Under the Sheets Renowned business woman, successful model and known for her iconic fashion sense, there’s not much Lindy Klim cannot do.

We sat down with her to chat about her latest collaboration with Adairs, her personal style, and all things creative.

Describe your creative process when designing. What was the inspiration behind your collection with Adairs?

To start off with, I run through some ideas that I like. I pull together Pinterest boards of images I’m loving and then we start shaping the first draft of an idea together.

I had recently been travelling to Morocco and Europe so I was inspired by high quality linen and the old colour photos of the beach lifestyle.

What’s your favourite outdoor trend when it comes to decorating as we approach the warmer months? I like a feeling of tranquillity throughout, whether that be found in a walled garden or a wellkept lawn. I like the garden to bring order from chaos. I hate mess inside or outside.

The collection is made overseas in Portugal. Have you travelled there before? I visited Lisbon years ago now.

Europe’s old cities, including Lisbon with its winding streets, are fantastic for photos and to spark creativity and ideas. There is so much to see and do and the Portuguese lifestyle is similar to Bali with its laid-back vibes. The Greek islands are my favourite place at the moment. The crisp white buildings and deep blue seas make me happy and inspired.

Do you have a favourite item from the Lindy for Adairs range? If so, which one?

If I had to pick one it would be the Lovina Quilt Cover set. It is so beautiful. The look is so fresh. It’s on my bed in Bali right now.

What are the key mantras you stick to when updating your homewares? Fresh feel. Airy. Subtle tones. I keep it that simple.

Who do you look to for inspiration, both in your homewares and your personal style? Personal stylist Giovanna Battaglia.

She captures effortless style and her images on social media seem such fun.

For home styling, my inspiration comes from magazines, including interior and travel magazines.

What do you look forward to most about coming home at the end of a busy day?

I love coming home. For me it’s about returning to a sanctuary and taking time to listen to the things my kids have been up to that day.

What’s your favourite item on the Yellow Brick Café menu at the moment?

Coffee: A heart starter at the beginning of a long shift (aka, a long black).

Food: Our poached chicken pesto sandwich. We make our pesto sauce in house so there’s a little extra love in each bite.

What are your favourite coffee trends of 2017? There are so many cool new trends, but no matter how many fads and variations come out, you can’t go past a perfectly pulled shot of coffee. Add to that one sexy, talented barista and you know you are going to have a great day.

At Yellow Brick Café this has been our focus from day one.

Whether it’s a simple serving of raisin toast or something a little more extravagant, our two favourite cafés, Victoria Café and Café Relish have you covered. Slowly sip your way though a creamy cappuccino, a luxurious latte or a flavoursome flat white all morning long.

What’s the best thing about coffee, from your perspective? The caffeine of course! Apart from the great taste of a well made coffee, there is something more to the whole experience. Coffee brings people together. As a barista, you’re a counsellor, entertainer and sometimes even a flirt. If we get a smile when we give you your coffee, we know we have done our job right.

Fig & Blueberry Pavlova SERVES 6 PREP TIME 10 MINUTES COOKING TIME 90 MINUTES INGREDIENTS 4 egg whites 250g caster sugar 1 tsp cornflour 1 tsp vanilla extract 1 tsp white wine vinegar

FOR TOPPING 1 punnet fresh blueberries 2 ripe Australian figs 3 tbsp icing sugar 350ml double cream

METHOD Pre-heat oven to 120°C and line a large sheet with non-stick baking paper. Separate egg whites from yolks and place the whites into a large bowl.

Whisk on a slow speed for one minute, then increase the speed gradually, continuing to whisk until egg whites form stiff peaks.

Slowly add in sugar, while continuing to whisk the mixture.

At this point, the meringue should be stiff and look glossy.

Fold in cornflour, vanilla extract and vinegar.

Spoon meringue onto the baking sheet and spread out into a circle about 26cm in diameter. Cook in the oven for 90 minutes, then leave pavlova to cool.

Whip cream into soft peaks.

Spoon cream into the centre of pavlova. Top with Australian figs, blueberries and icing sugar.

Serve immediately.
