T
wo thousand sixteen!? Can you believe it’s been 16 years since the millennium? It’s hard to even wrap my brain around the fact that it’s been that long since my college years. It feels like just yesterday. Wait, did I really just say that? My AARP membership card should be in the mail today. In all seriousness, as I grow older, and I would like to think wiser (wink wink), I seem to consistently conclude “Make it a that all elements in our rule of life lives are unavoidably never to connected and always regret and in need of balance. never to Time with family, look back. volunteerism, finances, Regret is an social media, exercise, appalling waste of diet, wine drinking… energy; and the list goes on you can’t for what I “should” be build on keeping in check. Since it—it’s only I am not so good at good for compartmentalizing my wallowing life and taking breaks in in.” each area when needed, —Katherine I steady my pendulum Mansfield by not focusing on what I’m doing, but rather on the level of benefit I reap from however I choose to spend my time. Maybe I “should” go to the gym as planned, but instead I take a detour to my favorite happy hour spot for a good glass of red wine and laughter with a gal pal. Should I feel bad about this deviation? Nah. Not in 2016! My advice this year is to liberate yourself by taking some of the “shoulds” out of your vocabulary. Feeling guilty isn’t good for the soul, so I’ve heard. For expert-approved suggestions to secure “head-to-toe happiness,” flip to Megan Wiskus’ 30-plus tips for invigorating the mind, body and soul—all gleaned from local health and wellness professionals. For many new years to come, “do or do not, there is no try.” Thank you Yoda for your wisdom, and thank you Style readers for your continued support of our local community. Happy 2016! — Desiree

As part of his duties, he serves on numerous local boards aimed at maintaining and improving city schools, infrastructure and financial stability. This month also marks the beginning of his term as the new mayor of Rocklin. For Janda, a happily married father of two girls, the best part about participating in local government is having the ability to help make the place where he lives and works thrive. “I think it’s important for everyone to get involved in any way they can,” he shares. “It’s what defines a community.” — Amber Foster

ask the expert Q:
If your spouse remarries after you pass away how do you make sure your money goes to your children?
A: The way to leave money to your children, and protect them from themselves, is to leave the money “in trust.” This requires either a will or a trust. If you are concerned about your spouse remarrying and giving the money to his/her new significant other, you will need to leave the money for your children in trust with someone other than your spouse. The trustee can be a family member, a financial institution or a private fiduciary. You can specify what the money can be used for and at what age (or ages) your children can receive the money outright. —Lynn Dean, Attorney at Law The Law Office of Lynn A. WHAT’S IN
SEASON? Owari Satsuma Mandarins
E
very fruit and vegetable has its optimal harvest season; for Placer County’s Owari Satsuma mandarins, that season typically begins in November and lasts until the end of February. Mandarin lovers can stockpile pounds of this wholesome treat by asking for PlacerGROWN Satsuma mandarins at their local market through the end of next month, and take comfort in knowing that there are numerous ways to preserve the juicy gems.
PRESERVATION Though you may not be able to enjoy a fresh, PlacerGROWN mandarin straight from the orchard year-round, switching to mandarin jam or syrup is a delightful way to enjoy the fruit until next season. Best of all, citrus fruits are the easiest of all to preserve, due to their natural levels of acidity. For those intimidated by the thought of making a few batches this winter, know that it’s a simple process. All it requires is a large stockpot that can hold a few packed Mason jars and enough water to cover them. If the thought of canning alone still feels a bit daunting, invite family 14 stylergbr.com - January 2016
and friends to a canning party and learn together.
ALTERNATIVE PRESERVATION Virtually every bit of a mandarin can be preserved. If you squeeze the fresh juice out, you can preserve it in an ice cube tray to use as a basis for cocktails or other drinks. You can also save the mandarin peel to add zest in a mandarin-infused olive oil or tea, or to dip in chocolate. With so many ideas, the only problem you’ll face is resisting the temptation to eat them all at once! — Carol Arnold For details on where to buy Placer County farm-fresh produce, wine, meat and other products, visit placergrown.org and foothillfarmersmarket.com.

The Parlor Ice Cream Puffs
I
scream, you scream, we all scream for ice cream! But what if I were to tell you that at The Parlor Ice Cream Puffs, you can get your beloved ice cream of choice sandwiched in between two fluffy doughnuts covered in powdered sugar and warmed to perfection? It’s a dessert lover’s dream come true. If you’re a real risk taker with a sugarcoated sweet tooth, you might want to consider getting unlimited toppings for only 50 cents extra. There are numerous unique ice cream flavors to choose from, and you can even mix them to perfection. I indulged myself by getting the Cake Batter Ice Cream Puff with powdered glazed doughnuts on the outside. Toppings aren’t even required with this particular ice cream, since it’s filled with rainbow-colored cake pieces. The next time you visit The Parlor, I dare you to try a new ice cream flavor along with different toppings. Trust me: You cannot go wrong with this game of ice cream roulette. The year June Wanish became Roseville’s first female councilmember and first female mayor since incorporation in 1909. She was reelected to the council again in 1980; with over 40 years of service to the Roseville community, it’s no wonder that in 2003 the City of Roseville declared June 19th “Wanish Day.”

On January 30 at Thunder Valley Casino Resort, the Fourth Annual Sacramento Sports Hall of Fame Induction Celebration will celebrate five elite athletes. “This year’s class is historic as it represents local legends from past and present that all achieved the ultimate prize in their respective sports, be it a world championship ring, belt or gold medal,” says TC Martin, Sacramento Sports Hall of Fame creator, about the Class of 2016. The monthand-a-half long selection process invites fans to vote for athletes who were raised in Sacramento, have demonstrated sustained success and superior accomplishments within their sport, and are an active part of the community. I guess you could say that Italy didn’t inspire me to paint; rather, it gave me a reason to paint.

HLB: Why does large-scale painting appeal to you? KL: Painting large is expression with im-

pact. If you do a small painting of an ocean, it can be quite lovely and cherished by one person at a time, but if you take the same painting and blow it up, it becomes a conversation. It transports you because it’s larger than yourself. It gets people talking, good and bad, and has a presence. Painting large is also a challenge because you have to take into account location, environment, architecture, sunlight and the personalities of those who’ll be viewing it, which I love.
Ebb and Flow
HLB: What advice would you give to your younger self? KL: Relax and look for opportunities to create everywhere. I started my business and wanted to be the best I could, as fast as I could. During the last 10 years, I’ve had a lot of people tell me I wasn’t doing the right things, or that I wouldn’t be successful because not many artists are. I would tell my younger self that there’s no hurry and that if you surround yourself by those who inspire you, then you’ll lead an inspired life—and that’s a success in its own right.

s a girl, Kristina Letson—Style’s 2015 Readers’ Choice Awards “Favorite Artist”—knew she was passionate about art, but didn’t quite understand how to explore it. It wasn’t until she returned from studying abroad in Italy that she opened her commissioned art business, Bel Murales. Specializing in murals, fine art and pet portraits, Letson’s bold, colorful work is featured at Thunder Valley Casino Resort, inside numerous Beach Hut Deli locations and at Golfland Sunsplash.
HLB: How did your time spent in Italy inspire you? KL: I found the culture to be focused on art
help but soak that up and proudly participate. Sitting in the piazzas, walking through the ancient streets and visiting the small shops—art and beauty all around—inspired me to want that in my life permanently. The frescos and paintings made me realize that if I could produce art that impacted people—not just in a gallery, but in their homes, businesses and on the streets where they lived—then I could help them experience the beauty I found when living abroad.
seems to worry about—my job becoming obsolete. A lot of people order murals online or buy large pieces from Ikea, which is great, but I hope that there’s always a need for original work and a desire to support artists in the community.
HLB: What’s on your horizon? KL: I recently had my first child, so finding a way to grow my business and create art while being the best mother and wife I can be. My business is going to look different now, which could be the best thing ever.

e all know how important it is for kids to have excellent reflexes and coordination, for them to burn off energy and build strong muscles and bones, but let’s face it: During the winter months we’re more concerned about the burning off energy part. Parents want to be jolly, not driven mad. Turns out, getting your kids off the couch (whether they’re lazing on it or running across it) and out into the great wide world of indoor fun is good for their mental sanity, too. So, get them out on a Thursday night, a Saturday morning, or (if we’re talking toddlers) a Wednesday at 10 a.m.—whatever it takes to add more sweat and less marshmallows to those winter traditions.

When I brought in the Christmas gifts, the mother cried and hugged me, and the kids were smiling from ear to ear. I can’t express the happiness I feel when I see those precious smiles.” Alison Winter is a board member of Love, Olivia who became involved

She says the group doesn’t only provide donations, but also comfort to families who are going through challenging experiences. “Karen, Kjell and Olivia are inspirational,” she says. “They help families understand that they’re not alone.” This coming May, the organization will hold its annual golf tournament; other planned fund-raisers include garage sales, restaurant nights and the annual Love, Olivia Holiday Boutique in November.

livia is a little girl with a fierce will to live. In her first year of life, she was hospitalized numerous times with bacterial meningitis, breathing apnea and acid reflux—near deadly combinations of the three illnesses. In those first 12 months of her life, Olivia’s mother, Karen Thernka Framnes, suffered emotionally and financially due to extreme depression and overwhelming medical expenses. She lost her job, her home and her car, not to mention her pride. “But I didn’t lose Olivia!” says Framnes. “She is my angel. Olivia’s feisty nature motivated me to overcome the obstacles. And with the help of my husband, Kjell, we chose to use our experiences to support others in the same situation, because we knew we weren’t the only ones.” Inspired by their daughter, who has since been diagnosed with cerebral palsy and intellectual disability, along with other medical challenges, the Framnes family founded Love, Olivia—an organization that provides children who have special needs with clothing, shoes, toys and books, while offering families community resources and financial assistance. As she was developing the charity, Framnes discovered two glaring voids within the community. One, there was no organization that collected donations solely for children with special needs. Secondly, charitable organizations that provide financial assistance often have limits on disabilities. Framnes explains, “If a child’s diagnosis is rare, he or she most likely will not find an organization to help them financially if needed. Since it’s the children with rare medical and physical conditions who typically need more assistance, we wanted to change those boundaries.” Love, Olivia’s holiday efforts have been particularly successful, as they have provided donations to over 30 families and more than 1,000 children. In addition to toys, the items include gift cards for groceries, gas and restaurants. And there is evidence that the recipients make progress. “We had one family come back to us two years later and say that they were doing better, and they wanted to pay it forward,” recalls Framnes. “They made a meaningful donation to Love, Olivia, fulfilling the holiday wishes for at least 10

love rules The Art of Compromise by Talal H. Alsaleem, LMFT
I
f you feel your partner (or even yourself) is focused on “me, me, me,” instead of “us, us, us,” you’re not alone—selfishness is fairly common in couplehood. Read on to learn more about this relationship pitfall and how to beat it, so sparks start flying soon.
Q: Is it possible to behave selfishly in a relationship and not realize it? Talal: We are all capable of acting selfishly. Sometimes we’re aware of our intentions and just don’t care about the impact of our decisions; other times, we’re completely clueless and act on impulse without considering the consequences of our behavior.
are different needs and goals that are in conflict with one another. People usually get together without discussing what their needs and goals are as individuals versus as a couple. When we’re “single,” we spend most of our time and energy doing things we enjoy (i.e. watching the movies we like, going to our favorite restaurants, and spending money toward our needs and goals), but that changes when we decide to be in a relationship. It’s like entering a business partnership without clarifying how much of the assets will go toward fulfilling the needs of each partner and how much will go toward the needs required to sustain the company as a whole. It’s a recipe for disaster, and two things inevitably happen: 1) one partner dominates the relationship and almost always gets what they want while the other partner feels used and unappreciated; and 2) both partners operate on what is best for the individual, without caring about how it affects the other. Imagine a car with two steering 28 stylergbr.com - January 2016
wheels being driven by people who are headed in different directions, while both believing that his or her destination is the only endpoint.
Q: So what can we do to escape the selfishness trap? Talal: Engage in a conversation with your partner about each other’s individual needs and goals, then discuss the needs and goals you have as a couple (i.e., what kind of living environment you want, how you want to raise your kids, how much you’ll put into savings, etc.). Create an outline utilizing your current resources and you will more easily achieve all desired needs and goals, while also allowing you to prioritize, consolidate and plan accordingly. What you want to avoid is giving the impression that you’re creating a list of demands as if it’s a hostage negotiation. Instead, take a stance in which your main
goal is to support one another in achieving your common goals without having to forgo your personal desires and needs. Aim for a compromise instead of a sacrifice. In the latter, someone is always going without, and, in the former, everyone walks away with something they want. A good compromise is one where what you’re getting is worth what you’re giving up. Be curious and be fair, but most of all take charge of your life and seize your “happily ever after.”

now trending 5 Home-Style Resolutions
T
he saying “new year, new me” doesn’t have to apply just to your personal or professional life—it can also mean a change for your home. Whether you’re in the market for a new couch or have been flirting with the idea of a new color palette, change is good, and 2016 is the perfect time to set your plans in motion. We’ve come up with our top five New Year’s resolutions, all tailored to the needs of your home.
for key pieces like kitchen islands and entryway consoles that have high-gloss countertops, or upholstered pieces in light linen, cozy cotton or calming cashmere blends.
5 / Curated Caravan
3 / Vibrantly Vivid
1 / Organically Outdoor While it might be a little cold to host an outside soiree this month, it’s the perfect time to start thinking about extending your interior to the outdoors. In 2016, we foresee a jump in outdoor entertaining with the help of great exterior kitchen options and a boom in modern finishes, subtle color palettes and natural elements.
2 / Totally Transparent With the segue of health, happiness and design, clean and comforting materials have become a major trend. Sinuous fabrics, metallic finishes and free-flowing design combine to create a restful and rejuvenating atmosphere to unwind after a long week. Utilize this craze by opting 30 stylergbr.com - January 2016
balance. Incorporate this trend into your home’s design by adding a coffee table with a circular base to your living room or patterned wallpaper on an accent wall.
While we’re all about soothing color palettes and free-flowing floor plans, a touch of brightness is always encouraged. This coming year, we can’t wait to see splashes of yellow and infusions of blue in living rooms, bathrooms and entryways. Adopt this trend by adding brightly colored lacquer to your kitchen cabinets (indoor or outdoor), or an effervescent wallpaper to your powder room.
This trend—full of fanciful patterns, splashes of color and attention-grabbing textures—appeals to the eclectic decorator or bright-and-bold homeowner, but can be adjusted to fit every interior style. This design trend coincides with the worldwide trend of globalization and appreciating cultural differences. A great starting point in utilizing the “Curated Caravan” look is by mixing and matching wood and metal to create a lively, boho outdoor patio or bar area. If you’d like to add simpler elements, consider an intricately patterned throw blanket or set of pillows in bold jewel tones.
4 / Concentric Circles
Aside from fun festivities, January is a great time to lay out your goals, projects and resolutions, especially when it comes to home decorating or renovating. With these trends in your back pocket, you’ll be able to start that long-awaited home project in no time!
Enjoy the ebb and flow of simple design by considering the circular trend of 2016. While circular patterns and arrangements are a constant in the design world, this specific trend recreates the wheel using fluid fixtures and innovative product design. With the same concept of “Totally Transparent” (see left), circular patterns promote health and well-being through soft continuation and aesthetic

FOR THE MIND “Eat chocolate—be happy! Antioxidants in dark chocolate, called polyphenols, help reduce stress. Phenylethylamine, also found in chocolate, produces endorphins in the brain’s ‘feel good’ molecules, giving you a slight euphoric sensation. If you were looking for another reason to eat chocolate, it has been suggested that eating moderate amounts of 70 percent dark chocolate reduces your risk of heart disease.”—Jeremy M., Whole

Parmigiano-Reggiano and a glass of full-bodied red wine. Not only is this a tasty combo, but the alcohol relaxes you and the tyrosine crystals in the cheese may reduce stress hormone levels.”—Jeremy M., Whole Foods Market

“Cloudy days got you down? Often the winter months see an increase in seasonal depression due to the decrease in sun exposure. This can affect your sleep as well, leading to a vicious cycle of negative feelings. To reset your circadian rhythm, 34 stylergbr.com - January 2016
try exposing yourself to bright light before 10 a.m. each morning. Limit light exposure (such as bright screens and overhead lights) in the hours before bed.”—Krysta Dancy, MA, MFT, licensed therapist and co-director of The Place Within
“Don’t shy away from taking action, because avoiding making decisions
doesn’t make the problems disappear—it only ensures that you’re
excluded from influencing the outcome.”— Talal H. Alsaleem, LMFT
“Improve your mental and emotional health by doing things that positively impact others; practice self discipline; learn or discover new things; enjoy the beauty of nature or art; manage your stress levels; and
make time for contemplation and appreciation.”—Holly Dillon, wellness coach
“Wake up 30 minutes earlier than normal and get your day started right. Take five to 10 minutes in key areas of your life that you feel need to improve, and find a quiet place to work

Take five minutes to meditate, 10 minutes of exercise, five minutes of positive affirmations to affirm your journey, and 10 minutes reading a book on weight loss. “Research shows that the feeling of gratitude greatly improves our mental and physical health. To get the benefits, make
a ‘gratitude habit.’ Each morning, make thankfulness a part of your routine. Try making a mental list before getting out of bed, or while brushing your teeth. Write the list down for even more benefits.”—Krysta Dancy, MA, MFT, licensed therapist and co-director of The Place Within
“Take time to be a human ‘being’ rather than a human ‘doing.’ Find peace in just being you.”—Donna Webb, life coach, personal trainer and martial arts instructor
“Mindfulness is a regular practice of being fully present in the moment. We now know that this one discipline results in countless benefits (including reducing anxiety and depression). Even a few minutes a day can garner impressive results after a few weeks.
Try making mindfulness a part of your routine each morning. Need more direction? Try a free app like ‘Headspace’ to get you started.”— Krysta Dancy, MA, MFT, licensed therapist and co-director of The Place Within

FOR THE BODY
“Start your day on the mat. Keep a yoga mat rolled out and ready for use when you wake up in the morning. Start your day with stretches, crunches, and upper- and lowerbody weight workouts. This will give you an immediate energy boost, supplement your workouts, and support overall health and wellness—even if you can’t get to the gym later in the day.”—Rob Kram, fitness director at California Family Fitness
“Drink water. If you’re only two percent dehydrated, you’ll burn 30 percent less calories—not just while working out but all day long! Rule of thumb: 40 ounces of water by noon and 40 by 6 p.m.”—Lorri Ann
“Sipping warm water throughout the day helps the body re-hydrate and assimilate much faster than cold water!”—

skip meals and wait four to six hours between meals, which makes your body eat away at lean muscle (aka ‘your calorie burning engine’) and store more fat. Be realistic in setting a reasonable goal and don’t let anything get in your way. Put your workouts and your daily nutrition on your weekly planner and stick to it as if it were a doctor’s appointment. It’s that important—it’s for your health and well-being.”—Lisa Schetter, general manager at Roseville Health & Wellness Center
“Stop working through your lunch. Most people have very busy lives, and it’s so important to make the most of the time you have. Studies show that consistent, shorter workouts daily (as opposed to one or two hours on the weekend) are much more effective! Try
this express workout, which only takes 15 to 20 minutes: plank 60 seconds, 30 squats, 20 push-ups, 30 lunges, 20 dips. Run through this two to three times (Mondays, Wednesdays and Fridays), and walk 30 minutes on your lunch break (Tuesdays and Thursdays). Bam! All done and you come back refreshed and energized to tackle your afternoon projects!”—Lorri Ann Code, AFAA Certified Personal Trainer and Primary Group Trainer, owner of Mama Bootcamp, Inc., and author of ‘52 Ways to Find Your Mojo: A Guide to Transformation, Inspiration, and Fitness’
“Don’t drink your calories! Many of us tend to select soda or juices that are high in calories and added sugars. Instead drink more water, which helps to keep our bodies hydrated and boosts our metabolism. Feeling hungry? Try
drinking a glass of water before your next meal; it will ensure that
you’re not overeating, allowing you to save you extra calories for nutrient-dense foods.”—Melissa N. Smith, degreed nutritionist “Form an accountability group. January 2016 - stylergbr.com 37

“Eat your vegetables! Next time you’re feeling hungry, reach for vegetables! Not only are they beneficial to your overall health but they’re great for your waistline, too! “In our attempt to get through the holidays, we often put our needs (emotional, physical, social) on the back burner. Before long, this leads to burnout and resentment. Take advantage of the New Year motivation and consider the parts of your wellness you may have neglected. Instead of a resolution for self-improvement, try a resolution

“Roll with the punches. There are many self-care techniques you can try at home to soothe sore muscles and de-stress. Use
foam rollers and tennis balls to loosen tired muscles, increase body movement and alleviate pain. Additionally, scalp and facial massages are easy to do anywhere, any time, to relax and refresh.”—Rob Kram, fitness director at California Family Fitness
“Massage is the key to boosting my well-being. It increases circulation, relaxes the muscles and reinvigorates my attitude. I also use Gaia Quick Defense to keep my immune system in balance

This can also contribute to a more restful and satisfying sleep.”—Rob Kram, fitness director at California Family Fitness

Whatever your resolution may be this year, don’t go at it alone. Several studies have shown that the greatest factor to accomplishing goals is accountability. In fact, many studies have shown this factor to be greater than both nutrition and fitness programming when it comes to weight loss success. If you don’t have local friends that you can round up, join an online forum. We were made to be in community. In community we laugh, we cry, we support, we love and we push.”—

Toft Facial Plastic Surgery Kenneth M. Toft, M.D. 959 Reserve Dr. | Roseville 916-782-8638 | www.toftfacialsurgery.com Kenneth M. Toft, M.D. is the Director of Toft Facial Plastic Surgery in Roseville, California. He dedicates 100% of his practice to facial cosmetic surgery. This is in contrast to many surgeons that perform liposuction and breast augmentation, who can spend as little as 20% of their time on the face. Complete dedication to facial plastic surgery is very important for several reasons: the complex anatomy of the face, the need to keep up with the latest techniques of facial rejuvenation, and the importance of facial features in defining individuality. The results of facial plastic surgery are not hidden under clothes; they are seen every day by friends in public and by oneself in the mirror. For these reasons, only the most specialized and highly trained facial plastic surgeon should be selected. Throughout his career Dr. Toft has demonstrated a commitment to excellence. Dr. Toft graduated from college in the top 3% and medical school in the top 10% of his class at the University of Michigan. He then underwent surgical training at Stanford University, with four years

completely focused on the face and neck. Dr. Toft was then selected to be a UCLA Clinical Instructor in Facial Plastic and Reconstructive Surgery where he studied with world experts in cosmetic surgery. In 2000, Dr. Toft moved to the Sacramento area to become the Medical Director of Facial Plastic and Reconstructive Surgery at Mercy San Juan and to open the Toft Facial Plastic Surgery Center. Dr. Toft believes the goal of cosmetic surgery is to create improvement while maintaining a natural and balanced appearance. This natural appearance is achieved through the use of modern techniques to make his patients look younger, refreshed, and healthy, never overdone or “operated.” The natural balance of facial features is what creates identity, displays emotion, and establishes level of health. Because each face is different, the goals of surgery for each person is individualized. Dr. Toft draws on his extensive training, aesthetic sense, and personal touch to achieve better balance and improved symmetry for all of his patients’ unique facial features.

New Local Fitness Kickboxing Class Brings Bag-Hitting, Calorie-Busting Action to Roseville!" iLoveKickboxing is coming to Roseville, and it's not your “average” workout. For starters, most workouts out there don’t involve strapping on boxing gloves, and punching and kicking your way to a slimmer, fitter you. But while that’s “SO much fun,” as members say, it’s only one part of what makes it so effective. Here's how iLoveKickboxing explains it: “Burning fat fast requires 3 kinds of workouts: strength training - to build lean muscle, cardio - to burn calories, and interval training to take everything to the next level. “Our classes combine all three. Members just show up and have a ton of fun. But ‘behind the scenes’ science is at work helping them slim down, tone up, and burn fat.” Community is another key factor. Members laugh together, support and encourage each other, become friends, and form strong bonds. No one is trying to “show off” or be the “best.” Everyone just wants everyone else to succeed.

Land Ocean New American Grill Dinner at the Mall Never Tasted Better by Jennifer Resnicke // photos by Dante Fontana

The “Land Ocean”
M
alls all over the country are known for their lackluster food courts, but the Galleria’s casual-upscale Land Ocean has managed to create a buzzing little nook of culinary excellence in a remarkably compact (and impeccably decorated) relaxed-modern space. They even have an impressive patio, which we’ll likely enjoy much more come springtime. The main entrance is actually in the mall itself, and in order to benefit from the hustle and bustle of passersby without sacrificing privacy, the design team opted to construct horizontal, shutter-like dark wood slats along the entire perimeter. Starting at the tops of the booths, the slats are just weighty enough to make the space feel intimate, without being claustrophobic. Those walking by are teased with hints of the colorful bar and lively atmosphere within. On a recent Saturday, my husband and I were quickly seated to peruse the ample menu. Before long, we placed our orders, had signature cocktails in hand, and out came the appetizer—tenderloin Wellingtons. Tenderloin Wellingtons
Boasting incredibly supple beef tenderloin and earthy mushrooms in a rich, flakey pastry cup—with brandy peppercorn sauce and a béarnaise drizzle— we were off to a mouthwatering start.
béarnaise drizzle—we were off to a mouthwatering start. My husband ordered the namesake “Land Ocean,” featuring a tender six-ounce petite filet mignon, six-ounce cold water lobster tail, fully loaded twice-baked potato, asparagus spears and béarnaise. It was such a great cut of meat that we were thankful the spices were kept low-key, allowing the beef itself to shine. I went with the spice-crusted ahi tuna (again, the spices were delicate enough to let the freshness of the toothsome tuna come through), served over sautéed spinach and garlic-infused black rice, then topped with an Asian-roasted corn salsa and zippy mango purée. We couldn’t resist ordering lava cake for dessert, and were pleasantly surprised that the ultra-dense chocolate cake and chocolate ganache center was a far cry from the Hershey’s-syrup like offerings seen elsewhere. Though I never thought I’d say it—dinner at the mall was totally worth it.

Wash the rice in a bowl with plenty of fresh water using a circular motion with your hand. Drain the water and repeat three or four times until the water runs clear. Then, transfer the rice to a sieve (strainer) and let it drain for 15 minutes. Prepare the broth by combining the beer, dashi powder, mirin, light soy sauce and salt in a pan; mix well and set aside. Meanwhile, preheat the oven to 400 degrees. Remove the skins from the chicken thighs. Scrape off any excess fat and feathers from the skins with a knife. Stretch the skins out on a flat baking tray (baking sheet) in a single layer. Place a smaller metal tray, such as a roasting tin (pan), on top of them to keep them flat while roasting. Roast for 10–12 minutes until crisp and lightly golden. Remove from the oven and transfer to a cooling rack. Meanwhile, cut the chicken thighs into 1-inch pieces (they will shrink during cooking so don’t cut them too small) and chill until needed. Wipe the shiitake mushrooms, remove the woody stems and slice the caps. Add the sliced shiso or chopped coriander (cilantro) to the cooking broth and mix well. Rice cooker method: Add the drained rice to the cooking broth, transfer to the rice cooker and top 54 stylergbr.com - January 2016
dinner date Food and Wine for the Season with the pieces of chicken and the slices of mushroom and garlic (do not stir at this stage), close the rice cooker lid and turn on. It should take about 15–20 minutes to cook. Once the rice cooker’s alarm beeps, let the rice sit for at least 15 minutes before opening. Hob (stove) method: Choose a pan with a tightly fitting lid (preferably of glass). Add the drained rice and the cooking broth, top with all the other ingredients, place the lid on and bring to the boil. As soon as it boils (do not remove the lid at any stage during cooking or resting), turn the heat to its lowest setting and simmer gently for 15 minutes. Turn off the heat and let the rice rest for a further 15 minutes. While the chicken and rice is cooking, cut up the crispy chicken skin into 1/2- to 1/4-inch squares. Then, stir half of the squares into the rice, mixing well, and scatter the remainder on top with the finely sliced spring onions (scallions). Serve immediately. Makes 4-6 servings.
BALLAST POINT BREWING COMPANY’S LONGFIN LAGER Award-winning San Diego-based brewery (and distillery) Ballast Point was founded in 1996 by Jack White and is the nation’s 31st largest craft brewer and one of the fastest growing. Known for their Sculpin, a gold-medal winning IPA, the brewery also produces a hoppy American stout (The Commodore), session IPA (Even Keel) and an imperial red ale (Tongue Buckler), among numerous other eclectic brews—many named after fish or fish terms—and 14 spirits. Ballast Point Brewing Company’s Longfin Lager is a light-bodied, 4.5-percent ABV, German-style beer that’s a perfect complement to the Asian-inspired flavors in this month’s Arroz Con Pollo Nikkei recipe; the earthy flavor of the shitake mushrooms and mirin (rice wine) play well with the beer’s clean, dry finish that boasts just a hint of hops. NOTE: I chose to prepare the dish in a rice cooker, and following the recipe couldn’t have been easier. It’s an ideal mid-week meal if you’re looking for something light and quick. Enjoy it on a cold night, in a warm house, and with good friends. Use less rice than it calls for so you’ll have a delicious broth with your rice. —Geri Walcott, Events Manager, 36 Handles Pub & Eatery

Describe your business. Did you find it, or did it find you? I started in the fitness field in 2010; before that, I sold real estate for 10 years. I decided I wanted to do something I was passionate about and began working with seniors in January of 2011 at Sun City Del Webb. What was the first job you ever had, and what did you learn from the experience? My first job was as a paperboy for the San Jose Mercury News. I had to wake up early to make deliveries and collect payments. It taught me to be responsible. How are you involved with both the community and your customer? I’ve been training here at Sun City for the last three-and-a-half years. It has been an amazing experience, and I’ve met so many great people. What life accomplishments are you most proud of? Being a father of two beautiful kids and opening this business. Who is your role model in business or in life, and why? I’ve had several role models, including my pastor, Alan Hearl, and my dad. Where do you go when the going gets tough? I pray. What’s your biggest job perk? I get to help my clients feel stronger, so they can play more golf and play with their grandkids—it’s an amazing journey. Where do you and your family go locally to have fun? We love Studio Movie Grill. If you could meet someone living or dead, who would it be and why? Tony Robbins—he’s a great motivator and speaker. What’s your favorite local business other than your own? Beach Hut Deli is delicious! And finally, customer service is…? Everything! If my clients aren’t happy then I won’t have a business.

Describe your business. Did you find it, or did it find you? TummyStyle is a maternity, nursing and baby boutique. We started as an online business 10 years ago, soon after the birth of my second child. What was the first job you ever had, and what did you learn from the experience? My first real (paid) job was as a summer assistant tennis pro at Mill Creek Country Club in the Philadelphia area. It was a great experience, as I got to teach tennis, string racquets and work in the tennis pro shop. I quickly learned the importance of customer service in retailing. How are you involved with both the community and your customer? Our business participated in a Susan G. Komen Breast Cancer event in October, along with some other stores in the Country Gables Shopping Center in Granite Bay. We plan to continue to support important causes such as these. What life accomplishments are you most proud of? After I got my MBA, I held various corporate roles at Hewlett Packard. However, I soon found motherhood overrode my corporate career ambitions and am most proud of my role as a mom to three kids. I’m also proud to have a business that supports and celebrates new moms. Where do you go when the going gets tough? My husband is my strongest supporter. As a mom of three kids, there’s always something going on that needs my attention; fortunately, my husband can share just about every parenting and household role with me. What’s your biggest job perk? When I was pregnant, my biggest job perk was access to an incredible maternity wardrobe! Now that I’m personally past that stage, I can still see adorable babies and excited expecting moms in my store. And finally, customer service is…? Making the customer happy.

I
consider 2016 the first full year that none of our three kids will truly need their mom or me anymore. Oh sure, the Bank of Mom and Dad isn’t going anywhere, and they’ll still need us around for advice, guidance and hopefully just because they like us. But as far as being absolutely necessary in a keep -your-but ta l ive -a n oth e r- d ay kind of way? Those days are gone. Our oldest, Emma, has sur vive d in Los Angeles now for five years—the equivalent of a baby moose finally growing too big to be easily eaten by bears . Our middle child, Joe, graduated high school last year and is neck-deep working toward his dream of becoming a firefighter. Our youngest, Sam, just got his license last month and has been asserting his independence in various ways, like choosing Kanye West over Jack White— which so far is the only real instance of any of our kids disappointing me. When they were small, it seemed th e i r re l i a n ce o n u s would never end, and sometimes, I ’d catch myself dreaming of this day. I’d always imagine FOR MORE TOM’S it kind of looking like the TAKES AND... cover of one of those WHAT’S COMING serious, sailboat-intoNEXT MONTH? the-sunset Father’s Day DON’T MISS STYLE’S c ards , except Vickie “50+ HOME DESIGN was with me at the helm TRENDS AND HOT and the deck below was PRODUCTS,” PLUS MUCH MORE, VISIT loaded with good wine STYLERGBR.COM. and strong coffee. 66 stylergbr.com - January 2016
This is not to say that all those years of being parents of little ones was in any way a burden. Quite the opposite. We LOVED being Mom and Dad when they were squirts—even at their messiest, loudest, most tantrum-throwing worst. I’ve changed diapers that qualified for federal Superfund dollars and ordered time-outs with the authority of a five star general. I’ve seen runny noses that would’ve terrified Stephen King and broken up fights better suited for alleys than living rooms. We’ve shushed and hushed and chased monsters from closets. We’ve seen wide eyes of wonder mystified by Santa Claus and calculus homework. We’ve praised good grades, applauded good deeds and judged who was a good friend (and who wasn’t).
We’ve tended to hurt feelings, broken arms, broken ankles, and the special mor tification that comes when your teenage daughter realizes that t h e c h e a p d ye j o b just turned her hair not the deep brown p ro m ise d o n th e b ox , b u t p u r p l e . We’ve sur vived lea rn e r ’s pe rmit s , youth sports, Chuck E. Cheese’s, a n d D i s n eyl a n d at Christmas. We’ve gone from the call of dooty to Call of Duty, to college. You want to know where in the world C armen Sandiego has been? Ask us. We know. But that part of our life is ending, and I was honestly beginning to mourn it until a recent weekend when I heard the great Bill Murray on NPR talking about his adult kids. “It’s funny,” he said, “you think that there’s an expiration date on them and there just isn’t. They have an eternal shelf life. It’s not like, ‘OK, that one’s on his own now,’ you know. It’s not like a balloon that you let go of and it—well, ‘That’ll land in someone else’s yard.’ It doesn’t happen that way; the balloon always comes back to you. It’s kind of nice, really.” And so instead of missing what is gone, I’m choosing to focus on what’s ahead, because there’s still so much from them I can’t wait to see. However, make no mistake: Vickie and me...? We still want that boat.

Your skin doesn’t forget. Let us help you protect it. Sun damage is cumulative over one’s lifetime, and too much sun can cause skin cancer – the number one most common cancer in the world. The incidence of melanoma, the most deadly form of skin cancer, more than doubled in women from 1973 to 2004, and nearly doubled for men. The Skin Cancer Foundation suggests the following: - Do not burn and seek the shade, especially between 10am and 4pm - Avoid tanning and UV tanning booths - Cover up with clothing, including a brimmed hat and UV-blocking sunglasses - Use a sunscreen with an SPF of 15 or higher everyday; for extended outdoor activity use an SPF of 30 or higher - Apply 1 ounce (2 tbsp) of sunscreen to your entire body 30 minutes before going outside; reapply every two hours or after swimming or excessive sweating - Keep newborns out of the sun; sunscreens should be used on babies over the age of six months - Examine your skin head-to-toe every month - See your doctor every year for a professional skin exam
