there are always ways to attempt to make things better and offer more at different times, and this is truly a holiday that has done that. Whether it’s all week – or Thanksgiving Day – the race to get those best deals possible is some-
thing that will only enhance this area of South Florida. Remember, with the opening of Gulfstream Park’s Winter Meeting next week, and the weather staying warm Shopping, Page 5A

Hallandale Beach continues to work through its many problems By Mayor Joy Cooper Hallandale Beach - How fitting is it that I begin this Thanksgiving column by thanking the numerous friends, residents and colleagues who have shared their caring and support. It has been a tough year - with a number of emails and slanderous, slanted news, pointed in our direction, I am sorry some residents were left with the thought I had a stroke. This is what happened. Last week, after coming home from Mexico - I was ill from the trip. I felt ill on Saturday - while there and simply was not getting better. In my typical form, I fought through it. I attended and ran Monday’s meeting. At that meeting, I announced I was not feeling well and I had been in Mexico. On Tuesday, when I still was not getting better at all, I went to my doctor. By Wednesday, I had not slowed down and was living on Gatorade, crackers and bananas. Not a great combination, but something that worked toward getting my strength back. Since in office through the many years, I have only missed one meeting, physically, when my daughter was rushed to the hospital for emergency surgery after delivering her twins. Many people do not know this, but if you can believe it, some of my colleagues ridiculed me for the missing that meeting. People that know me, and have followed me through the years, understand I give 100% to our City at all times. During Wednesday’s meeting, I did not even know I was having difficulty speaking - until I was attacked by another colleague, which is something that is not what you do when you are working as a team. When I realized, and the staff realized, I was ill, they came to help me immediately. I must single out Commissioner Annabelle Taub, who was kind and compassionate, and finally stood up to assist. I had some water and some nourishment. We both came back and finished the meeting. While I was still sick, the meeting was completed. I am feeling much better as the holiday approaches, and have been joking that it is not a great way to lose 8 pounds. It was wonderful to receive all the visits, calls and all the support from so many who we have known for decades. I am from the school that when someone is not feeling well - and doing what they can to make it a positive situation - the last thing you need is negatives. We see it all over our country, but when it hap-
pens so close to home, it makes you think. There is no mistaking that this has gone on in our City for a long time, and many residents and business owners have expressed their concerns. I have tried my best, as the leader and face of Hallandale Beach, to stay out of the negativity, which is sending our residents such a crazy message about leadership in our community. People throughout Hallandale Beach ask me how I can keep such a positive outlook with the negativity. That is the easiest answer to come up with: I work for you and will continue to do my job.
PLENTY OF ISSUES IN HALLANDALE BEACH We have many things going on in our City, and while there are a number of positives, things are not where the residents expect them to be. Many are not aware that we still have two complaints from employees that have been fired and another was just filed against the City Manager - just last week. If our residents would just take the time to reflect on what has transpired here over the past two years, and examine the facts, you would see that, while we are working so hard to move forward, there are things that continue to hold us back - and put us in a not-so-favorable light. When you are trying to progress as a community, with so many great things going on - from developments - to enhanced parks and first class amenities - the last thing we need are negatives. Whether you have lived here for decades - or just a few years - isn’t the objective to make things as great as they can be? Being in the news for “corruption” and “negative politics” is doing nothing great for our perception. Major businesses love it here - and we are in the epicenter of entertainment, great restaurants and being that destination that everyone talked about. As we celebrate Thanksgiving, we need to remove the personal attacks and the friction that continues to hinder the growth of this community. We are all working for the residents - and they count on all of us - as commissioners - to help make positive decisions that will benefit us all. Residents are always urged to be proactive in your City: I wrote last week about the commissioner requesting $350,000 from the state to do a study to con-
struct a parking garage at our South City Beach. Many concerned residents called about the number in the article which was not correct. Please call 954457-1300 and tell the office the message is for all the commissioners. Tell them we want to preserve South City Beach and do not want a parking garage there. I also want to make sure that all residents on Diana Drive are aware your parking is in jeopardy. I was going to walk door to door last week, but obviously I was ill. I want to wish everyone a Happy and Blessed Thanksgiving. If you are in need or simply do not have a place to celebrate I encourage you to attend our Annual Thanksgiving Luncheon at 10 AM at our Austin Hepburn Center locate at the corner of Pembroke Road and Martin Luther King Jr Blvd (NW 8th Ave). I also welcome the opportunity to come to your next meeting to review our budget and other city issues anytime. Call the above number to schedule an appointment. As always please feel free to contact me anytime with your questions concerns and ideas at 954-4571318 office, cell/text at 954-632-5700 or email me a joy@mayorjoycoper.com.

enough to attract a number tourists, this is the time of year that people such as Ariel Sanchez of Hollywood look forward to. What Sanchez does is cater events, and while Thanksgiving is always a busy time, she has noticed that she is getting more jobs before the holiday as well. “One of the families that we catered to last year had their meal on Wednesday night – instead of the traditional Thursday,” she said. “That way, they can spend the entire Thanksgiving Day going around for deals at stores that are open.” Part of the holiday season, especially down in this area of the state, is there are a number of tourists in town to enjoy the great weather. Because they want to celebrate the holiday, the big winner are a number of the restaurants who are open and serving delicious meals. The South Florida Sun Times has a number of advertisers who will be open, serving some great food right through the holidays – understanding that there are many on vacation here in our slice of paradise. Two years ago – before moving to Hallandale Beach from Cleveland – Ken and Eileen Roth spent Thanksgiving eating out, and for the first time in the 17 years, they didn’t cook. “We were really surprised that so many places were open on the holiday,” Ken recalled. “But knowing that this is a big tourist destination, it made sense.” The Roth family will be eating at home this year, but will be among the many who will be after the Black Friday bargains. HOW ARE YOU PREPARING FOR BLACK FRIDAY? As there are those who have been online for weeks and have found super deals, there are also those traditional holiday shopping bargains. Black Friday is an exciting time, but it can also be overwhelming. If you don't have a strategy in place, you could miss the best deals. That's why you need to have a plan and be ready
for the shopping experience.
Have a Budget Decide how much you can afford to spend on the holiday season. Figure out your must-haves, like gifts or household purchases you've been saving up for. And definitely calculate the maximum amount you absolutely can't go over. Don't forget to account for holiday incidentals like office parties!
Check the Ads Familiarize yourself with the Black Friday ads. Check the circulars for your favorite stores first, but don't ignore the ones from places you might not normally shop!
Online vs. In-Store Shopping If you can't take the crowds in-store, staying online might sound like the perfect alternative. But online shopping can come with a few drawbacks. Watch out for short-lived deals that sell out fast, a lack of inventory transparency, and website crashes (or outright refusals to load). Additionally, price comparisons are an absolute must. If you can, look at both in-store and online prices. A store's website might start Black Friday sales earlier than the physical store, helping you get a better price. Or it might just match store prices. Even if the latter is
the case, you'll still avoid fighting over parking spaces if you shop online!
Craft an In-Store Game Plan If the idea of hitting the stores doesn't fill you with dread, don't think you can just plunge into it blindly. You still need to craft a game plan. Check the ads for your most wanted items and find the retailers that have the best deals. Then note store opening hours and how long the discounts run — doorbusters are usually available for a limited time.
Prepare to Stand in Line No matter what time you shop on Black Friday, you're bound to encounter at least one notable wait. Make sure you have some entertainment on hand, lest your boredom lead to impulse purchases.
Watch Out for Final Sale Items Before making any purchase (especially a big-ticket item), know whether or not it's marked "final sale." Those products typically can't be returned. Even the ones that are returnable could still come with restocking fees that amount to 15% or more — especially electronics. Get familiar with the store's return policy before you buy. Have a safe and happy kickoff to the holiday season.
Stuff The Turkey - Not Your Pet! Sun Times Thanksgiving Schedule The Thanksgiving holiday is almost here, and it's a good time to remind you about the dangers to your pet. "So much of Thanksgiving centers around food and eating that people are often tempted to feed a traditional holiday meal complete with turkey and stuffing - to their pets. But those foods can actually make your dog or cat very sick, and at times, can even be deadly," cautions Dr. Tim Johnson, Veterinarian, Broward County Animal Care and Adoption Division. Here's a list of reminders for keeping your pets safe this holiday season: 1. Feed your pet his regular pet food as his usual feeding time. 2. Do not feed your pet any part of the Thanksgiving meal. While people may think turkey is safe, often the seasoning from the turkey drippings, along with the skin and gravy
can cause pancreatitis inflammation of the pancreas. Turkey bones are particularly dangerous since they can splinter and cause intestinal damage. Keep your pet in another room so he can't beg at the table. 3. Secure the garbage pail! Table scraps, food wrappings, bones and other items can be very tempting. Items like aluminum foil and the string from the turkey can be harmful if consumed. Be sure that all trash containers-both inside the house and outside--are securely closed so that animals cannot tear through the garbage for a private Thanksgiving feast. 4. Do not give your pets chocolate, alcohol or eggnog! Chocolate is toxic and can affect the heart and nervous system. Alcohol can cause coma and even death. Eggnog is very rich and can cause diarrhea. 5. Most importantly, make sure your pet is
wearing proper identification. Pets can easily escape through the front or back doors when guests come into your home. Remember all dogs and cats within the County must be registered and wear the Broward County Registration License tag on a secure collar. This is the best way to ensure that your pet is reunited with you if he or she becomes lost during the Thanksgiving holiday or any other day.
About Animal Care Broward County Animal Care and Adoption is dedicated to providing shelter for lost and homeless animals. The agency provides access to hundreds of shelter pets hoping for a new home. Please prevent unwanted animals and have your pet spayed or neutered. For more information about the agency, visit our website, or like us on Facebook - where we have plenty of tips.
The South Florida Sun Times Newspaper will close on Thursday, November 23rd and Friday, November 24th to celebrate Thanksgiving. All of our advertisers can get their information to us for the Thursday November 30th issue on Monday, No-
vember 27th and Tuesday, November 28th - from 9 a.m. until 5 p.m. From our family here at the South Florida Sun Times Newspaper to yours: Have a safe holiday - as we continue to give thanks for so much this year!

DisasterStruck Public Adjusters Inc. Attention Home Owners Associations, Businesses and Condominium Associations: Let Us Help You After The Storm

and Central Florida in the first week of September, it left a trail of destruction that will take months - and some cases a year or more to clean up- and get back to where it was before the storm season began. With the changes being made with the insurance companies, only paying out what their adjusters advised, that leaves many homeowners and condo associations without sufficient funds in order to perform all of the repairs. "That's where we come in," Levitis explains. "The truth of the matter is that a lot of individuals get a fraction of what they need to fully fix their house. After the hurricane or storm hits a lot of insurance companies use out of state adjusters which results in less money for the policy holders." When it comes to using a public adjuster, Levitis is serious about correcting the mistakes that the insurance companies have left behind. It happens every year, and without DisasterStruck Public Adjusters Inc., homeowners would be lost. "Teaming up with DisasterStruck Public Adjusters is a simple process," Levitis pointed out. "When someone signs with us, we take on the full responsibility of readjusting their claim. We use as much evidence that is possible to us, from old pictures to receipts, and anything else that helps prove their point. We then take a look at the numbers they were compensated with before and decide to go after the fair amount.” “At times, we can also work with attorneys, engineers, and architects if they are beneficial towards helping us with the claim, he added.” Levitis is also quick to point out that just because certain things change over time, that doesn't mean old rules still don't apply when it comes to evaluating a claim. Despite the new condo boards, not always being aware of the situation, Levitis is up to date on all rules "A lot of new boards aren't aware that we can work with
Ilya Levitis, Owner of Disasterstruck
them under any and all situations. The old boards very often are not cooperating with the new boards and just don't want to reveal any information about the claims.” “I had an instance where the old board did not want to provide insurance info to the new board, even though, they are supposed to do that. It's very important that we get that message across to all new boards, he continued.” While admitting that he is willing to come to the aid of homeowners in a variety of loss claims cases, Levitis concedes that the majority of the damages he deals with, are from the after effects of hurricanes or storms. "Our company can help with any kind of damage," Levitis adds. "At the moment, however, we find ourselves dealing with the damage inflicted from the recent storms, we are here to help you.” While dealing with several homeowners in the past, Levitis made a point to mention his efforts towards working with Condo Associations in the present and near future. "We are able to work with both homeowners and Condo Associations," Levitis states clearly. "To me, a Condo Association manages and represents the entire building. I basically work with the Condo Association towards helping them recover the proper
fees towards repairing their buildings.” Levitis also noticed that a lot of Condo Associations are strapped for budgets and can't get financing from banks. They have to use other means that is where Condo Associations And Home Owners comes in and work for you. When talking further about Condo Associations in the south Florida area, Levitis insists that there are an abundance of cases that go unnoticed. "I've been working with a lot of Condo Associations in Aventura and in Hollywood," Levitis notes. "A lot of them had their roofs torn off back in 2005 during Hurricane Wilma and they weren't compensated for it. A lot of the balconies were ripped off and you can find situations like that all throughout Aventura. The insurance company tried to say that it was old damage and that it didn't meet the deductible." "When we're there with you from the beginning, we can work beside you throughout the entire process,” Levitis said. “When the insurance company sends out their own adjuster, we'll be there too, as your own personal advocate to oversee the process." Licensed by the State and providing well qualified adjusters to work with the property owner, DisasterStruck Public Adjusters Inc. are the exact type of security
blanket that is needed when it comes to repairing your home and going after the losses you feel are necessary. At the
end of the day, it isn't the amount of money that is gathered that is ultimately important, but instead, it is the purpose
for which that money can be used, as it details the full repair of one's Home or Condo Association.

PPMG at Hallandale is ‘Old School Medicine’ at its very finest It’s no secret that the healthcare that we receive today is nowhere like it was 25 years ago. Many of us have given up trying to find a doctor like we had back in the day - when a trip to see your physician was a highlight. It was more than being ill. You understood that when you left the office, there were people who cared, calling you and even coming to your home, if necessary. If you thought that kind of patient-doctor relationship had been put to rest, you have not visited PPMG at Hallandale. This is definitely a throwback office to the days when the patient came first. It is one of the largest privately-run facilities in South Florida. From staying in touch with patients and their families - to making sure that you have your medications, testing schedule and appointments, this facility is almost too good to be true. “The way I learned from my decades of patient care, is you treat everyone like you want to be treated, never cutting corners,” said Dr. David Neuman, who has served as one of South Florida’s top internists for nearly 30 years. “There is nothing we will not do ensure all of our patients are pleased by the total care they are receiving.”
Veronique
PPGMG at Hallandale has perfected health care. Whether it’s at their Delray Beach office, or right here in Hallandale Beach, the objective is to make your experience a positive one - at a time when you need to rest and relax - the last thing you need is aggravation. When it comes to primary care, the importance has been magnified throughout the years. With insurances, medicaid, medicare and being able to assist with making appointment with specialist, having someone you can count on is not only important. It is indeed vital! Lauren Roscoe is Board Certified in Family Practice. As an advanced registered nurse practitioner, she has been around and watched it all. That’s why - along with Dr. Neuman
- she has been able to bring patients the kind of health care that we have been missing. “The rewarding thing for me, obviously, is to see all of our patients improve and get better as quickly as possible,” Roscoe explained. “I believe the thing that is missing from patient care is that personal touch. Lets face it, when we are not feeling well, we want things to be easier - and that is definitely what sets us apart.” For Neuman, a second generation Holocaust survivor, his understanding of people in general has provided a great working relationship through the years. That is what helped him to open some eyes to the fact that health care didn’t have to be an assembly line. It could do very well operating the
way many grew up with.
EVERYTHING YOU NEED PPMG at Hallandale’s philosophy focuses on quality care, results, outcome driven and a patient-centered design. Their belief is to deliver the best preventive medicine, acute care, and chronic condition management in South Florida. From primary care to on-site labs, flu shots, radiology, allergy testing and cosmetic procedures (Botox and Dermal Fillers) and even transportation, the total experience continues. “It’s a 24/7 deal with our patients,” Roscoe said. “We have added that old school element to make them feel like they can count on us away from the office as well.”
Marie
Roscoe also deals with nutrition, which is a huge element for any patient, but certainly important to those in their 60s, 70s and 80s, who need to balance their diets to keep up with their medications. “You wouldn’t think that there would be a weight management

Impressive Embrace Memory Care Program puts The Sterling-Aventura in a very bright spotlight
Last week, The Sterling-Aventura held its grand opening celebration, and those who came out were treated to a look at the signature Embrace Memory Program.
Aventura - When The SterlingAventura recently hosted its grand opening celebration, a number of people came out to see what has made this senior lifestyle community so special. As many in attendance had the opportunity see all the amenities and the programs offered at this quality assisted living facility, there was one signature program that everyone wanted to hear about. While quality of life is always paramount to residents and their families one of the newest programs to come along is indeed one of the most important. As memory issues are so vital to living that quality lifestyle, The Sterling-Aventura has rolled out its signa-
ture “Embrace” Memory Care Program. “We felt that during the grand opening, the focus should definitely be on a proven program like Embrace,” Patty Moskol, Director of Memory Care, explained. “It is a Senior Lifestyle supportive approach to memory care.” Developed through the use of the best practices, the latest research and strategic partnerships with dementia care leaders, Embrace is rooted in the understanding that when memories fade, it is moments that matter. “This program is made of six pillars, focusing on well-being,” Moskol said. “We focus on residents enjoying daily rhythm that is familiar, meaningful and active. We also focus on build-
ing relationships, and signature programs address key resident and family needs.” In addition, Moskol adds: “With this program, we expect to see less amount of medications being prescribed, less behavioral incidents, less anxiety, and improvement during sundowning.” Moskol also explained that “the guiding principles are to let compassion be our guide, see the possibilities, and lead with love.” It will allow The Sterling-Aventura an opportunity to take a proactive approach versus a reactive one. While memory care for residents with dementia and Alzheimer's has become so important to deal with, there are other programs that will be
offered as well. “In the name of stimulation and giving our residents a total experience, we will offer book clubs, gardening and cooking healthy snacks,” Moskol pointed out. “We also are super excited about our award-winning “Essence Program” - which is a holistic approach to delivering care to our residents, through oils and aromatherapy. Ask Dr. Ron: ‘Relatives & the Holiday Blues
Q...Dr. Ron.., I dread the holidays due to the large family dinners, I am pressured to attend. I have been suffering from a serious mental health disorder for the past 7 yrs, and always feel judged or treated differently at family gatherings because of my known problems. Does this happen often?..... A…You are not alone, and your feelings are a common experience for many…While sometimes the feeling of being treated “differently” can be self-exaggerated due to heightened sensitivity..,
often well-meaning family members just do not do or say the right thing. Here comes Aunt Agnes with that pitying look on her face, holding your shoulder, & saying in that way too sympathetic tone “How are you feeling dear?. Or there’s cousin Burt, strategically talking loud enough for you to hear about the newest treatment for depression”… Folks, if you have a relative with a mental health problem, don’t be overly sympathetic, or turn the topic of conversation to cures for the mentally ill.. Don’t highlight their problems.
Just love them & treat them like you would anyone else. Q...Dr. Ron.., I have started to avoid holiday gatherings. I have had a substance abuse problem & a diagnosis of bipolar disorder since I was a young adult, but have been sober & have made tremendous improvements in my life for the past 3 yrs. The problem is that at these gatherings, many of my relatives who I don’t see often, continue to overtly or subtly treat and see me as the person I was years ago, totally ignoring my healthy change & growth.
A..Again, this is a common complaint. Unfortunately, many people hang on to perceptions they have of others, even after their perceptions are outdated, no longer valid. I have often seen people so overwhelmed by the pressure family gatherings can put on them, they actually regress into the old role others still see them as. (aka self-fulfilling prophecy). My advice to you is to simply try & keep cool. Prepare yourself for people who are slow to change perceptions. Fight the pressure to revert back into
When it comes to working out, all of us are looking for some kind of an edge to make the process go much smoother. Whether it’s running or your diet, we all need some assistance. Here are a few tips to help make your workouts easier on your body:
ness: There are now lower- cal sports drinks available, adds Newgent, so look out for 'em in your grocery aisles.
BUY COMFY SNEAKERS: You shouldn't buy kicks that hurt, bottom line! "Your shoes should feel comfortable from the first step," says Andrew Kastor. So shop in the evening—your feet swell during the day and stop swelling in the late afternoon, so you want to shop when they're at their biggest. Also make sure the sneaks are a little roomy—enough so that you can wiggle your toes, but no more than that. They should be comfy from the get-go, but Kastor says they'll be even more so once you have a good 20 to
40 miles on 'em. BE A WEEKEND WARRIOR: You've been following your diet plan to the letter, but enter: the weekend. To deal with three nights of eating temptations (think:
the role you once played in your family’s dynamics. If you feel terribly insulted by someone, avoid the temptation to throw the pumpkin pie into his or her face. Instead, you might want to calmly say something like, “I’m sorry Uncle Jim, but I really do not appreciate your remarks, I’ve done a lot of work on myself in the past few years, &
I am sorry you cannot see that”…. (if that doesn’t work & he continues to be boorishly insensitive, you then may want to consider the pumpkin pie!)… Remember it took a long time for you to achieve significant change. Give others some time & opportunity to change their perceptions… Dr. Ron

Some Fit Tips That Will Make Your Workouts much easier
SAY HELLO TO WATER: Whether you're heading off to spin class, boot camp, or any other exercise, it's always important to hydrate so you can stay energized and have your best workout. Electrolyte-loaded athletic drinks, though, can be a source of unnecessary calories, so "drinking water is usually fine until you're exercising for more than one hour," says Newgent. At that point, feel free to go for regular Gatorade-type drink(and their calories), which can give you a beneficial replenishment boost. But worry not if you like a little flavor during your fit-
WORK OUT IN THE MORNING: Sure, it can be a pain to drag yourself out of bed for a morning workout. But according to a study from Appalachian State University in Boone, N.C., opting for a 45minute a.m. sweat sesh could cause a metabolic spike, helping your body continue to burn an additional 190 calories throughout the day. It is indeed a proven way.

Then, go on and indulge a bit at the soiree, guilt free. Another party trick? Enjoy a 100-calorie snack before a celebration, which can help you eat fewer munchies at the event.

Gun Runner's Career Comes Full Circle in the Pegasus World Cup For Gun Runner’s camp, Gulfstream Park’s $16 million Pegasus World Cup Invitational (G1) offers one final opportunity to add to his legacy before embarking on a new career. Up until he won the $6 million Breeders’ Cup Classic (G1) with authority Nov. 4 at Del Mar, the plan was to run Gun Runner as a 5-year-old, hopefully concluding with the 2018 Classic at Churchill Downs. Now with Horse of the Year all but a certainty for Gun Runner, the economics and risk are too prohibitive to pass on an entire breeding season to run one more year. However, the 1 1/8-mile Pegasus Jan. 27 offers a lucrative bridge, providing a high-profile opportunity to pad Gun Runner’s statistics – now at 11-3-2 in 18 starts purse earnings nearing $9 million – while still making the breeding season that starts in midFebruary at Three Chimneys Farm outside of Lexington, Ky. Hall of Fame trainer Steve Asmussen calls it “kind of full circle” that Gun Runner’s racing career is scheduled to conclude in the Pegasus, the world’s richest horse race. It’s the same spot where his team hoped to start Gun Runner’s 4year-old season before
that was thwarted by a quarantine situation at the Fair Grounds racetrack in New Orleans. “He doesn’t owe us anything,” Asmussen said. “We’re pleased with what he got done, and there’s no need to be greedy. It’s very fitting considering he was denied the opportunity to run in it last year. He deserves this.” The timing is ideal in another way: The 47th Eclipse Awards ceremony to crown North America’s Thoroughbred champions, being hosted by Gulfstream Park for
the sixth consecutive year, has been moved to two days before the Pegasus. David Fiske, the longtime racing and breeding stock manager for Winchell Thoroughbreds, which is headed by Ron Winchell, said the Pegasus offers one last chance to showcase Gun Runner. “The purse is enormous and it’s two days after he picks up his golden trophy,” Fiske said. “It wasn’t just the money that was hard to walk away from. It was [trying for] the earnings title and
history. And racing is what we do. You start to calculate it out, to try to take the emotion out of the decision and I think everybody came to the conclusion that the smart thing to do would be to run him one more time and send him to the breeding shed.” The Stronach Group is also a leading producer of social media content for the horseracing industry. Thanksgiving Leftovers Are Always Tasty Page 4B southfloridasun.net • facebook.com/sfsuntimes • sfsuntimes@aol.com • (954) 458-0635 • Wednesday, November 22, 2017
Once again, the days after the holiday are always the most creative oil over medium-low heat. Sauté onion and garlic, stirring occasionally, until soft, about 5 minutes. Add red bell pepper, 1 tablespoon thyme, pepper, and remaining salt, and sauté for 3 minutes more. Increase heat to medium-high, add 1 tablespoon more oil, reserved potatoes, and turkey and cook, stirring occasionally, for 5 minutes. Add 1/4 cup water and stir to mix. Cover, reduce heat to low, and cook for 10 minutes more. Remove hash from heat and cover loosely with foil. In two large nonstick skillets over medium heat, heat 2 teaspoons oil in each. Add 4 eggs to each pan and fry until whites are cooked, about 4 minutes. Divide hash among serving plates and top each with a fried egg, taking care not to break yolks. Garnish with remaining thyme.
While Thursday is Thanksgiving and families get together for some fun and tremendous food, it’s actually the days after the holiday that many look forward to. Turkey, ham and all the fixings are great for the holiday itself, but what about Friday, Saturday and even Sunday? How do you finish off that holiday meal in style - with tasty leftovers? Today, as you get ready for Thanksgiving, we are giving you a few delicious leftover recipes that you can share with the entire family.
TURKEY HASH WITH SUNNY SIDE-UP EGGS • 1 lb. red potatoes • 1½ tsp. salt • 3 tbsp. olive oil • 4 tsp. olive oil • 1 small yellow onion • 3 clove garlic • 1 red bell pepper • 1½ tbsp. chopped fresh thyme • ½ tsp. Freshly ground pepper • 3 c. diced leftover white and dark meat • roast turkey • 8 large eggs
In a medium pot of cold water over high heat, bring potatoes and 1 teaspoon salt to a boil. Cook for 3 minutes, drain potatoes, and set aside. Meanwhile, in a large skillet, heat 2 tablespoons
TURKEY & RICE SOUP • 6 slices bacon, chopped • 1 onion, chopped • 1 large carrot, peeled and chopped • 1 yellow bell pepper, chopped • 2 cloves garlic, minced • kosher salt • Freshly ground black pepper • 1/2 c. dry white wine • 4 c. low-sodium chicken broth • 1 c. jasmine rice • 2 c. leftover shredded turkey • 1/4 c. Freshly Chopped Parsley
In a large pot over medium heat, cook bacon until crispy, 8 minutes. Transfer to a paper towel–lined plate. Drain all but 1 tablespoon bacon fat. Add onion, carrots, bell pepper, and garlic and season with salt and pepper. Cook until soft, 5 to 7 minutes. Add white wine, broth, and rice and bring to a boil. Simmer until rice is tender, 20 minutes. Stir in leftover turkey and parsley until warmed through and serve immediately with crispy bacon. THANKSGIVING LEFTOVER SANDWICH • 32 oz. Leftover cooked turkey meat, shredded • 24 oz. Leftover gravy • 2 Cans of Candied Yams • 2 tbsp. Half and Half • 1/2 c. Jellied Cranberry Sauce • 2 tbsp. Extra Virgin Olive Oil • 1 tbsp. red wine vinegar
• • • •
1 tsp. Dijon Mustard Kosher salt and pepper to taste 2 Packages of Fresh Hawaiian Rolls 2 Packages of Specially Selected Edam Cheese
Preheat oven to 350 degrees F. Combine leftover turkey and gravy in saucepan. Warm through over medium heat, season with salt and pepper. In food processor, combine candied yams and half and half. Process until smooth. To make cranberry vinaigrette, whisk cranberry sauce, olive oil, vinegar, mustard, salt and pepper together in small bowl. Warm rolls in oven for 5 minutes. Slice in half. To assemble: Spread candied yams mixture over bottom half. Evenly divide turkey among each sandwich. Top with slices of cheese and desired amount of cranberry vinaigrette.
EASY THANKSGIVING BISCUITS • 4 ounces (1 stick) cold unsalted butter, cut • into 1/4-inch pieces and refrigerated • 1 1/2 cups all-purpose flour (8 ounces) • 2 teaspoons baking powder • 1 teaspoon kosher salt • 3/4 cup whole milk
Preheat oven to 400°F and line a baking sheet with parchment paper; alternatively grease a baking sheet with butter. In a large bowl, whisk together flour, baking powder, and salt. Toss butter into the dry ingredients until coated with flour. Working quickly and using your fingers or a pastry blender, rub or cut butter into flour until it resembles coarse meal. Alternatively, add flour mixture and butter to food processor and pulse 2 to 3 times to form pea-sized pieces; transfer to a large bowl. Add milk and stir with a fork until it just comes together into a slightly sticky, shaggy dough. For small biscuits: Using a teaspoon or small ice cream scoop, mound walnut sized balls of dough onto the prepared baking sheet. For large biscuits: Using a 1/4-cup measuring scoop, mound balls of dough onto the prepared baking sheet. Bake biscuits until golden brown, about 15 minutes for small biscuits and 20 minutes for large ones. Let cool slightly, then transfer to wire rack. Serve warm or at room temperature.
