosity and bring people together around the table.

This July, SVCI is delighted to welcome back acclaimed food writer, cookbook author, and educator Cynthia Nims for a special series of culinary classes. A longtime friend of the institute, Nims is known for her engaging teaching style, deep knowledge of regional ingredients, and ability to make sophisticated cooking techniques approachable for home cooks. Her July offerings include Flavors of Brittany, an exploration of the cuisine and traditions of France’s celebrated coastal region, and Expanding Seafood Horizons, a class designed to build confidence and creativity when preparing seafood at home. Her everpopular Food Trivia Night will also return, offering a lively evening of culinary knowledge and friendly competition.

SVCI is also proud to once again offer its popular Symphony Picnic Basket Program during the annual Sun Valley Music Festival. Created by Chef Paul Brown, this year’s collection features eight distinctive picnic menus crafted to complement an evening of world-class music.

Whether attending a class with Cynthia Nims, enjoying a Symphony Picnic Basket, or participating in one of SVCI’s many culinary events, guests help support the future of culinary education in the Wood River Valley.

Pioneer Saloon

Walking into the Pioneer Saloon in Ketchum is like greeting an old friend. It’s often the first stop for locals coming home or visitors starting a memorable vacation. For more than 50 years, the Pioneer has been welcoming its loyal customers with a warm and cozy atmosphere that feels more like someone’s home than a restaurant. Renowned for perfectly aged and flavorful beef, many varieties of seafood, fresh Idaho rainbow trout, and Northwest regional specials, the Pioneer is much more than a steakhouse. Unique and historic western art fills the bar and restaurant, reminiscent of earlier days when pioneers settled in this valley. Always busy with a fun mix of locals and visitors alike, The Sawtooth Club has been downtown Ketchum’s most beloved destination for dining and cocktails since the days when Ernest Hemingway himself was a regular there. Nowadays, the place is more popular than ever with an inspired menu offering a mouthwatering blend of creative small plates to share, grilled steaks, chops & ribs, healthy vegetarian dishes, fresh seafood, unique pasta bowls, nightly specials, and much more.

In the bar, enjoy handcrafted cocktails, 16 wines by the glass, and 12 ice-cold craft brews on tap. Dinner offerings this season include fresh Idaho trout, filet mignon, linguine with clams, chicken Senegalese, flatiron steak bearnaise, rack of lamb, ribeye steak, butternut squash ravioli, Manchester Farms quail, BBQ baby back ribs, vegan noodle bowl, Wagyu beef meatloaf, pasta Portofino, baked brie en croute, fresh steamer clams, seared ahi salad, awesome burgers and sandwiches, to name just a few.

Much of our grilling is done over a live mesquite fire. This method of natural wood cooking generates the intense heat that sears in the flavorful juices and imparts a variety of subtle tastes and aromas to meat, poultry and seafood.

With an award-winning wine list that complements the wonderful food, summer nights on the beautiful outdoor terrace are not to be missed. One visit and you’ll know why The Sawtooth Club has repeatedly been voted the “Valley’s Best Overall Restaurant and The Valley’s Best Bar!”

The Cellar Pub

Head down the stairs and you’re instantly in one of Ketchum’s classic rites of passage—a traditional pub energy hit with the perfect pint of Guinness waiting at the bottom. The Cellar’s patio hums in summer, but inside is where the magic happens: locals, visitors, and ski bums packed around wooden tables, digging into Fish & Chips, Bangers & Mash, or the legendary Old-Fashioned Bar Burger. Late-night? Even better. The full bar is stacked with draft beers and daily drink-and-shot specials. Music and sports memorabilia cover the walls, giving the whole place that lived - in, good -times - happen - here feel. Wander to the back and you’ll find booths made for storytelling, a free full - size shuffleboard table that’s probably older than half the crowd, and a Big Buck Hunter arcade game. You don’t just leave The Cellar Pub with a full belly—you leave with a story.

Whiskey’s on Main

A fully remodeled space and entertainment venue, Whiskey’s on Main offers lunch and dinner service in a casual, comfortable, and family-friendly atmosphere, transitioning into Ketchum’s late-night mountain town scene after dark. Featuring 16 HD flatscreen TVs for optimal sports viewing, Whiskey’s offers large group high-back booth seating, a 360-degree bar, and a new state-of-the-art audiovisual sound system to support local and visiting performers.

For lunch and dinner service, Whiskey’s presents an elevated pub fare menu, including freshly made pizzas with hand-crafted dough. It is the return of downtown Ketchum’s familiar comfort food with classic bar choices, including wings and nachos, shareable plates, and more. Find an expanded selection on Saturday and Sunday mornings with the new brunch menu! Michel’s Christiania

Few other restaurants in Ketchum are as steeped in history as the legendary Christiania. Known as “The Christy” to locals, the restaurant has been in operation since 1959 when Ernest Hemingway dined there so often he had his own table. To get your own glimpse of ski history, come to the famous Olympic Bar, where photos and mementos from former owner Michel Rudigoz’s time as the U.S. Women’s Olympic Ski Team Coach adorn the walls. For a true culinary experience, you will enjoy French cuisine

that is also inspired by Michel’s background in Lyon (the country’s culinary capital). Your meal will be a pièce de résistance! Entrées like Wild Salmon in Sorrel Sauce and Braised Lamb Shank appear nightly on the menu in addition to an infusion of specials like the Poisson du Jour and Pâté de Campagne. The menu also features Lyonnaise pomme frites and fresh salads and, of course, Michel’s famous and extensive wine list.

Sushi on Second

After more than 30 years of serving the best sushi in Ketchum, Sushi on Second shows no signs of slowing down. In addition to crafting amazing sushi rolls like the SOS or the Who’s Your Daddy, the chefs at Sushi on Second also whip up other Asian-influenced delights, like Yuzu Miso Glazed King Salmon with sauteed Baby Bok Choy, Hamachi Crudo (thinly sliced hamachi sashimi served with a citrusy spicy aji amarillo sauce), and their SOS Style Beef and Rice Stir Fry.

Celebrated and acclaimed chefs Britt Rescigno and Kinsey

Leodler’s Fiamma in downtown Ketchum offers a fine dining experience reminiscent of a big-city restaurant. Committed to exceptional cuisine, Fiamma features a welcoming, spacious 90-seat dining area with a chef’s counter and Taverna, the bar annex. Surrounded by walls adorned with shou sugi ban, Venetian plaster, and Italian-inspired tile floors, Fiamma’s centerpiece is a seven-foot live-fire grill where Chef Britt crafts heritage-inspired Italian dishes over an open flame.

With fresh fatto a mano, handmade pasta, including tortellini, ravioli, and more, Fiamma takes pride in its authentic pastamaking. Fiamma’s game-focused, regionally inspired Italian cuisine showcases seasonal products sourced from across the Mountain West, as well as regional purveyors including Mountain Pride, MacFarlane Pheasant, Kasota Hydroponics, River Road Farm, Shoemaker Bison Ranch, Charlie’s Produce, Wagon Wheel Produce, Riverence, Idaho Springs Caviar, Snake River Farms, and more.

To complement the elevated cuisine, a robust wine program with a carefully hand-curated wine list selected by Fiamma’s Wine Director Brady McAlister adds even more satiable enjoyment to Ketchum’s newest dining establishment and the Valley’s culinary food and wine experience.

The dining room is reservation-only, available online, and walk-ins are welcome in the Taverna where Fiamma celebrates the tradition of aperitivo with an Italian-inspired happy hour nightly from 4:30-5:30pm featuring live-fire off-menu bites, and a robust, curated cocktail list.
