Bring a large pot of water to boil. Cook spaghetti, stirring regularly, then drain. Separate the seafood mix based on time to cook. E.g. King prawns and mussels: longest time. Small prawns: medium time. Calamari: shortest time. Heat 1 ¹/2 tbsp oil in a large skillet over high heat. Add King prawns and mussels, cook for 30 seconds. Add small prawns, cook for another 30 seconds. Finally, add calamari and cook for another minute. Immediately transfer to bowl. Reduce heat to medium-high. Heat remaining one tbsp oil, then add garlic and onion. Cook for three minutes. Reduce again to a low heat before adding wine and simmer for one minute, or until alcohol has evaporated. Then add tomato purée, cherry tomatoes, brown sugar, salt and pepper. Simmer for another two minutes. Add spaghetti, seafood and ¹/2 cup water into the sauce. Toss gently and cook for 1-2 minutes, or until the sauce has thickened and coats the spaghetti. Garnish with fresh watercress. Enjoy!
