After reading this month’s feature, “Be Wine Wise” by Megan Wiskus—a treasure trove of wine secrets straight from area connoisseurs—my mouth will not stop watering. Might I have a wineloving problem? Q&A Q: What comes to you naturally? Kris: Coaching football and being a dad. Troy: Teaching, motivating and leading. Q: What’s your biggest pet peeve? Kris: Whiners. Troy: Excuses instead of commitment. Q: Biggest life inspirations? Kris: My mom and dad—they taught me the value of hard work and how to be a good person. Troy: My wife’s love, support and belief in me.
Troy Taylor and Kris Richardson K ris Richardson and Troy Taylor have more in common than their position as co-head coaches of the Folsom High School varsity football team. They’re both P.E. teachers, fathers of three and former football players (Richardson played for the University of New Mexico; Taylor spent two years as a quarterback for the New York Jets). And although the two men moved in similar social circles during high school, they didn’t officially meet until their first day working at Folsom High—and quickly became the best of friends. “We spend all day together,” Richardson says with a laugh. “Our kids play at each other’s houses.” The two men also share a similar philosophy when it comes to coaching. “The foundation of what we believe is 14 stylefedh.com - September 2015
honest and open communication with kids,” Taylor explains. “It’s about acceptance for who they are, bonding and belonging.” Together with their team of coaches—many who volunteer their time—Richardson and Taylor aim to motivate kids through teamwork and positivity, as opposed to fear. And it’s worked: The Folsom High School Bulldogs have won two state championships since 2010, and they’ve been section champions for four out of the last five years. Even more rewarding for the two coaches, however, is being able to prepare the players for their future careers and lives. “Team culture is about everybody being valued, not just great players,” Taylor shares. “Through football, kids get confidence in all aspects of their lives.” — Amber Foster

folsom zoo spotlight Meet Gus the Horse
I
t’s friendship...just a perfect blendship are lyrics to an old song that ring true in the case of handsome horse Gus and guard dog Annabelle, an unlikely duo who met at the Folsom City Zoo Sanctuary in 2007. Both animals hang out in the shady pasture, and oftentimes you’ll see Gus gently licking Annabelle’s face; she reciprocates by mouthing the big horse’s ears and neck. Life is good. Ancestors of horses originated on the North American continent 60 million years ago, but then disappeared before returning with the arrival of Spanish explorers. Escaped horses formed the beginning of the great herds that spread upward from Mexico and transformed Native American cultures—with Plains and Great Basin groups becoming expert riders and horse breeders. Here in Folsom, Gus and Annabelle continue to horse around like two kids and best friends. —Roberta Ratcliff

A large cup of perfectly cooled and blended exotic acai, banana, blueberries, coconut sugar and house-made almond milk—mixed with fresh granola and topped with additional fresh fruit and snow-like coconut shavings— instantly reminded me of my previous trials at pure, healthy eating. Miles of bike (and pedestrian) trails in Folsom (including the Willow Creek and Humbug Creek trails). The best part? With our summers being SO hot, a good portion of the trails traverse through beautiful wooded areas, so there’s plenty of shade to take shelter from mean old Mr. Sun.
$125 MILLION The total worth of gold from the dredging operations that ran in Folsom and Mormon Bar from 1898-1962. In 1916 alone, the Natomas Company of California, one of the biggest companies—with 11 dredges—yielded $2 million worth of gold.

Year the duck ponds at Governor’s Park (now known as the Reid White Jr. Memorial Duck Ponds) were created. El Dorado Hills proper is a relatively new community, compared to Gold Rush-era cities and towns in the region, but preserving these pieces of history is still hugely important. The ponds are undergoing restoration for the first time since 1999, removing sediment and invasive plants to improve the water quality and vegetation for the animals that live there and the folks who visit.

5 Dehydration Myths by Kristen Castillo

our body needs water to do everything—from keeping you cool to helping your heart pump and digesting food. Drink too little and your body won’t function well. Think you know what it takes to be water wise? Read on as local doctors debunk five dehydration myths.
“There are no studies that actually support this,” says internal medicine physician Anthony Retodo, M.D., medical services director at Kaiser Permanente Folsom Medical Offices. He says determining how much water you need depends on your daily activity, exercise level and diet, as well as your personal physiology and how much fluid your body needs to keep cool.
Myth 2 / You Can’t Drink Too Much “It is certainly possible to drink too much, [which] leads to the issue of hyponatremia in exercisers who overhydrate,” says sports medicine specialist Jeffrey Tanji, M.D., associate medical director of the Sports Medicine Program at UC Davis Health System, explaining hyponatremia refers to low sodium in blood serum, which is typically lost by sweating and then replaced by drinking lots of plain water. With symptoms like passing out, weakness, confusion and loss of consciousness, hyponatremia can be a medical emergency.
Myth 3 / All Drinks Are Created Equal “Water [is] fine for shorter, easier workouts of up to 45 minutes where you’re not sweating a lot,” says Roopinder Poonia, M.D., a nephrologist for Mercy Medical Group, a service of Dignity Health Medical Foundation. “However, if you’re doing a more high intensity activity or workout where you’ll be sweating a lot, especially in warmer w e a t h e r, h a v e a sports drink.” That’s because sports drinks have electrolytes— dissolved minerals like sodium, calcium and magnesium, as well as carbohydrates, which are quickly absorbed in the bloodstream. KEEP YOUR HYDRATION LEVELS IN CHECK • The Institute of Medicine recommends adults consume 91-125 ounces of water a day from drinks and foods. • Know the symptoms of mild dehydration such as thirst, dry mouth, weakness and headache. • Make sure your urine is clear to pale yellow; dark yellow urine indicates dehydration. an optimal balance,” Dr. Poonia says. Or, consider sipping coconut water, which Dr. Tanji calls, “a naturally occurring sports drink with the proper mixture of water, electrolytes and carbohydrates.” You might want to reach for chocolate milk too since, as Dr. Tanji notes, it has leucine, an amino acid that helps the body recover from exercise. Stay away from caffeinated drinks and alcohol, which can actually cause dehydration, and avoid juices since their high sugar content can upset your stomach.
Myth 4 / Only Drink Water When You’re Thirsty Don’t wait to be thirsty to start drinking H2O! “You must be proactive about drinking to avoid getting behind,” says Dr. Poonia, noting the body loses water all the time through sweating, breathing, urine and stools. “Staying hydrated is particularly essential if you’re out in the sun, doing physical activity, or working in the heat,” he says.
Myth 5 / Replenish Fluids After You Exercise It’s smart to quench your thirst after exercising, but it’s better to drink before and during your workout too. “The way to know if you’re drinking enough water is to simply weigh yourself before and after you exercise,” says Dr. Retodo. “If your weight is the same, then you are drinking enough.”

or local parents Jason and Kirsti Kinkle, the celebration of the birth of their daughter Kiira Faith quickly turned alarming when they noticed her skin and lips were bleeding. After a tumultuous 10 days in the NICU, Kiira Faith was diagnosed with recessive dystrophic epidermolysis bullosa (RDEB), a rare and possibly life-threatening genetic condition that causes blistering and tearing of the skin from often even the slightest friction. Genes determine a plethora of traits, from the color of our hair to the shape of our toes, and everything in between. Yet, sometimes, the unique set of genes we inherit from each parent carries a piece of a problematic puzzle that, once joined, becomes a hindrance to our health. RDEB is one of the rare genetic conditions that can occur. Having RDEB means Kiira Faith’s body doesn’t make collagen VII, which is needed to hold together the layers of skin. Kirsti explains, “RDEB isn’t just a skin condition you can cure with a certain diet or cream. It’s genetic and a mutation in your DNA, and you can’t change your DNA.” The challenges Kiira Faith comes up against can often seem like insurmountable feats, but Kirsti, along with her husband Jason and their two other daughters, are determined to help Kiira Faith live her life to the fullest. “RDEB threw our family a huge curveball. Although it took some major adjustments, we were still able to take a family vacation, continue with the girls’ activities, church activities and even fit in some work.” Getting a diagnosis was not the end, but
rather the beginning of a very long road for the Kinkle family. “Your skin is your largest organ that is also in your mouth, esophagus, stomach, intestines and eyes. All of these areas are affected by RDEB,” Kirsti explains. While the medical tests, procedures and surgeries can be harrowing, Kirsti says faith and friends help get them through the hard times. “The emotional side of dealing with a child who has such a serious condition was, and is, the biggest barrier we’re trying to overcome, but the support and prayers of family, friends and even strangers, has helped us immensely,” she says. Though Kiira Faith has been through a multitude of surgeries and procedures, including a bone marrow transplant this past summer, Kirsti emphasizes that her daughter has a strong spirit and that natural, mischievous toddler spark. “Kiira is an active, smiley, happy baby. She loves her sisters, music and grabbing things she shouldn’t!” Kirsti says. When asked what people can do to support Kiira Faith and other children with RDEB, Kirsti says the answer is to spread awareness. “Tell people about RDEB and hopefully a rare condition like this can get more funding for research.” She also rec-

This month, from September 26-27, the sixth annual Folsom Railroad Festival—a free family event showcasing “anything on wheels,” along with train rides, music and three convention rooms of model trains—takes place along Placerville Road (across the street from Hampton Inn) in Folsom. The arrival of fall also brings a special excursion train, the “Pumpkin Patch Flyer” (the last two weekends of October), which carries families from Folsom to Willow Hollow Pumpkin Patch and back. That’s in addition to several regular excursions every month, including the “Latrobe Breakfast Special,” a monthly one-hour trip from Folsom to Latrobe, where passengers enjoy a pancake breakfast at Latrobe’s Community Hall. The idea of it all is to keep local residents in touch with our area’s rail history and invite them to get involved in preserving it. Family memberships in FEDSHRA are just $48 per year, while individual active memberships are $24 per year, and all proceeds from memberships and excursions go back into maintaining the railroad and museum. New additions to the all-volunteer staff are also welcomed, to help with the business side of running a railroad, maintaining equipment and staffing the museum.

Perhaps it’s the slower pace and homegrown hospitality of the countryside, or maybe it’s the majestic beauty of the mountains, rivers and trees. Whatever the secret ingredient is, our area seems to beckon to the best amongst artists— from painters and mixed-media mavens to illustrating innovators and digital masters. By keeping a finger on the pulse of this burgeoning scene, Style handpicked this selection of up-and-coming artists—only a sampling of the tenacious talent that calls this area home. You’d be hard-pressed not to be blown away by what these artists are creating, as indeed these are the ones to watch.

orn and raised in Romania, Alexandra Badolian now brings her mixed-media portraits, landscapes and collages to the El Dorado Hills art scene with an alluring marriage between classic European and contemporary American influences. In addition to winning several awards from the Placer Arts League, her work has been shown at numerous local galleries and at her own BI Design Studio.

HLB: What mediums do you prefer? AB: I’m comfortable creating in many different mediums—from classic watercolors and oils to mixed media and computer. It really depends on the theme of my pieces.

HLB: Were you always artistic? AB: I’m fortunate to have parents who realized at an early age that I was talented and enrolled me in the fine arts school in my hometown of Bucharest. I learned the great techniques and tools a young artist needs to express themselves and went on to a fine arts high school where I studied fashion design for four years. It was fun—a young girl’s dream come true—we were designing, sewing, working with models and putting together our own fashion shows.
HLB: What brought you to the states? AB: I continued my education by getting a master’s degree in Florence, Italy. That was the year that changed my life. Three weeks after school started, I met my wonderful, future husband who was attending the same school. It was like the Italians say, colpo di fulmine—a strike of lightning. We fell in love and married six months later. We were so blessed to live and study in the most beautiful city in Europe, Paris (forgive me for being biased), but decided to come back to California where my husband is from. Soon after, we opened our own business, BI Design Studio, which specializes in interior design, flooring, kitchen and bath products. HLB: Who or what is your major influence? AB: My mother—she found the perfect balance between the roles of mother, businesswoman, wife and daughter. She’s a role model for my little girl and me. HLB: What advice would you give to beginning artists? AB: Never be afraid to erase and start again. It’ll always be better than what it was. badoliandesign.com

tudying history with a minor in fine art in college, David Kalbach didn’t initially push his artistic talents, deciding instead to pursue an MBA. Yet, even in the business world, he gravitated toward a visionary career in advertising— finding it a fun challenge to solve communication problems amongst other creative types. With his children leaving the nest, Kalbach is finally bringing his art front and center, allowing it to receive the recognition it deserves. HLB: What were you like as a young artist? DK: I didn’t have any direction or any real idea as to how you [could] make a living. Having seen Lust for Life about Vincent van Gogh at an impressionable age, I didn’t have high regard for the arts as a way of life. HLB: Have you been blocked as an artist? DK: Artist’s block is a part of life. Sometimes it’s just being afraid of making a mark that’s wrong or doesn’t translate what you’re trying to create. It’s at this point when you have to drum up the courage to throw yourself into the fray. Don’t be afraid of making an error—try a solution that may be the opposite of what you’re trying to achieve. A wild approach may suggest a different answer, or may become part of a solution.

HLB: Do you deliberately paint certain subjects? DK: Inspiration strikes first. Paintings of people are generally people I’ve known or have become acquainted with—people whose personality, or some other aspect of their persona, I’m excited by. HLB: Why do you gravitate toward pastels? DK: I picked them up not too long ago because of an artist friend, and ever since I’ve evolved to doing a lot of pastels. I’m the treasurer of the Pastel Society of the West Coast—the second largest [pastel society] in the U.S. HLB: What do you enjoy most about your community? DK: The area of Folsom and El Dorado Hills is ideally situated—close to Sacramento, the Bay Area, the mountains and Lake Tahoe. While we can still take advantage of all the amenities of a large cosmopolitan area, I enjoy the benefits of being away from all of that noise and bustle. kalbacharts.com September 2015 - stylefedh.com 41

lthough James Canning creates his captivating and quizzical pieces from photographs, it’d be a mistake to call him a photographer. The El Dorado Hills artist—whose work can be viewed at the Gold Country Artists’ Gallery—begins with a single image and then creates compositions from a variety of materials that are both organic and digitally altered. What emerges is a piece that stops its viewer in their tracks and asks them to take another look, then another, and to keep looking. HLB: How do you create your pieces? JC: I love the patterns in nature and how related patterns appear across widely differing parts of the universe. Each of my pieces utilizes a number of photographs, which I modify for color, shape, size or some other characteristic. On my computer, I work them together—according to the theme for the piece—although the result is nothing like a traditional collage. I use a digital brush to paint in, or remove, detail. HLB: How’d you get started? JC: I started drawing and painting around the age of 13 and just loved it—most of my teenage angst went into art instead of something less fulfilling. My mother encouraged me with her love of art, which helped. My dad then gave me a camera and darkroom equipment, and I’ve loved photography ever since. HLB: What inspires you? JC: Surrealism has always delighted me, along with any detailed, realistic technique— from painting and drawing to printmaking. HLB: What’s your best tip? JC: Try lots of different mediums. Work at developing technique, not producing finished pieces, as the polish will come later. Go to museums and galleries— don’t just browse the Internet—since art is always better in person. Spend time with people who enjoy art, including other artists. When you see a piece you love, think about what specifically appeals to you.

odi Queenan creates whimsical drawings as an expression of what’s dearest to her, which is reflected in themes of children, bonds of family, landscapes and animals. “My artwork was always an extension of what’s within my own heart first,” Queenan says. Author and illustrator of the book Twinkle Twinkle, Queenan is also a member of the Folsom Arts Association and showcases her work at the Sutter Street Art Gallery. HLB: How do you begin a piece? JQ: I first sketch my pieces on watercolor paper, sometimes a sketchbook if I’m away from my studio. Next, I use permanent black pen to trace over the lines I want to keep, and then add watercolors. I also use pencils, acrylic paint and collage paper—depending upon the piece—then scan it into Photoshop. I usually sell open and limited editions; to date, I’ve sold over 1,300 pieces and shipped all over the world.
HLB: What medium do you prefer? JQ: I love all different mediums, but I usually fall back to my pen and ink illustrations, which is artist lingo for a Sharpie and a set of watercolors. They’re portable, and I can move through my house or anywhere to work on a piece while watching my little boy play. HLB: How’d you get your start? JQ: I began as a professional photographer. Eventually, my need to try new things led me to pen and watercolor. I loved how I could enjoy art independently without needing a subject. People bought my pieces and it just evolved. HLB: If you weren’t an artist, what would you be? JQ: That’s simple: I’m an elementary school teacher, and I love it. My students are a joy! HLB: What would you tell your students who want to study art? JQ: Be true to yourself and create because it brings you hope and joy, or perhaps it’s something you need to communicate to the world, but be shrewd as well. HLB: What inspires your art? JQ: I try to share the love and hope that my relationship with Christ has given me, within my paintings and without words.
I
nspired by shadows, color and pattern, painter Jeanine Robb crafts close-up, intimate and unusual views of still life. “Each summer, I take a traveling art trip to explore new mediums and hone my skills,” says Robb. “I’ve been all over the U.S., Canada and Ireland taking workshops.” Since she began exhibiting and selling her work, the artist has won several “Best in Show” awards for her watercolors and has been published in Sketchbook Magazine, as well as Cloth, Paper, Scissors. HLB: Why watercolor? JR: I love the challenges they present. Watercolors can have a mind of their own, and I love that unpredictability. I’ve recently expanded into printmaking, using water-based inks and a gelatin plate. Printmaking opens up experimentation, which I like, and has led me to trying other forms including linocut and collagraph. I’ve also been dabbling with digital art.

HLB: When did you discover you were an artist? JR: My mom was creative and encouraged me from a young age. I remember each summer starting with new materials, such as a pack of construction paper or colored pencils, and exploring. When I was in high school, my best friend was taking oil painting lessons and that’s when I got into painting. I took a drawing class in college but didn’t pursue art again until I started working and needed a creative outlet. HLB: How have you dealt with setbacks? JR: Once I started putting myself out there, I had to realize that art is subjective and rejection is part of the game. I’ve had to learn to not take it personally and keep doing what I enjoy doing—keep sharing through the various outlets available to me.

HLB: What’s useful about art associations? JR: Art-making can be isolating, so having the opportunity to interact with other artists opens you up to new opportunities and keeps you connected. HLB: What do you love most about Folsom? JR: One of my favorite things is how many excellent artists there are—artists who are so generous with their time and experience. Certain areas have been granted an AVA (American Viticulture Area) designation, because they have demonstrated they have unique growing conditions. rench cuisine is celebrated worldwide, but it can often be a little intimidating with its hard-to-pronounce dishes, unusual meats, overwhelming wine lists and “delicacies” like snails. If you’ve ever felt anxious about trying la cuisine française, you’re not alone. Luckily, Café C in El Dorado Hills offers fare that’s approachable and will delight both the discerning connoisseur and the French food neophyte. The café is tucked back in a cozy corner beneath the behemoth movie theater at the end of Vine Street in Town Center. Stepping inside is akin to stepping inside a quaint café in southern France, except that Café C includes a full bar as well as a separate private dining space. The ambiance is exceptional, and the front patio is a lovely spot to relax and enjoy their

taste MEATBALLS FROM RAO’S NYC Food52 Genius Recipes: 100 Recipes That Will Change the Way You Cook by Kristen Miglore (El Dorado Hills native!) (Ten Speed Press, 2015, $35)

1 lb. lean ground beef 8 oz. ground veal 8 oz. ground pork 2 large eggs 1 cup freshly grated Pecorino Romano cheese 1-1/2 tbsp. chopped fresh flat-leaf parsley 1/2 small clove garlic, minced Kosher salt or sea salt Freshly ground black pepper 2 cups fresh breadcrumbs 2 cups lukewarm water 1 cup (good-quality olive oil, for cooking Your favorite marinara sauce Pasta, for serving (optional)
Combine the beef, veal and pork in a large bowl. Add the eggs, cheese, parsley and garlic. Season with salt and pepper. Using your hands, blend the ingredients together. Mix the breadcrumbs into the meat mixture. Slowly add the water, 1 cup at a time, until the mixture is quite moist. (If you want to make sure the seasoning is to your liking, fry off a small test meatball, taste, and adjust.) Shape into 2-1/2 to 3-inch balls. Heat the oil in a large sauté pan. When the oil is very hot but not smoking, fry the meatballs in batches. When the bottom half of each meatball is very brown and slightly crisp, turn and cook the top half. Remove from the heat and drain on paper towels. Heat the marinara sauce to simmering. Lower the cooked meatballs into the simmering sauce and cook for 15 minutes. Serve alone or with
dinner date Food and Beer for the Season pasta. Makes about 28 meatballs. Genius Tip: This recipe works best if you make your own fresh breadcrumbs (that is, grind or grate some stale bread.) In a pinch, if you need to use finer, store-bought breadcrumbs, cut back by half, and don’t use quite as much water. (The full measure of store-bought crumbs would give you something resembling a stiff, mealy dumpling.)

Our firm is here to help busy professionals, personal households and/or aging citizens who need bookkeeping services, financial organization, HR or payroll support. We specialize in helping you free up your schedule so that you have time to follow your own passions. What was the first job you ever had, and what did you learn from the experience? My first job was as a teenager at Nestle. It taught me that—if you’re fair to others, work hard and don’t take yourself too seriously in the process—you can be anything you set your mind to. How are you involved with both the community and your customer? I joined the El Dorado Hills Chamber to get involved with the business community and meet other businesspeople. What life accomplishments are you most proud of? Raising our two sons is first; having a career as a financial controller would be second. Who is your role model in business or in life, and why? My dad taught me work ethics and tenacity, and my mom taught me fairness and sensitivity. What’s your hidden talent? Interior design is a secret passion of mine. What’s your biggest job perk? I’d usually get a triple. The pastry case was stocked daily with muffins, scones and bagels. When my mom was alive, we’d take her there because she loved the lemon bars…LOVED them. Sometimes she’d order two. Hey, when you’re in your 80s, you can do that. What happened? I’m not sure, but a major coffee chain opened a drivethrough-only stand at the other end of the plaza. I would marvel at the number of cars that would queue up in front of that place, when Pipeline was only another 100 yards away. Did they not know? Was actually getting out of the car that much trouble? What I do know is, owning a business is tough. A Gallup poll shows 50 percent fail over the first five years. Other polls indicate as many as four out of five small businesses fail within 18 months. No matter how you look at it, it’s daunting. If you own your own business, my hat’s off to you. You’ve got more courage than me. What’s more, you’re part of
the real engine that drives this country. Forget headline-grabbing multi-national corporations and dot-com start-up zillionaires: The American economy starts with small businesses. The 2010 census says there were over 27 million small businesses in America, and according to the Washington Post, those with 50 employees or less account for a third of all jobs in this country. I don’t know where Tim is now, but I hope he and those he employed land on their feet. I hope the kids in those bands find somewhere else to play. And I hope if you’re out looking for coffee today—or anything else for that matter—that you consider visiting a small business first. They’ll be happy to see you. And they’ll sincerely appreciate your patronage.

y favorite coffee place closed down recently. I’d visit Pipeline (which used to be It’s a Grind) two, sometimes three times a week after waking in my usual stupor from the daily nap I take—because getting up at 3:30 a.m. every morning kinda sucks. But one day this spring, there was a small, handwritten sign on the door saying they were no longer in business. The note was brief, written on a small scrap of paper. There was no explanation, just an apology for the inconvenience and “a sincere thank you” to regular customers for the years of patronage. Just like that. Done. I peered inside. The pastry case was empty. Shelves behind the counter were mostly empty, too. Tables and chairs were still there, though, and a newspaper still lay folded on the arm of an old couch by the window. I knew the owner, Tim, by name but not much more. Over the years we’d made a lot of small talk. He was nice but always busy. He was there a lot. He used to have live music on the patio out front on weekend nights—local artists. Most were young, maybe their first time in a band. They usually weren’t all that bad. Or good. But Tim was giving them a chance to perform, and if nobody in the coffee house came outside to listen, they had a captive audience whenever the westbound FOR MORE TOM’S TAKES AND... light on Foothill at Pleasant WHAT’S COMING Grove turned red.
