With the B.C. cherry season being so short (and sweet), we revel in anticipation as the trees begin to spout their cherished cherries. Our supply chain partner Jason spends every Monday and Tuesday in B.C. visiting orchards looking for the largest and sweetest variety of cherry available throughout the season. Once satisfied, he fills his truck and the cherries are in Sunterra Market the next day. Now that’s a fresh pick!

SERVES 6 — 8

500 g 1 cup ½ cup ½ cup 1 cup 1 tbsp 1 tbsp

fresh sockeye salmon fillet, skinned kosher salt fresh tomatoes, deseeded and diced green onions, sliced white onions, diced red, green and yellow peppers, diced canola oil chili flakes to taste lemon juice

Rub the salmon thoroughly with kosher salt and cover with a ¼-inch thick layer of kosher salt. Wrap in a paper towel and refrigerate overnight or 24 hours.

Remove the salmon from fridge, scrape off the salt and rinse the fillet. Pat dry and cut into ½-inch cubes.

Combine the salmon, tomatoes, onions, peppers and oil in a bowl. Let them rest for 30 minutes. Just before serving, add the lemon juice.

Serve in a bowl with crackers or spoon into romaine hearts or endives.
