ey hey, We’re back and we’re pumped. Welcome to our first issue of 2024, which is jampacked with juicy tidbits, local stories, and pages of style inspo. So, let’s dive right in… Our stunning cover story, featuring celebrated local artist Rachel Burke, showcases Brisbane Quarter’s new Nearly Midnight installation. Trust us, it’s giving all the magic vibes we need right now. Ever wondered what goes on behind-the-scenes of a beauty empire? Well, wonder no more! We scored an interview with none other than celebrity makeup mogul and author Trinny Woodall. I had the pleasure of lunching with Trinny when she was in town last year. I’ve never met such a fast-moving, hard-working woman. The energy! Slowing down the pace, if romance is more your jam, you won’t want to miss our love-inspired trend edit, and we’ve also compiled the ultimate date night bucket list. Trust us, it’s very BNE – fun, quirky, and full of surprises! This month we’ve also shined a spotlight on the Pantone Colour of the Year, found out why 30-somethings are choosing to freeze their eggs, and discovered why Sardinia should be high on your travel list. Glamorous snaps from the Boy Swallows Universe premiere also reminded us just how cool Brisbanites are! Congrats to Trent Dalton on a simply outstanding show. Enjoy! t’s hard to believe Christmas has come and gone and we’re already one mag down. And what a cracking one to start with! Like Tracy so eloquently put, this mag is full of a diverse range of interesting, fun content, from out-of-the-box home edits to chats with some pretty cool locals. Have an event coming up? Flick to page 16 for your first look at Bec & Bridge’s stunning new autumn collection, Daviel – if this doesn’t have you running to James St, I don’t know what will! We also spoke to our very own real-life Willy Wonka, Peter Ingall of Mayfield Chocolates, and met the faces behind some of your favourite establishments in our hospitality leader’s feature. Inside you’ll also find an interior edit on the new ‘surf cowboy’ aesthetic that’s set to take over our homes in 2024 (think plenty of Robey Official-style pieces). On that note, happy reading! Nobody puts baby in the corner! Apparently any Patrick Swayze movie ever can be used as your date night roadmap. Dance lessons are the perfect way to showcase the fun and loveable side of you, even if you do have two left feet. Sashay your way to Dancecorp Dance Studios located in Woolloongabba, where you and your boo can feel closer in more ways than one. Be guided through classic partner dances like the waltz, the foxtrot, the tango, and swing. We’re not saying you’ll be able to recreate the lift scene by the end of class, but you never know until you try!

Wine and cheese is here to stay and sipping a tipple under the night sky is the only way to do it. If you venture 40 minutes from the city, you’ll find vine to glass vineyard, Sirromet Winery. Until March, Sirromet’s summer experience Twilight In The Vines will serve charcuterie-board snacks in a picturesque setting, perfectly paired with fine wines of course – we’ll cheers to that! Mt Cotton @sirrometwines

At the end of the workshop, you can take home your bespoke bottle of wine to enjoy in your own time. Date number two, perhaps? Fortitude Valley @citywinerybne

Soak Bath House If your idea of a good time is sipping and soaking your troubles away, then book a spa day at Soak Bathhouse. Located on West Village’s top floor, be prepared to be transported to a Balinese oasis. Indulge in a 90-minute soak and sip, and a refreshing cold plunge dip, or if you want a little slice of heaven for just the two of you, book in for a private infrared sauna session. Everyone has a dating deal breaker, and often, it’s that your special someone needs a sense of humour. If you’re aggressively nodding while reading this, then plan your next date at the Good Chat Comedy Club. Laugh the night away as a line up of Brisbane’s best take to the stage with their funny tales and witty one-liners.

Take your love sky high at Vertigo Restaurant. Hoisted 17-metres above ground, Powerhouse’s latest foodie venture isn’t your typical dinner date. Some menu highlights include fresh burrata served with heirloom tomatoes, basil, and aged balsamico, and a delectable Italian fish stew (a seafood lover’s dream). Nothing says “I love you” like strapping yourself to a tall building with no easy exit strategy in sight, right?

Why 30-something single women are choosing to freeze their eggs for future use. By PENELOPE PELECAS

24 |

STYLEMAGAZINES.COM.AU

@STYLEMAGAZINES

B ODY

W

hether you’re planning to start a family or not, there’s a good chance you’ve heard a friend, a colleague, or even someone you follow on social media talk about egg or embryo freezing. In recent years, the number of women choosing to freeze their eggs in the hope of having a family later in life has dramatically increased. Dr Meghan Stafford, gynaecologist and fertility specialist at City Fertility in Newstead, says the clinic alone has seen a 26.4 per cent increase since 2021. But what exactly is egg or embryo freezing and what does it entail? We sat down with Meghan to learn more about the process, success rate, and whether it’s a path all women over a certain age should consider – here’s what she had to say… Let’s start with the basics: what is the difference between egg and embryo freezing? The main difference between egg and embryo freezing is the timing of the freezing process and the developmental stage at which the biological material is preserved. In the natural menstrual cycle, a woman’s body produces a number of follicles, each containing an immature egg. Typically, due to the release of the follicle-stimulating hormone (FSH), only one follicle grows or matures and ovulates each month. In the egg freezing process, the woman undergoes injections of FSH to stimulate the growth of multiple follicles. Before ovulation, the eggs are carefully collected from the ovaries using a technique called transvaginal oocyte retrieval. At this stage, the process of egg freezing and embryo freezing is pretty much the same. The only difference is in the next steps that take place in the laboratory. In egg freezing, the retrieved eggs are frozen using a cryopreservation technique

called vitrification. These frozen eggs can then be stored for up to 10 years and then be extended if requested by the patient. In embryo freezing, the retrieved eggs are fertilised with sperm, and the resulting embryos are then frozen for future use. Which is better? It really depends on the patient’s individual circumstances and their family planning goals. Several factors play an important role when we talk about the outcomes of egg or embryo freezing and the likelihood of pregnancy. We have to think about the woman’s age, her ovarian reserve, which broadly refers to the number of eggs remaining, and her complete medical history. Success rates can vary significantly from one individual to another, which is why it is important to have a really good discussion with a specialist. Generally speaking, we would normally expect a single pregnancy if a woman has around ten to fifteen eggs frozen at the age of 35 years or younger. As for the success rate of frozen embryo transfer, the current statistics indicate a success rate of 40 per cent per embryo transferred. How long can the eggs be stored for? Scientifically, there is no strict limit to the length of time that eggs or embryos can be stored. National guidelines suggest that eggs or embryos can be frozen for up to 10 years. When the frozen eggs or embryos are not used, you have several options: to thaw and discard or to donate for scientific training purpose or to another individual/couple. Now for the nitty gritty... price-wise, what are you looking at? An egg freezing cycle typically costs $5,350, which includes the initial appointment with the fertility specialist, planning and management of the cycle, the cycle fee, egg freezing, the fertility specialist procedure fee, plus the first six months of storage (after this, it’s $35 per month). The FEBRUARY 2024

cost of the medications (approximately $1,500) isn’t included as it will vary from patient to patient and if the patient does not have private health insurance, the day hospital fee may be an additional cost of approximately $1,300. I think it’s important for women to know that both egg and embryo freezing are elective procedures, and as such, there is no Medicare rebate available for these services. However, there are exceptions for women who are undergoing treatments or procedures that may impact their fertility, such as chemotherapy or endometriosis surgery. In such cases, there may be eligibility for certain rebates or financial assistance. What is the best age to freeze your eggs? Generally, the optimal age for egg freezing is typically between ages 30 and 35. Of course, there are always circumstances where it may be appropriate for women at other ages. Freezing eggs at a younger age provides a higher chance of success when the time comes to use them. For women who are not ready for kids yet, but want to safeguard their future, should they be considering it? Certainly, knowledge is indeed empowering, and it’s crucial for women to be aware of their options. Making an appointment with a fertility specialist is a great way to get a better understanding of what options are available to you and what’s involved in the process. Many of the women I see in my practice are choosing to freeze their eggs due to career choices, wanting to further their education, waiting for the right partner, or quite simply they are just not ready to start a family and want to keep their options open. Next, I work out, then have a shower before applying Trinny London Tiptoe In PHA Exfoliant, Trinny London Boost Up 30% Vitamin C Serum, and Trinny London Energise Me Niacinamide Moisturiser – it’s like a supercharged shot of hydration for my skin. I follow with four pumps of Trinny London BFF SPF 30 Cream Skin Perfector. Anyone using retinol must use SPF! The difference between an SPF 30 and SPF 50 is only about two per cent, but you have to top up SPF 30 more often.”

Night “As much as I love makeup, there’s nothing better than taking it all off at the end of the day. I double cleanse – I use Trinny London Be Your Best Enzyme Balm Cleanser, really working it in all over, followed by Trinny London Better Off AHA/PHA Gel Cleanser. When it comes to applying my leave-on products, I let each sink in for a bit to avoid diluting the ingredients. First comes Trinny London Reveal Yourself AHA Exfoliant, then I go and make my supper. Acid exfoliants are one of my ultimate skincare essentials. Next, I put on my Trinny London Overnight Sensation Retinal+Serum – this one is incredibly clever and doesn’t leave you with that flaky croissant-like skin.”

Arvid Noack Owner, Haig Rd Bistro & Le Coin Bistro Arvid Noack knows a thing or two about running a successful hospitality business. While he only opened up his first restaurant – Haig Rd Bistro in Auchenflower – less than five years ago, his stint in hospitality started almost three decades earlier as an apprentice for a boutique hotel in the countryside of Germany, where he learnt everything from front-of-house to running a bar and restaurant. That experience certainly paid off and saw Arvid travel all around Europe working in five-star hotels and fine dining restaurants, before he made the big move to Sydney, and then Brisbane. A year later he was putting the final touches on Haig Rd, a casual yet refined eatery serving up all the French classics like escargot and freshly shucked oysters – drooling, yet? His second restaurant, Le Coin Bistro, opened in 2020, serving as a laidback haunt bringing a charming slice of France to the rolling hills of Red Hill – and it’s only been success after success ever since. In fact, Le Coin was recently awarded Best Café/ Dining Venue and Best Casual Dining Venue across Australia in the Restaurant and Catering Hostplus Awards for Excellence. For Arvid, no two days are the same, and running two successful local businesses is a bit of a juggling act, but he wouldn’t have it any other way. “Business never sleeps, but it all comes back to being organised and managing a good team behind all operations,” he says. The new year is looking bright for Arvid, who is planning to open a new concept venue later in the year – stay tuned!

Nadine Delahunty Director, Sirromet Wines

Seeing my ideas come to fruition is the most rewarding part.”

Nadine Delahunty was exposed to the world of wine from a young age. When her parents Terry and Lurleen Morris discovered just how exceptional the wine from Queensland’s Granite Belt region was, their dream of becoming producers of Queensland wine was ignited and Nadine’s own wine journey began. “My father, a passionate wine enthusiast and collector, greatly influenced me as I listened to him talk about and appreciate wine,” Nadine says. “He introduced me to various wines through small tastes, enhancing my palate.” As Sirromet Wines started to grow, Nadine and her husband Cam dove headfirst into the wine industry. They learnt everything they could from wineries around the world and enrolling in courses that would help them nurture Sirromet Wines and ensure that everyone who visits their picturesque winery is treated to a spectacular culinary experience they’ll always cherish. Nadine is now the Director of Sirromet Wines and loves being involved with each aspect of the family business. With so much happening at Sirromet Wines each day, Nadine says her day-today involves everything from making key decisions on big projects, to wiping down benches and collaborating with her team on everyday processes. In 2024, things certainly won’t be slowing down for Nadine either. Not only is she looking forward to completing her WSET Level 3 training this year, but Sirromet Wines’ restaurant is set to be renovated, an ampitheatre is being installed, and their Granite Belt vineyards are currently producing some of the best grapes the team have seen, allowing them to produce new varietals that will be added to Sirromet’s vast range of wines – and that’s just the beginning! Up, up, and away!

The headshot crash course

Brisbane is currently an exciting news story. The city’s appeal amid an increase in remote work has helped fuel strong population growth, increasing housing demand, driving down supply, and making it a seller’s market. CoreLogic has recorded annual median house price increases taking Brisbane to third position Australia-wide with a median dwelling value of $787,217, moving it beyond Melbourne’s median for the first time ever. So, why the continued incline? Not only are we are still experiencing substantial migration (we have a solid buyer pool highly motivated to transact amid the strong growth across Queensland), but there is also a severe stock shortage. This is good news for homeowners planning to sell as we’re in for significant housing growth in the next 12 months. I expect the selling season to kick off with a bang and we should be seeing some record sales heading into the month of February. My suburb to watch for 2024 is Mitchelton!

Updating headshots is a pain point on many people’s to-do list. Mine included. That beauty filter selfie or 2019 holiday photo may seem like a passable option for your LinkedIn profile, but in defining a personal brand and professional identity, fresh headshots are a must! Nailing your headshot session starts in the planning stages. Pinterest is your best friend! Find inspiration for poses and styles you gravitate towards. Align with a photographer you are comfortable and relaxed with, book in those beauty appointments, and you’re on your way. On shoot day, my biggest recommendation is to keep the energy vibrant and relaxed. Start simple, and work into the more interesting poses. If your smile starts feeling like a grimace, hit pause! Use quick breaks to check over the images and recompose yourself. Trust your photographer and trust your vision, so you can enjoy the experience. Headshots should be fun!

Long-time valentine

Romantic destinations

Having been with my wife for over 30 years, in addition to decades as a relationship educator and couples counsellor, I’m tentatively calling myself an expert in long-term relationships. You heard it, an expert! So, what does it take to maintain a happy, healthy relationship over the years? It takes a genuine, mindful commitment from both partners to really wanting to give the other person a good life. That commitment is one that keeps each partner attentive to self-monitoring, and accepting shared responsibility to maintain vitality, passion, and meaning in the relationship. This is absolutely possible with ongoing conversations and activities reinvigorating the connection that initially brought you together all those years ago. We know that a warm, fun, intimate relationship keeps us healthier, happier, and helps us live longer. So, for a lifetime of love, you must work on attention, acceptance, admiration, and affection – it’s definitely worth it. Happy Valentine’s Day! STYLING TIPS with Mark Ferguson

VARICOSE VEINS with Dr Nicholas Kemp

Suits you

Simple steps for your legs

In traditional weddings, grooms typically wear a single outfit throughout the ceremony and reception. However, an emerging trend sees grooms opting for different ensembles for each part of the event. Here’s why some men are choosing to change it up: 1. Personal expression: opting for different outfits allows grooms to express varied facets of their personality 2. Atmosphere: a formal suit may suit the ceremony’s solemnity, while a slightly more relaxed outfit aligns with the reception’s festive mood 3. Practicality: comfort is key, especially for day-long celebrations. A formal suit for the ceremony might feel restrictive later, making a more comfortable reception outfit a practical choice. While many grooms still choose a single outfit, the idea of changing outfits is gaining popularity and adding depth to the wedding experience. Ultimately, the choice should reflect the groom’s personality and the unique love story of the couple.

Varicose vein treatment doesn’t need to be a scary prospect involving pain or overnight stays in hospital. If you’re thinking about making 2024 the year to have your veins fixed, here are the top reasons to choose a clinical setting: • Virtually no downtime: walk in and walk out of your appointment (you can drive yourself straight into our free on-site car park) • Local anaesthesia: you’ll be up and walking almost instantaneously (this will greatly reduce your risk of blood clots) • No stitches or scars: nobody needs to know you even had treatment • Minimal discomfort: very few patients feel the need to take pain medication after • Immediate relief: no waiting to recover before returning to daily activities • You choose your appointments: no taking time off work, unless you want to! Evening appointments are available.

Leo + Sagittarius All 12 zodiac signs relate to one of the four elements and generally, if you and the person you’re dating have signs in the same element, you’ll be a great match. Leo and Sagittarius are both fire signs and they work well because they’re both very passionate people.

Written in the STARS

Libra + Aquarius Libra and Aquarius are both air signs who are full of unique and creative ideas. These two signs work great together because they’re both caring and inventive.

Scorpio + Capricorn

Met someone special and want to know if you’re a perfect match? Here’s your guide to the world of astrological compatibility.

Scorpio is a water sign and Capricorn is an earth sign. You’d think they wouldn’t be a great match because they’re not in the same element, however water signs tend to soften rigid earth signs, and these two always balance each other out.

By LAUREN PAYNE

Virgo + Cancer

A

strology is an excellent tool to deepen your own self-awareness and learn more about yourself, but what you may not know, is that astrology can also help you learn about a potential partner – this is where astrological compatibility (also known as synastry) comes in. Astrological compatibility is when two people’s birth charts are compared to see if they’re a romantic match. Not everyone is willing to share their birth chart information on the first date however, so you can always test your compatibility by comparing your sun signs. Want to know if you and your potential partner are compatible? Here’s a list of the most compatible zodiac signs and why they work so well together.

Here we have another water and earth sign pairing with Virgo being an earth sign and Cancer being a water sign. These two are a great match because Cancers calm anxious Virgos, and Virgos can always tell when a Cancer needs some extra care.

Aries + Gemini Aries is a fire sign and Gemini is an air sign – together, they’re the life of the party. Think of Aries and Gemini as the couple you always see out at events meeting new people, learning about their hopes and dreams, and initiating grand new projects.

Taurus + Pisces Here we have another earth and water sign pairing. Taurus is our earth sign and can help to ground the dreamy water sign of Pisces. On the flip side, Pisces can help the stubborn Taurus to step out of their comfort zone and be open to new experiences.

TOAST! Serena Giga and Arun Ahluwalia 20.10.2023 By BIANCA LICINA Where and when did you meet? Serena: We met at Bond University in 2014 after leaving Sydney to study medicine on the Gold Coast. We stayed at the same campus college accommodation and met on the first day at a welcome drinks event. We absolutely loved our university lives, growing together, studying hard, lazing by the beautiful beaches, and most importantly, partying hard. How did he propose? S: After a long Sydney Covid lockdown, we went on a trip to Adelaide Hills and stayed in a hotel called Sequoia Lodge. Arun surprised me with a picnic on the helipad of the hotel. He had coordinated a playlist of our favourite songs and prepared a charcuterie board ready to go. After popping open the champagne and enjoying a few drinks, he proposed!

Tell us a little about your decision to have two wedding days... S: We are both born in Australia, however, Indian by heritage. We both share love for our Indian and Australian culture. We absolutely loved attending both Hindu and Western wedding events and treasure so many different traditions. The Indian wedding traditions are a true celebration and party. However, we couldn’t imagine not having a celebratory Western wedding as well. Having my dad walk me down the aisle, reciting our vows to each other, sharing a kiss to unite us, and being presented as ‘Mr and Mrs’ were experiences

DAY ONE DETAILS

that brought us so much emotion, love, and joy. Overall, we wanted to celebrate both our culture and lives in Australia and we were so glad we had the opportunity.

Date... 20 October 2023. Wedding dress by... Berta Privee. Suit by... InStitchu.

What was your favourite moment from each day?

Bridesmaid dresses by... Shona Joy.

Western wedding:

Makeup by... Mia Connor.

S: The wedding dance was something we had been planning for many weeks and it was so enjoyable when it all came together. Having a background in dancing, it was my dream to perform a fusion contemporary and waltz dance. And the biggest surprise was how much natural talent Arun had!

Wedding planner... Mandi from Ivy & Bleu. Venue... Burleigh Pavilion, Gold Coast. Catering... The Tropic and Burleigh Pavilion.

Flowers... Ivy & Bleu. Stationery... The White Letter.

Hindu wedding:

Arun: For me the Baraat was a highlight. The Baraat is the Indian tradition where the male’s side of the family dances with loud drums as they parade to meet the female side prior to the wedding. Once they meet the female side of the family there is an official welcoming and uniting of both families. Where did both days take place and why did you choose those venues?

Western wedding: Burleigh Pavilion S: Arun and I are originally from Sydney, however, we wanted to get married on the Gold Coast where our journey all started. Whenever we went to the venue we felt so happy, relaxed, and at home. From the moment we were engaged, we approached Burleigh Pavilion to see if they would consider hiring out the entire venue and bringing in our own style and furniture. The venue was just as excited as us to host their first wedding and we were so happy our visions came alive.

Hindu wedding: Fins at Plantation House S: After securing Burleigh Pavilion, our dream wedding venue, we then had to find a venue to host our Indian Hindu wedding and Sangeet. This was tricky as we had to find a venue that could host our large guest numbers, approve a fire for the ceremony, and catered

Furniture... Avideas and Staging Creations. Music... Limited Edition Band. with excellent Indian-inspired food. Fins at Plantation House went above and beyond to make our wedding special and surpassed all our expectations. What was your favourite song to dance to at the reception? S: High by Lighthouse Family. This was the final song of the evening and everyone huddled together to create an archway to send us off. It was such a special moment. Where did you honeymoon? S: We wanted to make the most of the European summer and therefore had a prewedding honeymoon in Italy, Greece, and London in July prior to the wedding in October. We had the best time and felt it allowed us to feel very connected and relaxed prior to the wedding craziness. After the wedding we enjoyed a ‘minimoon’ at Qualia on Hamilton Island. Any advice for brides and grooms-to-be? A: Take a few moments to take a mental snapshot of your surroundings throughout your wedding. It flies by so quickly, but you will always remember those moments. FEBRUARY 2024

FAIRY POOLS

POP the question

Fairy Pools, Isle of Skye If the love of your life also happens to enjoy the great outdoors, then proposing next to the crystal-clear Fairy Pools on the Isle of Skye in Scotland would be an excellent idea. Enjoy a scenic 2.4km walk before unveiling your ring next to the pristine pools.

Proposing overseas can be incredibly romantic, but doing it in front of a thousand tourists beneath the Eiffel Tower can ruin the vibe. Instead, take the love of your life to one of these whimsical locations to make your proposal both memorable and magical. By LAUREN PAYNE

MINNEWATER

MONT-SAINT-MICHEL

Mont-Saint-Michel, Normandy Instead of travelling to Paris for a romantic proposal spot, head further south and declare your love near the historic MontSaint-Michel. Exploring this iconic medieval island town is like walking through a fairy tale, making it a whimsical place to propose.

Jökulsárlón, Iceland Imagine proposing to the one you love underneath the northern lights. Well, if you travel to the Jökulsárlón Glacier Lagoon in Southern Iceland in winter, you’ll be able to pop the question as the aurora borealis dances above you and capture the most magical proposal picture.

JOKULSARLON

Juliet’s Balcony, Verona Romeo and Juliet may be just a story, but proposing by Juliet’s Balcony in Verona, Italy is still incredibly romantic. Leave a love note telling other visitors about your memorable visit and make sure to rub the statue of Juliet for good luck.

Minnewater (Lake of Love), Bruges There’s nothing more romantic than proposing to the love of your life on the banks of the actual Lake of Love. With lush greenery along its banks and a tale of everlasting love linked to its origins, proposing at the Lake of Love would certainly be magical. 46 |

Discovering Sardinia: a Mediterranean dream Sardinia has everything you want in a summer European getaway. By KIRI JOHNSTON

W

hen it comes to planning a holiday, I always strive to find the balance between relaxation and adventure. While I’ll never say no to lounging by the ocean, there’s a deeper excitement that comes from immersing myself in the local culture. I love to explore as much as I can on foot, taste the flavours of traditional cuisine, and discover hidden gems off the beaten track. That’s why Sardinia, the Mediterranean’s second-largest island, appealed to my partner and I when we were looking for a summer European getaway in July last year. It has a raw authenticity, unique Italian flair, and a reputation that’s often overlooked, which we were eager to explore – and I can confirm, it far exceeded our expectations. We explored the island with a rental car, giving us the freedom to traverse from north to south over our 10-day stay. Despite covering a good chunk of the island, certain moments truly stood out as the highlights of our trip.

Baunei Coast Like the rest of Sardinia, the Baunei Coast has an untamed charm and wild beauty that left us blissfully surprised at every turn. Each cove had its unique allure, but my personal favourites included Cala Goloritzè, Cala Luna, and Cala Birìala, not to mention the notable view of the Pedra Longa rock formation from the boat. We also spent a wholesome night up in the quaint village of Baunei staying in a traditional Italian flat overlooking the mountainous views. Once we got back on the road, we drove down to Spiaggia di Santa Maria Navarrese, where we hired a deckchair and lounged for a full day of relaxation by the sea.

Olbia We stayed in a village near Costa Smeralda, a town famed for its pristine shorelines, celebrity sightings, and luxurious villas. We spent many afternoons exploring Porto Rotondo, indulging in paninis and espressos while enjoying live music at Piazzetta San Marco Square – a perfect people-watching spot by the harbour with cafes and curated boutiques. We also ventured out to the beaches of Golfo Aranci and joined the locals for an Aperol spritz in San Pantaleo’s bustling market square which came alive in the evenings.

Maddalena Archipelago One of the trip’s standout moments was our visit to La Maddalena Island, which was just a short 15-minute ferry ride from the mainland. Each morning, we wandered through the charming pastel-coloured streets in search of delicious focaccias and sat at coffee shops to admire the vibrant fishing boats in the port as we sipped our espresso, listening to the locals converse. But the real magic lies in its neighbouring islands. Caprera, which is connected by a bridge, is home to some of the most magnificent crystal-clear beaches. While some require a short hike to reach, they are well worth it. Although we didn’t have time to visit the iconic pink sand beach named Budelli, I’ve been told it’s an absolute treat for those lucky enough to see it in the flesh.

Cagliari Finally, we arrived in Cagliari, the vibrant capital that effortlessly combines heritage, tradition, and mesmerising landscapes. Our last stop of the trip brought us to a night in the charming old town of Castello, where cobblestone streets and panoramic sea views greeted us. At every turn, we discovered culinary delights in the town’s bustling outdoor dining scene. Here, we were welcomed with warm hospitality and treated to authentic cuisine, all set against a backdrop of lively ambiance. As our holiday neared its end, we decided to explore the Orto Botanico, a lush oasis nestled in the heart of the city, which proved to be the perfect ending.

The real-life Willy Wonka A secret chocolate factory, real Aussie ingredients, and a founder with an extensive background in all things chocolate, if you haven’t yet visited Mayfield Chocolates, add it to your Brisbane bucket list. By PENELOPE PELECAS

D

id you know there was a secret chocolate factory in the heart of Brisbane CBD? Us either! Peter Ingall, owner of Mayfield Chocolates, is the closest thing to a real-life Willy Wonka. While there’s no chocolate that makes you hover or a magic chewing gum, the confectionary store, which has two locations: Spring Hill (this is where the ‘secret’ underneath factory is located) and Paddington, has been crafting premium chocolates for more than 30 years. “Well, my preferred Willy Wonka was Gene Wilder,” Peter jokes. “That’s really a children’s fantasy. Mayfield Chocolates is in the fine food market and is primarily aimed at grown-ups. Less is more. Fun is still permitted though!” Peter, who previously worked as a marketing manager for Darrell Lea, set up Mayfield Chocolates in 1993 with his late partner Danica Antunovich after realising there was a gap in the market for premium chocolates. With his extensive background in chocolate and marketing (Peter studied confectionery technology in West Germany) and FEBRUARY 2024

his partner’s flair for good taste, it’s no surprise Mayfield Chocolates has cemented itself as one of Brisbane’s premier chocolate destinations. The award-winning confectionary store combines rare and delicious Australian ingredients – think Queensland dark rum, Tasmanian leatherwood honey, and native macadamia nuts – with a Europeanstyle approach. “The philosophy has been that Australia makes a lot of good foods, so why not use some of them in the chocolates?” When asked what the secret was to perfectly smooth chocolate, Peter says it comes down to one ingredient. “Smooth chocolate has a particle range in the vicinity of 20 microns: too small and it tastes slimy, too large and it tastes grainy. One point to note is that we have never used vegetable fat – so no waxy mouthfeel.” As for his favourite flavour, Peter says, “It depends on my mood, there are so many options. To anyone who has not tried our chocolates, it’s time you did – you’ve been missing out for 30 years already!” MAYFIELDCHOCOLATES.COM.AU
