Somehow throwing together two pieces of white bread with a slice of processed cheese simply doesn’t have the same appeal. Fortunately, chefs around the country are reimagining the kidapproved favorite and gourmet grilled cheese sandwiches are popping up on the menus of restaurants everywhere. Their secret: Mix up the ingredients and cooking methods to reinvent this classic comfort food into a palate-pleasing meal for all ages. Here are our secrets for recreating a gourmet grilled cheese in your own kitchen.
Think beyond the slice The heart of any great grilled cheese sandwich is the cheese itself. Don’t limit yourself to plastic-wrapped options. Taste buds will dance when you blend different flavorful varieties. Some of the best options for a simply better grilled cheese include: Havarti: Has a light buttery, creamy taste with a mellow aroma and is semisoft, so it melts perfectly. Pair Havarti with fruit, jam or honey in your next grilled cheese for a sweet surprise. Gouda: Has a rich buttery, slightly sweet flavor and a smooth, creamy texture that’s irresistible when melted. Savory flavors complement Gouda - try it with prosciutto or tomato. Muenster: Has a mild flavor and smooth, soft texture that stands out alone or is the perfect complement when melted alongside other cheese varieties. Match Muenster with sliced avocado for a sandwich that’s a smashing success. Fontina: A semi-soft cheese with a slightly sharp edge that is the perfect upgrade to any melty dish. Add fresh basil or pesto to a Fontina grilled cheese for a refreshing twist. What television gets wrong about weight loss and how it’s affecting kids (BPT) - We can watch television programs, such as The Bachelor or The Real Housewives, and recognize that what we are seeing is a contrived “reality.” But with programs like The Biggest Loser, Fit to Fat to Fit and Extreme Weight Loss, the lines become blurred. The contestants are losing weight, so it must be real, right? The “real” reality of weight loss is complex and unique to each individual. And the truth is that safe and sustainable weight loss takes time. But weight loss on “reality” television would lead you to believe that losing 50 or more pounds in just a few weeks is possible. Eliza Kingsford, a licensed psychotherapist and certified personal trainer, says this skewed perception of what constitutes “successful” weight loss isn’t just wrong; it’s dangerous - especially to people desperate to lose weight. “I call it ‘The Biggest Loser Effect,’ this idea that unless you’re losing enormous amounts of weight each week, you are failing,” she says. “These programs do a disservice to the public - and especially
teens - because they don’t show the full story, and they foster a dangerous expectation.” Kingsford, who has worked with former weight loss reality show participants, says that behind the scenes contestants claim they sweat in saunas, exercise 6-8 hours per day and eat severely restricted diets. So while the quick and dramatic weight loss makes for entertaining television, these tactics cannot be sustained for long periods of time. At Wellspring Camps, the nation’s leading provider of health and wellness camps for children, teens, young adults and families, the popularity of extreme weight loss television has required the staff to re-educate its campers and their parents about what healthy and realistic weight loss really looks like. Kingsford, who serves as executive director, recommends keeping these three things in mind before starting a weight loss journey as a family: Set expectations early. Gradual and steady weight loss, about two pounds per
week, leads to greater success, according to the Centers for Disease Control and Prevention. While it’s natural for people to want to lose weight quickly, Kingsford says when you rush it, your efforts will backfire. “The true measure of success is consistently engaging in healthy behaviors over time. This includes a diet of nutrient dense whole foods and incorporating exercise,” she says. “At the very beginning, adjust your thinking that success means sticking to your daily goals for activity and behavior, not a weight goal. Over time, with consistent behavior change those numbers will add up, and you’ll have made long-term, sustainable changes.” Don’t compare one person to another. The biological differences in our bodies from gender, age, height, genetics and metabolism - all play a significant role in how much weight a person will lose and the rate at which they’ll lose it. That’s why Kingsford says weight loss shouldn’t be a competition, especially if you have children of the opposite sex trying to lose
weight at the same time. “While some people enjoy a little healthy competition, when it comes to weight loss, men and women, and boys and girls, are not on a level playing field,” she says. “It’s better to motivate one another through encouragement and support, not by comparing numbers on a scale.” Recognize it’s a process. Kingsford says the key to losing weight is sustainability finding activities you enjoy that also fit into your life and making healthier eating a part of your everyday routine. That’s not to say there won’t be a few bumps in the road. “Habits are hard to break and, sometimes, you reach for a cookie when you know an apple is a better choice, but that’s OK. Own your decisions, accept them and let them go,” Kingsford says. “Make a commitment to yourself that your next decision will be in line with your goals. According to the survey, a majority of people (70 percent) feel happier when they make choices that help preserve natural resources. This study comes on the heels of the world’s first social experiment in renewability, conducted by three esteemed academic experts in habit and behavioral science, which uncovered how renewable lifestyle choices - habits that help preserve natural resources - influence levels of happiness. “We believe that even simple lifestyle behaviors have the power to make a big impact, on both a personal and global scale,” said Elisabeth Comere, director of environment and government affairs for Tetra Pak. “The combined benefit of the small actions we take, from taking shorter showers to choosing products in renewable packaging - made of natural resources that can be replenished over time - can benefit the world around us while making us happier.”
Adopting one of these simple renewable habits can help preserve the planet’s resources while fast-tracking levels of happiness: 1. Conserve resources, including water. The Environmental Protection Agency estimates that cutting your shower by just one minute will save two and a half
gallons of water. Over time, that savings adds up: 75 gallons per month and nearly 1,000 gallons over the course of a year. 2. Choose products in renewable packaging. Choosing food and beverage products in renewable packaging is a natural extension of environmentally friendly habits, such as recycling or composting. From milk and soup to water and juice, you can find food products packaged in cartons - primarily made from paper, a renewable resource from growing forests. 3. Buy only what you can consume. At the grocery store, it’s easy to over-shop, especially if you’re hungry. Cartonpacked foods last longer, are easy to store and have a relatively low environmental footprint. 4. Use re-usable containers. These days, hectic lifestyles are the norm and that often means meals and beverages on the go. When possible, rely on re-usable drink and food containers instead of disposable ones. 5. Whenever you can, bike or walk instead of driving. According to data compiled by National Geographic, it takes nearly 13 gallons of water to produce each gallon of gasoline. Using alternative modes of transportation and taking care to combine errands, car pool and use public transportation help cut water and energy demands. 3 ways your home value can help in retirement Reverse mortgages are attractive to seniors, in part, because they require no monthly payment and do not have to be paid off until the last borrower permanently leaves the home. You have the option of taking the loan proceeds as a lump sum, a fixed monthly or tenured payment, or as a line of credit. Last year, more than two-thirds of borrowers took a combination of regular payments and a line of credit. Reverse mortgages also feature a nonrecourse provision that protects you from ever owing the lender more than the value of your home, even if the house is “underwater” when you are ready to sell. You are still responsible for paying your property taxes, homeowner’s insurance, and upkeep expenses or risk the loan being called due and payable. 3. Cash-out refinancing: Cash-out refinancing allows you to refinance an existing home loan - hopefully at a lower interest rate - and also refinance the home for a dollar value higher than the remaining principal. This loan allows you to keep the money above the principal as liquid cash that can be used to pay down other expenses or fund your retirement. Like your original forward mortgage, if you miss a monthly payment due to unanticipated expenses from a health care emergency or other life disruption, your loan could be called due and payable, and the lender could move to foreclose on your property. Retirees may also face challenges qualifying for a cashout refinance because of underwriting standards that require a certain amount of monthly income. Choosing the right plan for you: While all three plans have their appealing points, new consumer safeguards for reverse mortgages are fueling their popularity among seniors who want the benefit of no monthly payment, a loan that can’t be canceled or reset, and the option of a line of credit that increases over time. Research from the National Retirement Risk Index estimates that more than 50 percent of households lack enough retirement funds to maintain their pre-retirement standard of living even if they work until age 65. It’s a scary statistic, especially if you’re approaching retirement age and don’t feel financially prepared to leave the workforce. Fortunately, even if you are facing a retirement shortfall, you do have options to help supplement your savings. For senior homeowners, those options could be in the walls around you. Financial planning experts and academics from The American College, Boston College, Columbia University, and MIT, agree that incorporating home equity into a retirement plan helps savings last longer. The question is: what’s the best way to access your home’s equity? Here are three popular options. 1. The home equity line of credit (HELOC): A HELOC allows you to establish a line of credit based on a percentage of the value of your home. You can then access this credit during a predetermined amount of time called a “draw period,” usually 10 years. During the draw period, you can borrow up to the designated amount while making monthly interest payments, and, if you choose to pay back on the principal, you can draw out again, much like a credit card. After the draw period when the HELOC resets, you are responsible for repaying the principal and interest either immediately or over a set period of time depending on the terms of the loan. You should be aware that if your home value depreciates, or if your financial circumstances change, the lender has the right to freeze your credit or even cancel your loan. 2. Reverse mortgage: A reverse mortgage is a loan that senior homeowners age 62 or older can use to convert part of the equity in their home into a usable asset, without giving up title or ownership of the house. According to Professor Wade Pfau of The American College, “the reverse-mortgage option should be viewed as a method for responsible retirees to create liquidity from an otherwise illiquid asset.”

At the age of 72, Marla Green has raised her children, spends time with her grandchildren and has done everything a mother would do for her family. But now it’s her time to live and enjoy what life has to offer. While many equate the City of Aventura with a younger group of residents, which has been the case through the years, many never stop and think that the seniors living in the community are also a vital part of the present, and of course, the future. Because she had been living in Aventura since 1975, Green has grown with the community. She worked until she was 67 and after losing her husband three years ago - remains someone who loves traveling, but also lives in this city for a reason. “Yes, I am retired, but no, I
am not a sit at home person, waiting to get older,” she said with a laugh. “I love this community because of so many things that are happening and I take full advantage of everything.” An avid exerciser, Green uses just about every park in Aventura to workout and keep in shape. Shopping, dining and recreation are all part of what has gone into making this community so special. She also takes part in the City’s Active Adult Programs, which features trips and tours that stimulate and generate interaction that is needed - as well as bringing people together. No matter if you are single or married, the trips, around south Florida, are designed to get residents out and provide that total experience. “I have gone to a number of things around Fort Lauderdale
and Miami - with those Aventura residents that I met on some of these tours,” Green said. “It has worked out very well.” Mike and Tammy Rhoden are both longtime residents who are indeed active adults. They planned their retirement as school teachers to have them both retire within a few years of each other. Three years out of the Broward County school system and they are loving life - and taking advantage of those little things that make Aventura so special. “I think we thought a lot about the time we would retire and what we would do,” Tammy said. “At first, we had looked at moving to Georgia or North Carolina, but after seeing what we would be missing, if we left here, this was the right decision.” The Rhodens are also outdoor people, so boating, going to the

Dr. Adler Using Laser In Battle Against Toe Fungus By Marylynne Newmark, Medical Writer
According to the American Podiatric Medical Association, approximately 40% of patients visiting a podiatrist have complaints or signs of toe fungus. It may begin with tenderness or pain in the toe, developing into an unsightly thick, darkened nail, and it can spread from toe to toe. In fact, the fungus can get so out of control that it can infect the foot and ankle. Topical treatment such as Lamisil cream usually is the first course of therapy for a mild or moderate case. However, long-term use or oral antifungal medication is not recommended due to the toxic side effects Lamisil can have on the liver. This is a special risk if a patient is taking other medications, including excessive use of Tylenol that can manifest the same hepatic damage. Over the past few years, Dr. Charlton Adler has been following closely the application and reported results of laser therapy on fungus toenails and other podiatric and wound situations. He is pleased to announce that he now is able to add this service as a therapeutic option in his office in North Miami Beach.
“The introduction of laser in treating toe fungus has had a major impact on attacking this uncomfortable and unsightly problem,” says Dr. Adler. He further explains that Onychomycosis, the medical term for fungal infection of the nail, is often ignored because it can be present for years without causing pain. “When the fungus imbeds itself under the nail,” he adds, “the nail surface can become darker in color and the area can develop an odor. The fungus lives on debris under the nail, and white marks can appear on the nail plate.” Approved for the treatment of nail fungus five years ago by the Food and Drug Administration, the special appeal of lasers is that it selectively heats and destroys harmful fungi while sparing healthy surrounding skin. Because of the intensity of the heat generated by laser rays, Enrique Mechulon a specially trained and certified laser technician working with Dr. Adler, says that both he and the patient wear laser protective glasses and take several rest periods during the 40-minute process. “I have already witnessed many suc-
cess stories where patients have spent years and thousands of dollars to get rid of their nail fungus,” says Mechulon. “Depending on the patient’s general health and nail problem, it can take anywhere from one to nine treatments, but the results are there with minimum risk to the body,” he adds. “I wanted to offer this therapy for quite a while,” says Dr. Adler. “However, I am cautious in my approach, and I needed more proof on studies and reports.” Dr. Adler adds that research shows that 80% of all toe fungus has been healed using laser therapy. “This is in contrast to topical ointments that only work 50% of the time,” says Adler, “and with topical treatment, the infection usually returns.”

Mythbusting the adjustable rate mortgage (BPT) - In pop culture, myths can sometimes be mistaken for truth. Common ones, like, “don’t swim for a half hour after eating,” or “we only use 10 percent of our brain,” are false even though they’re widely taken for fact. The adjustable rate mortgage (ARM) earned a bad rap after the 2006 housing crisis. The problem was, before the crisis, many borrowers were able to qualify for more home than they could actually afford by using interest-only, No Income Verification or No Ratio ARM products. When the housing market tanked and many houses lost value, some homeowners with rising mortgage payments either foreclosed or walked away from their properties. Fast forward 10 years to today. The ARM is back to show potential homebuyers it’s not the villain of the housing market. It’s time to debunk the myths that give ARMs the “bad guy” reputation it doesn’t deserve.
MYTH: ARMs are unstable and aren’t a good option while the Feds are raising rates.
MYTH: ARMs are only for people who want to be in a home for a few years. Not true. ARMs have fixed intro periods that can vary from one to even 15 years. If you think you’ll own that home for five or six years, a fixed mortgage rate may have a higher interest rate over that span. So why spend the extra money associated for the added security of a fixed rate? “The potential savings on an ARM, can range from $10,000 to $20,000, compared to a 30-year, fixed rate jumbo mortgage,” said Katie Miller, Navy Federal vice president of Mortgage Lending. “That’s enough money for a down-payment on a car, or part of your child’s college tuition.” Again, it pays to plan for various
scenarios based on how long you plan to own the home. MYTH: Rates only rise when you have an ARM. The term “adjustable” gives the misconception ARMs are unstable. The ARM is very similar to a fixedrate mortgage; both offer a 30-year term with no prepayment penalty and early payoff options, among other similarities. The intro rate period (usually a lower rate) and potential rate changes (up or down) over the life of the loan is what makes an ARM unique. Knowing your cap and what the difference in payments are over the life of the loan protects you, even if rates are on a roller coaster. Knowledge is power as an ARM holder. That “power” helps you make necessary calculations to figure out a yearly breakeven point should your interest rate increase and your introductory rate savings begin to decrease. This myth stems back to the days of the 2008 recession. It’s like saying, “dial-up is the fastest way to access the Internet,” it’s just not true anymore. All ARM loans have annual and lifetime caps, so there’s built in protection. If stability is what you’re concerned with, consider an ARM with a longer adjustment period. For example, Navy Federal Credit Union’s 5/5 ARM adjusts only once
over the initial 10-year period. Interest rates rise and fall in cycles. Even if rates are increasing now, that doesn’t mean they won’t be on the downturn when you arrive at your potential adjustment point. 3 Ways to Find Financial Happiness This Year (Family Features) Whether a Millennial keen to put down roots and buy a house in the near future, a Gen Xer intent on nourishing credit health to keep life goals on track or a Boomer who wants to ensure their finances are in order before retirement, good credit health matters. A majority of Americans feel it directly correlates with their overall happiness, too. Get up-close and personal with your credit standing: Financial unknowns can be scary at first, but you’ve got to understand where you stand now to be able to figure out where you can go next. Turns out top-notch credit can be your golden ticket to securing an affordable mortgage or qualifying for the best interest rates.
