Makes 4 Burgers
500g Chicken Breast
2 tbsp. Lemon Juice
2 tbsp. Olive Oil
2 tbsp. Dijon Mustard
1 tsp. Salt
1 Head Baby Cos Lettuce
4 Bread Rolls
4 Bacon Rashers
4 Eggs
160g Caesar Dressing
1 cup Parmesan
Warm the oven to 80oC.
Cut the chicken breast into 3 pieces.
In a bowl, add the lemon juice, olive oil, mustard, and salt to the chicken. Mix well and set aside.
Remove the core from the cos lettuce and separate the leaves. Wash the leaves in cold water and set aside.
In a pan on medium heat, cook the chicken pieces along with the oil and juices from the bowl. When the chicken is cooked through, place on a tray and set in the oven to keep warm.
Put the rolls in the oven to warm.
In a pan add the bacon and cook until crispy. Remove from the pan and place on the tray with the chicken in the oven.
Crack the eggs into a warm pan. The eggs can be either flipped or sunny side up. Take the pan off the heat when the eggs are cooked to your liking.
To assemble, cut the roll in half and spread the dressing over each side of the bread.
Place cos lettuce on the bottom bun, followed by bacon, chicken, egg and Parmesan cheese. Serve warm.

Once completed, Colonnades will be home to one of South Australia’s first ALDI supermarkets, a refurbished and expanded Woolworths, and Masters Home Improvement. Along with these exciting additions will be a striking market style mall, which will include dining options and fresh food.
PROGRESS UPDATE: Woolworths is trading throughout its refurbishment; the new look store will be here before Christmas. Other retailers in the precinct including Cafe 123, Charlesworth Nuts and Go Vita are all trading as normal during the development. Rheinland Bakery has temporarily relocated to the lower level near Coles.

We talked with Kate Punshon, Centre Manager of Jamie’s Ministry of Food Pop-Up located at Colonnades, about her love for creating a cooking community.

Kate Punshon’s passion lies in sharing her love of cooking, which makes her job as Manager at Jamie’s Ministry of Food Pop Up that much more fulfilling.
“Food enriches our lives when we share it with people,” Kate says.
“There’s such a sense of achievement with cooking and it’s great when your participants turn to you beaming and say, ‘look at my perfect poached egg’ or ‘we’ve never eaten fish, but this recipe tastes so good and now we cook it every week’.’’
“Participants learn to cook good food the Jamie way — fresh, fast and easy! People do the course as much to learn about cooking as to meet other people. We had a lady start the course heavily pregnant, she attended four weeks of the course, had a baby, and was back for week five!”
Participants learn to cook and eat one full meal and take two home, all for less than the cost of a takeaway. Kate says,
“There are fathers and sons, mothers and daughters, and husbands and wives. We get everyone because it’s such good value.”
“When I close the doors at night it’s good to know that we have provided people with the skills and confidence to cook fresh meals from scratch. Cooking is a life skill and we have helped them, it’s so rewarding.”
The course consists of one 90 minute class per week for five weeks. The cost per class is $10 for concession, $15 for students and $20 for adults.
