It feels like just yesterday. Wait, did I really just say that? My AARP membership card should be in the mail today. Ice wine is a type of dessert wine that’s produced from grapes that have been frozen prior to fermentation. The water within the grapes freeze while the sugars, acids and fruit essences do not, allowing a highly concentrated juice that must be physically pressed from the grape. The wine has a deep golden hue with intensely sweet but pristine fruit profiles and bright acidity while retaining good structure and balance. At its best, ice wine is like liquid gold that is silky with elegant flavors and a lingering texture. Hands4Hope youth coordinated and hosted several food drives from September through November to provide an opportunity for our community to support the efforts of local food banks and programs supporting the hungry in our community. When Roxburgh was given the opportunity to open a Fleet Feet Sports franchise in Fair Oaks, it seemed the perfect way to combine his business acumen and his love of sports. Since opening the store over three decades ago, he’s worked hard to get people off the couch and moving. He founded both the Tri for Fun Sprint Triathlon Series and the American River 50-Mile Endurance Run, as a way to help make endurance sports fun and accessible to the general public. olsom resident Will Roxburgh’s passion for health and fitness started when he was a young boy growing up in Sacramento. Every day after school, he’d play outside with his three brothers and other neighborhood kids—swimming, biking and participating in other sports. Although he went on to complete a degree in business administration, he continued to pursue his interest in athletics—competing in numerous marathons, triathlons and the Western States Endurance Run in 1991, a grueling, 100-mile run from Squaw Valley to Auburn. “It was awesome,” he recalls. “We were running in the middle of the night. There was such quiet. I got to experience things that I never would have otherwise.” Roxburgh finished the run in 48 hours and 50 minutes and

PRESCHOOL FITNESS PROGRAMS; AGES 3-6 Classes for this age group focus on coordination, motor skills and elementary skills; selections include swim lessons, soccer, tennis, taekwondo, basketball and dance. Many of the programs require parent participation.
YOUTH AND TEEN FITNESS PROGRAMS; AGES 5-18 Classes (selections include taekwondo, dance, soccer, tennis, football, wrestling, archery, basketball, fencing, baseball, futsal, volleyball and swimming) provide an introduction to the fundamental skills required for each sport and teach the principles of teamwork and sportsmanship.
ADULT FITNESS PROGRAMS Try out a new activity or build on existing skills, relieve stress and meet new people; offerings include dance, yoga, tai chi, tennis, lap swim, aquacise and various sports leagues. Some of the programs are ongoing due to their popularity, and mature teens may sometimes enroll.
SENIOR FITNESS PROGRAMS Programs for seniors exercise the mind and body and serve as a valuable social outlet. Many help participants avoid injury by building and maintaining strength, balance and flexibility. Selections include yoga, tai chi, Zumba, aquacise, a “Forever Fit” series, and the guided Walk and Talk program that takes participants on tours of Folsom’s beautiful recreational trails. Drop-in pickleball continues to be a very popular program, with beginner through advanced classes and tournaments offered. Seniors may also enroll in adult fitness programs and sports leagues.

T
he Santa Barbara at Windplay Deli is just one of many delightful sandwiches that keep folks returning to this workday gem in El Dorado Hills. Along with turkey, avocado and sprouts on whole wheat bread, mine had “everything on top,” which included lettuce, mayo, mustard, pickles, tomatoes and red onions. Needless to say, my sandwich had a myriad of flavors and textures, while still managing to stay light and fresh, allowing my taste buds to take a trip down the coast and linger there for the rest of the day. Accompanying my experience was the endless chatter of returning customers, two of whom asked for “the usual” and another who loudly proclaimed his sandwich to be “the best I’ve ever had,” convincing me that this deli is a wellkept secret that’s hidden among the hills. With friendly service, picturesque views and a sub for every want or need, Windplay Deli can please just about every kind of sandwich-eater…it most definitely pleased me! Kids Helping Kids (KHK) Sacramento—a nonprofit made up entirely of Del Campo High School juniors and seniors—goes all out when it comes to fund-raising. Their Fourth Annual Gala—set to take place January 7 at the Harris Center— will feature performances by headliner Needtobreathe (a Grammy-nominated rock band) and Johnnyswim (a bluesy husband-andwife duo who were named VH1’s “You Oughta Know Artist”). Proceeds from the gala benefit the College Bound program, which provides low-income college freshmen with $300 to stock their dorm rooms, as well as a tutoring program that allows the high school students to visit area elementary and 18 stylefedh.com - January 2016

ndy Kurimay first found his passion for woodworking while taking shop classes back in junior high. Years later, after retiring from his career as a building contractor and electrical design engineer, Kurimay returned to these artistic roots. Now—along with his wife of 50 years, Cheryl—the artist crafts gorgeous, one-of-a-kind wooden pens at his shop in historic Folsom. “I modify my pen-making machinery and finishing processes to create pens of quality and dependability for daily use,” says Kurimay. You can view the artist’s work at the Folsom Arts Association’s Unexpected Visions exhibit at the Gallery at 48 Natoma through January 7.

folsom police explorer program Law Enforcement and Life Lessons
W
ill Randall has always had an interest in law enforcement and hopes, one day, to parlay that interest into a job as a police officer. “It’s a service-oriented career,” Randall says. “I feel I have a mission to help and protect people, and law enforcement is one of the best careers to do that.” Randall, 19, is a student at a local community college and also entering his fourth year in the Folsom Police Department’s Explorer program, which launched in 2012 and is open to men and women aged 1420 who are not only interested in learning more about law enforcement, but also want to learn important life skills. The program’s roots are in the Boy Scouts, which helped create a national model for connecting young people to education, training and community service through their local police and sheriff’s departments. “In addition to the law enforcement curriculum, we give them tools they can apply to any career,” says Detective Chad Friedrich, who oversees the Explorer program for the Folsom Police Department. “We teach them 30 stylefedh.com - January 2016

about interviewing for a job, how to dress, how to research a job opportunity, how to resolve conflicts and self-discipline.” Make no mistake, however: Explorers also learn a great deal about being a peace officer. Course instruction covers handcuffing and self-defense, law and the Penal Code, traffic control, crime scene investigation, dispatch and crowd control. Explorers also go on ridealongs and assist at DUI checkpoints. “They learn to do everything we do,” Friedrich says. “And one of the best ways the community can support this program is to utilize it.” To that end, he means the Explorers are like an auxiliary to the Folsom Police Department itself. Local event organizers can involve the Explorers in traffic control, first aid, serving as extra sets of eyes and ears for police and fire departments, and handing out information. They’re not sworn officers, so actual enforcement and arrests are still left to the professionals, but as the slogan promises, they’re here to serve. Given that each Explorer
must commit to a minimum of 16 hours of volunteer work per month, Friedrich really wants the community to take them up on it. The application process is always open, and participants can join at any time. In addition to the age and volunteer hour requirements, Explorers also must be in good health, live within city limits, maintain a 2.0 GPA, have a clean criminal record and pass an oral interview and drug test. There is no cost to join the program. “The biggest thing for me has been seeing how law enforcement really functions,” Randall says. “You see it from the other side, so if you’re ever dealing with an officer or seeing something in the media, you have a better understanding of what’s going on. It’s been eye-opening to learn why and how officers do what they do.”

hile New Year’s resolutions are still fresh in our minds, it might be a good time to add, “addressing your love life” to that list. With a little bit of planning—and following the 5 tips below—your relationship is sure to see sparks fly in 2016.
1 / Forgive old issues (again, and again).
2 / Give more than you take. Healthy relationships don’t keep a record of wrongs, thus couples are cautioned against scorekeeping. Albeit sound advice, merely not doing something negative is somewhat of a passive approach; instead, actively strive to give more to your relationship than you take. Research supports this idea by showing that those who focus more energy on giving to others rather than on their own happiness are in fact happier. In other words, give more of yourself.
3 / Hang in there just a little longer. Whether you tend to lean toward fight or flight when things get rough, make a point to calmly stay in the conversation a little bit longer. When relationships are new, they’re exciting and easy to invest time into; but once the honeymoon is over and routine sets in, jobs, kids and other responsibilities compete for the connection that used to come easy. After years of neglect, couples will drift apart, eventually becoming very different people. Anniversary trips and grand getaways are great, but lasting connectedness grows from consistent time spent together throughout the week. Once-aweek date nights can be a good start for severely disconnected couples, but daily connection time is even better. Sacrifice TV time for each other, and be intentional about how you spend your time.
5 / Listen smaller, listen deeper. Feeling seen, heard and understood is important to close relationships. Make your partner feel important to you by listening for the little things they care about and ask about them. Listening smaller makes gift-giving easier too, because you’re paying attention to the little things that may not be important to you, but will make the other person happy. When you’re listening deeper, you’re listening for the message behind the message— the themes—and how your partner feels underneath the content of discussion or conflict. This is not to be confused with jumping to conclusions fueled by your own feelings, but rather listening for your partner’s emotional experience.

Not being able to forgive is extremely toxic. Old issues have a way of coming up again and again, poisoning relationships with resentment and entitlement. When wronged, we often feel it’s our right to hold this against those who hurt us. However, as long as unforgiveness is allowed to remain, relationships can’t heal from the past or move forward. Deciding to forgive your partner doesn’t guarantee you’ll never feel triggered or experience negative feelings, but every time you choose not to hold it against him/her, you loosen the grip of the past, freeing yourself to love.

Wash the rice in a bowl with plenty of fresh water using a circular motion with your hand. Drain the water and repeat three or four times until the water runs clear. Then, transfer the rice to a sieve (strainer) and let it drain for 15 minutes. Prepare the broth by combining the beer, dashi powder, mirin, light soy sauce and salt in a pan; mix well and set aside. Meanwhile, preheat the oven to 400 degrees. Remove the skins from the chicken thighs. Scrape off any excess fat and feathers from the skins with a knife. Stretch the skins out on a flat baking tray (baking sheet) in a single layer. Place a smaller metal tray, such as a roasting tin (pan), on top of them to keep them flat while roasting. Roast for 10–12 minutes until crisp and lightly golden. Remove from the oven and transfer to a cooling rack. Meanwhile, cut the chicken thighs into 1-inch pieces (they will shrink during cooking so don’t cut them too small) and chill until needed. Wipe the shiitake mushrooms, remove the woody stems
dinner date Food and Wine for the Season and slice the caps. Add the sliced shiso or chopped coriander (cilantro) to the cooking broth and mix well. Rice cooker method: Add the drained rice to the cooking broth, transfer to the rice cooker and top with the pieces of chicken and the slices of mushroom and garlic (do not stir at this stage), close the rice cooker lid and turn on. It should take about 15–20 minutes to cook. Once the rice cooker’s alarm beeps, let the rice sit for at least 15 minutes before opening. Hob (stove) method: Choose a pan with a tightly fitting lid (preferably of glass). Add the drained rice and the cooking broth, top with all the other ingredients, place the lid on and bring to the boil. As soon as it boils (do not remove the lid at any stage during cooking or resting), turn the heat to its lowest setting and simmer gently for 15 minutes. Turn off the heat and let the rice rest for a further 15 minutes. While the chicken and rice is cooking, cut up the crispy chicken skin into 1/2- to 1/4-inch squares. Then, stir half of the squares into the rice, mixing well, and scatter the remainder on top with the finely sliced spring onions (scallions). Serve immediately. Makes 4-6 servings.

Describe your business. Did you find it, or did it find you? Arthur Murray has been teaching the world to partner dance for 103 years, and I was lucky enough that it found me in my college years. How are you involved with both the community and your customer? From five- to 95-year-olds, and singles to couples, anyone can enjoy the benefits of dancing at all stages in life. Seeing people gain confidence on the floor and express themselves while having fun doing something active, or watching couples fall in love again through dancing, is so rewarding. Dancing is a timeless skill that doesn’t go out of style. We take something two people learn together out socially into the community, and it creates a whole different set of culture. We are excited to have Folsom dancing together. Why is your staff the best in the business? Our team of dance professionals is not only comprised of trained dancers but also trained teachers. It takes a teacher’s heart and mind to cultivate an environment that’s fun, safe and inspiring to learn to dance in. Each of the professionals has their own personality, which adds to the dynamic of the studio community. What life accomplishments are you most proud of? I’m most proud to be a franchisee of the longest running and best dance organization in the world, Arthur Murray, and to have opened the establishment in a city that celebrates art and active community. Where do you go when the going gets tough? I’m Christian and a believer that God listens to prayers. When the going gets tough, it’s amazing how much comfort a prayer can give. What’s your favorite local event that you go to? Apple Hill is always a great place to go. I love the apple donuts! And finally, customer service is…? Taking pride in having and working hard to have the highest caliber of service, professionalism and integrity a business can offer.

We assist from start to finish—from SAT/ACT prep and essay writing to finding scholarship money and making the final decision. Unique to Aria is our proprietary college database—custom software that can search among thousands of colleges to find the perfect fit for prospective students. While working as a tutor with Chris’ other company (Tutoring Rocks), he and I decided that if we wanted to work together long into the future, we were going to start a college planning company. How are you involved with both the community and your customer? Our true purpose is to ensure that students attend the absolute perfect college for them. Because of the thousands of schools out there, we do everything we can to set students up for success. We also plan to host College Information Nights where parents and students of all ages can come and learn more about the college application process for free. We want the community to be educated about what it takes to get into college! What life accomplishments are you most proud of? I’m most proud of Aria’s first successful year! My heart skipped a beat every time one of my students texted me letting me know that they had received another acceptance letter. When all was said and done—and Aria helped 10 students receive over 40 acceptance letters and over $500,000 in scholarships—I knew we had done something noteworthy. What’s your favorite place to eat out locally? I think I eat at Sizzling Fresh Mongolian BBQ a minimum of three times per week. And finally, customer service is…? free birds Letting Children Go As They Grow
I
consider 2016 the first full year that none of our three kids will truly need their mom or me anymore. Oh sure, the Bank of Mom and Dad isn’t going anywhere, and they’ll still need us around for advice, guidance and hopefully just because they like us. But as far as being absolutely necessary in a keep -your-but ta live -a n oth e r- d ay kind of way? Those days are gone. Our oldest, Emma, has sur vive d in Los Angeles now for five years—the equivalent of a baby moose finally growing too big to be easily eaten by bears . Our middle child, Joe, graduated high school last year and is neck-deep working toward his dream of becoming a firefighter. Our youngest, Sam, just got his license last month and has been asserting his independence in various ways, like choosing Kanye West over Jack White— which so far is the only real instance of any of our kids disappointing me. When they were small, it seemed th e i r re l i a n ce o n u s would never end, and sometimes, I ’d catch myself dreaming of this day. This is not to say that all those years of being parents of little ones was in any way a burden. Quite the opposite. We LOVED being Mom and Dad when they were squirts—even at their messiest, loudest, most tantrum-throwing worst. I’ve changed diapers that qualified for federal Superfund dollars and ordered time-outs with the authority of a five star general. I’ve seen runny noses that would’ve terrified Stephen King and broken up fights better suited for alleys than living rooms. We’ve shushed and hushed and chased monsters from closets. We’ve seen wide eyes of wonder mystified by Santa Claus and calculus homework. We’ve praised good grades, applauded good deeds and judged who was a good friend (and who wasn’t).
We’ve tended to hurt feelings, broken arms, broken ankles, and the special mor tification that comes when your teenage daughter realizes that t h e c h e a p d ye j o b just turned her hair not the deep brown p ro m ise d o n th e b ox , b u t p u r p l e . We’ve sur vived lea rn e r ’s pe rmit s , youth sports, Chuck E. Cheese’s, a n d D i s n eyl a n d at Christmas. We’ve gone from the call of dooty to Call of Duty, to college. You want to know where in the world C armen Sandiego has been? Ask us. We know. But that part of our life is ending, and I was honestly beginning to mourn it until a recent weekend when I heard the great Bill Murray on NPR talking about his adult kids. “It’s funny,” he said, “you think that there’s an expiration date on them and there just isn’t. They have an eternal shelf life. It’s not like, ‘OK, that one’s on his own now,’ you know. It’s not like a balloon that you let go of and it—well, ‘That’ll land in someone else’s yard.’ It doesn’t happen that way; the balloon always comes back to you. It’s kind of nice, really.” And so instead of missing what is gone, I’m choosing to focus on what’s ahead, because there’s still so much from them I can’t wait to see. However, make no mistake: Vickie and me...? We still want that boat.
