In any of our local cities, it’s seniors who are playing a larger role in the community.

At a time when our economy is still not where we all would like it to be, and the election and politics are surrounding our every move, I was recently stopped in my tracks - literally. In a region of the country that caters to, and is home to, more seniors than any place in our nation, it has been brought to my attention that we are not listening to a huge part of our demographics. Hallandale Beach’s Energy & Sustainability Challengers & Accomplishments

As leaders were quick to recognize that investing in energy and water conservation will generate dividends for today’s taxpayers and establish a foundation for the future. Our strategy is to set the example for business and residents; going green saves money. We are a City of about 37,000 residents tucked away on the Atlantic Ocean midway between Miami and Fort Lauderdale. In the tourist mecca that is South Florida, we depend on tourism and business development. Early on, we recognized the need to attract both for the continued growth of Hallandale Beach. The ability to provide essential services through cost-effective programs will meet or exceed the needs of residents and business owners. Efficiency will generate growth. As the chairwoman of the U.S. Conference of Mayors Environmental Standing Committee, I am acutely aware of the need to approach energy savings with an open mind. In Hallandale Beach, we are progressive and aggressive in seeking federal, state and local grants, forging partnerships and participating in co-operatives to expand our Green programs and reduce costs. A willingness to listen to new concepts and try new conservation measures is a key element of our strategy to make Hallandale Beach an ideal green community. WATER QUALITY As a coastal community, Hallandale Beach suffered from poor water quality until the City built a membrane treatment plant to produce potable water. As part of the process, about 15% of the water is discarded as a concentrate, which we inject several thousand feet in the Earth. That’s millions of gallons of water wasted monthly, and billions of gallons annually. We know there has to be a better way. Utilizing a 50-50 grant, the City is designing and developing a pilot program to reclaim that concentrate and use it as irrigation for parks, golf courses and possibly on the grounds of area schools. It’s not unheard of, but this is the first time the utilization of

Mayor Joy Cooper water treatment concentrate will be tested on a large scale. We will measure the impact on turf, plants, trees and shrubs. The initial grants will pay for the pilot program, engineering and design of the distribution system. Also, we are in the bidding process for a new storm water drainage system for one quadrant of the City. This will quickly divert the water from the surface to a series of wells. However, we asked if there was a better use of the runoff. In another test program, the City hopes to use the runoff as a barrier to stem the westerly intrusion of saltwater in the aquifer. Tests in controlled environments have been successful, but our hope is to test this on a large scale. Again, it’s new, untested on a large scale, but has the potential to save Hallandale Beach residents, and residents from neighboring communities, hundreds of millions of dollars in future costs. By combining this concept in the storm water program, the City hopes to demonstrate the viability at minimal costs. The City is seeking permits from several agencies to begin the test. As a member of the Broward Water Conservation Partnership, a county program in South Florida, we participate in a unified water conservation advertisement campaign as well as numerous rebate programs and water conservation initiatives. A toilet rebate program provides up to $100 for residents and businesses that replace older, high-flow toilets with newer, low-flow models. So far, 64 residents have replaced toilets. The City and Broward Water partnership split the cost of the items, but the water savings pay off for the City and residents. Another water con-

servation partnership with Broward County includes the NatureScape Irrigation Service, in which high-use irrigation systems are evaluated for efficiency and specific recommendations are provided at no cost to the user. In addition to the county program, the City has its own, more aggressive program. Dual flow toilet retrofit kits are offered free of charge. Over 1,800 kits have been distributed over the past three years. Also, the City’s program includes free replacement toilet flappers to prevent leakage, low-flow shower heads, shower timers, kitchen and bathroom faucet aerators and lowflow garden hose nozzles. Community outreach is an invaluable resource to reach the masses. Through the City’s GreenFest, an annual celebration of Arbor Day and Earth Day, the City provides free water conservation devices and distributes free trees to residents. GreenFest also provides the opportunity for residents to learn about energy savings from the local electric and gas utilities and other conservation tips covering everything from electrical car charging stations to recycling. The City’s Green Initiative has become a part of the curriculum for fifth graders at Hallandale Elementary School. Students participate in water savings classroom lessons, take water saving plumbing retrofit kits home and encourage their families to install them. This year alone, we distributed kits to 203 students and nine teachers. We estimate saving 1.2 million gallons a year in the student’s and teacher’s homes. That’s a savings of $6.40 per 1,000 gallons of water used. Overall, the City has saved more than one billion gallons of water in the past five years and more than $2 million in production costs.

ENERGY CONVERSATION Hallandale Beach encourages new construction to be “green compliant.” It saves everyone in the long run. Here, we lead by example. When we established our Green Initiative, we retrofitted City Hall and the Po-

lice Department’s lighting systems. It demonstrated we really meant what we said. All the lights were replaced with low-energy bulbs and all the light fixtures were changed to operate by motion detectors. We recovered the cost quickly and realized a savings of about $2,500 a month in electric charges. Our recycling efforts are paying off as well. The City pays $64 per ton to dispose of refuse at the landfill. However, the City is paid $53 for every ton of recycled materials; a $117 swing in favor of the taxpayers. In another partnership,

the City is part of Broward County’s “Go Solar” program. The program encourages builders and roofers to install solar panels on roof tops to reduce power consumption. The program offers federal tax rebates of up to $14,600 for installing the panels, which are designed to withstand category 2 hurricane-force winds. The Go Solar program, which is available for new construction or remodeling, estimates at least a 60% reduction in energy use in the average building. FUEL RESOURCES This is the area where

the City is in its infancy. In the Fiscal Year 2013, we plan to begin converting our solid waste collection trucks from diesel to compressed natural gas (CNG). Working with neighboring cities, we believe the additional costs for CNG trucks will save taxpayers fuel costs, and reduce fuel emissions. We continue to explore new alternatives to increasing conservation and reducing costs. By working with our elected national and state leaders, and area corporations, we have found partners to help us enhance our green programs.

Art and Culture Center of Hollywood Begins Painting Class for Adults on Oct. 16

HOLLYWOOD – The Art and Culture Center of Hollywood is offering adult painting classes this fall, with The Joy of Painting series beginning on Tuesday, Oct. 16. This six-week class, as the title suggests, concerns the pure joy of painting. Classes are led by award-winning artist Liora Davis, who will provide students with group instruction as well as individual attention. Through the use of watercolor and acrylics paints, students will hone their skills, composition, and use of color with attention to basic design fundamentals. This class will encourage individual creativity by allowing the maximum amount of time to let the student’s imagination run wild. Instructor Liora Davis is a member of 2+3 Artists Initiative. With nearly a decade of teaching experience, she has facilitated The Artist’s Way, creativity workshops, and Mandala workshops. Davis attended Parsons School of Design and has shown her works in Florida, Connecticut, and Monte Carlo. HOLLYWOOD - The Diamond Angels of Joe DiMaggio Children’s Hospital Foundation will host the 9th Annual Fairy Tale Ball on Saturday, November 10 at 7:00 pm at The Westin Diplomat Resort & Spa. This year’s theme is Alice in Wonderland and guests will be mesmerized by the transformation of the ballroom which will morph into a dreamlike landscape with fantastical scenes from the beloved children’s fable. Featuring a cocktail reception, dinner, dancing, live and silent auctions, and an electrifying classic rock concert, the special fundraising event is always an unforgettable night. This year’s musical acts include Steve Augeri of Journey and Mike Marino aka DJ 1Tre, son of Dan Marino. Despite having autism, Mike has excelled behind the turn table and is one of South Florida’s most in demand DJs. "I have always believed in doing my share for the community and helping out where I could. I decided to get involved with the Diamond Angels after I started my own family and was looking for a way to help children in need. If my children ever got hurt or sick, Joe DiMaggio is the only place I would consider taking them,” said Elizabeth Jacobs, Fairy Tale Ball event co-chair. As in the movie, Alice must navigate unfamiliar territory and persevere through difficult circumstances, so has this year’s Special Ambassador, Jayden Villano. Last fall, the 19-month-old’s family learned that his heart was not pumping properly and he desperately needed a heart transplant. Doctors used a new device called a Berlin artificial heart which kept Jayden alive while the family awaited a heart donor. He was the first South Florida pediatric patient to use the artificial heart prior to a transplant and this past April, doctors at Joe DiMaggio Children’s Hospital successfully performed a heart transplant. Today, Jayden is healthy and an example of hope and survival against daunting odds. He’s an inspiration to all he meets. Another focal point of the night is the array of outstanding live and silent auction prizes which include: an eight day cruise aboard the Carnival Freedom and resort destination weekend packages to Los Angeles, New York, and Napa among others. Proceeds from the event will support Joe DiMaggio Children’s Hospitals’ Pediatric Cardiac Program that recently completed its sixth heart transplant. "The Fairy Tale Ball is an incredibly fun and social event. We are looking forward to a wonderful evening and most importantly, raising funds for Joe DiMaggio Children’s Hospitals’ remarkable Pediatric Cardiac Program," said Allison Antevy, Fairy Tale Ball event co-chair. It was at Woodstock in 1969, that Joe Cocker reached the big time with another Beatle song and his arrangement of “With a Little Help From My Friends” that featured lead guitarist Jimmy Page, which resulted in an explosive performance. Hearing loss can be devious. Gone are the large, unsightly hearing aids of the past. “It used to be that appearance was a big reason people refused to get a hearing aid,” Cox says. But now, many of them fit into the ear canal so no one else knows you are wearing one.” Even more important, many of today’s digital hearing aids are designed to adjust automatically to your environment. A modern hearing aid may be able, for example, to perform differently in an intimate, one-to-one conversation than it does when you are in a group or in other situations where there is significant background noise. It may not be readily apparent to the person who suffers from it, because the process is often an insidious one. “It can take eight to 10 years before someone with gradual hearing loss becomes aware of it,” says Rick Cox, owner of Audibel Hearing Centers in Hallandale Beach.

Fitting the hearing aid correctly and then making sure it is serving the patient in the best possible way requires time and follow-up. “It’s not just a matter of putting in the hearing aid and sending the person out the door,” Cox says.

“Much of what we do is counseling, and helping the patient get used to the device.”

RETRAINING THE BRAIN When a person begins to lose his or her hearing, the brain starts to forget what particular sounds are like, Cox explains. “Then when you get a hearing aid, you are rewiring the brain so it relearns those sounds,” he says. “But because you’re no longer used to the sounds, adjusting to them again may be a very gradual process.”

After an initial fitting, an average patient is likely to have a return visit scheduled in one week to see how the device is performing and how he or she is adjusting. The next follow-up might be two weeks beyond that. “But someone else might need to come back the next day after the first fitting,” Cox says. “We do whatever the person requires to make the process easy and worry-free.” Success with a hearing aid can, in fact, depend on the rapport a patient establishes with the hearing professional.

“It’s similar to when you go to your doctor for treatment,” Cox says. “If he or she doesn’t treat you right or doesn’t make you feel valued, you’re not likely to want to go back again.”

EARLY INTERVENTION IS IMPORTANT It is important to treat hearing loss as early as possible. “People sometimes say, ‘well, I’m not deaf yet, so I don’t need to do anything,’” Cox says. “But when you begin to lose your hearing, it can seriously reduce your ability to communicate with people around you. You may still hear some of what’s being said, but you’re missing bits and pieces. The brain is quick to try to sort things out, but it starts to guess at things, and as that happens more and more, it can make mistakes.” The individual may become withdrawn or even reclusive. “It’s not unusual for someone with hearing loss to become depressed and anxious, and to have feelings of isolation,” Cox says. “Sometimes, he or she

Innovative treatments for advanced prostate cancer offer men more options

(ARA) - Prostate cancer is the second leading cause of cancer death among men in the United States. As men age, their risk of being diagnosed with prostate cancer significantly increases and it is estimated that this year alone, more than 28,000 men will die from the disease. In fact, according to the Centers for Disease Control and Prevention, African American men are two times more likely to die from prostate cancer over any other race. To bring additional awareness to the high prevalence of prostate cancer in this population, September is dedicated as Prostate Cancer Awareness Month, which focuses on educating men about the seriousness of the disease and the treatment options available. Prostate cancer survivor and advocate, Thomas Farrington, was diagnosed with the disease at the age of 55 and describes himself as being completely uninformed about the disease before diagnosis. As a result, he created a nonprofit organization called the Prostate Health Education Network (PHEN). Its mission is to primarily increase prostate health education and awareness among African Americans, as one in five will be diagnosed with prostate cancer every year. “When I found out I had prostate cancer, I didn’t know what to do or how to react. All I knew was something had to be done and I took it upon myself to take action,” says Farrington. “That’s why I created PHEN. I wanted to help African Americans learn more about the disease.” There are now innovative options available to help treat advanced prostate cancer, including PROVENGE (sipuleucel-T), which is the first therapeutic cancer vaccine that uses immunotherapy to stimulate the immune system to recognize prostate cancer cells in the body and attack them. Understanding why African Americans are disproportionally affected by prostate cancer is still unknown, but many physicians including Dr. Chiledum A. Ahaghotu, chief of Urology at Howard University Hospital, consider prostate cancer screening an important element of detecting the cancer in its earlier stages, which in turn increases survival odds. "All men should have discussions with their doctors about prostate cancer to be better informed about this potentially lethal disease,” Ahaghotu says. “Finding prostate cancer and starting treatment early is the best weapon to fight this disease.” To help bring prostate cancer and early screenings into the public eye, each year PHEN hosts the African American Prostate Cancer Disparity Summit in Washington, D.C. in September, which outlines new strategies for eliminating the prostate cancer racial disparity. PHEN’s working philosophy is that "knowledge is the best defense against prostate cancer," and with ongoing prostate health awareness efforts through the organization, African American men can learn how to protect themselves from the disease. (ARA) - The average super market offers some 45,000 food products, most of which are packaged, processed and a poor choice for someone who wants to eat healthy - even when the package says otherwise with claims of being natural, whole grain and even organic. “People love the idea of convenience, especially with their food,” says registered dietitian Anika DeCoster, assistant program manager of LifeTime WeightLoss, a division of Life Time, The Healthy Way of Life Company. “Most of the convenience and processed foods on the market are barely recognizable to the human body. Making your own salad dressing is simple: whisk together oil - like olive, walnut, or sesame seed varieties - with acid, like red wine vinegar, balsamic vinegar or lemon juice. Homemade dressings are easy to prepare and keep in the fridge for a week or longer.

• Non-fat flavored yogurt. “Instead, buy plain full-fat Greek yogurt and add your own flavorings such as nuts/seeds, a little organic honey or berries,” DeCoster says. That's right, fullfat. “The fat in the yogurt helps your body absorb fat-soluble vitamins like vitamin D, which is the most common vitamin deficiency.” Plus this natural fat is essential for fortifying brain and cell membranes, and because it is digested more slowly, you're less likely to be hungry an hour later. DeCoster suggests comparing the ingredient list from a plain full-fat yogurt to a non-fat flavored yogurt. More than two decades after its last update, the physical fitness test many of us did in school is getting a makeover. Just in time for the new school year, the President's Council on Fitness, Sports & Nutrition (PCFSN) announced that the former Physical Fitness Test is now the Presidential Youth Fitness Program, and that it will focus primarily on assessing health versus athleticism for America's youth. Since less than one in five youth get the exercise they need and high rates of childhood obesity are sweeping the nation, PCFSN and its partners recognize the importance of motivating children to get active, whether through sports or physical activity on the playground, in the park or in the backyard. Research shows nearly one in three children are overweight and one in six are considered obese. These numbers can have a major effect as youth grow into adults. Overweight adolescents have a 70 percent chance of becoming overweight or obese adults. As a school district administrator in one of the largest school districts in the country, the move from recognizing athletic performance to health-based standards is a crucial step forward. These standards provide a guide for what a healthy student should be able to do based on age and gender. They emphasize personal fitness goals and minimize comparisons

between children. It isn't about who is the fastest or the strongest. It is about healthy kids and lifelong physical activity. Since 1966, the Youth Fitness Test has been used to assess physical fitness. The updated program will now provide training and resources to schools for assessing, tracking and recognizing youth health-related fitness. Support available to all schools includes Web-based access to test protocol, standards for testing, cal-

culators for aerobic capacity and body composition (BMI), promotion of the Presidential Active Lifestyle Award (PALA+), online training, school recognition programs and more. Schools and districts can also purchase additional resources, such as data management, reporting software and testing aids, to enhance the program. Hollywood kicks off cultural season with music legends Matt Guitar Murphy & Terrance Simien

HOLLYWOOD - Downtown Hollywood will kick off the 2012-13 cultural season with an ArtsPark Live! free concert on the lawn on Saturday, September 22, 2012 from 6-11 p.m., featuring legendary Mississippi bluesman Matt Guitar Murphy and Grammy-winning Louisiana zydeco master Terrance Simien. As a special family-friendly bonus, Simien will also present his award-winning interactive educational music experience, Creole for Kidz Creole for Kidz & The History of Zydeco, 6 p.m. An interactive musical

performing arts program for students & families presented by Terrance Simien & The Zydeco Experience, Creole for Kidz gives music lovers of all ages an opportunity to hear and play authentic Zydeco music from Southern Louisiana and join Terrance and the band onstage for an unforgettable hands-on educational experience. Creole for Kidz has reached nearly 500,000 students, parents and teachers in more than 20 states and countries including Mali, Dominican Republic, Brazil, Paraguay, Canada and Australia.

After almost 24 years as a fixture on Hallandale Beach’s North City Beach, the landmark eatery is closed

Frank Tiberio closed the door on the Beachside Cafe on Sunday night and walked away from his wife’s dream. After almost 24 years as a fixture on Hallandale Beach’s North City Beach, the Beachside Café is closed. It is expected to be demolished within the next few weeks. “My wife, Kay Lynn, she ran this for the last 21 years until she got sick and couldn’t do it anymore. “ She died just over a year ago. “She was the backbone of this place.” Leaning back in a plastic chair at one of the tables and puffing on his ever-present cigar,

Mr. Tiberio recalled the good times over the past two decades. He spoke of his wife’s passion for the Beachside Café, and the regular customers who bellied up to the counter for a beer or sandwich. “There have been so many, many loyal customers; too many to count,” he said. “There have been so many police and firemen that started and ended their careers here.” He said the relationships with the patrolmen working the beach zone, and the firemen stationed at the beach fire station are among the reasons he and Kay Lynn supported the Po-

lice Athletic League programs and sponsored breakfasts at the Beachside Cafe. “What I can’t say enough about is our relationship with the City; they have been great in granting us long leases,” Mr. Tiberio said. “It’s been a long, long run.” This is the third time Mr. Tiberio has closed the Beachside Café. The original location was in a corner of the old Beach Fire Station. That site is now part of the Beach Club Condominium complex. During construction, the City allowed Mr. Tiberio to reincarnate the Beachside Café in a trailer on the beach. The restaurant had a deck

BUDGET HEARING One final opportunity to comment on the proposed Fiscal Year 2013 budgets, Monday, Sept. 24

Hallandale Beach residents, and property and business owners will have one final opportunity to comment on the proposed Fiscal Year 2013 budgets at 6 p.m. Monday, Sept. 24. The hearing includes budgets for the general fund, major enterprise funds and special taxing districts. The meeting is in the City Commission Chambers, in Hallandale Beach City Hall, 400 S. Federal Highway. City Commissioners adopted the budgets on the first of two presentations on Wednesday, Sept. 12. The budget requires two approvals before final passage. After the public hearing on Monday, the Commission has the opportunity to tweak the budget before final approval. The budget will take effect on Monday, Oct. 1. To meet the City’s goal of excellence in government, the City Commission and City Manager’s Office invited public input in numerous meetings in January, at four quadrant meetings in February and at a city-wide meeting in May. The City Commission hosted two public workshops in August and the first public hearing on Sept. 12. After the early meetings, the City Manager incorporated resident concerns into the budget before it was formally presented to the City Commission for review and the August workshops. with chairs on the sand east of Surf Road, just east of the tree line. When the Beach Club was completed, the old trailer was closed and the Beachside Café moved into its final location. This located was closed Sunday to prepare for future development, redevelopment of North City Beach Park, a new restaurant and amenities. The Beachside Café had between eight and 12 employees, depending on the season. The welfare of the employees was foremost on Mr. Tiberio’s mind. “I pretty much have found jobs for the bulk of them with friends I have with other restaurants,” Mr. Tiberio said. Originally from the Rochester, N.Y. area, Mr. Tiberio has been a restaurateur since moving to Florida 33 years ago. While his wife operated the Beachside Café, he owned and operated two other restaurants, Players Restaurant in Dania Beach, and Steakhouse West in Bonaventure.

Both have since been sold. Kay Lynn Tiberio set the tone for the Beachside Café, and the menu. Blackened fish and hamburgers were the two most popular meals. “She put in 50 to 60 hours a week here,” Mr. Tiberio said of Kay Lynn. “I was just the fix-it guy if

something broke.” He said the restaurant operated seven days a week, 365 days a year, “Christmas and every holiday, 7:30 a.m. to 7:30 p.m.; rain, wind, we stayed open.” Looking back at the changes over the past 23-plus years, Mr. Tiberio said the economy had the biggest impact. “More and more people are going to the beach as entertainment; that changed more than anything else,” he said. And over the two-plus decades, he said prices increased only about 20%; a lot less than other locations. Despite closing the Beachside Café Mr. Tiberio isn’t leaving the restaurant business. He is in negotiations with the City to extend the lease for the concession at the South City Beach in Hallandale Beach. “I’d like to keep that going until the reconstruction,” he said. While the restaurant has closed, the City will continue to maintain restroom facilities on the site for beach visitors.

Breaking the fast after Yom Kippur PESTO STUFFED MUSHROOMS Portobello mushrooms or portobellini (i.e. small portobello) or white mushrooms for stuffing ~1 cup Panko breadcrumbs (the more you put, the crispier they'll be) Olive oil to drizzle on Salt and Pepper Pesto sauce 2 cups basil 2-3 cloves garlic 1 Tbsp pine nuts or hazelnuts 1/2 cup olive oil Directions 1) Prepare the pesto sauce by mincing all ingredients in a food processor 2) Remove the gills (i.e. black insides) from mushrooms. This step is very important, as it keeps the mushrooms from getting soggy 3) Mix breadcrumbs and pesto sauce 4) Spoon pesto mixture into each mushroom cap 5) Drizzle with olive oil, salt and pepper 6) Bake for 15-20 minutes at 400F FYI: - Steps 1-2 can be done in advance - These reheat very well - I will sometimes bake

with campari tomatoes (on the vine) to add colour - I initially only made these with portobellos, but I find that the white mushrooms for stuffing are just as good and they are smaller and less expensive - These can be made dairy with parmesan KOSHER CHICKEN WINGS Wings: 2 pounds Empire Kosher Chicken Wing Gourmettes Salt, pepper, garlic powder to taste Glaze 1 cup water 3/4 cup ketchup1/2 cup plus 2 Tablespoons dark brown sugar 1/4 cup apple cider vinegar 2-3 tablespoons hot sauce 2 teaspoons ground black pepper 2 teaspoons Worcestershire sauce 2 teaspoons lemon juice 1 1/2 teaspoons cayenne pepper 1 teaspoon dried parsley 1/2 teaspoon salt 1/2 teaspoon garlic

powder 1/2 teaspoon onion powder Pinch of clove (ground) 1/8 teaspoon ground nutmeg 1/8 teaspoon ground allspice 1/8 teaspoon rubbed sage 1 teaspoon cornstarch Wings: 1. Preheat oven to 350°F. 2. Spread wings in a single layer on a baking sheet. 3. Sprinkle wings with salt, black pepper, and garlic powder. 4. Bake for 45 minutes until browned. 5. Cool wings for about 5 minutes before glazing. 6. While wings are baking, prepare Wild Wing Glaze (recipe below). 7. Toss the wings into the glaze and serve. Glaze: 1. In a saucepan, whisk together all of the ingredients, except about 2 tablespoons of the water and cornstarch. 2. Cook all of the remaining ingredients by bringing to a boil. 3. Reduce heat and simmer for 40-45 minutes, until the sauce

darkens and thickens. It will be reduced in volume by almost half. 4. Mix cornstarch and 2 tablespoons water together in a cup. 5. Pour cornstarch/water mixture into saucepan and turn up temperature to a boil, whisking, until sauce thickens even more. 6. Remove sauce from heat and cool. LEMON ROSEMARY ROAST CHICKEN AND POTATOES 1 tablespoon olive oil 1 (3-pound) chicken cut into ths 2 pounds assorted baby potatoes, halved or quartered, if large 1 large red onion, cut into 8 wedges 4 cloves garlic, minced 3 tablespoons fresh rosemary leaves or 1 teaspoon dried ½ cup dry white wine Zest and juice of 1 lemon 3 tablespoons margarine ½ teaspoon kosher salt Freshly ground black pepper

Heat olive oil in a large sauté pan over medium high heat. Brown chicken pieces until

golden, about 4 to 6 minutes per side. Remove from pan, and set aside. Add potatoes to the pan and sauté until they begin to get some color, about 6 minutes. Add onions and garlic, and sauté 5 minutes more. Return chicken to the pan along with ½ cup water, rosemary, wine, and lemon zest and juice. Bring to a simmer, cover, and cook until potatoes are tender and chicken is cooked all the way through, about 25 to 30 minutes. Stir in margarine, salt, and pepper to taste. CREAMY MUSHROOM RISOTTO WITH SPINACH WALNUT SALAD For risotto: 1 tablespoon olive oil 1 onion, diced 2 Cloves garlic, minced 1 cup arborio rice 2 1/2 cups Manischewitz All Natural Vegetable Broth 1 1/2 cups assorted sliced mushrooms, such as cremini, button and shitake 2 tablespoons grated parmesan cheese, plus more for garnish 1 teaspoon Kosher salt 1/4 teaspoon Lemon

zest freshly ground black pepper For salad: 1 (6-ounce) bag baby spinach, washed 1 (3.5-ounce) wedge Danish blue cheese, crumbled 1/2 cup walnuts, coarsely chopped 4 tablespoons store bought balsamic vinaigrette dressing Directions 1. In a large heavy bottomed pot, heat olive oil over medium high heat. Sauté onions for 5 minutes or until translucent. Add garlic and rice and cook 2 minutes, stirring to coat rice in oil. While continuously stirring, add 1/2 cup of stock at a time. Simmer and stir constantly and allow each 1/2 cup to be fully absorbed before adding more. Once all the stock has been incorporated, add mushrooms and cook 3 minutes more or until mushrooms wilt just a bit. Remove from heat and stir in cheese, salt, zest and pepper. 2. In a large bowl, combine spinach, cheese and walnuts. Toss with dressing and serve with risotto.
