HOISIN NOODLE SALAD SERVES 4 | PREP TIME 10 MIN INGREDIENTS Hokkien noodles ½ cup Thai basil leaves ⅓ cup mint leaves 1 cup wombok cabbage 1 cup red cabbage ½ cup green beans

1 large carrot, julienned 10 snow peas, julienned 4 spring onions ⅓ cup Hoisin sauce 2 tbsp sesame oil ¼ cup black vinegar

METHOD Finely chop all herbs. For the sauce, combine Hoisin sauce with sesame oil, black vinegar and chopped herbs. Mix well and taste test to check the balance is right. Soak the noodles in boiling water until just cooked. Drain and refresh in cold water and drain again. Toss with a little vegetable oil. Chop cabbages, beans, spring onions, carrot and snow peas. Toss to combine noodles with all the vegetables and dressing.
