SAVINGS GUIDE

“

I

’m pretty aware that the pursuit of perfection is, inherently, a flawed concept.” I have to agree with these words spoken by the great English rugby player Jonny Wilkinson. Even an athlete as great as he admits our limitations as humans. So while I ponder the prevalence of society’s voracious appetite to attain perfection, I can’t help but become mentally exhausted as I meaGood, Better, Best. sure myself against the messages championing perfect everything. They inundate and bombard my daily life, at every turn: magazine covers, billboards, TV commercials, movies and red carpets. Perfect legs, perfect butt, perfect skin, perfect hair, perfect abs, perfect teeth, perfect posture… and the checklist goes on. Is this the point where I throw my hands up feeling defeated by an aging body? Wise folks answer with the proverbial “Nobody’s perfect.” So, I try to see it this way: It’s good to be better, and best if you continue trying to be. We might not achieve that mythical notion of perfection, but at least we can bring balance to our health—both mentally and physically—by challenging our selves to live a better life, not a perfect one (doesn’t exist, remember!). This month, we give you plenty of motivation for pledging to be a better you in 2015. Give it your best shot! — Desiree

A: The word “no.” Q: Are you high or low maintenance? A: Both. Q: Biggest life inspirations? A: PRIDE’s mission to create jobs for people with disabilities. Q: What are you most proud of? A: PRIDE and my family.

Mike Ziegler M ike Ziegler came to Nevada County from San Francisco over three decades ago, shortly after meeting his soon-to-be wife, Debby. He jokes that he wanted to marry her just two minutes after meeting her. “It was pretty instant,” he says with a laugh. He left behind a successful career in sales, and soon took on a new role as CEO and president of PRIDE Industries (prideindustries.com), a nonprofit that creates jobs for people with disabilities. For the first time, Ziegler saw how he could apply his talent for sales to helping his community. “It changed my life,” he explains. “Now when I sell something, somebody gets a job because of it.” PRIDE is currently the largest nonprofit employer of people with disabili-

ties in the U.S., and Ziegler is passionate about PRIDE’s mission. He emphasizes how we often take for granted the dignity and self-esteem that comes with working. “Ten percent of people in this country are people with disabilities of working age,” he explains. “Of that group, 74 percent are unemployed. It’s the largest disenfranchised population in this country.” In addition to his work with PRIDE, Ziegler participates in numerous other community groups, including serving as a board member for the California Chamber of Commerce. “PRIDE is owned by the community,” Ziegler states. “It’s important for us to stay connected. Our successes are everybody’s success.” — Amber Foster

abbage has the fewest calories and the least fat of nearly all vegetables, is a good source of vitamins C, K and B6, and provides dietary fiber, manganese, potassium, folate and copper. Related to broccoli, cauliflower and Brussels sprouts, cabbage is part of the cruciferous family with green, purple and red varieties. The veggie has been around for centuries and was a prominent part of European cuisine during the Middle Ages. The Greeks even used it as a laxative and an antidote for mushroom poisoning; during World War I in Britain, its leaves were used for trench foot and as compresses for ulcers and breast abscesses. Today in the U.S., cabbage is pickled, fermented, steamed and eaten raw. Its strong flavor is what makes it so delicious in a variety of recipes, including Sautéed Savoy Cabbage (find the recipe at stylergbr.com), which features fresh ginger, apples and mandarins. In order to retain as many nutrients as possible, many chefs warn against overcooking. To avoid having your kitchen smell like cabbage during the cooking process, try steaming it in a small amount of water for a short time, avoiding aluminum pans. Fresh cabbage smells and tastes different than cabbage that has been shipped and stored for a length of time, due to 14 stylergbr.com - January 2015

ask the expert Q:

What exactly are compounded medications and how can they be beneficial?

A:

Pharmacy compounding is the art and science of preparing personalized medications to meet the individual needs of children, adults and animals. Whether it’s an allergy to a dye or ingredient, the need for a specific strength, or the preference of a different dosage form, compounding pharmacists can provide patients with solutions to various medication needs. These medications are “made from scratch” where individual ingredients are mixed together in the exact strength and dosage your body needs. For patients where manufactured medications cannot help their treatment, pharmacy compounding—prescribed by a licensed physician and compounded by a trained licensed pharmacist—is the only way to better health. —Puja Khana, Pharm D Remedy Rx Pharmacy 1420 East Roseville Parkway Suite 130, Roseville 916-740-1600, myremedyrx.com

the high water content—just one more reason to purchase produce fresh and locally.

SELECTION AND STORAGE When selecting cabbage, check the bottom portion to make sure the leaves aren’t separated from the stem, which could indicate the vegetable is not as fresh. Red and green cabbage should appear tight and compact and feel heavy for its size. Store in a plastic bag in the crisper section of the refrigerator (if left uncut, cabbage can usually be kept for about two weeks). FOR THE RECIPE TO MAKE SAUTÉED SAVOY CABBAGE, VISIT STYLERGBR. Il Pizzaiolo

t Il Pizzaiolo, the oven called Vesuvio fires up some of the most incredible pizzas outside of Italy. As I walked in and stepped up to order, I could see the pizzaiolos busily handcrafting made-to-order pizzas behind the glass counter lit by Vesuvio herself. I decided to venture forth with an old favorite of mine: Pancetta Pizza chased with a San Pellegrino Limonata. Per usual, the pizza was incredible. Because the dough is made in-house, every day, with Italian love and technique, the crust is the most magnificent combination of outer crispiness with chewy-fluffy inside goodness. It’s my favorite part of the pie, other than the freshly grilled herb mushrooms, crispy pancetta and gooey splatters of mozzarella. When I learned Il Pizzaiolo supports local farms by only using produce grown within 100 miles, I fell even more in love. Plus, the atmosphere is always warm and friendly—and not only because of Vesuvio—owner Grayson works alongside his employees with genuine care for the customers and his pizza. Il Pizzaiolo is definitely not your run-of-the-mill pizza place, but truly an Italian indulgence. The slow-smoked meat is shredded and melt-in-yourmouth tender, while the red onions and Greek peppers add a nice tangy kick. “I’m a huge fan of the Candied BLTA at The Boxing Donkey Irish Pub. It has chipotle bacon marmalade, which adds the perfect touch of heat, and a slightly sweet maple flavor that sets off the saltiness of the bacon. It’s incredible!” theboxingdonkey.com

“I love the Rueben Sandwich from Café Americano. It has the perfect amount of house-made corned beef, Swiss cheese, sauerkraut and Thousand Island dressing on grilled rye. Seriously, go get one for lunch. You—and the 10 extra pounds you just put on—are welcome.” restaurantamericano.com

“The way Beach Hut Deli—which over-stuffs their subs the way my wife over-stuffs a suitcase— generously uses cream cheese as a condiment is brilliantly insane. My favorite is the Surfin’ Bird, which features turkey, avocado, bacon and cream cheese. Its relative simplicity makes it one of their only sandwiches I remotely have a chance to fit my mouth around.” beachhutdeli.com

“My vote goes to the Chicken Cutlet Parmigiana Hero from Dominick’s Italian Market & Deli. The housemade bread is chewy and firm; the breaded chicken cutlet is tender, the marinara sauce is messy and it oozes cheese. You won’t find a messier, more satisfying, murmur-softly-to-yourself-while-you’re-eating sandwich.” dominicksmarketdeli.com

The year the Roseville Tower Theater was constructed, in November. Built by the Lima and Peters movie chain, the theater became a welcome escape. Fire destroyed the entire east balcony in 1955; by 1980, the theater had ceased showing movies altogether. It’s a testament to the iconic nature of the building itself, and the spirit of Roseville, that the Tower still stands like a beacon in downtown Roseville.

The goal of the bash—sponsored by the City of Roseville Environmental Utilities and Roseville Electric Utility—is to “...teach the community how to keep local watersheds clean,” explains Brett Salmi with the Roseville Utility Exploration Center. In addition to the family-friendly activities, guests will help kick off the Community Art Garden, in conjunction with Blue Line Arts. The event is free, but a $10 materials fee is required for those who wish to participate in the bluebird vacation home activity. “It’s tough to be stuck inside all winter. Come out to help brighten a gloomy time of year!” encourages Salmi. For more information, call 916-746-1550 or email ruec@roseville.ca.us. 16 stylergbr.com - January 2015

G

ayle Rappaport-Weiland has dedicated her life not only to creating art, but also to bringing the beauty of others’ art to the forefront on her show Art Revealed. From art consultants and landscape artists to gallery owners, each guest has had their own influence and impact on the local art world. Hanging her hat on a dream, Rappaport-Weiland started Art Revealed almost two years ago. With a shoestring budget and a small crew of volunteers, Art Revealed has been producing bi-monthly, high quality and professional programming—all aimed to highlight movers and shakers in the art industry. “We, as a team, want diversity in who we’re choosing to feature, because art is not only revealed by artists, but by those who support and promote it too,” Rappaport-Weiland says. The three-to-four minute mini-interviews (“miniviews”) have featured individuals from all corners of the art world, including high-end children’s clothing designer John Stevenson, Sacramento’s Developmental Disabilities Service Organization President and CEO Yvonne Soto, and Rocklin Community Theatre Board Member Robert Hayes. Rappaport-Weiland says the show exposes viewers to new artists and educates them on ways art has been integrated into almost every aspect of our daily lives; what’s more, she makes a concerted effort to interview those who are not often in the limelight. Her 30-plus years spent as a full-time artist have provided her with a wealth of knowledge, as well as long-standing relationships with other artists. Because of these decades of experience, Rappaport-Weiland understands how to support those featured who might be a tad camera 22 stylergbr.com - January 2015

shy. “I work with each guest personally, so they are comfortable on air and have a positive experience,” she shares. It’s Rappaport-Weiland’s goal for Art Revealed to span generations, from young to old, and make it accessible to all, which is why the show is hosted on YouTube. For all the young people watching and holding on to a dream themselves, Rappaport-Weiland has one bit of advice. “I really believe if you’re willing to do the work, and you follow your passion, your dreams can come true. But you can’t just have a dream, you have to do the work and take action. You can do anything you put your mind to.” Since the inaugural episode aired on July 17, 2013, Art Revealed has relied solely on the support of fans and the community to keep it going. While the show is usually booked months in advance, Rappaport-Weiland and the crew are always willing to consider dedicated, driven artists for feature interviews. And for those who might not be artistically inclined, but still want to have a hand in bringing art to the world at large, there are partnering opportunities available for each show.

get it right 7 Mistakes Parents of Teens Make by Linda Holderness

T

imes have changed. Dr. Spock’s classic childcare reference guided novice parents with advice on chicken pox, mumps and thin children—until the age of 12. After that? Parenting bewilderment presumably ended. Spock, who died in 1998, wouldn’t recognize the world today’s teens navigate. The latest edition that bears his name—one of more than 10,000 parenting books on amazon.com—extends to age 18 and covers such topics as “living with the media,” rap music and AIDS. How can today’s parents sift through so much information to help their youngsters become healthy, responsible and successful adults? To find out, we gave the question a twist and asked instead: What should parents not do? Two area licensed marriage and family therapists, Amanda Nugent Divine, clinical director of El Hogar Community Services, Inc., a nonprofit providing community mental health services, and Marianne Svendsen, with Placer County Counseling, offer these seven commonsense tips that address some fundamental mistakes many parents make.

3 / Don’t diss your spouse. A teen

6 / Let them make decisions.

identifies with both her parents, and when you bad-mouth one—whether you’re married or separated—your teen feels criticized, too. “Whatever is going on between the two of you, keep it between you,” Divine says.

“Making good decisions takes practice,” Svendsen says. Offer advice, but when you tell them what to do, it becomes about you rather than about them. And don’t rush to save them from consequences—kids learn from their mistakes.

4 / Raise the child you have, not the child you want. Celebrate who your child is. If you hoped for a star pitcher but your son prefers the violin, encourage him and enjoy the music. Celebrate your child’s strengths, Svendsen says, and don’t live vicariously through him.

5 / Discipline with consequences. Instead of issuing orders when your child has broken the rules, Svendsen advises, give her choices. “Ask, ‘what do you think should be your consequence?’” Then make the consequence fit the behavior. For example, if your child has stayed out too late with friends, ground her for a specified time.

7 / Be steadfast. No matter how many ways your daughter says she hates you; make sure she knows you love her—no matter what. “You can give your kids everything,” Svendsen says, “but if you don’t provide love and stability, if you’re not there for them, everything else is superficial.”

friends to giggle and gossip with, and so should you. “Parents who try to be their child’s best friend are exhibiting need, not love,” Divine says, “and that’s a big mistake.” Single parents often use their child as an emotional surrogate, while they should be pursuing their own lives. Don’t worry about not being liked— it’s temporary.

2 / Don’t miss the wonder of childhood. Let your kids have fun, Svendsen urges, and have fun with them. Don’t burden them with so many responsibilities and activities that they don’t have time to just be kids, and don’t demand they always be mature.

26 stylergbr.com - January 2015

Gudipati explains. A particular focus for the AAUW in 2015 is to engage more women and girls in the science, technology, engineering and math (STEM) fields. Currently, women make up only 25 percent of the computing workforce and 14 percent of the engineering workforce. “Getting more women into these fields isn’t only the right thing to do; it’s the smart thing to do,” Gudipati enthuses. “The solutions to problems of this century—from providing universal access to health care and eradicating poverty to curing cancer—will require the skills of engineers and computer scientists, and the perspectives that come from diverse minds. When women are not represented in these fields, we’re missing out on half our potential for innovation.” This year, the Roseville-South Placer AAUW branch is on board to promote the STEM projects and will work to enhance its Sierra College Student Leadership programs. “The young women at Sierra benefit from workshops like Elect Her, which for the first time has produced at least two minority female student body presidents,” says Sanchia Spandow, marketing and publicity chair. “Another key project is Sierra Students in Need, which provides scholarships to aged-out foster students returning to college.” The branch will also present Speech Trek on February 7, a speaking contest open to high-school students in which participants prepare a five-minute speech on a subject related to an AAUW theme. Past topics have covered human trafficking, hunger, homelessness, women in third world countries and others. Three winners will receive a check toward a college scholarship, and the first place winner goes on to compete at the State AAUW contest. On May 2 in Roseville, the nonprofit will hold their biggest fund-raiser: the Antiques Evaluation Fair. Sanchow encourages women in the area to get involved in the branch’s activities. “In the years to come, we hope to raise awareness of what Roseville-South Placer AAUW is and what we do, and hope others will join us.”

sparks fly 6 Ways to Rekindle Romance by Fran Fisher, RN, Ph.D

W

hile New Year’s resolutions are still fresh in our minds, it might be a good time to add “addressing your love life and intimate relationships” to that list. How could life be different? Well, with a little bit of planning—and following the tips below—your relationship is sure to see sparks fly in 2015.

1 / Arrange a date night with your partner. Call it a strategy-planning date for not only surviving the winter months, but growing through them too, and break from the distractions that your children’s extracurricular activities demand of you.

2 / Make a commitment, together, that this date night will be a weekly occurrence—when possible—and a source of fun and intimacy for the rest of your life. 3 / On these dates, it’s best if you don’t go shopping or to a movie. Your intimacy will grow if you go to dinner (sitting face-to-face with cell phones off), and spend the time detoxing from the stressors of life. Unless there’s something hugely pressing, save discussions about your children for another time: This is special couple time.

4 / Remind each other of the purpose of this wonderful opportunity to spend time together. Share

5 / Remember that whatever is going on in your life to cause you stress is one day, one event in your life. You can choose to set yourselves up for a crazy time of stress, or come to an agreement as to how best to accomplish all you want with ease and grace. Take yourselves off the merry-go-round of crazymaking. If the event is serious, then take a time-out together to open up and share your worries; 28 stylergbr.com - January 2015

it’ll make a huge difference in the way you’ll deal with it. This is where you may decide to seek professional help if you find yourselves unable to cope.

6 / Increase intimacy, and make (that means prioritize) time to relax and spend quality time together—whether on your date nights, in a warm bath, or over a home-cooked meal. These are the ways those who have mastered the art of great relationships react to everyday life, year-round, and get through the crises and chaos that life throws us. With time together and communication, relationships stay alive and continue to grow.

J

anuary brings a fresh start and renewed hope for the year ahead. With the holidays behind us, now’s the perfect time to give your home the attention it needs to survive the season. Here are six “todos” to get your year off on the right foot.

1 / REFRESH Once the hustle and bustle of the holidays has passed, your home can feel a bit empty. Fight the winter blues by giving your abode a good cleaning and boosting comfort with candles, cozy throws, warm drinks and good music.

2 / ORGANIZE Did you receive new gadgets or appliances last year? Flip through that stack of old manuals and warranties—tossing out paperwork for stuff you no longer own—and send in forms to activate new warranties as needed. Store everything together in one binder or document box.

begin again 6 Homestyle Resolutions by Kerrie L. Kelly, ASID 4 / INSPECT

3 / SANITIZE Cold and flu season is at its height. Do what you can to keep illness at bay by regularly sanitizing often-handled surfaces. Tables and counters are obvious spots, but don’t miss areas like doorknobs, faucets, phones and other tech devices.

Get ahead of problems by carefully looking over your home’s exterior after each storm, especially keeping an eye out for tree limbs that have come down and any damage to your roof or siding; also, make sure rain gutters are free of debris.

have a friend or neighbor stop by to turn on your water to a trickle and cover your citrus trees. Find out where your home’s water shut-off valve is, if you don’t know already, so you can quickly turn it off if a pipe does burst. Lastly, change out the old batteries in all of your smoke and carbon monoxide detectors.

5 / PROTECT 6 / DONATE Instead of packing new holiday goodies into overstuffed closets and drawers, take a few minutes to edit out similar items to donate. This goes for linen and shoe closets, too. The lightened load will allow you to feel 2015 ready!

“Ideally, we could get all of the vitamins and minerals we need from the food we eat, but life doesn’t always work out that way. Supplementing with a nutrient-packed green supplement is my go-to, whether it’s a cheat day or I’m right on track. When I started taking HealthForce

I believe this is nature’s multivitamin as it contains phytonutrients, probiotics, antioxidants, alkalizing minerals and digestive supporting enzymes.” Stephanie Dodds, healthy eating specialist, Whole Foods Market Sacramento, wholefoodsmarket.com Available at Whole Foods Market in Roseville and healthforce.com

“In today’s society, 75 percent of Americans are tracking some form of health and fitness. Less than 20 percent are using an app or device to do that, but that trend is shifting quickly upward. Currently, 40 million people are using MyFitnessPal, a free app that helps you track food, exercise and your health goals.” Lisa Packheiser, fitness director, Johnson Ranch Racquet Club, sparetimeclubs.com To learn more, visit myfitnesspal.com.

“Stem cell studies for many of today’s major diseases show improvements beyond what was originally expected. In studies of knee joints…85 percent of patients who had no cartilage, needed knee replacement surgery, [and] opted for nonsurgical options with stem cells show regeneration of cartilage. Although stem cell therapies are not yet FDA approved, I personally believe we will see them change the face of medicine as we know it. Vitality Medical is currently involved in three stem cell studies looking at joint disease, diabetes and COPD.” Celia Remy, MD, owner, Vitality Medical Stem Cell and Aesthetic Medicine, vitalitymedicallaserand skin.com Style suggests AQ Skin Solutions Active Serum available at Vitality Medical in Roseville.

“I think one of the best pieces of equipment someone can use or purchase is the TRX Suspension System. [It’s] a great, functional system that works every major muscle group—especially core and balance. “An up-and-coming trend with many fitness enthusiasts is a movement-based style known as Functional

Movement Training. Unlike HIIT (high intensity interval training) or the infamous P90X, functional training is useful for aging populations and people recovering from injuries, as well as someone who’s fit, because it is well-tailored to specific needs [and] improves overall health and fitness. Functional training requires complete engagement of those muscles that are used to do everyday tasks and duties, whether it’s at work, at home, or even on the field or court. And this type of training doesn’t require a gym membership either! It helps to build strength, stamina and mobility, all while not feeling like an actual workout and is a great style for all ages and levels of fitness.” Senior Health Educator, Ale Wilson, Kaiser Permanente Roseville 40 stylergbr.com - January 2015

Spiritual Laws of Yoga is

Serenity Spa’s signature, 75-minute yoga class. [It’s] a consciousness-based hatha yoga program infused with teachings from Dr. Deepak Chopra’s classic bestseller, The Seven Spiritual Laws of Success. Hatha yoga is the study of the asanas or postures based on Patanjali’s eight limbs of yoga. Our program offers a balanced approach that can be taken more deeply or gently, depending on the needs of the individual. We guide students to experience bodycentered restful awareness, which in turn helps each student find the perfect way to do the postures.” Andrea Tagamolila, spa director, Serenity Spa & Soul Yoga, serenityspaonline. com Available at Serenity Spa & Soul Yoga

“A fully operating nervous system is essential to reaching one’s peak health and wellness peak. The bones of the spine act as armor for the spinal cord and nerves, protecting them from damage. Chiropractic care is designed to detect and correct areas of the spine that are not moving properly, allowing the nerves that it protects to transmit signals efficiently. Our clinics utilize non-invasive diagnostic technology known as the CORE Score to measure functions of the nervous system, including portions that operate organs and glands and also those that control postural muscles. This information gives our doctors the tools to create a dynamic treatment plan— integrating specific spinal adjustments with corrective exercises, dietary modifications and stress-management techniques to help each and every patient reach their greatest state of wellness.” Jerrod Hill, DC, LAc, Simms Chiropractic, simmschiropractic.com Available at Simms Chiropractic

Toft Facial Plastic Surgery Kenneth M. Toft, M.D. 959 Reserve Dr. | Roseville 916-782-8638 | www.toftfacialsurgery.com Kenneth M. Toft, M.D. is the Director of Toft Facial Plastic Surgery in Roseville, California. He dedicates 100% of his practice to facial cosmetic surgery. This is in contrast to many surgeons that perform liposuction and breast augmentation, who can spend as little as 20% of their time on the face. Complete dedication to facial plastic surgery is very important for several reasons: the complex anatomy of the face, the need to keep up with the latest techniques of facial rejuvenation, and the importance of facial features in defining individuality. The results of facial plastic surgery are not hidden under clothes; they are seen every day by friends in public and by oneself in the mirror. For these reasons, only the most specialized and highly trained facial plastic surgeon should be selected. Throughout his career Dr. Toft has demonstrated a commitment to excellence. Dr. Toft graduated from college in the top 3% and medical school in the top 10% of his class at the University of Michigan. He then underwent surgical training at Stanford University, with four years

completely focused on the face and neck. Dr. Toft was then selected to be a UCLA Clinical Instructor in Facial Plastic and Reconstructive Surgery where he studied with world experts in cosmetic surgery. In 2000, Dr. Toft moved to the Sacramento area to become the Medical Director of Facial Plastic and Reconstructive Surgery at Mercy San Juan and to open the Toft Facial Plastic Surgery Center. Dr. Toft believes the goal of cosmetic surgery is to create improvement while maintaining a natural and balanced appearance. This natural appearance is achieved through the use of modern techniques to make his patients look younger, refreshed, and healthy, never overdone or “operated.” The natural balance of facial features is what creates identity, displays emotion, and establishes level of health. Because each face is different, the goals of surgery for each person is individualized. Dr. Toft draws on his extensive training, aesthetic sense, and personal touch to achieve better balance and improved symmetry for all of his patients’ unique facial features.

SR Restaurant & Lounge may be a new kid on the block, but it sure seems the eatery knows exactly what it wants to be when it grows up. The swanky-yet-relaxed vibe is augmented by sleek, gray-blue décor and blue and white glass pendant lights, which cast a soft glow on the lounge area that’s perfect for mingling. We were seated at one of the booths rimming the perimeter of the lounge, which is a great spot to land

set atop a vibrant port and berry sauce. My husband proceeded with the beef Wellington, a plate that boasted both delicate and flaky pastry and tender filet mignon on a bed of truffle Madeira sauce. My pan-seared diver scallops were silky smooth and delectably seasoned. The side of Pan-Seared Diver Scallops toothsome saffron couscous with basil oil was such an addicting blend of flavors—my only complaint was I wanted more. From the dessert menu, the Grand Marnier soufflé was the obvious choice. Though it took a bit to make it to the table (it’s notoriously finicky and when they had a mishap, the staff opted to start over from scratch and comp it, rather than give us something less than perfect), it was a fluffy delight and well worth the wait. ASR undoubtedly deserves the admiration and designation of the midtown-like lounge and fine-dining establishment that Roseville’s been waiting for.

Service. We were immediately greeted by a friendly waiter who was quick to offer suggestions and had the timing of our drinks and appetizers sorted out perfectly. He made the meal feel like a well-choreographed dance. We started with the duck egg roll—a dusky combination of duck co n f i t , swe et on i o n , creamy Brie and earthy shitake mushrooms…all tucked in a crisp wrapper and Grand Marnier Soufflé 52 stylergbr.com - January 2015

taste RED WINE ROAST CHICKEN My Little French Kitchen: Over a Hundred Recipes From the Mountains to the Market Squares and Shores of France By Rachel Khoo, photographs by David Loftus (Chronicle Books, 2014, $35)

• • • • • • •

2/3 cup red wine 6 tbsp. tomato paste 3 sprigs thyme, leaves picked 3 sprigs marjoram, leaves picked, or 1/2 tsp. dried 1/2 cup red wine vinegar 1 whole chicken, cut into 8 pieces (about 3-1/2 lb.) Salt and freshly ground black pepper 18 oz. baby potatoes, washed 3 onions, quartered 6 carrots, peeled and quartered lengthwise 1/2 cup water

Mix together the wine, tomato paste, thyme, marjoram and vinegar. Season the chicken with plenty of salt and pepper, then place in a sealed Ziploc bag with the wine mixture. Shake the bag to make sure each piece is well coated. Refrigerate for at least 30 minutes, or overnight. Place the potatoes in a saucepan of cold water, cover and bring to a boil. Boil for 1 to 2 minutes, then drain in a colander. Preheat the oven to 400 degrees. Arrange the onions, carrots, and cooked potatoes in a large baking dish or tray and pour in the water. Arrange the chicken pieces, skin-side up, in a layer on top of the vegetables. Pour the marinade over the chicken. Cover with a sheet of parchment or foil and roast for 30 minutes. Remove the parchment and baste the chicken with the cooking liquid. Roast, uncovered, for another 15 minutes, or until the skin is crisp. Serve immediately. Serves 4 to 6. Tips: Buying a whole chicken will always be more affordable. If you aren’t up for dissecting it yourself, ask your butcher to cut it into pieces for you. If there’s no knife54 stylergbr.com - January 2015

dinner date Food and Wine for the Season wielding butcher about, you can always cheat and go for chicken thighs. If you’re unsure whether the chicken is cooked through, pierce the flesh with a sharp knife; the juices from the chicken should run clear. Get ahead: The vegetables and chicken can be prepared up to 1 day in advance, then simply pop it all in the baking dish and cook.

JAM CELLARS 2013 CABERNET SAUVIGNON JaM Cellars started in 2009 with the goal of giving wine lovers of all ages something easy to appreciate: big fruit, soft tannins and reasonable prices. Named after owners John (“J”) and Michelle (“M”), their winemaker, Rob Lloyd, obtained his master’s degree in enology at UC Davis and was the former winemaker at the renowned Rombauer Vineyards. You can see their vision come to fruition with the 2013 Cabernet Sauvignon. At $20 a bottle, it delivers a nice bold flavor and a not-too-dry finish. Extremely rich and smooth, with full fruit flavors and a hint of oak, it pairs beautifully with this month’s Red Wine Roast Chicken. —Heather Zamarripa, Executive Chef, 36 Handles Pub & Eatery

AMADA SENIOR CARE 1512 Eureka Road, Suite 206 Roseville 916-945-3515 amadaseniorcare.com/roseville

Describe your business. Did you find it, or did it find you? Career coaching has always been a passion of mine. I even told the director of my college career center that I wanted her job. She took me under her wing and showed me the ropes. During graduate school, I realized I could someday run my own career coaching business. I went into education and taught students how to find jobs; finally, after years of friends and family asking for résumés and career advice, I made my business official. MK Career Designs is a dream come true. How are you involved with both the community and your customer? I regularly work with local job-seeking groups to help members obtain employment. It’s rewarding to help job seekers overcome obstacles, develop an action plan, build confidence and prepare for success. What life accomplishments are you most proud of? Professionally, I’m proud of taking my business from an idea and turning it into a reality. I’m proud of my clients who successfully complete their action plans and then find success. Personally, I’m proud of my 15-year marriage to my handsome husband, and my three awesome children. They’re my biggest cheerleaders. What’s your biggest job perk? Making a positive impact in my clients’ lives and helping them reach their career goals. Every client gives me the opportunity to make an impact in different industries so it’s never boring. It’s a great day when my clients call and say “I got the job!” Where do you and your family go locally to have fun? You can find us hauling out a very large bag of books at any of the Roseville library branches almost every weekend. And finally, customer service is…? All about the clients’ needs and life goals. Work life is very personal, as it affects every aspect of our lives. I get the privilege of walking beside clients and helping them maneuver their careers, while giving them hope and support along the way.

Photos by Dante Fontana.

Describe your business. Did you find it, or did it find you? Amada provides non-medical in-home care and placement assistance to seniors throughout the greater Sacramento area. With a background in pharmaceutical sales, my business found me. I’ve always had the entrepreneurial spirit—as I spent time selling medication for Alzheimer’s disease and becoming more and more involved with medical directors and their patients—so it just made sense. With the aging of America, I saw the opportunity that existed in providing this service to the community. Why is your staff the best in the business? Our staff is phenomenal. We go the extra mile to help in any area we can, from conducting nursing assessments to working with long-term care insurance carriers or the VA, when applicable, to ensure our clients are receiving their benefits. Our caregivers have a vast wealth of experience and are carefully matched to each of our client’s preferences. At the end of the day, the adage, “People don’t care how much you know until they know how much you care,” holds true. What life accomplishments are you most proud of? I’m most proud of my decision to marry my wife, Jennifer. She has been a strong supporter in building Amada Senior Care. I’m also proud of the two years I spent as a missionary in New Zealand. What’s your favorite place to eat out locally? There are so many great spots, but I really like Venita Rhea’s for Saturday brunch. My wife and I also enjoy Taj Oven; it’s turned into one of our Friday night go-to date spots. And finally, customer service is…? The most important aspect of what we do. Without compassionate, honest and professional caregivers and staff—we have nothing to offer.

How’s it going? Very nice to meet you the other night. Sorry if I seemed a little under-enthused. It’s not you. The kids made me stay up and I’m just not good at it anymore. (There was a time though—just ask the mid-’80s.) Listen, I know it’s not my place, and I won’t even pretend to know what you have planned for the next 12 months, but if you can, would you mind taking it a bit easy on us? Twenty-fourteen was, well...I think it had good intentions, but it seemed a little...inattentive...and to be honest, we’re all a bit exhausted. It didn’t start with 2014. In fact, 2014, if you’re reading this, I hope we’re cool. You had a full plate, and I’ll still go glow bowling like we talked about—first pitcher’s on me—but maybe it was the year that, to borrow a term from running, we finally hit the wall. Epic storms. Epic droughts. Earthquakes. Vanishing jetliners. ISIS. Robin Williams. Bill Cosby. Ferguson. Ebola. Kim Kardashian baring her butt to try “breaking the Internet” (but, as Blake Shelton so aptly put it, managing only to add a crack to it). Yeesh. Look, it wasn’t all bad: Those Ice Bucket Challenges for the ALS Association were pretty cool…literally. The Giants won the World Series (and, speaking of—how about all those awesome Hunter Pence signs? I think my favorite was “Hunter Pence pronounces it ‘li-berry’”). Craft breweries were hoppin’, spacecrafts landed on comets and Jimmy Kimmel’s “Mean Tweets.” Compassion seemed to finally trump ignorance regarding people’s personal lives—like how they live them and with whom. The economy seemed to be waking up (although at about the same pace as a teenager on summer break, but still...). And last fall fuel prices dropped so much I started driving to gas stations further away just to fill up. Only kidding. It was nice to see them come down though. But a lot of problems prevailed: Much of the Middle East remained utterly devoid of peace or sanity. We mourned, heartbroken, with the families and colleagues of two brave law enforcement officers cut down in the line of duty one senselessly tragic afternoon. We watched thousands of 66 stylergbr.com - January 2015

signed, sealed, delivered A Note to the New Year by Tom Mailey firefighters struggle to keep our forests from going up in giant mushroom clouds of smoke. Kindergartners still understood the importance of cooperation better than most of our elected representatives. We learned Sam’s Club had better front door security than the White House and, in the name of homeland security, we found out some poor bozos have been tasked with what has to be the most soul-crushingly mundane job the government ever

created: keeping track of our every inane email, text and phone call. Talk about LOL. Meanwhile, cyber crooks leaked our credit information online and cyber creeps leaked nude celebrity selfies. Oh, that too: People were still taking selfies. Hey, we know that just flipping the page on a calendar isn’t going to make all of our problems go away. We totally get there’s a lot of work to be done and the only ones who can change things are us. So please, 2015, no pressure. But if it’s possible, could you lighten things up—just a little? It’d be hugely appreciated. Now, I seemed to have accidentally deleted 2014’s number from my phone. Do you have it? Glow bowl starts in a couple hours.
