Q: What are you most proud of? A: My husband and son who are supportive of my 25-plus year banking career; also, volunteering in our community so we have a better place to live, play and work. Q: Favorite humanitarian cause? A: Affordable or transitional housing for those in need.

ranite Bay resident Janette Moynier has lived in the region for over 30 years and has never thought to move elsewhere. “I grew up in Rocklin, attended Roseville High School and went to Sierra College. I even married a wonderful man who went to Oakmont High School and our son is a graduate of Granite Bay High School and Sierra College!” she shares. As the current vice president and area manager at First Bank, she’s proud to have spent her career working for local, family-owned banks. Moynier is also in her fourth year serving on the Roseville Chamber of Commerce Board of Directors; in addition to other projects, she helped found Roseville University, a development series that educates next-generation pro12 stylergbr.com - October 2015

fessionals in essential networking and business skills. Moynier also serves on the board of the Downtown Roseville Partnership, a nonprofit that sponsors community events and helps keep downtown Roseville safe and family-friendly. On October 29, the Downtown Roseville Merchants, Inc., along with the City of Roseville will host a Family Fun Night to provide safe trick-ortreating to area residents. In her spare time, Moynier gives free financial literacy classes to students in the Roseville Joint Union High School District and assists veterans with career counseling, interviewing skills and job preparedness through the California Employment Development Department’s VetNet program. For her many community efforts, Moynier was the recipient of

ring your bike and helmet to Roseville’s 22nd annual free family bicycle safety event, featuring obstacle courses, helmet fittings, live entertainment, giveaways and special appearances by Red E. Fox, McGruff and the Roseville Police and Fire Departments. This year’s Bikefest takes place from 9 a.m. to noon on Saturday, October 3. On Friday, October 16, head to the Vernon Street Town Square to watch Avengers: Age of Ultron for free on the big screen, or visit the Maidu Museum & Historic Site for “Stories Around the Campfire”; entry is $5 per person. Summer of Love performs at the final Concert on the Square on Saturday, October 17. If you love the music of the ’60s, you won’t want to miss this free concert. There’s something for everyone on Saturday, October 24. ask the expert Q: I’ve heard about numerous ways to use vinegar for cleaning—when should it not be used as a cleaning agent?

A: There are three different types of soils—acid, alkaline and oil-based— and vinegar is used to remove alkaline soils. For example, salts in pet urine convert to alkaline after drying, so it would take an acid-based solution like vinegar and water to remove salts from the carpet. My concern about vinegar is with natural stone tiles, which are in most homes today; since vinegar is an acid, it can damage natural stone. SEASON? Butternut Squash

A

s you prepare for fall festivities and feasting, pick up a sweet, nutty butternut squash from your local farmers’ market. This winter treat grows on vines and, although a fruit, has a versatility more typically seen in vegetables, as it can be roasted, toasted, puréed or mashed for an assortment of soups, casseroles, breads and muffins. Butternut squash is often mistaken for a pumpkin, as many of their features are the same.

SELECTION AND STORAGE When selecting a butternut squash, look for a heavy, blemish-free one with hard, dull skin and at least an inch of stem intact. As a rule of thumb, squash with soft spots or other damage are not suitable for longterm storage. If you can’t break the skin with your fingernail, you have selected the perfect fruit. Butternut squash is a good source of fiber, vitamin A, vitamin C, manganese, magnesium and potassium, providing a healthy combination of nutrients. To prepare, remove the skin, stalk and seeds—which are not usually eaten, though they are edible. egan is no longer a word carnivores should fear. Being a huge cheeseburger advocate, I was hesitant at the strange and limited options of a vegan menu. To my delight, however, The Green Boheme has gracefully championed the cuisine—creating incredibly beautiful edible works of art that, surprisingly, taste even better than they look. Don’t believe me? I dare you to try their Tostada, made with crisp lettuce, tomatoes, fresh salsa verde and avocado on top of a homemade corn tortilla shell. To give it an extra twist, it’s topped with their “notcho” cheese (something like crème fraiche’s healthier twin brother) and a pecan-walnut filling that will leave meat-eaters stunned at the savory satisfaction achieved by this healthy meat substitute. I also ordered the Chai Latte Smoothie, a thick concoction that was zinging with flavorful spices and a creamy combination of bananas, Brazil nuts, cashews and durian. I felt like I was treating my taste buds—and my body—to a no-holds-barred day at the health spa. There is some serious magic happening in Green Boheme’s kitchen…making healthy food taste addictingly delicious and imitating their non-vegan counterparts with finesse. ocklin resident Jeanette Hawkins and her band Jette—comprised of Eric Stitt on drums, David Beach on lead guitar and keys, and Brian Keating on bass—perform all over the regional music scene with their funky fusion of rock, pop, reggae and blues. For Hawkins, who began writing lyrics and strumming a guitar as a preteen when her family moved across the world, it wasn’t until she decided to pursue her dream full-time, that it finally began to come true. “I guess you could say I’m one of those people who refuses to live a life that isn’t in direct alignment with my purpose,” says Hawkins. “Living an inspired life means everything to me. I came to this world to fulfill my mission, and I’m determined to do it.”

HLB: When did your music really take off? JW: A few years ago I decided that in order to live my dreams I was going to have to go all the way. It’s a really scary decision, but there’s magic that takes over once you declare to the universe what you want to do with your life. My career is beginning to take on bigger forms of my dream. This year alone, Jette has played at music venues I’ve always dreamed of playing at. Big things are happening and we’ve been enjoying the moment.

HLB: Where does your songwriting come from? JH: I believe words hold power and what you speak about has a direct effect on what shows up in your daily life. My intentions are to create music that uplifts and inspires people, so I find a lot of inspiration in positivity and love. There’s nothing greater than the power of love, and I feel like a big part of my songwriting will forever be devoted to bringing more of that into this world.

HLB: How did your time living abroad in Romania influence your music? JH: It was during that time when I devel-

oped my passion for helping others. My high school required 80 hours of community service each semester, and I chose to volunteer at the orphanage in Bucharest. Seeing what a difference we made in the lives of the orphans changed me forever. It made me see that even complete strangers can positively affect each other’s lives. My time there instilled in me a desire to change the world for the better. That’s why my music has common themes of universal love and is based on the idea that one person can make a difference.

HLB: Do you have an album? JH: I’m in the process of recording my debut album titled Anything Is Possible. The name

comes from Jette’s motto: Anything is possible if you believe. It’s a powerful idea and one I’ve embraced these last few years. We’ll have around 10 tracks on the album, all of which I’ve written myself.

HLB: What’s next? JH: We’ll be playing next year on the summer festival circuit in California. There’s a really beautiful vibe going on in the consciousness of these festivals—the mutual respect, camaraderie and feelings of unity and love are what keep me coming back each year.

tep into any grocery store and you’ll see what seems like an endless variety of cooking oils—canola, avocado, coconut, extra virgin, the list goes on! But did you know they all have different uses in (and out of) the kitchen? “There are many types of oils, all of which are made by pressing nuts, seeds or fruits,” explains Kirsten Ransbury, MS, RD, CDE, at Kaiser Permanente Roseville. “More nutrients are retained in cold-pressed oils. [Although oils each have] their own unique flavor, with processing, many taste very similar. The main difference is in their smoke points—the temperature at which oil starts to smoke in a pan. That smoke indicates that an oil has been damaged and should be discarded.” When choosing which oil to use in the kitchen, it’s important to think about the best oil for the job and the health effects, explains Debbie Lucus, MS, RD, CDE, and a clinical health educator at Sutter Medical Foundation.

Lucus also explains the oils can be lumped together based on fat types. Olive, peanut, canola and avocado oils are monounsaturated fats; grape seed, sesame, sunflower and soybean oils are polyunsaturated fats; and coconut, palm and palm kernel oils are saturated fats. Each of these oils affects your health differently. “In general, saturated fat is linked to inflammation and health problems such as heart disease and cancer, while monounsaturated and polyunsaturated fats are linked to better heath. Most oils are unsaturated, with the exceptions of palm and coconut. Coconut oil, however, is being studied to see if it can ward off Alzheimer’s disease and [so far] doesn’t appear to 24 stylergbr.com - October 2015

raise cholesterol like other saturated fats do, Ransbury says.” Lucus adds that extra virgin olive oil contains antioxidants, which are important to reducing the risk of chronic disease, while polyunsaturated fats—which contain omega-3 fatty acids (walnut, flax, canola)—have heart benefits (not lowering cholesterol, but preventing clotting risk). When it comes to daily intake, Ransbury says it’s recommended that oil be eaten in moderation—due to the high concentration of calories. “Fat found naturally in whole foods is preferable (nuts, seeds, avocado, etc.). Essential fats the body needs to be healthy can be found in abundance in flaxseed oil, hemp seed oil, walnut oil and canola oil,” she adds.

Lastly, Stephanie Dodds, a healthy eating specialist at Whole Foods Market Arden, says it’s very important to store oils properly. “Air, heat and light cause oils to oxidize and turn rancid,” she says. “This is why you’ll almost always find oil in a dark glass container, and [should store it] in a cool, dark place. If oil oxidizes, it is no longer healthy to consume. • For baking, canola oil is a neutral flavor, so it won’t change taste. It’s also a good source of essential fatty acids. • If you do fry, you’ll need oil with a high smoke point, such as avocado, almond, peanut or safflower. When you sauté—which uses much less oil than frying—extra virgin olive oil, grape seed, canola and peanut oils are best. • For dips, dressings or marinades, go for olive, flaxseed (not for cooking), walnut or sesame oils. “These all add flavor to your food,” Lucus says.

uring his sons’ military deployment, now-retired football coach Mark Soto would narrate stories of his older son’s stint in Afghanistan to his students, and they always wanted to hear more. His sons had undergone over 31 months of military combat deployment and saw many of their friends come back injured or with PTSD—some were even killed in action or had fallen victim to suicide. Seeing how these experiences affected his sons, Soto was forever changed. When asked to take over a football showcase called “Battle at the Capital” in 2011, Soto saw this as an opportunity to honor his sons’ comrades. “As a father and football coach wrapped up in the emotional turmoil of my boys’ multiple back-to-back deployments, I saw this football event as being the perfect venue to speak straight to the hearts of the student athletes, coaches and communities [and educate them] about the needs of our military veterans,” Soto says. Over the years, the event grew to be one of the biggest football showcases in the country and is now called the Honor Bowl, managed and produced by The Honor Group, a nonprofit founded by Soto and based in Rocklin—that raises awareness for veterans through athletic and community outreach. They also raise money to help injured veterans by giving paralyzed and single or double amputee veterans special motorized Action Trackchairs. “These chairs give freedom to these people who have been unable to do things that they enjoyed before they were injured. Many are now able to fish, hunt and simply take a journey on a beach, trail or in mud with family and friends,” Soto says. Soto believes education and awareness are fundamental to helping more veterans. “People are aware of veterans, but they aren’t fully knowledgeable about how they and their families and loved ones are affected when they come home,” he says. To that end, they organize

Walk into the tasting room at Lone Buffalo’s new North Auburn location and you’ll feel right at home. “It’s the experience that matters” is their mantra. Winemaker Phil Maddux has been making wine for over forty years - his roots go back to Sonoma County in the 1970s where he learned to make wine alongside some industry greats. He kept it as a hobby until about ten years ago when he and wife Jill decided to go commercial after they planted a small vineyard on their property in South Auburn which produced five different varietals - their first commercial production was a mere 100 cases. Now, having outgrown that space, they operate the winery, tasting room and homestead on a twelve-acre parcel in North Auburn right in the middle of the Placer County Wine Trail and produce about 1,600 cases/year. “We still want to stay small enough where we can do everything ourselves,” says Phil, who not only enjoys the craft involved in winemaking, but also, the farming aspect of being a grape grower. The long, tall table running down the middle looks ideal for a quick lunchtime trip, but my plus-one and I came for dinner and settled at one of the tables along the restaurant’s edge underneath a bank of windows. I didn’t even look at the menu before ordering a Thai iced tea (they’re undoubt-

edly my weakness), which came out quickly—and in a glass bigger than our water cups. There were a few appetizers that caught our eye, but we landed on the Poh Pia Pak Tod, delightfully crispy spring rolls stuffed with succulent chicken, carrots, green onions, cilantro, onions, glass noodles and taro. Pad Thai is always a fantastic go-to for folks new to the exotic cuisine—with its chewy rice noodles sautéed with juicy chicken, prawns, tofu, egg, crunchy bean sprouts, garlic and ground peanuts— and I couldn’t resist trying Bangkok’s version. Be sure to squeeze the lime over the entire plate—the zing adds another delicious level of complexity. I t s e e m s my husband is always in the mood for red curry (Gang Ped), so it was no surprise when he opted for the familiar dish. Spice options range from mild to “Thai hot,” and you choose the level that suits your taste. Served with jasmine rice and your pick of protein, alongside tender bamboo shoots, bell peppers and peppery basil, it arrived cooked to perfection in the requisite spicy-sweet coconut milk gravy. But you’ll find the best reason to swing by Bangkok Café on the dessert menu— Black Sticky Rice with mango ice cream. The velvety smooth ice cream melted into the crevices of the earthy and oh-so toothsome rice below—resulting in a delicately sweet treat. It may be difficult to describe, but trust me: It’s worth the trip.

Tomato Jam • 2 cups Roma tomatoes, rough chopped • 2 tbsp. sugar • 3 tsp. apple cider vinegar • 1 tsp. sambal oelek (found in the Asian food aisle)

• About 4 chicken thighs, cut into 16 pieces to fit the mini waffles (how many pieces you get will depend on the size of the thighs) • 1/2 cup flour • 1 tsp. salt • 1/2 tsp. pepper • 1/2 tsp. paprika • 1/4 tsp. garlic powder • 1 tsp. dried parsley • Oil for frying • 1 pkg. frozen mini waffles (you’ll need 32 individual pieces) • 4 pieces of thick-sliced bacon • 16 or more mini wafflesize pieces of pepper jack cheese (for pre-sliced cheese, cut into fourths. You might need to use more than one piece if it’s thin. I used 3 pieces. If using block cheese, you can slice thicker pieces.) Combine the ingredients for the tomato jam and cook until boiling. Lower heat to medium and cook for about 20 minutes until it reaches a jam consistency, stirring constantly. Make the maple mustard dip and set aside. ANDERSON VALLEY BREWING COMPANY’S BOONT AMBER ALE Like many craft breweries, Anderson Valley Brewing Company—founded on December 26, 1987—had humble beginnings. I was a busboy at a nice restaurant and learned how to work with people. How are you involved with both the community and your customer? Answers by Winemaker Kevin Luther Describe your business. Did you find it, or did it find you? I met Dr. Grover Lee when he was first launching his business. When I drove up for the interview, he was planting rose bushes in what is now the entrance to the winery. How are you involved with both the community and your customer? Wise Villa Winery is heavily involved in community events, volunteering our time and wine at fund-raising events for charities on a weekly basis. What life accomplishments are you most proud of? On a professional level, winning Golden State Winery of the Year over the summer was the pinnacle of my career and the history of Wise Villa Winery. It’s still hard to process—it’s the kind of award a winemaker wins maybe once in his career, if he/ she is very good and very lucky. I’m only 31, and our winery is less than five years old. For us to win this so early in our careers is just mind-blowing. We’re so honored and grateful. This adds fuel to the fire, and we’re really excited about the upcoming harvest and the opportunity to make even more delicious wines. What’s your hidden talent? I’m a beast on the barbecue. I love getting together with friends and family on a lazy Sunday afternoon and grilling up a storm, cracking open some wine, and enjoying great friends, drink and food. What’s your favorite local business other than your own? I love Loomis Basin Brewery. I mean, who doesn’t love great beer, pizza and cornhole? And finally, customer service is…? Empathy and respect. I love sharing my passion with customers, and we find that our customers share our passion. When we experience hiccups in our customer service, we’re so incredibly thankful that our customers care enough to approach us with constructive criticism. We seek every opportunity to improve. B

eneath a dusty autumn sun, the Sacramento River flows. And beneath the whorls and ripples of its impenetrable green water, the great fish return. King salmon. They’re back, invisible, save for the occasional splash on the surface or chaotic rip on a h o p e f u l f i s h e r m a n ’s rod. Otherwise, they lurk beneath the surface like restless subconscious thoughts. The Sacramento River wa te r s h e d i s h o m e to the second largest run of returning fall king salmon in the lower 48. Only the Columbia has more. This year, there will be an estimated 700,000 returning after three to four years at sea, in waters as distant as Alaska. Yep—it’s possible that the “Alaska-caught” salmon you bought for $30 a pound actually came from the Sacramento River or one of its tributaries. But don’t feel bad for not knowing— they’ve never been very good about sending postcards. so much as Siri to give an address to. And let’s not forget they’re doing this entirely underwater. At least birds have the benefit of seeing where they are. It’s utterly impossible for us to relate to—I get disoriented if I close my eyes in the shower. Not to mention that from the moment they hatch, they’ve been dodging more obstacles than a contestant on American Ninja Warrior— the jaws of predators, the poisons of pollution, fishing nets, lures (some of those, mine). I am in awe of their ability to survive. But the past few years have been a m o n g th e i r to u g h e s t te s t s ye t— returning to a watershed left low and warm by record drought. Meanwhile, the water that is left is being fought over like the last beer in a frat house fridge. Sure, as long as there are hatcheries like

Nimbus on the American River (which of course is a tributary of the Sacramento and a great place to actually see these wondrous creatures), the salmon have a chance. But studies have shown hatchery salmon don’t have nearly the survival instinct—the street smarts, if you will— of wild salmon. Born into tough neighborhoods of moving water and river gravel, wild fingerlings a r e j u s t w a r i e r. A s adults, they’re better at surviving. So the more wild salmon there are, the healthier the population will be. But wild salmon feel the impact of drought the most. They need cool water. Without it, many of the eggs will die without even hatching. But as our reservoirs draw down further and further, the task of maintaining cooler river water becomes tougher and tougher. I don’t have an answer to California’s water future or know if there even is one that works for everyone and everything. In the short-term, I hope this winter El Niño hits us like a fire hose. But in the long-term, I’m at a loss. I do know I am going to root for the salmon, and not just because I fish for them. Even if I don’t catch one (which is often), I love just knowing they’re out there. There’s something about them that’s as majestic as any redwood grove, as rugged as the Big Sur coastline, as timeless as our golden hills. It would be a shame to reach a day when their splashes are heard no more.
