| editor’s letter | s my two-and-a-half-year-old begins to grasp the excitement surrounding the season (she’s been belting out “Jingle Bells” for months and begging to wear her candy cane pajamas since summertime…), it makes the holidays even more magical. When I first asked what she wanted for Christmas, I was worried it might be something unattainable (a unicorn? a giant sandbox?), but instead, she answered, without hesitation: “Cookies!” The more I think about it, the more it makes sense (she’s always had an insatiable appetite) and the more relieved I am. It’s a request I’m fairly certain can be fulfilled—and without doing much damage to my wallet. In fact, in this month’s Taste department, “Sweeten the Season” (page 86), local bakers share their most coveted cookie recipes—from peppermint shortbread to classic chocolate chip to gingerbread—so there’s no excuse not to make my little lady’s wish come true. If your loved ones are hoping for something more than just sweet treats come Christmas morning, you’re in luck. In our “Holiday Gift Guide” (page 57), we present over 50 fabulous finds—toys, clothes, garden goods, home décor, jewelry, and more—from our favorite mom-and-pop places. Organized by price, there’s something for every budget, every age, and every interest. Forget shopping on Amazon (and all the unnecessary packaging and shipping costs—not to mention delays—incurred with it, too), and spend your bucks locally—at the bevy of boutiques, bookshops, and other innovative, independent businesses that make our main (and surrounding) streets shine. “ Yo u c a n t e l l But the holiday hoopla doesn’t stop there. In Arts a lot about & Culture (page 26), Bella Nolen shares a roundup of the month’s most festive shows, including a familya person friendly performance full of merry music, song, and by the way dance (A Hawkins Holiday from December 4-5); in The 10 Spot (page 18), Tara Mendanha tells you 10 wonderful they handle ways to celebrate the season—from tree farms to craft three things: fairs to holiday home tours; and in Sip on This (page 84), learn how to make five buzzworthy cocktails a rainy day, that ’ ll keep your “spirits” bright. Finally, if you’re lost luggage, looking to give to those less fortunate but unsure where or how to help, flip to “Make it Merry” (page and tangled 22) for a list of local toy and clothing drives. According to a report by personal finance website SmartAsset, the City of Roseville ranks 33rd as a top American “Boomtown.” The study looked at seven metrics: population change, unemployment rate, change in unemployment rate, GDP growth rate, business growth, housing growth, and change in household income.

The Murer House (murerhouse.org)—an 1890s home that sits on the grounds of the historic Giuseppe Murer house at 1125 Joe Murer Court in Folsom—has officially been listed on the National Register of Historic Places. The honor makes the site—which currently hosts Italian language, cooking, and art classes, in addition to weekly tours and special events—eligible to apply for a larger variety of historic preservation grants.

Nearly $100,000 was raised for the Folsom Police Foundation (folsompolicefoundation.org)—an organization primarily focused on youth activities supporting positive community interactions— at the inaugural Black & Blue Gala last month. Through January 8, San Francisco-based artist Peter Combe will display his solo exhibition, SUPERSTUDIO, at Roseville’s Blue Line Arts (bluelinearts.org)—with a reception and artist lecture on December 18 from 4-8 p.m. Combe’s unique method involves creating three-dimensional, optically bewitching compositions from appropriated paint swatches. The gallery will concurrently feature a solo exhibition for local artist James Phillips, as well as 30x30 and Handmade for the Holidays, featuring small works perfect for gifting. on the Block Flock Pizza (flockpizza.com)—a neighborhood eatery by acclaimed chef Jordan Davis—is coming soon to 185 Placerville Road in Folsom. Serving a full menu featuring artisan pizzas (whose dough is crafted using all organic flour and then cold-fermented for three days), salads, meatballs, and other entrées, their meals are meant to be shared and enjoyed as a family in a casual, come-as-you-are atmosphere.

Palladio at Broadstone (gopalladio. com) is welcoming three new tenants to its outdoor retail center: Vampire Penguin (vampirepenguin.com), which serves shaved snow in a range of fun flavors with tons of toppings; Devil & Angel (devilnangel.com), a dessert shop specializing in handcrafted soft serve, milk teas, bubble smoothies, boba ice cream, and more; and children’s fitness center My Gym (mygym.com). All the businesses are scheduled to open early next year. Quarry Ponds Town Center in Granite Bay welcomed a new breakfast and lunch locale. Oak Leaf Café (oakleaf.cafe)—sited at 5540 Douglas Boulevard, Suite 110— boasts two covered patios and serves homestyle American meals, like omelets, burgers, six varieties of avocado toast, and more.

Rose Café & Bagel (rosecafeandbagel. com)—a community gathering place that serves specialty espresso drinks using locally roasted beans from Pachamama, 100% organic bagels and breads (made daily in-house), and other sweet treats—recently opened at 4070 Baseline Road in Roseville.

Vault Salon (thevaultsalon.com), which offers custom color, premium cuts and styles, special occasion makeup, luxury extensions, and more, is expanding to 953 Pleasant Grove Boulevard in Roseville. The salon has an existing location at 6661 Stanford Ranch Road, Suite L, in Rocklin.

South Fork Grille—a casual, hip eatery operated by the same owners as Sienna Restaurant and Land Ocean New American Grill— is scheduled to open early next summer in the El Dorado Hills Town Center (edhtowncenter.com). The 5,400-square-foot space will be given a complete overhaul and serve playful comfort food favorites, plus plenty of healthy options and creative cocktails.

Rocklin recently welcomed a new Chinese restaurant to 2164 Sunset Boulevard, Suite 200. Joy House (joyhouserocklin.com)—whose chef hails from the Bay Area—prides itself on using high-quality ingredients in both familiar favorites (sweet & sour pork, tangerine chicken, braised eggplant in garlic sauce, etc.) and more authentic offerings.

Remember the trifecta. Exercise. Any form of physical activity during winter helps reduce stress and

Hydration. One of the best things you can do for your health is to drink optimal amounts of water every day. Water plays a big role in your health, including increased metabolism, skin hydration, and immune health. This Fire Cider recipe, courtesy of herbalist Rosemary Gladstar, is amazing for preventing (or combating) colds and the flu. The catch is it takes four weeks to make, so get brewing! In a quart jar labeled with the date, add: • ¼ cup sliced horseradish (a top herb for combating sinus congestion and headaches)

Add honey and stir. Stored in the refrigerator, it should last about three months. Use 1 teaspoon four times a day if you’re sick and 1 teaspoon daily for prevention. Unique Remodeling and Design (uniquebrushstrokes. com), recommends “keeping the color of light the same in each room without going higher than 3,000K or investing in smart bulbs, since you can change the color and brightness to suit your mood and experiment with different effects.” Tammi Rollins, designer and owner of Hinge & Stone (hingeandstone.com), agrees that the bulbs you buy is imperative. “To help avoid glare, ambient lighting in a living room or dining room should be at least 1,500-3,000 lumens, whereas task lighting should be 400 lumens.”

MAKE A STATEMENT “Statement lights are great for entryways, dining rooms, or even above a bathtub,” says McDavid. “There are so many beautiful art-style fixtures—the choices are limitless.” In addition, she says there are no rules saying your cabinet hardware, faucets, and lighting finishes all need to be the same color or material, as “mixed metals are all the rage.”

A HEAD FOR HEIGHTS While good lighting creates depth and height in a home, Rollins says it’s important to choose proper fixtures based on the existing ceiling height. Another detail to keep in mind is lighting placement. “Hanging chandeliers or pendants too low is a big no-no. As a general rule of thumb, they should be six feet from the floor or three feet from the top of the table,” advises Rollins.

BRIGHTEN THE BATHROOM For an easy update to a bathroom’s aesthetic, replace overhead vanities with sconces. Shares McDavid: “It gives the bathroom a more modern look and brings the light down to illuminate your face, since overhead light creates shadows.” Rollins agrees that adding ample lighting over bathroom mirrors is a quick but effective way to brighten bathrooms.

THE KITCHEN IS KEY When it comes to illuminating a kitchen, Reed suggests task lighting for preparation and cooking (undercounter or hood lights) and a good overall light (canned lights). Open shelves and glass-fronted cabinets should also be lit to highlight anything on display and create impact, while pendants over a counter provide both light and add to the space’s overall aesthetic.

DIM IT DOWN All three designers concur that being able to adjust the brightness in a room by adding a dimmer switch is an easy way to add ambiance and create a mood. Says Reed, “You may need bright lights for a particular task, like cooking, but when that task is finished, you can use a dimmer to make the lighting more subtle.”

Whether it’s through big windows, light-colored window treatments, skylights, or white, bright interior paint, “incorporating natural light helps improve overall mood, health, and well-being,” says Rollins—plus it saves energy!

The dedicated stroke team includes a physician, registered nurse, phlebotomist, and CT technician and stands at the ready to respond to all potential stroke patients. Following protocols and national standards, Marshall’s Stroke Team upholds a high standard of care. Seconds matter when it comes to stroke treatment. Depending on the type of stroke, healthcare professionals may administer clot-busting or hemorrhaging-reduction medication to reverse the stroke. Emergency surgery may also be necessary to stop bleeding into the brain. “Every minute counts,” explains Scott Vasconcellos, MD, of Marshall Cardiology. “There is a short window of three hours from the first symptoms to combat permanent effects.”

Crossing the Finish Line to Good Health

livier Dapremont, PhD, crossed the finish line at the Gold Country 5k presented by Marshall Medical Center with flying colors. But his was no ordinary victory. It also marked his graduation from Marshall’s cardiac rehabilitation program. And it was hard fought.

Olivier leads a high stress life. He is an executive director at a pharmaceutical company and also coaches his son’s under 12 competitive soccer team. He has a family history of coronary artery diseasehis father passed away at the early age of 60 from a heart attack - “I have always been very aware of my elevated risk,” says Olivier. According to his labs and vital signs, Olivier was not yet at risk, but recently, with cholesterol numbers and blood pressure creeping up he was getting concerned, especially given the amount

of stress he had been feeling. He began taking blood pressure medication. He also requested a stress test, which came back normal. Recognizing that diabetes and heart disease are also closely linked, “I changed my diet towards more plant based food (with the occasional burger) and was able to lose about 40 pounds over the course of two years.” Regardless of the progress he made, he pushed his doctors to dig deeper and asked for a CT scan followed by an angiogram to assess further his health, knowing that the biggest risk factor for heart disease remains family history. As a result of the angiogram his doctors agreed he needed two stents placed to help return his body to normal functioning.

He then set a goal to run the Gold Country 5k on September 19. Olivier traveled from his home in Cameron Park to Placerville twice a week to work with Reggie Higashi, an exercise physiologist with Marshall Cardiac Rehabilitation. At Marshall he trained on the treadmill while keeping up with home workouts and running with his son’s soccer team. Under the watchful eye of Reggie and the Cardiac Rehab team, Olivier worked his way up to faster speeds and greater inclines. The weather on the day of the race was perfect for late summer, allowing Olivier to complete the 5k in 26.5 minutes, beating his goal of 30 minutes. 39 Years Ago, Marshall Hospital Changed Our Lives

R

ecently, my now adult son, Kurtis asked, “I’ve been wondering, why would you adopt someone like me, with all my problems and disabilities? I’ve been so much work for you.”

Why, indeed, would someone adopt a severely abused child? As a toddler, Kurtis had been abandoned by his birth parents and adopted by his biological aunt and uncle, from whom he suffered horrible abuse. Kurtis was less than two years old when he moved into my heart in 1978. There are so many answers to Kurtis’ question; naiveté, arrogance, desperation, fear, compassion, love, but Kurtis wanted facts. I explained the process of adoptions in the 70s and how we trusted God to give us the child He had planned.

In spite of my nursing background, Kurtis’ needs were overwhelming. He needed home teachers, physical, speech and occupational therapy, almost daily doctor appointments, and surgeries, which threatened to pull my usually organized self down in an undertow of activity.

Natalie reiterates that it all depends on your goal, whether it’s to be vegan, heart healthy, or just eating better food. She recommends replacing your 80/20 ground beef with a 93/7 blend to reduce the fat, or better yet, try using lean ground turkey. If you really want that “beef” f lavor, try using half lean ground beef and half lean ground poultry meat. If you want to avoid animal products completely, try looking for a homemade veggie patty recipe online using beans and whole grains so you can control the amount of salt you’re consuming. Not looking to do all that work? Simply grill or broil a portobello mushroom. They’re meaty, juicy, and have very few carbs.

esolutions. You make them every year and you’re lucky if you’re still keeping them by the time February rolls around. What can you do differently this year to be successful? Think SMART.

You may have heard of SMART (specific, measurable, achievable, relevant, time-bound) goals for business, but the same acronym and philosophy can be applied to your New Year’s Resolutions. Specific – Instead of setting a vague goal to lose weight or eat more vegetables, get granular. How many pounds would you like to lose? Which vegetables and how many servings per day will you eat? Measurable – Make sure your goal has a numeric value that you can either increase or decrease. Achievable – Be realistic when you make your resolution. If veggies currently make an appearance on your plate once a month, a goal to eat five servings a day once January 1 hits may be a bit ambitious. Relevant – Make sure you’re setting a goal to make a change that you really care about, that’s personal to you. If you don’t care whether you lose weight, don’t make that your resolution. Focus on something you care about, like being able to chase your kids around at the park by increasing your daily physical activity. Time-bound – Give yourself a deadline, but make sure that’s realistic too. Your chances of losing 20 pounds in one month are slim, but losing a pound a week is a reasonable benchmark to work toward. Whatever you resolve to change in 2022, make sure you build in some healthy rewards along the way. If your goal is to run a marathon in December, give yourself a treat once you’re able to run five miles, then ten, and so on. Get a massage, buy a new snazzy pair of running shoes, or order that new cookbook you’ve had your eye on. Can’t think of rewards that don’t involve food? You’re not alone. A simple search online will provide you with hundreds of ideas you never would have thought of.

T

here was a bit of déjàvu as I stepped through the door of Flame & Fire at the Palladio. After all, I had been to this exact spot almost three years ago to the day for a review of a Brazilian steakhouse. I was struck with a sense of familiarity—a beautiful, sizeable space, pleasant music, and an inviting bar with patrons drinking wine, sangria, and creative cocktails. Beyond that was the bountiful market table, and from just out of view came the perfume of something primal and addicting: fire-roasted meat. I digress… Yes, there’s a new (Folsom’s only, in fact) Brazilian steakhouse in town—Flame & Fire, the sister to Roseville‘s restaurant of the same name. And you don’t have to be a carnivore to love this place. The market table is a vegetarian’s delight, and I made it a point to spend as much of my feasting capital at this side of the restaurant (it’s a buffet, by the way) before I sat down for the main event: Caligula’s party of meat on a skewer. Not that I don’t love roasted meat on a sword being sliced tableside…I could eat it until I explode. The market table on the night of my visit provided, among many other things, hearts of palm, roasted beets, asparagus, charcuterie, deviled eggs, seasonal gourmet salads, smoked salmon, cheeses, Brazilian specialties, and all the makings for a fresh green salad, including dressings and sauces (I loved the chimichurri) aplenty. A banquet for everyone! But the reason most of us come to a Brazilian steakhouse is obviously for the meat. And at Flame & Fire, there is no shortage of succulent proteins. But first, and worth mentioning, came their soft, warm cheese bread rolls: pão de queijo. I then sampled bacon-wrapped chicken, parmesan-crusted pork, pork ribs, leg of lamb, sirloin, Brazilian sausage (linguiça), tri-tip with cheese, and their delicious beef rib—all expertly carved by the restaurant’s gauchos. Most of the meats were seasoned with a salt mix that paired well with the roasting process. There were also delicious, house-made desserts on the menu (if you can manage another bite), including brigadeirao, (flourless chocolate cake), Brazilian-style flan, cheesecake, crème brûlée, and passion fruit mousse. The true test came a week later when I returned and a woman I met was waiting for her Brazilian friends to join her. We exchanged numbers, as I wanted to hear her friend’s comments about their experience. Turns out, they raved about it, which is testimony enough for me!

I’ve heard a lot of talk lately about “the best fried chicken” and the “best fried chicken sandwich.” I have a contender, maybe a winner…I’ll let you decide. I can tell you this; I arrived at Roostarz at 11 a.m. on a Monday and by 11:15 a.m. their sliders and nuggets were flying out the door. This isn’t over-breaded, roof-of-your-mouth-torturing-greasy-chicken parts. It’s lightly coated, juicy, chicken breast tenders with a nice crunch and big flavor. Roostarz’ menu is small—sliders, tenders, kale slaw (don’t be afraid of the “K” word—it’s delicious), and fries—but boasts plenty of options. I had the Jungle Fries, featuring two crispy chicken tenders (chopped) over cheese fries topped with “Starz” sauce; and Combo #2—a slider with kale slaw and cheese, a tender with pickles (on bread), and fries. The chicken on everything I ordered was so good I didn’t want to stop and take notes! They also have a side called Kale-N-Rooz (again, don’t be deterred by the “K” word) that I’ll order next time (two chopped crispy chicken tenders over kale slaw and served with pickles and Starz sauce). There’s a menu staring at you as soon as you enter with a huge thermometer on it, allowing you to choose your level of spice: no heat, mild, medium, hot, and the reaper! I believe I had medium, which was plenty hot but still allowed me to taste what I was eating. Fresh food, family-owned and operated, friendly service? You can’t go wrong here. Sweeten the Season 5 Must-Make Christmas Cookies

’Tis the season for baking cookies! If you’re looking for some new treats to try, keep reading. The recipes that follow are guaranteed to spread holiday cheer. In a large bowl, combine the flour, baking soda, and spices. Set aside. In the bowl of an electric mixer, beat the butter and sugar on medium-high for 2 minutes until it’s light and fluffy. Add the egg and molasses and beat on medium until combined. Gradually add the flour mixture and mix on low until combined. (The dough will be quite thick.) Divide the dough into thirds, form each third into a ball, flatten, and wrap with plastic. Chill in the refrigerator for at least one hour, or overnight. Remove from the refrigerator and let it sit at room temperature for 5-10 minutes. Preheat the oven to 350F and line baking sheets with silicone baking mats or parchment paper. Place one of the thirds of dough on a lightly floured surface. Using a lightly floured rolling pin, roll the dough until it’s ¼-inch thick. Cut the dough using cookie cutters and transfer the cookies to a parchment-lined baking sheet. Bake 8-10 minutes until slightly crisp but not darker in color. Let the cookies cool for a few minutes before transferring to a wire rack to cool completely.

Whisk the icing ingredients together in a medium-sized bowl until the mixture is smooth. The mixture should slowly drip, but not run, when poured from a spoon. If it’s too runny, add a little more sugar; if it’s too thick, add a little more milk. Spoon the icing into a piping bag or a plastic squeeze bottle and pipe onto the cookies. (You can also use a thick plastic bag with one corner of the bag cut off.)

Cinnamon Sugar Cookies Recipe by Sweetz By Veez, 323-394-2013, sweetzbyveez.com, @sweetz_by_veez 3 cups all-purpose flour 1 tsp. cinnamon 1/2 tsp. baking powder ¼ tsp. salt 2 sticks salted butter, room temperature but not melted 1 ¼ cup granulated sugar 1 tbsp. agave nectar 1 large egg, room temperature *Available at most grocery stores or online.

1 tsp. Mexican vanilla extract (standard vanilla works, too) *Cinnadust FOR THE ICING

4 cups powdered sugar 3 tbsp. meringue powder 10 tbsp. water 1 tsp. vanilla extract Food coloring

Make the icing. Mix powdered sugar and meringue powder in a standing mixer using the paddle attachment on low. Add water, 1 tablespoon at a time, while mixing on low. Once fully combined add vanilla and turn up the speed to medium. Mix until icing becomes thick (about 3 minutes). Store in an airtight container to avoid the icing from getting hard. Add food coloring of your choice. Make the cookies. In a large bowl, combine flour, cinnamon, baking powder, and salt with a whisk; set aside. In a standing mixer, combine butter, sugar, and agave nectar with the paddle attachment on medium until creamed together and fluffy, about 3 minutes. (You may also use a hand mixer but be sure not to overmix.) Add egg and vanilla extract; mix until fully combined and fluffy. Add dry ingredients to the bowl one cup at a time on low. Your dough is ready once it pulls away from the bowl. Roll dough between parchment paper and allow to chill for 1-2 hours before baking.

Preheat oven to 375F. Prepare cookie sheet with parchment paper or silicone mat. Pour a little Cinnadust on a small plate. Cut your cookies out and cover with Cinnadust before placing on your cookie sheet. Continue this process until your sheet is full. Bake for 10-12 minutes or until you see a slight browning on the bottom of the cookies. Cool cookies before decorating. Yvette Ramirez started her cookie business after she moved to the area—simply to make friends and meet new people. Currently, she specializes in custom-decorated cookies but is slowly branching out to cakes and other treats. What’s more, she makes a conscious effort to shop small and support local as often as possible.

Peppermint Shortbread Cookies Recipe by Cookie Drop Co., 916-671-0061, cookiedropco.com, @cookiedropco 1 cup salted butter, softened ½ cup vegetable oil 1 ½ cups powdered sugar 2 tsp. peppermint extract 3 ½ cups all-purpose flour ¼ tsp. salt ½ cup crushed peppermint candy TOPPINGS

½ cup milk, dark, or white chocolate ½ cup crushed peppermint candy Preheat oven to 400F and line a baking sheet with parchment paper. Beat butter and oil together, then add powdered sugar and peppermint extract. Mix until smooth, then add in the flour and salt. Mix until all the dry ingredients are incorporated. Then add in the crushed peppermint candy and mix until incorporated evenly. Scoop into 2 tablespoon balls and place 2 inches apart on your cookie sheet. Flatten each cookie slightly with your fingers. Bake for 7-9 minutes until edges start to turn light golden brown. When cookies come out of the oven, use a wide mouth canning jar ring to carefully round the edges by moving in a circular motion around each cookie. Once the cookies are cooled, melt the chocolate in a microwave-safe bowl in 30-second increments until smooth, stirring each time. Drizzle melted chocolate over your cookies and sprinkle with crushed peppermint candy. Cookie Drop Co.—a cottage bakery based in Folsom—was started by Elizabeth Rivers in 2020. Now, she and her husband, Scott, operate it together, releasing new and creative cookie flavors each week that are delivered right to customers’ doorsteps.

Snickerdoodles 1 cup unsalted butter, softened 1 ½ cups sugar 2 large eggs 2 tsp. vanilla 2 ¾ cup flour 1 ½ tsp. cream of tartar 1/2 tsp. baking soda 1 tsp. salt CINNAMON-SUGAR MIXTURE

1/4 cup sugar 1 ½-2 tbsp. cinnamon Preheat oven to 350F. In a mixing bowl, cream butter, then add sugar for 4-5 minutes until light and fluffy, scraping the sides of the bowl. Add the eggs and vanilla; mix until combined. Add dry ingredients until combined, being careful not to overmix. In a small bowl, stir together sugar and cinnamon. Refrigerate dough for 15-20 minutes or 10 minutes in freezer till firm. Roll into small balls, then roll in cinnamon-sugar mixture until coated well. Put rolled balls back in fridge or freezer. Depending how firm dough is (firmer dough will result in taller cookies), bake for 9-11 minutes (for firmer dough, cook for about 14 minutes). Let cool for a few minutes on the baking sheet before removing from the pan and cooling on wire rack.

Comfort Cookies Recipe by California Flour, 530-497-0772, californiaflour.com, @californiaflour 1 ½ sticks unsalted butter, room temperature 1 cup light brown sugar 1/2 cup granulated sugar 1 egg + 1 yolk 2 tsp. vanilla extract

Preheat oven to 325F. Grease a cookie sheet with butter, not parchment. Cream butter and sugars together for 3-4 minutes, until light and fluffy. Add egg yolk and vanilla extract and mix until combined. Add all remaining ingredients except chocolate chips and mix until no flour shows. Once combined, mix in the entire bag of chocolate chips. Using a 3-tablespoon ice cream scoop, scoop 6 cookies onto your prepared cookie sheet (or roll into balls a little bit bigger than a golf ball). Bake 14 minutes; halfway through, rotate pans front to back, top to bottom, and tap on oven rack to flatten cookies. When cookies are golden brown, tap the cookie sheet again on the oven rack and then let cool on a wire rack.
