If the problem feels like a tight muscle, then massage would probably be very helpful. If the problem involves actual restricted mobility of the joint and/or pain upon moving the joint—whether it’s in the spine or extremity— then the issue is probably more structural in nature and a chiropractor would most likely be the better choice. —Dr. Roger S. often practicing from sunrise to sunset, seven days a week in order to perfect his skills. And his hard work paid off—this year, Lucas qualified for and competed in the U.S. Open, finishing in 98th place. He aims to do even better next year. In his spare time, Lucas participates in numerous charity golf tournaments. On October 9, he’ll compete to raise funds for Aim Higher (aimhigherinc. com), a nonprofit that provides support for children with special needs. He’s also passionate about getting kids involved in the sport, especially since it helped keep him out of trouble as a teenager. “I don’t know where I would be if it wasn’t for golf,” Lucas says with a laugh. “Golf made me a better person.” — Amber Foster

W

hen Kevin Lucas was 13 years old, he was involved in a motocross accident that nearly ended his life. “I flipped over, and the bike landed on top of me,” Lucas recalls. In the hospital, his doctor told him he had a severe concussion, and that he could never risk another head injury. Lucas was devastated by the news, but he soon picked up his next (much safer) sport: golf. “For a year, every day after school, I’d go play golf by myself,” he shares. “I loved it.” Lucas, however, didn’t just want to play golf—he wanted to win at it. ctober is National Arts and Humanities Month, and the Folsom City Council, Folsom Arts and Cultural Commission, and the Parks and Recreation Department are celebrating! Throughout the month, Folsom residents are encouraged to explore new facets of the arts and humanities and begin a lifelong habit of active participation in the arts. It also provides an opportunity to celebrate cultural creativity throughout the nation and increase public awareness of the cultural services that are available in each community. Begin your exploration of what’s available locally with Folsom Parks and Recreation’s current Activity Guide, which includes a wide range of dance and art classes for youth, teens, adults and seniors. Most of these programs take place at the Folsom Art Center, located at 48 Natoma Street. Stop in, take a tour and learn more about the programs; while you’re there, take in the free Circles of Light exhibit in the Gallery at 48 Natoma. If photography is your passion, consider entering the Folsom Focus Photography Contest; entries are due no later than October 27 and will be featured in an exhibit later this fall at the Folsom Art Center. The public is also invited to join a walking tour of the newly restored public art at Folsom’s Natoma Station. Fifteen different artists—some who have garnered international acclaim since the pieces were fashioned in the 1990s—created the 21 pieces, which range from murals to sculptures. A local conservator and artist has spent the past two years carefully restoring the art to ensure it may be enjoyed for many years to come. f you haven’t found a mouthwatering concoction to satisfy your afternoon hunger yet, it’s time you visit Cheesesteak & Grill Stop on Prairie City Road. With a variety of menu items— from burgers, wings and subs, to the namesake cheesesteak sandwich—you’re sure to find something that’ll excite your taste buds. After passing by another customer devouring this eye-candy of a creation, I decided to order the masterpiece that is the CGS Special, and soon entered sandwich heaven. The tender steak packed a mouthful of classic flavor that left me unable to put the sandwich down. Although the sub was more than enough to satiate my appetite, the eatery offers an expansive variety of sides too, including garlic fries, fried zucchini and onion rings. What you love about the El Dorado Hills area: El Dorado Hills has so much to love— from our highly ranked schools, fabulous sports programs and Folsom Lake, to over 80 wineries in the county, and all the other wonderful tourism assets. If I had to pick one thing, it would be the people who live here—we are fortunate to have an extremely giving community when it comes to volunteering in our schools and helping all the great nonprofits. Goals for the El Dorado Hills Chamber: The chamber’s goals are to strengthen the local economy by retaining and growing our local businesses, along with attracting new companies to the nearly 900-acre business park. Serving small businesses is another goal; we want to be the “go-to” resource for business solutions and are working to develop a Small Business Resource Center—a onestop shop for small businesses. Advocacy is also a goal (advocate for a business-friendly public policy). We will continue to monitor legislation that can positively/negatively affect our members through our Government

Relations Committee and take positions and communicate in the most efficient manner to our members. The next five years for El Dorado Hills: El Dorado County is at a crossroads on “staying the same” or “growing.” Our hope is El Dorado Hills will continue to prosper as a vibrant community. It’s our goal to create jobs by attracting companies to our business park. Housing is a critical element to jobs; employers looking to relocate need homes for their employees to live in. Maintaining our schools is also essential—new homes equal new students—and maintaining our parks for recreation and youth sports, since new homes equal new parks. Diversity is the key to growth, and growth is a balancing act. One of my favorites quotes is by Lou Hotlz: “In this world, you’re either growing or you’re dying so get in motion and grow.”

HLB: What motivated you to paint? LA: A trip to Italy in late 2001. Going through my photos after the trip, I felt that I wanted to paint one. I had some bottles of stencil paint, bought a little canvas board and did my painting. I loved it. [The following year] I retired and had so many projects on my to-do list. I cleaned the garage, and then I took a painting class through Folsom Parks and Recreation. The rest of my projects are still waiting for me—it might be a long time. HLB: Were you artistic as a child? LA: No, I never had an art class after kindergarten. I think I wanted to do something, but didn’t know where to begin. I couldn’t draw anything. The most common thing people say is “I can’t even draw a stick figure.” Unless you only want to draw stick figures, you don’t need to be able to draw them. You can take classes, learn how to see things and draw them. Art teachers will often say, “Draw what you see, not what you think you see.”

HLB: What advice do you have for overcoming artist’s block? LA: If you’re having artist’s block, go to an FAA meeting and find some inspiration. If you still aren’t feeling it, find a Tuscan Morning photo you like, go to your easel and start painting; sometimes the hardest part is getting started—the inspiration will come.

tep into any grocery store and you’ll see what seems like an endless variety of cooking oils—canola, avocado, coconut, extra virgin, the list goes on! But did you know they all have different uses in (and out of) the kitchen? “There are many types of oils, all of which are made by pressing nuts, seeds or fruits,” explains Kirsten Ransbury, MS, RD, CDE, at Kaiser Permanente Roseville. “More nutrients are retained in cold-pressed oils. [Although oils each have] their own unique flavor, with processing, many taste very similar. The main difference is in their smoke points—the temperature at which oil starts to smoke in a pan. That smoke indicates that an oil has been damaged and should be discarded.” When choosing which oil to use in the kitchen, it’s important to think about the best oil for the job and the health effects, explains Debbie Lucus, MS, RD, CDE, and a clinical health educator at Sutter Medical Foundation.

Lucus also explains the oils can be lumped together based on fat types. Olive, peanut, canola and avocado oils are monounsaturated fats; grape seed, sesame, sunflower and soybean oils are polyunsaturated fats; and coconut, palm and palm kernel oils are saturated fats. Each of these oils affects your health differently. “In general, saturated fat is linked to inflammation and health problems such as heart disease and cancer, while monounsaturated and polyunsaturated fats are linked to better heath. Most oils are unsaturated, with the exceptions of palm and coconut. When it comes to daily intake, Ransbury says it’s recommended that oil be eaten in moderation—due to the high concentration of calories. “Fat found naturally in whole foods is preferable (nuts, seeds, avocado, etc.). Lastly, Stephanie Dodds, a healthy eating specialist at Whole Foods Market Arden, says it’s very important to store oils properly. “Air, heat and light cause oils to oxidize and turn rancid,” she says. “This is why you’ll almost always find oil in a dark glass container, and [should store it] in a cool, dark place. If oil oxidizes, it is no longer healthy to consume. • For baking, canola oil is a neutral flavor, so it won’t change taste. It’s also a good source of essential fatty acids. • If you do fry, you’ll need oil with a high smoke point, such as avocado, almond, peanut or safflower. When you sauté—which uses much less oil than frying—extra virgin olive oil, grape seed, canola and peanut oils are best. • For dips, dressings or marinades, go for olive, flaxseed (not for cooking), walnut or sesame oils. “These all add flavor to your food,” Lucus says.

hen Guy Sorber Jr. reflects on his childhood, he still remembers the pain of growing up without—without money, without a father, and without all the things other kids seemed to have. Weekly trips to the local food bank helped keep meals on the table, but Sorber admits he often felt embarrassed by his family’s situation. For years, he struggled with anger and a negative self-image, but sponsorships allowed him to participate in youth sports. The experience, he says, was “one of the most positive areas of my life in a difficult time.” For nearly a decade, Sorber (now a married father of two), searched for ways to help Folsom’s at-risk and low-income youth the way others once helped him. In May, he founded Youth Fore Golf (YFG), a nonprofit dedicated to offering free golf lessons to elementary and middle school students throughout Folsom. 32 stylefedh.com - October 2015

Y

ou’ve got to be slightly crazy to be in the restaurant industry, according to Chef-Owner Steven Long and his team at Le Charenton, which is how they landed on the name “Charenton”—a moniker they borrowed from a historic psychiatric hospital nestled amongst apartment buildings and boulangeries (bakeries) in the southeastern suburbs of Paris. When I visited the restaurant (sited in the former home of Chez Daniel) during late summer, the dining room was elegant but small. By the time you’re reading this, it should be much larger and completely renovated, featuring a full bar and wine room. Alain Foisy is the fine gentleman who heads up the front of the house, where you’re sure to enjoy a subtle and refined dining experience.

Rib Eye Steak Smoked Salmon Blini

At once buttery, briny, rich, and intense but balanced—these blini are truly brilliant.

Duck a La Ménage

The smoked salmon blini are an excellent way to start. Silver dollar-sized masa cakes are crowned with an adroitly stacked floret of smoked salmon, crème fraiche (sour cream’s richer, less sour sister) and American caviar. At once buttery, briny, rich, and intense but balanced—these blini are truly brilliant. The rib eye is generous, well marbled and grilled to your heart’s desire—resulting in a lovely cut of meat that’s utterly tender and juicy. The steak’s supporting cast doesn’t disappoint either. The potatoes, in particular, are remarkably good. When you consider that the starchy side is often a pretty unassuming sidekick, it’s exciting to see that such a humble root can become something extraordinary in the hands of an expert craftsman. Pair this dish with a tannic Tempranillo or Cabernet Sauvignon and you’re golden. The duck a la ménage—a roast breast, confit and sausage with flageolet beans, car-

rots and brandied cherry bigarade (a brown sauce prepared with bitter orange, among other things)—is inspired. Typically prepared by salting and then slowly cooking the meat in its own rendered fat at a low temperature, confit was originally a process used to preserve meats. Whether Le Charenton has its own secret twist on this tradition, I’m not sure, but they do it most proficiently. The sausage was also superb with flavors of Indian cuisine (turmeric, cumin and possibly cardamom), while the breast was on par with the best I’ve ever had. Whether you call it nouvelle, classique, haute, New American or Euro-American… Le Charenton’s cuisine is exquisite, skillfully prepared and mouthwatering. Bon appetit!

Maple Mustard Dip: • 1/4 cup maple syrup • 6 tbsp. yellow mustard • About 4 chicken thighs, cut into 16 pieces to fit the mini waffles (how many pieces you get will depend on the size of the thighs) • 1/2 cup flour • 1 tsp. salt • 1/2 tsp. pepper • 1/2 tsp. paprika • 1/4 tsp. garlic powder • 1 tsp. dried parsley • Oil for frying • 1 pkg. frozen mini waffles (you’ll need 32 individual pieces) • 4 pieces of thick-sliced bacon • 16 or more mini wafflesize pieces of pepper jack cheese (for pre-sliced cheese, cut into fourths. You might need to use more than one piece if it’s thin. I used 3 pieces. If using block cheese, you can slice thicker pieces.) Combine the ingredients for the tomato jam and cook until boil-

Cook the bacon in the microwave according to package directions; mine took 2 minutes. Cut into fourths. Salt and pepper the thighs. Combine the flour, salt, pepper, paprika, garlic powder and parsley. Dredge the chicken and set aside. Heat the oil. Dredge the chicken again, and then fry until golden. While they drain on a paper towel, set the cheese on top of each piece of chicken. This will soften and warm the cheese. Toast the mini waffles according to package directions. Assemble the sliders with the cheese on the bottom, chicken, bacon and tomato jam. Serve with the maple mustard dip on the side. Makes 16 or more.

Describe your business. Did you find it, or did it find you? Dry Diggings Distillery (DDD) is a craft distillery—the first in the area since prohibition ended in 1933. We make spirits (not beer!). Spirits have always been an interest, in more ways than one. No one else was doing this locally, so we decided it would be a great adventure to see where we could take it. We’ve had to overcome a mountain of regulations—local, state and federal—and even had to work to change some laws to make our business viable. Through it all, however, we have continued to endeavor (like the miners did in the 1800s) and are finally at the point where we have products going into bottles and a tasting room like no other in the area. How are you involved with both the community and your customer? We wanted to tie our business directly to the community and the rich history of this area—hence the name, Dry Diggings, which was both the name of Placerville before it became known as Hangtown and is also a method in which to prospect for gold. We want to share the history of the Gold Rush and the impact this had on both California and the U.S., as we feel this has been lost over the years. Our tasting room is reflective of what would be found in the 1800s, and each of our products carries a name that is tied to our community’s history in some way. We are also personally involved with multiple community organizations and events, including the local chamber of commerce, the El Dorado Hills Community Foundation, the Wagon Train End of the Trails event, and others. We look forward to being involved in even more local events as our business grows. Where do you go when the going gets tough? B

eneath a dusty autumn sun, the Sacramento River flows. And beneath the whorls and ripples of its impenetrable green water, the great fish return. King salmon. They’re back, invisible, save for the occasional splash on the surface or chaotic rip on a h o p e f u l f i s h e r m a n ’s rod. Otherwise, they lurk beneath the surface like restless subconscious thoughts. The Sacramento River wa te r s h e d i s h o m e to the second largest run of returning fall king salmon in the lower 48. Only the Columbia has more. This year, there will be an estimated 700,000 returning after three to four years at sea, in waters as distant as Alaska. Yep—it’s possible that the “Alaska-caught” salmon you bought for $30 a pound actually came from the Sacramento River or one of its tributaries. But don’t feel bad for not knowing— they’ve never been very good about sending postcards. so much as Siri to give an address to. And let’s not forget they’re doing this entirely underwater. At least birds have the benefit of seeing where they are. It’s utterly impossible for us to relate to—I get disoriented if I close my eyes in the shower. Not to mention that from the moment they hatch, they’ve been dodging more obstacles than a contestant on American Ninja Warrior— the jaws of predators, the poisons of pollution, fishing nets, lures (some of those, mine). I am in awe of their ability to survive. But the past few years have been a m o n g th e i r to u g h e s t te s t s ye t— returning to a watershed left low and warm by record drought. Meanwhile, the water that is left is being fought over like the last beer in a frat house fridge. Sure, as long as there are hatcheries like

Nimbus on the American River (which of course is a tributary of the Sacramento and a great place to actually see these wondrous creatures), the salmon have a chance. But studies have shown hatchery salmon don’t have nearly the survival instinct—the street smarts, if you will— of wild salmon. Born into tough neighborhoods of moving water and river gravel, wild fingerlings a r e j u s t w a r i e r. A s adults, they’re better at surviving. So the more wild salmon there are, the healthier the population will be. But wild salmon feel the impact of drought the most. They need cool water. Without it, many of the eggs will die without even hatching. But as our reservoirs draw down further and further, the task of maintaining cooler river water becomes tougher and tougher. I don’t have an answer to California’s water future or know if there even is one that works for everyone and everything. In the short-term, I hope this winter El Niño hits us like a fire hose. But in the long-term, I’m at a loss. I do know I am going to root for the salmon, and not just because I fish for them. Even if I don’t catch one (which is often), I love just knowing they’re out there. There’s something about them that’s as majestic as any redwood grove, as rugged as the Big Sur coastline, as timeless as our golden hills. It would be a shame to reach a day when their splashes are heard no more.
