Chocolate-dipped shortbread trees
INGREDIENTS
150g plain flour
100g butter, roughly chopped
50g caster sugar
METHOD
1 tsp vanilla essence
100g milk chocolate, roughly chopped Hazelnuts to garnish (optional)
Preheat oven to 180ºC. Combine flour and butter together on a clean surface and rub together until small crumbs form. Add caster sugar and vanilla essence and knead together until a firm dough forms.
Wrap your dough in plastic and let it rest in the fridge for 20 minutes. Meanwhile, in a small microwave-safe bowl, heat your milk chocolate in 20 second intervals, stirring often, until all melted. Roughly chop the hazelnuts.
On a sugared bench top, roll your dough out until approximately 0.5cm thick. Cut out your Christmas tree shapes using a cookie cutter, then bake on a dry baking tray for 15-20 minutes. Once baked, allow them to cool before dipping in melted chocolate and garnishing with chopped hazelnuts. Enjoy!
