Fluffy ricotta pikelets SERVES

INGREDIENTS 1 cup self-raising flour 1 cup ricotta cheese ½ tsp baking powder 1 ½ tbsp granulated sugar ¼ fine salt ¾ cup milk 2 large eggs

½ tsp vanilla extract ¼ cup maple syrup ¹⁄3 cup almond flakes Butter, cut into star shapes Cooking oil spray

METHOD TRY THIS

Freeze stars, then serve

Whisk together flour, baking powder, sugar and salt in a small bowl. Combine ricotta, milk, eggs and vanilla in a separate mixing bowl. Add the dry ingredients to the ricotta mixture, stirring gently until combined.

Spray a heated frying pan with cooking oil. Pour 1 tbsp of batter for each pikelet. Cook over a medium heat until bubbles appear on the surface, turn and brown other side. Remove from pan, cover to keep warm. Repeat with remaining batter.

Serve pikelets with light drizzle of maple syrup and icing sugar, almond flakes and butter stars.
