HOLLYWOOD - While there are many events that are going on around South Florida during the course of any beautiful day, some very good ones are overlooked. One of those quality events is the gourmet food truck caravan that lines around Hollywood's ArtsPark every Monday night from 5:309:30. I had the opportunity of attending one over a year ago, and left thinking that if more people would come, this could be a huge day on the planning calendar. I returned to the now finished and impressive ArtsPark for another Monday night food truck outing. But unlike the first time I attended,

‘AROUND THE CITY OF CHOICE’
Hallandale Elementary and Gulfstream Middle Schools continue to set standards and groom future leaders
HALLANDALE BEACH - Many of us grew up when school started after Labor Day. The long days of summer were just that; days to play with friends, go to camp and take family road trips. Summers are different in Florida. Many students went back to school weeks ago. In Hallandale Beach we have a year round schedule, so some students have already finished 6 weeks and are on a three week break. Our elementary school is a year round school. Many families have gotten used to this unique schedule and actually it has become a successful model. Hallandale Elementary School is an A grade school. 1100 students attend the school, but since it is year round, it is not considered over crowded. Approximately 200 students are off track on a rotating schedule. Principal Sharon Ludwig and her Staff have done an excellent job. This year 6 teachers have come on board and the school is meeting all class room standards. They have many exciting programs underway with many scheduled parent nights upcoming. After years of working to get our Middle School back, Gulfstream Middle

is in its 5th year. Under the leadership of Principal Brian Kingsley the school continues to thrive. Enrollment is up 24%. It is the first School to house a STEM Lab. This is a learning path focused on real hands on math and science applications. Students learn by engineering and utilizing technology to create products in a lab setting. Principal Kingsley has an amazing group of students that are peer counselors. Under the guidance of Mrs. Connor the students entered a district competition focused on creating a marketing piece for the Dare to Care Campaign. Out of every school in the district, Gulfstream Middle School students won the competition. Their picture is being produced on posters and will be displayed district wide. Next week
they will be recognized at the Broward County School Board meeting. Our Hallandale High School is also back in session and we are all looking forward to having them at our October meeting. Hallandale Adult Center graduated 119 students in their special GED program. The school is also expanding the Continuing Education. All in all, our school provides education to almost 3000 students. With many district cuts our schools can really use assistance. Over the past years our city has developed outstanding partnerships with our schools. Our city was recently recognized for these many partnership programs. To me this is simply a natural relationship and I have found that is so important to build a whole community. Partnership with our police department and parks make our city an easy place for our students to transition from their school day to other activities that keep them learning and most importantly, off the streets and away from the TV. Having strong after school programs in our parks complements our schools and provides many services that schools are struggling to provide
due to budget cuts. Our City Commission will be looking at providing grant assistance again this year. Next week we will review Staff recommended grant applications as part of our budget process. As part of our CRA Budget we have looked into a partnership between city departments to provide many services including SRO, teen center, after tutoring classes and other educational programs. If you have time and want to volunteer at our local schools they are always looking for help. You can mentor a child, help out in the office or classroom or help with the many clubs. If that is not your bag, consider making a financial donation to one of the parent organizations or donate supplies. Every donation, large or small, can real make an impact in a young student’s life or take a bit of pressure off our teachers. This year The Future Foundation will be back in action. The FF is a nonprofit that was established in 1996 by City Staff and likeminded community volunteers that want to make a difference in children’s’ lives. Over the year the foundation has done an annual fundraiser to raise
money that is provided to local schools and non-profits. They provide education in arts and cultural programs. The last big fundraiser was the Beach concert with Air Supply. It was vey succefful. The work of the foundation was put on hold over the past two years due to suggested ethics changes proposed by the county that would have prevented fundraising by elected officials and Staff. The final outcome of the new regulations provides that elected officials and Staff can participate in City sponsored organizations to raise funds. This is similar to PAL. So back by popular demand, the Future Foundation will be providing grant opportunities to our schools and educational partners. The grant application cycle will begin and interested partners can find out more on the Future Foundation website at www.TheFutureFoundation.com. We are also reformulating our Board of Directors and are looking for volunteers to serve. If you want to get involved and have heart for the kids, please sign up. We meet monthly with summers off. We will be scheduling our first meeting within the next few weeks.
STAMP OUT HUNGER On a more serious note September is Stamp Out Hunger Month. It is sad to report that many more families are in need of food and many children have been reported going to school hungry. Mr. Paul Snow who runs our Hallandale Beach Food Pantry has reported that he distributes almost 250 plus bags of food weekly and that number continues to grow. This time of year is particularly hard. In order to do our part, City Staff is sponsoring a food drive. For the month of September boxes will be placed around City Hall in each department. The winners of the food drive competition will win a pizza lunch sponsored by me. There are no rules against residents dropping off food and helping their favorite department in the competition. "What we are doing here," Bob said, "is offering the best hearing care anywhere, so you won't wait long to see me and you will be treated professionally and courteously." The hearing evaluation takes 15 to 20 minutes and there is no charge. "The first thing I do is to check the ears with our advanced equipment." A video-otoscope is used, a non-invasive device that transmits images of the ear canal and eardrum onto a monitor's high definition plasma screen. "I look in there and make sure there is not a lot of wax in the ear. Wax can cause a mild hearing loss, and sometimes removing the wax eliminates the problem! If there is no excessive wax, we go to the test room and I do an audiometric evaluation to see if there are some sounds the patient cannot hear well." The natural aging process and noise can cause a hearing loss, natural aging being the most common reason for hearing problems. Stereos, I-pods, boom boxes, traffic, and a noisy work environment all contribute to the cause. "It's the prolonged exposure to noise that does it," he said. BENITEZ WAS STARKEY LAB'S FITTING SPECIALIST Before coming to the Aventura HEAR Center, Bob was, for 13 years, with Starkey Laboratories, the premier manufacturer of hearing technology in the United States. He is a Harvard graduate, a licensed Hearing Aid Specialist in the State of Florida, and nationally Board Certified in Hearing Instrument Sciences. At Starkey, he was a fitting specialist. "I was the one to whom people like myself (a hearing professional) would send their patients when they couldn't figure out a way to make those patients happy with their hearing instruments." This experience made Bob an expert with hearing aid fittings. “The new digital instruments are complex and require expertise if they are to be properly tuned for a patient’s individual needs,” Bob said. HEARING LOSS If the tests show conclusively that you suffer permanent hearing loss … Benitez said, " One out of three Americans over age 65 has a hearing problem and half of adults over 75 have one. Everyone over 65 years old should be getting their hearing checked regularly. Hearing problems, like having difficulty understanding what people say, can get worse if not treated. That is why it’s important to get your hearing checked. Once you know you have a problem, you can take steps to deal with it. Just as your primary care physician does not routinely check your eyesight, she or he will not be checking your hearing. In both cases physicians normally assume you are seeing a specialist for care in these areas. The sad part is that while most seniors take good care of their eyes, very few actually have yearly hearing tests. There is no reason for it! You do not need a referral to have a hearing evaluation— just call the Aventura HEAR Center and ask for an appointment!” Improved hearing leads to an improved quality of life. Many people who have a hearing loss become more and more isolated because they cannot enjoy conversations in social situations, but hearing help is now available that really works. THE NEWEST TECHNOLOGY Hearing aids have become very sophisticated and there are many, many choices. How is a patient to decide which hearing aid to wear? “It starts with a hearing professional you can trust,” Benitez said. “It is a good thing to do research and find out what you can about hearing loss and how hearing aids
can help, but when it comes to choosing a hearing aid, you need to follow the advice of a professional.” Many patients think because their friend or a family member did well with a particular hearing aid that they will also do well. “That’s not always the case. Certain types of hearing instruments are designed for particular configurations of hearing loss, and your friend or relative may have a high frequency loss and do well with those aids, but you have a low frequency loss and the aid is completely inadequate for you. As a hearing professional, I am responsible for evaluating your loss and recommending the appropriate hearing aid for your loss, lifestyle, and budget.” “Lifestyle is important,” he adds, “because a person who is not active or who has a very limited social life due to health issues simply does not need some of the advanced features available on the more sophisticated instruments.” Some hearing aids offer features designed specifically for very active social lives, and that is not what everyone needs. On the other hand, most patients would benefit from a hearing aid that does not whistle all the time, or an aid that makes noisy rooms more comfortable, or one that allows for telephone use without having to push a button. Benitez said, “many of the old problems that people had with hearing aids which prevented them from wearing them have been overcome by advances in technology, so even if you have tried hearing aids in the past and did not liked them, there are good reasons to take a second listen.” And what about all those different hearing
aid companies, which one makes the best hearing aids? “They all do,” Benitez adds with a chuckle, “it’s not the company, it’s the professional fitting you that is crucial.” There are several big hearing aid companies worldwide, and they all make very good products, they are all priced very competitively, and the Aventura HEAR Center has relationships with all of them. “It used to be one company was better at one type of aid and another at a different type. With the advent of digital aids, that has all changed. My experience working for the manufacturer gives me a certain edge—I have a level of training and programming expertise not available to most dispensers and that’s an important aspect of what I offer my patients. These trucks are not what you think. This is not your little push-cart hotdog stand where the most exciting thing is the neon relish or spicy mustard. What some of these $100,000 plus businesses have become are gourmet kitchens on wheels. Katy Westman, owner of the Firewall Food Truck, makes restaurant-quality pizza from her oven in a vehicle that she takes all over South Florida from her Doral (Miami) home.
As the lines began to grow in front of her business, it was evident that this was going to be the same at every food truck I approached. After all, this is what most have put their life-savings into, so driving to several locations each day not only gives you a built-in crowd, but also different venues each day. "These people work very hard to bring you meals that you would have to pay twice for in a restaurant," said Michael Lewis of Dania Beach, who tries to come to the event every Monday night. "My wife and I go out to eat twice a week. We usually go out on Saturday and Monday. Our Mondays are spent here, getting to choose from nearly 30 different 'restaurants'." PAINLESS SURGERY AT MOUNT SINAI
Ultrasound-Guided Nerve Blocks Enables Patients to Experience Minimal to No Pain After Orthopaedic Surgery
MIAMI BEACH “Will I have pain after surgery, Doc?” is a common question most patients ask before having an operation. Post-surgical pain is often an unavoidable part of recovery -- and managing the pain is one of the most common concerns for patients. That is, until recently. Mount Sinai Medical Center now offers ultrasound-guided nerve blockers to minimize and, in some cases, eliminate post-operative pain all together. While there are various modalities to manage pain, ultrasound-guided nerve block is one of the most exciting developments in the area of post-surgical pain management. The nerve blocks work by interrupting pain signals travelling from the area of surgery to the brain. Although nerve blocks are commonly used pain relievers, ultrasound-guided nerve blocking has only recently gained attention because it allows for site-specific targeted pain control. Dr. Murlikrishna Kannan, Clinical Director of Regional Anesthesia at Mount Sinai, uses the ultrasound to guide the placement of a fine needle that deposits local anesthesia around the nerve. The anesthesia bathes the nerve and blocks it from transmitting painful sensations to the brain. The procedure is painless, safe, accurate and fast, taking as little as ten to fifteen minutes to complete. The nerve block results in little more than a “numb and sleepy leg,” as described by patients, and usually lasts for ten to twelve hours. With the arrival of this new method for pain relief, orthopaedic patients at Mount Sinai are very comfortable after surgery and require less morphine during their hospital stay. Decreasing the dosage of morphine reduces a wide range of complications, including nausea, vomiting, constipation, drowsiness, low blood pressure, confusion and hallucinations. Invitation to Community and Veterans to Join In Hollywood’s Veterans Day Barbecue
HOLLYWOOD - My late grandfather Israel Bober, who lived in Hollywood before his passing in 1987, had seen many things in his long life. Born in 1892, he was a religious man his whole life, being a direct descendent of Rabbi Yisroel ben Eliezer, the founder of Hasidic Judaism. This background made him quite spiritual, which is something he passed on to his own children. During his life, he escaped multiple dictators, worked hard, raised a family, and ultimately, began a new life after emigrating from Cuba to the United States. He had an old saying I will never forget—more of an observation really— he said, “One father can take care of many sons, but many sons cannot take care of one father.” He was not applying it to his own family, but instead to a trend he noticed throughout his long life, where children failed to take care of their parents’ needs as those parents aged and became frail. Ultimately, I think my grandfather was making a larger point: make sure to take care of those who have taken care of you. My late grandfather’s message of fi-

delity has always stuck with me, and I have tried to apply this logic to my support of our community’s veterans. Last year, you may recall the City of Hollywood hosted a Veterans Day barbecue where I helped cook for our veterans. Working with our City staff, I organized this barbecue because it’s important to honor those who have done so much for us—not just through cheap talk— but through actions. Indeed, when was the last time you took the time to thank a veteran for their service to this country? If your answer is “I haven’t,” or if your answer is, “it’s been a while,” then put yourself in the shoes of Hollywood’s veterans, who may have never received any sort of gratitude ever—from anyone. Imagine how that must feel. Last year, Hollywood’s First Annual Veterans Day Barbecue was a smashing
success. This year we will do it again, and you have an opportunity to join me in making it go “two-fortwo.” Our event last year was great for two reasons. First, and foremost, we had an amazing turnout of veterans who enjoyed the food, fun, music, games, laughter and camaraderie. The event was also a success because of the countless Hollywood residents/volunteers who served veterans their food and drinks, and in the truest sense, made our veterans feel like a million bucks. I want to cordially invite Hollywood’s veterans and their families to the Second Annual Hollywood Veterans Day Barbecue. It will be held Sunday, November 11, 2012 at TY Park from noon to 4:00 p.m. If you are a veteran or know a veteran, please pass this information along. I will be doing the cooking and will be inviting my city commission colleagues to join me. And, of course, I hope you are willing to be part of the event as a volunteer. Just imagine doing something that can bring much self-fulfillment while being super-fun at the same time! If you would like to vol-

In conclusion, for
too many people, Veterans Day is just a day off from work or a day off from school. I initiated this City‘s Veterans Day barbecue because I wanted to change the perception of what Veterans Day is all about. By serving those who have served us— through a great afternoon in the park, food galore, Jaxson’s Ice Cream (Yes! For the second year, they are donating free sundaes—Monroe Udell you are amazing!), music, and more food, we can show veterans and our ac-
tive service personnel what they mean to us through our words, and more importantly, through our deeds. After all, in the final analysis, my grandfather came to this country only because of the freedoms and liberties made possible through the selfless devotion and actions of our military veterans. Thank you for taking the time to read this. Please mark your calendars; I look forward to hearing from you, and seeing our veterans on November 11th.

Hallandale Beach Firefighter-Paramedic Rob Ross sounds a somber 5-5-5 alarm as part of the annual 9-11 Patriots’ Day ceremony Tuesday morning. The 5-5-5 alarm, five tolls of the bell in three successive sequences, indicates the fire company has returned from their last call. After the 9-11 tragedy, the code came to symbolize the final alarm for more than 400 firefighters who perished trying to save countless lives of innocent victims at the World Trade Center in New York City. The City’s ceremony, held at the City’s main fire station, 121 S.W. 3rd Street, included two 5-5-5 calls, one each when each of the twin towers collapsed. About 50 residents attended the ceremony to remember the 11th anniversary of the cowardly attack on innocent United States citizens and international residents. Jazz vocalist Paulette Dozier will give audiences the chance to relive an evening with singer Billy Holiday in “Lady Day at Emerson’s Bar & Grill” as an up-close reminder of what the real-life effects, in the spotlight, will do to someone like Billy Holiday, one of the most well known performers in music. Born Eleanora Fagan, Billy Holiday was a true artist during her time and rose as a social phenomenon during the 1950's. Her soulful unique singing voice and her ability to turn any song she came in contact with into her own style of music, made her the superstar she became. Today, Holiday is remembered for the masterpieces she created and her ability to live the words she sang. Although she never went through any technical training or even so much as learning how to read music, she quickly becane known as one of the most active and vibrant jazz singers in the country. Holiday’s career received a big boost when she recorded “What a Little Moonlight Can Do” and “Miss Brown to You,”
which eventually became an important part of American jazz. Paulette Dozier does a great job as Holiday, singing the hits with the same depth and emotional vibrancy that Billy herself would do. She doesn’t try to imitate the star, but takes on the role with somewhat of likeness. Paulette gives the perfect performance at the old Byron Carlyle Theatre, now The Miami Beach Stage Door Theatre. Bill Julian Food Drive produces many winners
The need to feed has been the driving force behind the Annual Bill Julian Food Drive, and this year was certainly no exceptions,. Easily one of the hardest working residents in the City of Hallandale Beach, Julian completed his 5th Annual Food Drive to benefit the Hallandale Beach Food Pantry. Recently at the City Hall, Julian, left, welcomed first place winner Principal Brian Kingsley of Gulfstream Middle School-Brian Kingsley, second place winner Principal Sharon Ludwig of Hallandale Elementary and third place winner Ms. Lopez from Hallandale Adult Community Center. On hand for the ceremony was Commissioner Keith London, Mayor Joy Coper, Vice Mayor Anthony Saunders and Commissioner Alex Lewy. Total amount of food donated was 6,000 pounds, which is an increase of over 300 pounds from last year.

City of Hollywood Earns Green Local Government Certification
HOLLYWOOD - The City of Hollywood has received the Florida Green Building Coalition (FGBC) Green Local Government Certification. Hollywood is one of 38 cities in Florida and one of five in Broward County to receive this prestigious designation. The City was lauded for its use of environmentally friendly vehicles, building maintenance, energy management and water conservation programs as well as its creation of a Green Team Advisory Committee. City of Hollywood Parking and Intergovernmental Affairs Director Lorie MertensBlack, who also serves as staff liaison to the Green Team Advisory Committee, spearheaded the City’s application for the Green Local Government Certification along with volunteer Susan Vineta. The process took nearly two years, during which the Green Team Advisory Committee compiled documentation needed for the application with the assistance of several City departments. FGBC's Green Local Government certification program provides municipalities with a step-by-step toolkit for developing and implementing sustainability plans that encourage the adoption of environmentally friendly practices across all government functions. Benefits to the community include improved quality of life and communications, reduced operating costs for the municipality, better risk and asset management, and greater public awareness of how lifestyle choices affect the community. The Hallandale Beach Police Department is joining with Gulfstream Middle School and Broward County School District for the Evening on the Front Porch, 6:30 p.m. to 8 p.m., Thursday, Sept. 20, to celebrate the Choose Peace; Stop Violence
movement. The event will be held in the 1000 block of N.E. 3rd Street. “It’s an all week event,” said Hallandale Beach Police Capt. Stuart Shook, who is organizing the City’s event. The goal is to bring residents together to talk with neighbors and learn how to help others without resorting to violence or bullying. The City is making the
event a fun event for children and students; those most susceptible to school yard bullying. Hallandale Beach will have a bounce house, music, video games and refreshments at the event. The Hallandale Beach Parks and Recreation Department and Hallandale Beach Fire-Rescue also will be participating in the event. Hallandale Beach Mayor Joy Cooper and the City Commission presented Gulfstream Middle School students with a proclamation on Wednesday, Sept. 5, to honor the school and student efforts to stop bullying and violence. The proposed changes to these maps, which are based upon more accurate engineering data, may have an impact on the way your property is evaluated in respect to flood insurance. Innovative treatments for advanced prostate cancer offer men more options
(ARA) - Prostate cancer is the second leading cause of cancer death among men in the United States. As men age, their risk of being diagnosed with prostate cancer significantly increases and it is estimated that this year alone, more than 28,000 men will die from the disease. In fact, according to the Centers for Disease Control and Prevention, African American men are two times more likely to die from prostate cancer over any other race. To bring additional awareness to the high prevalence of prostate cancer in this population, September is dedicated as Prostate Cancer Awareness Month, which focuses on educating men about the seriousness of the disease and the treatment options available. Prostate cancer survivor and advocate, Thomas Farrington, was diagnosed with the disease at the age
of 55 and describes himself as being completely uninformed about the disease before diagnosis. As a result, he created a non-profit organization called the Prostate Health Education Network (PHEN). Its mission is to primarily increase prostate health education and awareness among African Americans, as one in five will be diagnosed with prostate cancer every year. “When I found out I had prostate cancer, I didn’t know what to do or how to react. All I knew was something had to be done and I took it upon myself to take action,” says Farrington. “That’s why I created PHEN. I wanted to help African Americans learn more about the disease.” There are now innovative options available to help treat advanced prostate cancer, including PROVENGE (sipuleucel-T), which is the first therapeutic cancer
vaccine that uses immunotherapy to stimulate the immune system to recognize prostate cancer cells in the body and attack them. Understanding why African Americans are disproportionally affected by prostate cancer is still unknown, but many physicians including Dr. Chiledum A. Ahaghotu, chief of Urology at Howard University Hospital, consider prostate cancer screening an important element of detecting the cancer in its earlier stages, which in turn increases survival odds. "All men should have discussions with their doctors about prostate cancer to be better informed about this potentially lethal disease,” Ahaghotu says. “Finding prostate cancer and starting treatment early is the best weapon to fight this disease.” To help bring prostate cancer and early screenings into
Actions to Control Asthma
(NewsUSA) - Whether making a shopping list or mapping a fire-exit strategy, planning can be useful. It can even be life saving. This holds true for asthma, a chronic disease that inflames and narrows the airways and can make those affected by it feel as if they are breathing through a straw. Controlling asthma requires daily attention. Working with a healthcare provider to create an action plan for managing asthma long-term and handling symptoms, most people with asthma can avoid attacks, have few symptoms, sleep through the night, and be physically active. If you have asthma, you and your health care provider can work together on six key actions to make your breathing easier: * Use inhaled corticosteroids to control asthma if you have persistent asthma. Your doctor will help you choose the best treatment. * Use a written action plan to highlight two things: 1) what to do daily to prevent attacks, and 2) how to handle symptoms or asthma attacks. * Assess asthma severity at the initial visit to determine what treatment to start to get your asthma under control. * Assess and monitor how well controlled your asthma is at regular visits. Your doctor may need to adjust your medicine to keep asthma under control. * Schedule follow-up visits at periodic intervals, and at least every six months. * Avoid or control environmental exposures such as allergens or irritants that worsen your asthma These actions are based on guidelines for improving asthma control and care from the National Asthma Education and Prevention Program (NAEPP) that is coordinated by the National Heart, Lung, and Blood Institute (NHLBI), a part of the National Institutes of Health. If you have asthma but have not yet developed an asthma action plan, the NAEPP encourages you to work with your health care provider to develop one and discuss how to use it. And don't forget the other six actions above: You, your healthcare provider, and your family can work together as a team to control your asthma.

By Marylynne Newmark Sun Times This month I dropped in to Jacob's Classic Market. I’m usually called upon to drop in on restaurants, sample foods, and write an opinion. I love doing it and hearing from readers as to whether they agree or not. The market was a buzz with shoppers placing their holiday orders. I wished to place my order early, "Early Bird gets the brisket", I say. Jacob’s is far more than a market. This visionary food emporium is an epicurean delight with homemade wonderments and exotic foods from Europe and the Mideast not found elsewhere in South Florida. First of all, the shop sparkles with cleanliness and order. The enticing fresh fruit and vegetable bins are creatively filled like multicolored works of art. There’s not a blemish to be seen. Healthy eating is everywhere. Packaged nuts and dried fruit greet you at the door. Holiday treats wrapped in colorful packages like the pot of gold at the end of a rainbow. Large refrigerated open bins are stocked with fresh soups and packaged ready-to-go foods prepared fresh daily in Jacob’s kitchens. Or, you can choose from a selection of beautifully displayed steaming hot entrees or cool crisp salads ready to eat in the store’s family-style sit-down corner or in a shady spot just north of the entrance. Well, since I am a fish and veggie lover, I settled on the Salmon Bruschetta, added a veggie couscous and freshly chopped Israeli salad. As they say in Miami, “Que rico!” Absolutely delilcioso! Or, shifting to Tel Aviv, “Tov m’Od!! But that was just for tonight's meal, I can't wait to
taste my holiday order. Of course my meal could not end there. ROSH HASHANAH FEAST
MATZOH BALLS 1 cup matzoh meal 4 large eggs 1/4 cup schmaltz (chicken fat; see note) 1/4 cup chicken stock 1 teaspoon salt pinch of ground pepper
When you make homemade chicken stock and cool it overnight, you’ll find that the top is covered by a layer of solidified fat or schmaltz. Skim it off and save it. You’ll want it to be room temp when you use it. In a medium bowl, beat the eggs. Add the stock, schmatz, salt and pepper, and mix well. Add matzo meal and stir thoroughly. Cover the bowl tightly with plastic wrap and refrigerate for 6 hours, or overnight. Fill a large pot with water and bring it to a boil. Moisten your palms with cold water, and form a bit of the mixture into a ball 3/4 inch in diameter. Drop it into the pot, and repeat with the remaining mixture until you’ve made all your matzoh balls. Reduce the heat slightly and cover. Simmer for about 2025 minutes, removing the matzoh balls with a slotted spoon. Keep them in a large bowl, then add to soup no more than 30 minutes
before serving.

NOODLE KOOGLE 1 pound broad egg noodles 8 ounces cream cheese, room temp 1 stick unsalted butter, melted 1/2 cup sugar 1 teaspoon vanilla 7 large eggs 1 pint (2 cups) sour cream For the topping: 1/4 cup sugar 1 teaspoon cinnamon 4 tablespoons unsalted butter, softened
STRING BEANS WITH MUSTARD DRESSING AND CURED SHALLOTS 1 small red onion or shallot, thinly sliced 1 1/2 pounds of string beans, trimmed 1/4 cup rice wine vinegar 2 tablespoons lemon juice 1 1/2 tablespoons Dijon mustard 1 small garlic clove, crushed 1 1/2 teaspoons mild honey 1/2 teaspoon coarse sea salt pinch cayenne pepper 3 tablespoons olive oil
Generously butter a 9X13-inch pan that looks nice enough to be set on the table. Cook the noodles in highly salted water according to package directions, stopping after the minimum cooking time, about 8 minutes. Drain the noodles. While the noodles are cooking, combine MATZOH BALLS cheese, and sugar and beat with a stand or handheld mixture and beat until smooth. Add the remaining ingredients and beat again, until smooth and lightened. As soon as you’ve drained them, add the hot noodles to this mixture and stir to combine. Spread it into the prepared pan, and cover with plastic wrap. Let sit at least 1 hour on the counter, or
combine the lemon juice, mustard, garlic, honey, salt, and cayenne. Whisk until smooth. Slowly whisk in the oil until creamy. Mix the beans into the dressing. Drain the onions and toss to combine. This salad is best if you let it sit for 15-30 minutes after. That’s what it’s great for picnics–it only gets more flavorful with time.
PASSOVER BRIKSET 6 lbs brisket 8 garlic cloves, cut lengthwise into 4 pieces 1 quart beef stock 2 large onions, sliced 1 cup ketchup 1/2 cup brown sugar 2 tsp salt 1 tsp paprika 1 tsp onion powder 1 tsp garlic powder 1/4 tsp cayenne 1/2 tsp dried thyme 2 bay leaves
Spread a clean kitchen towel on a baking sheet and set aside. Place the sliced onion or shallot in a small bowl and cover with the vinegar. Set aside to let cure for 10-15 minutes. Bring a pot of water to boil. Salt it generously and add the trimmed string beans. Cook uncovered for 46 minutes, until just tender. When they’re done, drain them, then spread them out onto the towel-lined pan to fully dry. This will allow the dressing to coat the beans. In your salad bowl,
Preheat the oven to 500°F. Using a paring knife, cut small incisions in the meat and shove the pieces of garlic into them. Do this until the meat is stuffed with garlic all over. Place the brisket in a rimmed baking dish (preferably metal) and brown it in the oven, about 10 minutes per side. Remove the meat, and pour in the beef stock (NOTE: if you
are using a pyrex dish, wait a few minutes for the pan to acclimate to room temperature so it does not shatter. For more on this, see my disaster here). Turn the oven down to 350 degrees, cover the dish with foil, and cook in the oven for 1 hour. In the meantime, saute the onions in 1 tablespoon of olive oil over medium-low heat until soft and caramelized, about 25-30 minutes, stirring occasionally. Remove the meat from the oven, and add the remaining ingredients to the pan. Using a fork, whisk them all together with the beef stock. When the onions have finished cooking, arrange them on top of the meat. Cover the pan again with foil, and return it to the oven for 2-3 hours
APPLE CAKE WITH CARAMEL GLAZA For the cake: 1 cup (2 sticks) butter 1 1/3 cups sugar 2 large eggs 1 teaspoons vanilla extract 2 cups all-purpose flour 3/4 teaspoon baking soda 1 teaspoon baking powder 3/4 teaspoon salt 2 cups chopped, peeled apples (about 2)
1 cup chopped pecans or walnuts
For the caramel sauce: 1 cup brown sugar 1/3 cup heavy cream 1/2 cup butter 1 teaspoon vanilla 1 pinch salt
Heat oven to 325 degrees. Grease a loaf pan. In a large bowl cream the butter and the sugar with an electric mixer until fluffy. Add the eggs, beat well, then mix in vanilla. In a separate bowl, stir together the flour, soda, powder and salt. Add these to the wet ingredients and mix until blended. Fold in the apples and the nuts. Pour batter into prepared pan and bake for 1 hour, or until toothpick comes out clean. Meanwhile, combine the butter, sugar, and cream in a small saucepan. Over medium heat, melt them together stirring more or less constantly. When the edges start to simmer, cook for 3 more minutes, then add the vanilla and remove from the heat. When the cake has cooled for 20 minutes, prick all over with a fork and spoon the caramel sauce evenly on the top.
