PRAWN COCKTAIL
400g cooked peeled prawns from Zag Seafood
4 little lettuce cups
6 tbsp creamy mayonnaise
2 tsp tomato chutney
2 tbsp Worcestershire sauce
A good squeeze of half a lemon
Fill 4 cocktail glasses with lettuce and season prawns with salt and pepper. Mix the mayonnaise, chutney, Worcestershire sauce and lemon and spoon over prawns.
CHICKEN & LIME SKEWERS
800g chicken tenderloins from Red Lea Chickens, cut in cubes
3 lemons, cut into wedges
1 red and yellow capsicum, cut into cubes
2 tbsp olive oil
1 pack bamboo skewers
Soak skewers and thread on chicken and vegetables. Season with oil and pepper. Cook on medium heat for 5 minutes and serve with salad.

BAKED HAM WITH CIDER AND SALTED CARAMEL GLAZE
4.5-5.5kg full Australian leg ham, bone-in from Bush’s Fresh Meats
4 x 300ml apple or pear cider
2 cinnamon sticks, cracked
Glaze
350ml salted caramel sauce, warmed 100g hazelnuts, roasted skin on (optional)
Pre heat oven to 170°C. Cut a diamond pattern into the fat and place ham onto tray with apple cider and cinnamon sticks. Bake in the oven for 20 minutes. Remove ham from oven and drizzle with half caramel sauce. Bake for another 45 min. Remove and add remaining sauce and chopped hazelnuts. Serve with all festive trimmings!
