            GAMMON HAM
          WITH ORANGE, BROWN SUGAR AND MUSTARD GLAZE
          Serves: 10
          Prep time: 15 min
          Total time: 3 hrs 25 min
          1 tbsp canola oil
          1/2 cup yellow onions
          2 tsp garlic, minced
          1 tsp ginger, ground
          21/2 cups Sunterra fresh squeezed orange juice
          
    11/2 cups brown sugar
          2 tsp grainy Dijon mustard
          4kg Sunterra Meats gammon ham
          1 tbsp parsley, finely chopped
          Preheat oven to 350F.
          Heat oil in a saucepan over medium heat and sauté the onion, garlic and ginger until the onions are golden brown. Add the orange juice, 1 cup of brown sugar and simmer until the liquid reduces by half. Add the mustard and season to taste with sea salt and freshly cracked black pepper. Take off the stove, purée with an immersion blender and set the glaze aside.
          Remove netting from ham. Brush the glaze onto the ham liberally. Place the ham on a lined sheet tray and roast for about 3 hours, occasionally basting with glaze as each layer caramelizes.
          Take the ham out of the oven when its internal temperature reaches 160F. Glaze one last time and sprinkle the parsley on top. Let rest for a few minutes before carving.
