My first taste of “real” quality coffee was in Auckland, New Zealand. I was en route to Perth, Western Australia, with a week to kill in the “Land of the Long White Cloud” (and apparently the land of flat whites, too).

The 13-hour flight and sudden shift from blazing hot summer temps to cold, wintry weather had me foggy headed and in dire need of a pick-me-up. Wanting to sightsee as opposed to sleep, I headed into the nearest café and asked for the biggest cup of drip coffee they could pour. With deer-in-the-headlights stares, the employees looked at me dazed and confused. As I reiterated my order, it was soon determined that drip coffee and super-sized cups didn’t exist on this side of the world (at least not in 2006). No pots of burnt coffee sitting for hours on a burner here. When they handed me a six-ounce “long black” (essentially an Americano), I wanted to laugh. How would this teeny tiny cup of caffeine possibly cure me of my jet lag? But I quickly discovered that, when it comes to coffee, less is sometimes more. Never had I ever tasted espresso so smooth and robust, and never had I ever gotten a buzz so strong.

I hope you agree that it’s truly a brewtiful piece—full of interesting info and fun facts.

Jim Maccoun incoln resident Jim Maccoun was in college studying wildlife biology when a chance opportunity changed the course of his life.

He came across an ad in the newspaper for a part-time job at his local police department.

“It sparked my interest,” he recalls. Many of his family members were proud military veterans, and he was drawn to the idea of public service.

He got the job, and soon was hitting the streets to mediate disputes and take reports (whether it be for a noise complaint or a neighbor griping about an overgrown tree). He loved every minute of it, and

not long after, changed his major to criminal justice. After spending over 30 years with the Sacramento Police Department, Maccoun was recently appointed as Roseville Police Department’s new chief.

In his free time, he and his wife, Tawnya, enjoy volunteering at their church or getting out into nature. Maccoun also remains a strong advocate for police departments going out into the community to build positive relationships with those they serve.

Weaster's Inaugural Cornhole Tournament and FUNdraiser

Residents are needed to weigh in on the city’s services related to parks, police, fire, roadways, flood protection, development and libraries. On November 8, Roseville is presenting an overview of parks, recreation and libraries services to Engage Roseville’s Citizen Priorities Advisory Committee. Here are a few examples of items likely to be considered in an effort to live within our means:

Jenny Weast was involved in a skiing accident at the age of 16, resulting in her becoming a quadriplegic. Although she hasn't let that stop her from teaching for 30 years, she still needs daily help from caregivers. Unfortunately, she exceeds the income requirements for Medi-Cal eligibility and cannot afford the care she needs, as the monthly bills of over $6,000—including caregiver costs and living expenses—exceed the $5,400 she brings home every month. But with the help of many friends and supporters, funds are being raised—and you can help. On November 4, the Roseville Sports Center will host Weaster’s Inaugural Cornhole Tournament and FUNdraiser. The ticket cost is $100 for dinner and tournament entry, and $20 for just dinner; children 10 and under are $15. There will also be a no-host bar, silent auction, classic cars, a raffle, prizes and a kids’ fun zone. "People are always looking for ways to give back; this is a perfect opportunity to [help] someone in our own community and to have some fun while doing it. It's good for people to see exactly where their money is going!" says Andi Bortoletto, one of Weast’s former students.

DID YOU KNOW? // Kiwis are great dehydrated. Wash the fruit, cut the ends off, and peel it by sliding a spoon between the skin and the flesh. Slice into one-eighth to one-quarter-inch slices and arrange in single layers on trays. Dehydrate by placing in an oven for 8-10 hours at 130-degrees Fahrenheit, then store in an airtight container.

Kiwifruit, known simply as kiwi to many, has more vitamin C than an orange, more potassium than a banana, twice the vitamin E of an avocado, is a good source of fiber and folate, and contains an enzyme known as actinidain, which helps in the digestion of proteins (similar to a papaya). The fruit also contains many medicinally useful compounds, such as antioxidants and serotonin, which may be beneficial for those having trouble sleeping. Try eating two kiwis one hour before bedtime as a natural way to ease into sleep. PlacerArts Studio Tour

his year marks PlacerArts Studios Tour’s 24th year. Started in

1994 by batik artist Helen Phillips who wanted to foster networking of local artists and art organizations, the tour initially brought together an infusion of various artists who were rather isolated otherwise— opening their private studios to the public where artist and viewer could interact. Taking place November 10-12, the current tour guides participants through Roseville, Rocklin, Auburn, Loomis, Newcastle and Colfax, among other locales.

For newcomers or repeat visitors alike, this year, according to tour coordinator and participating artist Gia McNutt, offers new features—making the event even more enjoyable and enticing. “It’s an exciting year for the studio tour,” says McNutt. “I feel like I’m riding a comet right now!”

HLB: WHAT TYPES OF ARTISTS ARE FEATURED? 14 Tips for a Thinner Thanksgiving

While many of us look forward to Thanksgiving dinner, it’s also a notorious time for overeating. “Chances are, we’re going to eat more at this meal than perhaps any other of the year, which can be a problem if you’re watching your weight,” explains Laura Elliott-Sisterson, MS, RD, clinical nutrition educator at Kaiser Permanente Folsom Medical Offices. “What starts as one meal can be the beginning of months of overeating, if you allow it to happen.

However, being cautious about food choices and portions can help you stay on track.” Here, local health and fitness experts share their tips to help you have a healthier holiday.

FITNESS “Sign up and train for a turkey trot. It’s a great way to stay motivated and hold yourself accountable while giving back at the same time,” says Jennifer Collins, head trainer at Orangetheory Fitness Roseville/Rocklin.

“Plan a post-meal walk. As soon as you arrive at your Thanksgiving celebration, announce your plan to take a walk after the meal and find out who would like to join in.

It’s a great way to help your food digest and burn some extra calories,” Collins says. “[Excercise] in the morning, so you’re starting off the day strong. Stick to a routine as best as you can. If you should

It typically takes 20 minutes to feel full, so the longer we take to chew and enjoy, the less likely we are to overeat,” says Sky Baucom-Pro, MAS, RD, patient services manager in Food and Nutrition Services at UC Davis Health.

“Be aware of liquid calories. If you know you’re eating richer foods, such as stuffing, mashed potatoes with butter, sour cream or gravy, aim to save 500-plus calories by choosing to drink water or sparkling water.

Alcohol can add hundreds of calories with just a few drinks,” says Barbara Lusk, MFCS, RD, LDN, FAND, clinical nutrition manager in IP Nutrition Services at UC Davis Health.

he Sierra College Foundation gives—and GIVES. In small

letters, the word encapsulates the organization’s mission. In capital letters, it’s the perfect acronym for their programs.

Since its founding in 1973, the nonprofit has supported students with money and resources—and its mission then is its mission now: Giving the community the opportunity to invest in the development of quality educational opportunities for all. “Our only purpose,” says Executive Director Sonbol Aliabadi, “is to help the students at Sierra.” To that end, the organization raises money and matches it with student needs—necessities that often extend beyond schoolbooks.

The five GIVES programs are: • Guardian Scholars: These are students 18 and older who have aged out of the foster care system and do not have funds for college. Not only does the foundation help these students financially, but it provides them with tools, such as backpacks with school supplies, personal items and handmade quilts; some live in the dorms and receive meal cards for food. According to Aliabadi, less than three percent of foster kids go to college. Sierra is one of only two community colleges in California with a program that supports these students.

One of those rare students is Raquel Magadan, currently in her last semester before transferring to a four-year university.

She entered foster care at age nine and is close to her foster family, but they cannot fund her education. As a Guardian Scholar, she lives in a dorm and works on campus.

“Without this program,” the determined Magadan says, “I would have gone to college, but I would not have as much support as I do.”

Magadan is pursuing a sociology degree “so I can pay back. I’ve had so many people help me. I want to be able to help someone else.”

Beautiful floor covering can truly transform a room, but it can also be one of your biggest interior design expenses, so planning ahead is essential. Before deciding on materials, colors and textures, consider these design basics:

Ceramic Tile

To create the biggest impact, use a single type of flooring throughout most of your home, breaking it only at bedrooms and wet areas.

Plain colors make a room seem larger, and a solid color is easier to decorate around; light colors exude spaciousness and help brighten a room without much natural light, while dark colors help anchor furniture and make larger rooms feel cozier.

If you choose to change the color or type of flooring between rooms, picture how the transition will look when the doors are open.

How a room is used will also affect your choice of finishes. For a kitchen, you’ll want a floor that’s easy to clean and resistant to water and other spills; bathroom flooring will need to stand up to moisture; flooring in family rooms, hallways and children’s bedrooms should be able to take more wear and tear than a room used primarily for relaxing or entertaining; and any room that opens directly to the outdoors will need flooring that can handle both dirt and heavy traffic.

The genus coffea is native to tropical and southern Africa and tropical Asia. The plant was originally exported from Africa to countries around the world, and coffee plants are now cultivated in over 70 countries.

The earliest credible evidence of coffee-drinking appears in the middle of the 15th century in the Sufi shrines of Yemen.

The word "coffee" entered the English language in 1582 via the Dutch koffie, borrowed from the Ottoman Turkish kahve, in turn borrowed from the Arabic qahwah.

During the Revolutionary War, the demand for coffee increased so much that dealers had to hoard their scarce supplies and raise prices dramatically; this was also due to the reduced availability of tea from British merchants, and a general resolution among many Americans to avoid drinking tea following the 1773 Boston Tea Party.

Beans from different countries or regions can usually be distinguished by differences in flavor, aroma, body and acidity.

These taste characteristics are dependent not only on the coffee's growing region, but also on genetic subspecies (varietals) and processing. Varietals are generally known by the region in which they are grown, such as Colombian, Java and Kona.

The two most commonly grown beans are the highly regarded arabica, and the less sophisticated but stronger and hardier robusta.

Arabica coffee beans are cultivated mainly in Latin America, Eastern Africa and Asia; while robusta beans are grown in Central Africa, throughout Southeast Asia, and Brazil.

Green (unroasted) coffee is one of the most traded agricultural commodities in the world.

Seeds are decaffeinated when they’re still green. Many methods can remove caffeine from coffee, but all involve either soaking the green seeds in hot water (often called the "Swiss water process") or steaming them, then using a solvent to dissolve caffeine-containing oils.

Though “Falcon Mike” himself is happy to select the stops, you’d be remiss to skip Korbel Champagne Cellars (complimentary tours and tastes), Sonoma-Cutrer Vineyards (bright, velvety Pinot Noirs, oaky Chards and a side of croquet), and La Crema Estate at Saralee’s Vineyard (multilevel, interactive tasting experience in a lovingly restored century-old barn).

Come spring and summer, the gently rolling Russian River beckons for a fun afternoon of floating. Rent a raft, canoe or kayak at Johnson’s Beach and laze your way down the mellow water for a sun-drenched day of play.

Head to Armstrong Redwoods State Natural Reserve to see what originally put the treehugging hamlet on the map (in the late 1800s it was a logging community; hence the nickname “Stumptown”). Whether you choose to hike, go horseback riding or simply snap a quick pic of the oldest (Colonel Armstrong) or tallest (Parson Jones) tree, the 805-acre park is bound to take your breath away—just like Guerneville itself.

othing short of politics and religion sparks a more heated debate than the topic of “best pizza.”

Everyone is an expert—thick crust, thin crust, deep dish, New York, Chicago, folded, pineapple, the list goes on. Heck, just ordering pizza in a group of more than one can ruin friendships.

Chicago Fire has been my preference for some time, and there’s never a dispute when we decide it’s pizza time. My family and I recently stopped in for a few of our Chicago Fire favorites, including the grilled pear salad that’s chock-full of tangy goat cheese chunks, candied walnuts, earthy greens and the salad’s namesake—grilled slices of ripe pear—all in a just-tangy-enough balsamic vinaigrette.

They served it with a few slices of their house-made deep-dish garlic foccacia, which was a treat, since—by the time the salad arrived—we had already devoured an order of the bread…dipping it liberally in their balsamic herb and basil-infused olive oil.

A nice glass of wine, some delicious bread and a thoroughly enjoyable salad would be enough, if not for the smell of baked pepperoni and tomato wafting through the Capone era, Chicagothemed dining room, where a cityscape skyline mural adorns one

At this point, I made what could have been an argument starting decision (although no one took the bait). In my house, thin crust and pepperoni rule the “pizza kingdom” (queendom in actuality)—no gimmicky crusts or bacon-y barbecue allowed. Well, I crossed that line and will never look back. Enter Chi Fi’s stuffed pizza—deep dish pizza’s big brother—which includes a layer of thin crust, mozzarella and another layer of crust, then your toppings and a perfect plum tomato sauce.

We ordered the “Da Spin and Shroom”—replete with roasted crimini mushrooms in a blend of spinach, cheese and GARLIC (yes, I used all caps on the GARLIC; you have to know about it going in because you’ll certainly know afterward). Make no mistake about it: This a substantial pie! Even though this was a pizza with a dual crust, the cheese was creamy, the tomato sauce fresh, and the garlic intoxicating—leaving us craving more…even as we boxed up the inevitable leftovers.

If your stomach is made of stretchable fabric, try one of their signature desserts (I recommened the Deep Dish Delight, which serves two to three). Otherwise, start with dessert next time!

Wally’s Café // Before you even get to the food, you can often tell how good a restaurant is by the number of empty seats that are

available during lunchtime. The math is simple—the fewer the seats, the yummier the food! At Wally’s, those empty seats are hard to come by, but when you’re in one, you can expect some excellent Mediterranean fare and even better customer service. The cozy, family-run business is, very obviously, a labor of love. The owners are always alert to your needs and radiate warmth with every nod of the head and genuine smile. What’s more, they give you complimentary lentil soup (lentils, rice, spinach and carrots) and baklava (pistachio-speckled sweet pastry sheets)! Like I said—exceptional service. I tried their Combo Specialty Plate with Kafta Kabobs and Chicken Shawarma, and was transported to Lebanese heaven. My plate came with a generous helping of well-dressed garden salad, a bed of steaming, buttery rice pilaf, a heap of well-marinated chicken pieces and two large mildly spiced ground beef kabobs. A Lebanese garlic sauce and tzatziki helped round out my exciting plate. All of the full-bodied flavors of the meat, rice and sauces danced delicately on my taste buds, and I paused only for the occasional sip of cardamom-infused Turkish coffee I’d ordered on the side. And just like that, my meal had turned into an experience—one that was rich and nourishing. If you’re looking for a similar encounter, visit Wally’s and prepare to be pleased.

3 tbsp. unsalted butter, divided 2 tbsp. extra virgin olive oil 10 carrots, peeled and roughly diced 1/2-inch fresh ginger, peeled and roughly diced 1 leek, light green and white parts only, rinsed and diced 1 fennel bulb (fronds reserved) 1 small yellow onion, roughly chopped 1 large clove garlic, roughly chopped 4 1/2 cups chicken stock (or vegetable stock) 1 bay leaf

Add the chicken stock (or veggie stock). It should just cover the vegetables by about 1 inch.

Add the bay leaf and bring to a simmer. Cook for 25-30 minutes until all vegetables are cooked through.

Salt and pepper 1/2 cup crème fraiche (garnish) 2 oz. pancetta or bacon, cooked until crisp (garnish)

When melted, add the carrots, ginger, leek, fennel bulb, onion and garlic. Season generously with salt and pepper and sauté for approximately 7 minutes or until the vegetables are softened but not browned.

In a large, heavy bottomed 6-quart Dutch oven or soup pot heat 2 tablespoons of the butter and olive over medium heat.

Let mixture cool slightly and remove the bay leaf. Add the final tablespoon of butter and purée in batches in a blender until smooth. Taste and adjust salt and pepper as needed.

Can be refrigerated up to 2 days at this point.

To serve, place the reheated soup in a bowl and top with a dollop of crème fraiche, the reserved fennel fronds, and crumbled pancetta or bacon.

When mobility and transportation difficulties arise, and getting to the dentist for cleanings and care is complicated, we bring our passion, equipment and palliative dental care right to the patient—in assisted living facilities and residential care homes. After delivering dental services for over 30 years, we noticed that long-standing patients were experiencing difficulties coming into the office, so the business found us.

The Root Wellness is an acupuncture and Oriental medicine practice. I use a holistic approach to health and wellness, in order to help the body heal itself. I decided to get my Master of Science in acupuncture after difficulties with my own health were helped with natural medicine. I have a passion for getting to the root of your health issue.

How are you involved with both the community and your customer?

Besides individual care, we offer complimentary oral health screenings within care facilities to identify ongoing problems and unique dental features that may require specialized daily care. To better blend today’s caregiver and oral health maintenance principles, we also provide complimentary staff “in-service” training sessions.

Why is your staff the best in the business?

We’re a husband-and-wife team—I’m the dentist and Michele is a sought-after dental hygienist. She decided after years of in-office service that she wanted to take her passion and talents directly to individuals who struggle getting into the office. This takes a special provider, and she’s one in a million; she assists me and I assist her, so our clients get two for one.

What life accomplishments are you most proud of?

Professionally, I’m very proud that I have one more year in school before I complete my doctorate in acupuncture and Oriental medicine.

Personally, I’m proud to have been married to my amazing husband, Andrew, for nine years.

Where do you go when the going gets tough?

I turn to God and my faith.

What’s your hidden talent?

I love to sing…only in my car these days!

What’s your biggest job perk?

Joy! It’s incredibly humbling and rewarding to take part in a person's healing.

What’s your favorite place to eat out locally?

I love Mexican food, and right now Zocalo is my favorite place.

What’s your hidden talent?

Michele cooks fabulously and entertains with ease, but her favorite is doing floral arrangements for weddings. Mine is believing anything is possible and finding the equivalent blessing when something doesn’t turn out as anticipated.

What’s your favorite place to eat out locally?

Thai Basil for red curry and pad-kee-mow, Dos Coyotes for their Yucatan Chicken Salad, and McCormick and Schmick’s during Happy Hour for the cheeseburger.

Where do you and your family go locally to have fun?

My husband and I love to kayak and paddleboard at Negro Bar in Folsom.

What’s your favorite childhood memory?

Going out on our family boat at Rollins Lake and Folsom Lake.

If you could be in any other profession, what would it be?

I love my job and wouldn’t change a thing, but I also enjoy interior design and decorating. I put a lot of time and energy into making my home and office warm and inviting.
