A tailored suit is still very much in fashion, but this season is about adding a feminine touch with colour. You’ll see dusty pink tones as well as rich amber colours. This look can be worn many different ways; you can wear the tailored blazer with a pair of boyfriend jeans, or pare back the tailored pants with a T-shirt and sneakers.

What trend from the past do you predict will come back into fashion?

I personally always loved a double denim look and I love camo print! I always see pieces of camo around the centre.

Coffee, Fig and Hazelnut Cake SERVES 8 // COOKING TIME 75 MINS

INGREDIENTS

METHOD

75ml freshly extracted espresso or strong filter coffee

1. Preheat oven to 180°C and grease the base and sides of a 23cm round cake tin with butter and baking paper.

2. Into a large bowl, add hazelnut meal, ¾ cup sugar, flour, baking powder, 200g of butter, yoghurt, eggs, coffee and half the vanilla extract. 3. Whizz in a food processor on a medium speed until well combined. Pour mixture into tin and bake for 25 minutes. 4. Leave cake in the tin for 10 minutes to cool, then flip out and continue to cool on wire rack until room temperature. 5. For the icing, combine mascarpone and remaining butter in a bowl. Whisk for two minutes until creamy.

6. Add sugar half a cup at a time while continuing to mix on low. Pour in vanilla extract and whisk on high until buttercream becomes light and fluffy. 7. Once cake is cooled, cut in thirds horizontally, trimming the top so it’s even (if necessary).

8. Spread buttercream and a thin layer of fig jam on to the top of the first layer. Repeat with the next layer. 9. Spread outsides of cake with a thin layer of the icing. Finally, drizzle pre-made caramel across the top, allowing it to drip down the sides.

10. Dress the cake with fresh figs and hazelnuts to serve.

Dijon and Herb Crusted Lamb SERVES 2 // COOKING TIME 40 MINS

INGREDIENTS 1 x 650g rack of lamb ½ tsp. salt ¼ tsp. black pepper 3½ tbsp. olive oil 2 tbsp. Dijon mustard 11/3 cups fine fresh breadcrumbs 3 tbsp. fresh flat-leaf parsley 1 tbsp. fresh mint

METHOD 1. Preheat oven to 220°C and put a large frypan over a medium-high heat. 2. Add a tablespoon of oil to the pan.

Season lamb with salt and pepper and brown for about 3-4 minutes on each side.

3. Transfer to a roasting pan, fatty side up. Once slightly cooled, spread top side of lamb with two teaspoons of Dijon mustard. 4. Finely chop flat-leaf parsley and mint before combining with breadcrumbs, salt and pepper in a large bowl. 5. Drizzle with 2 ½ tablespoons oil and toss until all ingredients are combined well. 6. Pat breadcrumb mixture into the mustard, pressing gently to adhere. 7. Roast lamb for 25-30 minutes for medium-rare. To achieve a crispy crumb, grill for a few minutes or until golden brown before removing from oven. 8. Allow to rest for five minutes before cutting the rack into chops.

Dukkah Roasted Chicken with Israeli Couscous 56

1. Preheat oven to 200°C. 2. In a small bowl, add the lime rind, ¼ cup lime juice, crushed garlic, dukkah, and olive oil. Stir to combine and mix in salt and pepper to taste. 3. Cut butterflied chicken in half before using a sharp, un-serrated knife to make eight deep incisions into each half of the chicken. 4. Rub the dukkah marinade over chicken and roast for 40 minutes or until cooked through. 5. Over a medium heat, grill finely-diced onion until soft and golden. Add Israeli couscous and cook for a few minutes, stirring frequently, then add finely chopped coriander and parsley, as well as two cups of chicken stock. 6. Cover and cook for 10 minutes, stirring occasionally. 7. Serve chicken on a bed of couscous alongside a sauce made from tahini, Greek yoghurt and remaining lime juice. Sprinkle spring onions on top to finish.

Filo Tart

with Asparagus and Goats’ Cheese INGREDIENTS 8 x filo pastry sheets 1 x leek 50g unsalted butter 1 x garlic cloves, crushed 2 x asparagus bunches 200g soft goats’ cheese Salt and pepper to taste

METHOD

SERVES 4 // COOKING TIME 20 MINS

INGREDIENTS 4 x small eggplants 1 cup green lentils 3 x garlic cloves 1 x red capsicum 30g tomato paste 4 tbsp. Moroccan spice 2 tbsp. lemon juice ¾ cup coriander, chopped 2 cups tomatoes, diced Salt and pepper to taste Panko crumbs and parmesan to garnish

METHOD 1. Preheat oven to 180°C and bring two cups of water to the boil. 2. Add lentils to water and reduce heat

to simmering, cover for 20 minutes. 3. Blitz garlic, capsicum, tomato paste, lemon juice and Moroccan spice in a food processor until combined. 4. Drain excess liquid from lentils and add spice mix, fresh coriander, diced tomatoes and salt and pepper to taste. 5. Cut an angled divot out of the centre of each eggplant and scrape out a hollow using a spoon.

Heat a sturdy skillet to medium-high heat and add eggplant cut-side down.

Cook until slightly charred before flipping eggplants to the other side. 6. Once eggplant is softened and grilled, remove from heat and fill with lentil mix. Top with parmesan cheese and panko crumbs and bake uncovered for 30 minutes.

1. Preheat oven to 180°C and grease tart pan. 2. Brush filo pastry with melted butter and stack sheets on top of each other. Trim pastry to a rectangle. 3. Line

tart pan with pastry and bake for 10 minutes until filo is golden. 4. Thinly slice leek and cook over a medium heat along with melted butter and crushed garlic, seasoning with salt and pepper.

Cook leek until soft and fragrant. 5. Blanch asparagus in boiling water until just tender.

6. Add leek mixture to pastry, crumbling goats’ cheese on top. Layer on asparagus and top with remaining goats’ cheese.

7. Bake for 5-7 minutes until warmed through and serve immediately.

Stuffed Eggplant with Moroccan Lentils

INGREDIENTS 4 x garlic cloves, crushed /3 cup extra virgin olive oil

2 tbsp. finely-grated lemon rind 3 tbsp. lemon juice 500g white baby potatoes

Salmon Cakes

with Horseradish Créme Fraîche

4 x large, skin-off salmon fillets /3 cup baby capers

2 x eggs 2 cups flat-leaf parsley 5 cups fresh breadcrumbs 60g unsalted butter ²/³ cup crème fraîche 2 tbsp. horseradish cream 1 x lemon Sea salt and cracked black pepper to taste

METHOD 1. Chop baby potatoes in half and boil in a saucepan of water until soft. 2. Add potatoes to a bowl with garlic, a splash of the olive oil, one tablespoon of lemon juice and the lemon rind. Mash potatoes roughly, adding salt and pepper to taste. 3. In a non-stick frypan, cook salmon over a high heat until medium-rare. This will take approximately 2-3 minutes on each side. 4. Once cooled, roughly flake the fish into the potato mix along with coarsely chopped parsley, eggs, one cup of breadcrumbs and the rinsed baby capers. Stir to combine. 5. Using a spoon, form the mixture into small spherical patties and roll lightly in remaining breadcrumbs.

6. Add butter and oil to frypan over a medium heat.

Cook the fishcakes in batches until golden and cooked through. 7. For the dipping sauce, combine crème fraîche, horseradish cream and remaining lemon juice, mixing to combine. 8. Serve with fresh lemon wedges and sea salt flakes.
