From Remote Fishing Village to Global Luxury Destination
At the southernmost tip of the Baja Peninsula, where the calm, crystalline waters of the Sea of Cortez meet the deep blue Pacific, Los Cabos began as a quiet fishing village, isolated by distance and shaped by the sea.
In the early 20th century, Cabo San Lucas remained largely untouched, accessible only by boat. Life here was simple, and families relied on fishing and the surrounding waters
to survive. That began to change mid-century, when Rodrigo “Rod” Rodríguez son of a former Mexican president, envisioned something entirely new.
Alongside his American actress wife, Lucille Bremer Rodríguez developed Hotel Rancho Las Cruces one of the first luxury fishing retreats in southern Baja. Welcoming Hollywood celebrities and influential guests, the resort helped introduce Los Cabos to an international audience, spreading

INGREDIENTS
1 pint whipping cream
1 can sweetened
condensed milk
2 eggs
3 tbsp vanilla extract
Brioche bread
(recommended)
Unsalted butter
CINNAMON SUGAR
COATING
¾ cup granulated (refined) sugar
¼ cup ground cinnamon
METHOD
1. Whisk together the whipping cream, condensed milk, eggs, and vanilla until smooth.
2. Combine the sugar and cinnamon in a shallow dish.
3. Dip the brioche slices into the custard mixture.
4. Sear in a pan with unsalted butter until golden on both sides.
5. Immediately coat both sides in the cinnamon sugar mixture.
MEXICAN VANILLA SAUCE
INGREDIENTS

5 tbsp high-quality Mexican vanilla extract cup sugar
METHOD
1. Whisk all ingredients together in a saucepan over low heat.

SEA BASS
INGREDIENTS
8 oz local sea bass filet
Salt & freshly ground black pepper tbsp unsalted butter tbsp olive oil
METHOD
1. Season the sea bass with salt and pepper.
2. Heat butter and olive oil in a pan over medium heat.
3. Sear the fish for 3 minutes per side until lightly golden.
4. Transfer to the oven and finish at 350°F for 8 minutes, or until just cooked through.
CILANTRO RICE
INGREDIENTS
cup white rice
2 cloves garlic, minced
¼ cup white onion, finely chopped
2 cups chicken stock
bunch fresh cilantro
Butter or olive oil
Salt, to taste
METHOD
1. Sauté rice with garlic and onion in butter or olive oil for 3 minutes.
2. Blend cilantro with chicken stock until smooth.
3. Add the cilantro stock to the rice, season lightly with salt, cover, and cook for 18 minutes.

1. Blend guajillo chiles and garlic with vegetable oil until smooth.
