What are some tips to stay fit throughout the holidays?
A: 1. Be aware of holiday parties and obligations, which mean increased caloric intake and otherwise poorer dietary choices, and plan around them. 2. On the days leading up to these events, eat lesser quantities and eat clean whenever possible. 3. Increase workout intensity and frequency to create more consistency in both the workouts themselves and in better food choices. 4. Do a daily bodyweight routine—preferably upon waking to avoid your busy schedule—that can be done anywhere and at any time. 5. A: Prepare ahead of time and let the pet get acquainted with their carrier or seatbelt. Small trips around town with a treat or toy placed inside the crate will make it fun and get them ready. For the trip, have two bowls for both food and water. Bring blankets, beds and toys that they’re familiar with, vaccine records—especially if traveling out of state or country, and pet ID tags with cell phone numbers. Have them microchipped, too. Stop every few hours to let them stretch. hen KCRA 3 Meteorologist Mark Finan was seven years old, he received a barometer for Christmas—and was thrilled. “Ever since I can remember, I was curious about the weather,” Finan recalls with a laugh. For over two decades, Finan has been an on-air weather reporter, and he’s seen plenty of wild weather patterns in his day. During one hurricane in North Carolina, he was forced to drive in high winds and heavy rain in order to report on the storm and its aftermath. “I was amazed by the sheer power of the weather,” he says. “I could also see the impact of weather on people.” As a 14 stylefedh.com - November 2015
result of such experiences, Finan works hard to make his weather forecasts as accurate as possible. His primary goal is to give people plenty of warning—and advice about what to do—in the case of an extreme weather event. When he isn’t in the studio, Finan plays golf, cycles, and pursues his interest in photography. He also volunteers his time as an emcee for area charity events and is a frequent guest speaker at local schools. His favorite part is seeing kids get excited about the weather—in much the same way he did as a child. “It’s fun,” Finan shares. “Kids have an incredible curiosity.” — Amber Foster

Decorate a section of the zoo To simplify the decorating process, the zoo is divided into sections for decorating; LED lights are supplied, but many hands are needed to install them! y favorite thing about Doyle’s Pub and Taproom is their service. Sure, they have some pretty mean nachos, drool-worthy burgers and a tempting selection of beers, but cheery conversation and smiles all around are what really impress me. With its chill vibe, this workday escape allows you to relax, spend some quality time with your crew, and leave pleased as punch—or in this case, pleased as a pint. My recent order of the Bacon Blue Cheeseburger came w i t h a s u cc u l e n t p a t t y t h a t wa s te e m i n g w i t h flavor, melted blue cheese crumbles that gave it a slight kick, crunchiness from tangy pickles and lettuce, and tomatoes that freshened up the flavor profile. My accompanying Drake’s Brewing Co. “Hella Fresh” Pale Ale was caramel in color and flavor, with a fruity, citrusy finish that I thoroughly enjoyed. Doyle’s makes their own ranch dressing, pico de gallo, salsa and chips—and all are ridiculously good. Anyone who puts so much love into the food they serve deserves some love in return, so don’t be surprised if you find me there happily sipping and smiling away. Charlie fetches the paper every morning and “his favorite day is Wednesday because he gets to fetch the paper twice: the Sacramento Bee in the morning and the Folsom Telegraph in the afternoon,” says owner Gwen Cullen. Murer did all of the interior woodwork himself, and the current garden is original to the house. The house is open for tours the first Saturday of every month.

The number of generations of Cohns that occupied Folsom’s Cohn House before it was sold to the current owner in 1966. This elaborate and majestic jewel in Folsom’s crown was originally built in 1860. The original house is now the kitchen; California Senator Phillip Cohn expanded the house when he took ownership in 1890.

Estimated gallons of wine produced at the Zentgraf Winery in 1859, according to a historical brochure published at the time. Located on Deer Creek Road and owned by Jacob Zentgraf, business was clearly booming: In the same year, they added a distillery and produced 12-14 barrels of brandy. In 1871, Zentgraf built a well-appointed adobe home near the winery; the house still stands today.

BY DAYANA STOCKDALE What’s more, Charlie has a soft spot for felines in need and helps to socialize the cats and kittens that the Cullen family fosters from the Sacramento County Animal Shelter where Gwen volunteers. Increasing their chances of being adopted by a family with dogs, Charlie “even lets the kittens lay with him on his bed, giving them gentle nudges with his nose,” Cullen says. Charlie definitely thinks he’s one of the kids and has mastered the art of football (intercepting during catch and delivering the ball for a touchdown) and hideand-seek (searching for which adorable Cullen kid who is sneakily guarding his treat). And wow—that is one contagious smile! •

thearts a rubber mold if it’s to become bronze, then it goes to a foundry. If it’s ceramic, the process is much faster. Making ceramics feels a bit more like I’m making art for “me”—for my soul. HLB: Do you gravitate toward certain themes? AR: When I work, I do so in a few ways. The first is strictly to be cathartic. Ceramic work feels that way to me. I’m making it without intention...it feels like I’m getting a massage in my brain. The next way is when I’m reacting to my world. I have a body of work about how technology changes the way we interact with our world—connecting Greek gods and iPods (and the like). HLB: What advice do you have for overcoming artist’s block? AR: Have short deadlines. If I’m pressed by a deadline, I can make magic happen. For ceramic work, the best thing is just to start. If you start, your hands will find it and something will happen.

dam Reeder was self-taught as a boy, soaking up knowledge wherever he could— reading books, studying other’s work, and by making mistakes. Honing his skill over the years, Reeder earned his MFA in sculpture from the Academy of Art University in San Francisco, and has since unveiled his award-winning pieces in cities such as Los Angeles, San Francisco, New York City, Santa Fe and London. The artist—who now teaches ceramics—is often motivated by those who are also eager to learn. “I’m inspired by my [four] kids,” says Reeder. “Over the last few years, I’ve also found inspiration in the eyes of [my students] learning sculpture or ceramics for the first time.” 28 stylefedh.com - November 2015

HLB: How did you begin sculpting? AR: I started out copying Spiderman and X-Men comics when I was 14 years old. My twin brother was a far better artist, and I was determined to be better than him. I drew a ton, and then a friend gave me some clay. I fell in love with it! Clay feels alive to me. I sculpted for about a year before I started selling bronzes. The rest is history.
HLB: What’s your process? AR: Sometimes a composition will come to me as I’m going to sleep. Other times I have to draw ideas. The art is the spark of the idea or the composition; the rest is just manual labor. Once it’s created, I’ll make
HLB: What’s in store for the future? AR: I’ll continue to make art, as long as people want it. A good deal of my creative energy the past year has been dumped into the new furniture paint I invented, Mudpaint, which is a specialty paint designed for antiquing furniture. I know this isn’t “fine art,” but it uses the same creative juices. Lately I’ve been focusing my art on ceramic creations—it’s been very relaxing.

With antibiotic properties and vitamin C, garlic allows for protection against colds, Triplett says. It also contains vitamin B6, which promotes heart health by lowering blood pressure, triglycerides and LDL; and increasing HDL, or good cholesterol.

With canned beans, Carlson says to rinse and drain them before eating, to remove excess sodium.

4 / Cruciferous Vegetables Nothing packs a nutritious punch for fighting cancer like cruciferous vegetables, such as broccoli, kale, collard greens, cauliflower and Brussels sprouts. “They are loaded with antioxidants to protect the body’s cells from cancer and prevent tumor growth,” Carlson says. “In addition, they’re packed with B vitamins, which help with energy metabolism and keep the body functioning optimally.” Dark green vegetables are high in beta-carotene, which promotes healthy eyes, skin, hair and your immune system. “Surprisingly, a serving of broccoli has more vitamin C than an orange. With benefits like these, try eating cruciferous vegetables at least several times a week,” she says.

That’s to say nothing of the ongoing training they provide to clients at no charge, or their plans to double in size and place more dogs with more people. evin Cameron started Alpha K9 because of his brother, who was suffering from severe PTSD. Cameron came home one day to find him with a gun in his mouth. He talked his brother out of it and got him help. The doctors suggested a service dog, but as Cameron researched, he saw a lot of for-profit companies taking advantage of a need. “People were selling their homes to get $20,000 or $50,000 for a dog, and waiting up to four years for it,” Cameron says. “My brother didn’t have that kind of money…or time.” Fortunately, during Cameron’s military career—he’s a highly decorated combat veteran who served his country for almost

14 years and received a Purple Heart, before enemy fire ended his vocation in 2011—he was involved in training dogs for the Military Working Dog program. No stranger to PTSD or the emotional struggles returning ve t e ra n s e n d u re d a i l y, Cameron founded Alpha K9 to help other veterans, as well as first responders, crime and trauma victims—anyone with “emotional disabilities” whose life might be saved by a service dog. 5 / Qigong Qigong is a practice that’s similar to tai chi with numerous health benefits, according to Alex Tuggle, LAc, a second-generation licensed acupuncturist, certified qigong practitioner and instructor in the Eight Treasures qigong of the Ni family lineage, at Golden Wellness Center in Placerville. “The energy-building aspect of qigong is different than any other type of exercise,” he says. “With gentle core-building exercises and deep-breathing techniques, you create a mind-body connection that facilitates your body’s ability to heal and regenerate. [What’s more], the exercises can be adjusted to various physical abilities and fitness levels in order to strengthen your core and [increase] lower body strength.” Qigong practices are easy to learn and can aid in the treatment of anxiety, depression, diabetes, neuropathies and other health issues. Balance your menu by pairing sweet and savory bites for a broad range of flavors. Try small, flavorful hors d’oeuvres for the first round of cocktails, and slowly ease into the sugary treats as the evening winds down. Serve them on fanciful silver or gold platters with fresh sprigs from the yard, or cinnamon sticks for a warm, holiday feel.

hen it comes to holiday feasting, we all crave the classics—buttery mashed potatoes, moist turkey, tart cranberry sauce with a hint of sweetness, and decadent desserts that’ll put the entire family into a food coma—but sometimes Stove Top doesn’t cut it. To ensure this year’s meal is a megahit, Style went straight to the experts—local chefs—to ask for the recipes that have their guests asking for seconds. Warning: Leftovers not guaranteed.
Appetizer: Tomato Tarts

• 2 sheets of puff pastry, thawed • 4 tomatoes • 1/2 cup of pesto (from a jar or homemade) • 1 cup of grated Parmesan cheese • Sugar • Salt • Pepper • Dried parsley for sprinkling Cut tomatoes into 1/4-inch slices. Push out most of the seeds and pulp. Set aside. Open up the puff pastry sheet. Cut into three pieces along the fold lines. Cut each strip into four pieces. On a floured cutting board, roll each piece to make a square. Place the squares of puff pastry on a baking sheet lined with parchment. Spread about a teaspoon of pesto on the pastry. Put a slice of tomato on the pesto and sprinkle with a dash of salt, pepper and sugar. Top with the Parmesan and pinches of dried parsley. Bake at 400-degrees Fahrenheit for 15 minutes until golden. Serve warm. Variations: Put a thin slice of pepperoni or sausage on the tomato before baking. Serves 24.

Render chopped bacon in a pan; set aside once crispy. Add onion and garlic to bacon fat. Cook until translucent then add flour to make a roux. Add milk to roux and slowly mix. Once incorporated, add sour cream until gravy consistency. Toss green beans, mushrooms and bacon into mix and fully coat. Top with shredded cheese and fried onions, and bake at 350-degress Fahrenheit for 45 minutes or until beans are tender.

Prepare a grill for high-heat cooking, allowing grill temperature to reach 500-degrees Fahrenheit; pat turkey dry inside and out with paper towels. In a small bowl, combine salt, chili powder and pepper. Loosen skin over turkey breast meat with your fingers and work a little of the salt mixture under the skin and over the meat; smooth skin back in place. Sprinkle remaining mixture over skin and in turkey cavity. Tie legs together with kitchen twine and tuck wings under body. Place on a rack set in a large roasting pan. Prepare the grill for indirect cooking by turning off one of the burners or by arranging hot coals on one side of the grill. Place turkey in the roasting pan over the burner that is off and turn remaining burners to medium (keeping grill temperature at 350-to 375-degrees Fahrenheit). If using a charcoal grill, replenish coals as necessary to maintain a steady temperature. Cover the grill and cook turkey, adding 1-1/2 cups of the broth to the roasting pan after 1 hour and again after 2 hours, for 2-3/4 to 3-1/4 hours total, or until an instant-read thermometer inserted into thickest part of thigh, without touching bone, reads 165-degrees Fahrenheit (about 13 minutes per pound). Transfer turkey to a carving board and let rest for 30 minutes before carving (while preparing gravy). Pour drippings from the roasting pan through a fine-mesh strainer into a glass measuring cup and let sit for 1 minute; spoon off any fat that floats to the surface. Melt butter in a medium saucepan over medium-high heat. Whisk in flour and cook until smooth. Add remaining 2 cups of broth and pan drippings and whisk constantly until smooth. Cook, stirring frequently, until gravy thickens, 3 to 4 minutes. Carve turkey, transfer to a platter and serve with gravy. Serves 14 with leftovers.

3/4 cup onion, chopped 3/4 cup celery, chopped 3/4 cup carrot, chopped 1/2 cup butter 3 cups chicken stock 1 tbsp. fresh sage, chopped 1 tbsp. fresh chives, chopped 1 tbsp. fresh thyme, chopped 1 tbsp. fresh parsley 1 pound sourdough bread, diced and crisped in oven 3/4 cup dried cranberries 1/2 cup ruby port 1/4 cup pumpkin seeds, toasted 1 tsp. salt and freshly ground black pepper

One day ahead, place dried cranberries in a bowl with the port to reconstitute overnight. Preheat the oven to 375-degrees Fahrenheit. Dice sourdough bread and drizzle with olive oil. Crisp bread on a sheet pan in the oven until just slightly golden brown and remove. Place chicken stock in a saucepan with herb scraps (stems, etc.), onion, celery and carrot scraps. Cook on medium heat and reduce by 1/3. Strain the chicken stock. Cook the onion, celery, carrot and butter in a large saucepan over medium heat for about 15 minutes, being careful not to burn. Remove from the heat, and add the chicken stock, sage, chives, thyme and parsley; stir well. Place the bread in a large bowl, and pour the mixture from the saucepan over the bread; toss until all the liquid is absorbed. Fold in the cranberries with the port and pumpkin seeds; season to taste with salt and pepper. Transfer the mixture to a baking dish and bake for 50 to 60 minutes, or until golden brown. CHEF’S NOTE: I’ve been using this recipe for about 15 years. It’s amazing and never disappoints—my family requests it every year—but I don’t recommend stuffing the turkey with it.

Prepare ahead for pre-dinner snacks. Cut out the high-calorie chips and cheese, and create a nutritious and colorful veggie tray with dips like guacamole and hummus.

Go green. Skip the heavier salads and sides, and instead choose a dark, leafy green salad using nourishing and low-calorie greens like kale, arugula, chard and spinach.
3.
Pass the potatoes. Mashed “potatoes” made with 1/2 sweet potatoes, 1/2 cauliflower and coconut oil contains more vitamins, fiber and flavor than the standard white potato recipes.
4.
Let the dinner rolls roll by. Instead of carb loading on bread, opt out. You’ll make room in your belly for tastier and leaner foods like turkey.
5.
Save room for dessert. No need to deprive yourself from the coveted pumpkin pie. Indulge in the filling, which is the best part anyway, and toss the crust.

Peel, wash and dice potatoes (same size, approximately 1”). Place in a large pot, add the salt and cover with water. Bring to a medium boil and cook potatoes until tender and fall apart when poked with a fork, about 20 minutes. Remove the potatoes and drain off the water well in a colander. Place potatoes back in pan; with a hand mixer, give it a quick mix to incorporate until smooth. Do not overmix or potatoes will become gummy. Fold in butter, then sour cream, half and half, Parmesan and chives. Add kosher salt and ground pepper to taste. Serves 10.

more seriously, they can cause lifethreatening punctures or blockages in the stomach and intestines. 3/Nutmeg Nutmeg causes central nervous system concerns such as seizures (or worse)—even in very small amounts. 4/Sage An oil found in this herb that’s commonly used in turkey marinades
and stuffing is known to cause stomach upset in pets. 5/Onions and Garlic Both of these foods contain sulfides, which can cause blood disorders that lead to anemia in pets. Note: Cooking does not decrease their toxicity. 6/Nuts Macadamia nuts and walnuts can cause a toxicity known as
“macadamia nut toxicosis,” a condition that can lead to shock and potential death. 7/Chocolate, dough and batter You’ve likely already heard that chocolate is “paws off,” but dough and batter are also concerns, due to the risk of salmonella from raw eggs. Dough even has the potential to rise
inside your pet’s stomach causing pain and bloating. 8/Alcohol Alcohol in any form is toxic, but the hops in beer are particularly toxic. Ingesting them can cause a condition called malignant hyperthermia, in which the body temperature rises uncontrollably.

2 cups whipping cream (no substitutes) 3 egg yolks, slightly beaten 2 eggs, slightly beaten 1/2 cup canned pumpkin 1/3 cup sugar 1 tsp. ground cinnamon 1 tsp. ground ginger 1/4 tsp. ground cloves 1/4 cup sugar

In a medium saucepan, heat whipping cream over medium heat until just bubbly. Remove from heat; set aside. Meanwhile, in a medium bowl, combine egg yolks, eggs, pumpkin, 1/3 cup sugar, cinnamon, ginger and cloves. Beat with a wire whisk or rotary beater until just combined. Slowly whisk the hot whipping cream into the spiced pumpkin mixture. Place six, 6-ounce custard cups in a 13x9x2-inch baking pan.
Divide the custard mixture evenly among the cups. Place the baking pan on the oven rack. Pour enough boiling water into the baking pan to reach halfway up the sides of the cups. Bake the custards in a 350-degree Fahrenheit oven for 30 minutes or until centers appear set when carefully shaken. Gently remove pan from oven. Remove dishes from water; cool custards on a wire rack. Cover and chill in the refrigerator for at least 1 hour or up to 8 hours. Before serving, let custards stand at room temperature for 20 minutes. To caramelize sugar: In an 8-inch heavy skillet, heat 1/4 cup sugar over medium-high heat until sugar begins to melt, shaking skillet occasionally to heat sugar evenly. Don’t stir. Once sugar starts to melt, reduce heat to low; cook 3-5 minutes more or until golden, stirring as needed with a wooden spoon. Quickly drizzle caramelized sugar over the custards. (If sugar hardens in the skillet, return to heat, stirring until melted.) Serve custards immediately. Makes 6 servings.

For many of us, this has become an almost quintessential dining experience: generous plates of inexpensive chow mein, fried rice, egg rolls and orange chicken, alongside steaming heaps of white rice; pleasant and gracious hosts and servers; red-bordered placemats featuring the 12 Zodiac animals (I’m a boar, by the way…noble and chivalrous, lifelong friends, marital strife, marry a rabbit); a fish tank, fountain or Buddha statue featured prominently; and your grandma slipping a soup spoon into her purse with

a wink because you said something about it being “pretty cool looking.” (Did anyone else’s grandma steal spoons for them when they were a kid, or was that just my goofy granny?) I took my parents to Fortune Garden recently to relive these experiences from my youth, and the restaurant didn’t disappoint. It serves what my dad likes to call “Chinese comfort food,” with updated and improved fare from what I remember as a child. The portions are just as hearty and the service just as amiable, but gone is the soggy broccoli and super syrupy sweet and sour pork of the late ’80s and early ’90s; here to stay are fresh veggies, subtle orange chicken and online ordering. My parents and I started with egg rolls that were crisp, hot and readied. After, we devoured steaming plates of mixed vegetable chow mein that boasted crisp and flavorful carrots, baby corn, celery, snow peas, onions (and more!) tossed with tender, salty noodles. We demolished the equally scrumptious broccoli beef—the broccoli florets bright and crunchy and the beef juicy and flavorful. The orange chicken was also pretty perfect, thanks to the delicate breading and sauce that was light but still full of tangy, sweet flavor. We ate to our heart’s content, packed up our leftovers, and then lounged in our booth, savoring the fond memories of yesteryear…and contemplating what we’ll order next time. And when I cracked open my fortune cookie? Happiness will come to you. Author’s note: No spoons were pilfered in the writing of this article.

taste CREAMY APPLE PARSNIP SOUP Soup for Syria: Recipes to Celebrate Our Shared Humanity Recipes compiled by Barbara Abdeni Massaad. Featured recipe by local resident Carolyn Kumpe. (Interlink Publishing Group, 2015, $30)
Heat the oil and butter in a large soup pot on medium-low heat until the butter is melted. Add the leeks or onions with a pinch of salt. Sauté on low until the leeks or onions are soft, about 8 minutes. Add the honey, bay leaf, and herb sprig. Cook until fragrant, about 1 minute. Pour in the stock. Add the parsnips, potatoes and apples. Cover the pan, bring to a simmer, and simmer for 30 minutes or until the fruits and vegetables are tender. Remove and discard the bay leaf and herb sprig. Allow the soup to cool.
dinner date Food and Beer for the Season Purée the cooled soup with a stick blender, food processor or blender. Return to the saucepan. Stir in the vinegar, cinnamon, nutmeg, and cider or juice. Cook on low heat for 15 minutes. Remove from the heat. Stir in the cream and season with salt and pepper. Return the pot to low heat, warming it gently, but do not allow the soup to boil. Ladle into soup bowls. Garnish as desired. Serves six.

With a commitment to innovation, the environment and supporting the local community, it should come as no surprise that Woodchuck has won numerous awards. Woodchuck Hard Cider’s Oak Aged Apple “Winter Chill” is homemade with apples from the company’s orchard partners in Vermont using a centuries-old technique, resulting in a cider that’s light, crisp and semi-dry with tremendous depth. Aged in premium French and traditional American oak gives it great complexity and broad characteristics that neither style could produce on its own. Every time I log on, there’s a link to another list: “26 Underrated Shows You Aren’t Watching Right Now”…“15 Struggles of Being Clueless in the Kitchen”…“23 Times André 3000’s Style Was ‘Swoon Worthy.” Please, will you just stop…please? I’ll give you eight reasons why. 8 / We know what you’re doing. Making a list is just a blatant attempt to get people to click on your website. Clicks add up, and the more you get, the more you can charge Ad Choices to post some stupid pop-up like, “1 Weird Trick to Powering Your Home on Belly Fat.”

Sure, it may only take a few minutes to click through “25 Reasons Bill Nye Was Your Best Teacher Ever.” I may even agree with a few of them (he does kind of look like a pre-beard Abraham Lincoln). But these damned lists—they’re like lime-flavored Tostitos: Once I get started, I can’t stop. So after Bill Nye, I’m clicking “14 Reasons Your Cat Owns You” (they really do seem to have the power of mind control), “24 Times Full House Was Perfect” and…dang, is it 5 o’clock already? 3/Overuse of the adverb “ever.” “Ever” is highly subjective: Say you compose a list of the “19 Worst People Ever,“ and your #1 is Adolf Hitler. Well, sure. We would agree on that. But at #18 you put Alan Thicke? Why?! Too good for Growing Pains? You know, for some people his Tahiti Village infomercials really did lead to a second honeymoon in Vegas. Secondarily, grown-ups should refrain as often as possible from ending any sentence with the word “ever.” In fact, it should really only be used by those under
10, and then only in reference to ice cream, rides at theme parks and/or the latest movie from Pixar. 2/Sometimes they’re so dumb, they make me mad. I’m looking at you, “10 Dumbest Things of All Time.” Yes, that’s an actual list. It includes “toilet roll hats,” “diet water” and—to be fair—“this list.” 1/They still suck me in. I know they won’t help me grow as a person. I know there are better things I could be doing with my time. I know it’s my turn on Words with Friends. Still, if I’m swiping through the screen on my mobile phone and I see “24 Struggles No One Understands About Working in a Call Center”…I’m sorry. I’ll be back in five minutes…and probably with a great new way for using belly fat to make my bed more comfy.
