O
n a recent kayaking trip, our guide broke the ice by asking: What’s your favorite ice cream flavor?
The group, which included folks from all over the globe (Scotland, China, Australia, and the U.S.), immediately went from silent strangers to fast friends. Who knew people were so passionate about ice cream? Of course, my selection (chocolate chip cookie dough) will always reign supreme to me, but it was interesting to hear others’ picks (really, vanilla? But it’s so vanilla…) and realize that dessert, though our favorites differ, is universally loved. It’s a celebratory dish, an aphrodisiac, signals the end of a meal (it’s true, we really do save the best for last), and enjoyed by all…no matter where home is. Fortunately for us, our region is home to some pretty sweet and creative concoctions that are made fresh daily by some incredibly talented, well-respected chefs. From melt-in-your-mouth cakes, to fruit-filled tarts, hand-churned ice cream sandwiched in between decadent donuts, rich chocolate truffles, and even “diet-friendly” desserts for those who might be gluten-intolerant, there are offerings to please every single sweet tooth. It was this abundance of treats—and the fact that Valentine’s Day falls on February 14— that inspired our piece on page 54, “Sugar High: 50+ Decadent

Desserts,” featuring pro tips from beloved bakers, our favorite pies and other can’t-miss confections, the region’s best local chocolatiers, and more. If your mouth isn’t fully watering after reaching the end, then perhaps the Dining Spotlight on page 66 or our recipe for Candied Orange Pork Tenderloin on page 76 will do the trick. Ironically, February is also American Heart Month, and for ways to honor the cause and prevent the disease (OK, so overloading on sugary desserts isn’t one of them, but everything in moderation…right?), check out Catch All on page 19. The month of love is one of my favorites, and whatever your relationship status, I’m a big believer in celebrating. Whether it’s gifting someone special—be it a friend or romantic partner— with a present that says, “I adore you” (for ideas from local stores, see Swag on page 50), taking them out for a memorable
meal at a non-national chain (read all about “6 Romantic Restaurants” on page 70), or improving your courtship by spicing things up (flip to page 36 for “5 Relationship Tips”), I hope you make February is short and so is life, so love a little more, worry a little less, and remember: There’s always room for dessert. What developmental benefits will my child receive from learning how to program/code on computers? urtis Gaesser may be the hardest-working music te a c h e r in t h e Fol som Cordova Unified School District . Since joining its
faculty in 1987, Folsom High S ch o o l ’s j a z z b a n d s a n d orchestras have gone on to win a host of local, state, and national awards. He guides them through countless after-school practices and weekend competitions—but he doesn’t just teach music. He also teaches crucial life skills such as adaptability and self-discipline. Even after all these years, he remains passionate about encouraging his students to make each performance better than their last.

For his efforts, he’s been the recipient of numerous accolades, including the 2016 Educator of the Year Award—which was granted by the Folsom Chamber of Commerce—and the California Association for Music Education Capitol Section’s 2017 Music Educator of the Year Award. He was even nominated for this year’s national Music Educator Grammy Award, finishing in the top 10 out of over 2,000 entrants. Yet for Gaesser, it’s never been about awards and honors. Instead, all the sacrifices—including time away from his wife and three children—are worthwhile when he sees his students succeed, both during high school and beyond. “All my recognition comes from their hard work,” he insists. “Without them, who would I be?” —Amber Foster

Fun Factory Preschool This popular program has introduced children to the joy of learning for more than 20 years. Kids may enter Fun Factory at age three and continue the next year, or attend a single year. Classes for four-year-olds are held Monday, Wednesday, and Friday; and Tuesday and Thursday for three-yearolds. Classrooms are located at the Folsom Community Center and at the Folsom Sports Complex. The program follows the FCUSD instructional calendar (except staff development days). Typical daily activities include small group stations, arts and crafts, carpet time for songs and stories, outdoor exercise, and a snack break. Theme days, holiday celebrations, and occasional off-site field trips are held throughout the year.
Kindergarten Readiness The Hinkle Creek Nature Center provides a unique setting for this program whose curriculum is focused on preparing students for grade school with social and academic skills. Classes
Preschool Sports and Activities Folsom Parks and Recreation offers a variety of programs for kids ages two and older that introduce them to basic activity skills and encourage parent participation. Classes include baseball, basketball, soccer, taekwondo, dance, and tennis. are held Monday through Thursday starting in September and continuing through May; students must be four years old by September 1 to participate. In addition to teaching kindness in the classroom, the program also focuses on pre-reading skills, including alphabet sequence and phonics, plus verbalization of facts and concepts. Celebrate American Heart Month and National Wear Red Day

ore than 600,000 people die from heart disease each year. “Heart disease affects people of all races and ethnicities, [but has] a higher death toll for women, African Americans, and American Indians,” says UC Davis Women’s Cardiovascular Medicine Program Director Amparo Villablanca, MD. “Only about half of women realize heart disease is their leading cause of death and that it is, for the most part, preventable.” To help raise awareness about symptoms and causes of the disease, February is American Heart Month and the first Friday in February is National Wear Red Day. This year, some dresses from Villablanca’s UC Davis Red Dress Collection—created by undergraduates from the UC Davis Department of Design—will be showcased on banners and displayed at the State Capitol during the final week of February. On February 2, Arden Fair Mall will host the American Heart Association for a National Wear Red Day Celebration between 10 a.m. and 2 p.m. where “visitors will be treated to free blood pressure and BMI screenings from Sutter Heart & Vascular Institute, a fashion segment featuring local heart disease and stroke survivors, doctors and nurses, handsonly CPR training, healthy food samples, and more,” explains Michael Castillo, director of communications and marketing at the Sacramento American Heart Association. On February 28 at the Cameron Park Community Center, Marshall Medical Center is hosting Affair of the Heart—a free event promoting heart health. Among the offerings are health screenings, exercise demos, raffle prizes, wine tasting, and a panel of Marshall cardiologists moderated by comedian and heart attack survivor Frank King. —Emily Peter

nterested in the intricacies and magnificence of the human form, Allison Carlos started her career in the life sciences, yet her passion for creating often led her back to painting. Throughout her studio training and art history studies, Carlos found her niche: bold, colorful, large-format work in abstract or impressionist style. “I discovered how the unique characteristics of various paint media and deliberate use of color allow for deep expression and project the God-inspired beauty of everyday subject matter and thoughts of the soul.” The Folsom-based artist is currently pursuing her Master of Divinity at Duke University, to further develop her depth of knowledge and language around faith. HLB: WHAT SIGNIFICANCE DOES THE HUMAN FORM HOLD? AC: The human form is a fully contained object that performs with endless creative character for an artist to capture. For example, one person sitting and looking up to the sky is projecting a unique scene to be painted that cannot be replicated by another artist. Even if they sit in the same spot and look to the sky, the essence of the person cannot be the same. People engaging in their everyday lives are always interesting to capture. HLB: WHAT ELSE INSPIRES YOU? AC: I’m inspired by the sheer process of creativity, the physical engagement with the materials, and the manipulation to create form, colors, and design that I hope [people] experience emotively when they look at my work. This is so much a factor in my approach to creating art that most times the subject doesn’t really matter. Frequently, my source material for creating work is not about an item or a scene; rather, it can be the observation of an interesting color pattern on the ground as I’m walking around town, a blurred vision, or even a bad photo. HLB: WHAT ARE SOME OF YOUR INFLUENCES? AC: Most of my biggest influences have happened in the small spaces of ordinary life [while] interacting with other people. [One] significant moment was when I [realized] I have a particular style, which is like a fingerprint, and no one can paint exactly like another painter. Getting stuck in a routine can eventually lead to complacency, as you continue to go through the motions of day-to-day, slowly eroding romance. This is usually where I talk about weekly “date nights,” but how about something bigger? Plan an overnight getaway at least once a year—or more often, if possible—to celebrate your anniversary. Budget for your annual couple’s retreat in advance, so it remains a priority, even before family vacations. Getting away from the kids and everyday life is important for renewing intimacy and enjoying each other without the usual distractions.

Many successful companies spend significant amounts of time setting goals for future vision and growth and analyzing both successes and blunders, but few people consider doing the same in their relationships. Set aside specific days throughout the year to evaluate the goals for your relationship. Address areas you want to grow in as a couple and areas you may need help with. Some couples choose to use their annual anniversary trip, while others prefer to keep these trips separate. It’s ideal to have your “state of the relationship retreat” in a peaceful environment away from home, and they should be no more than six months apart, or quarterly.
Have you ever seen an elderly couple that acts like they’re still into each other? If so, you’ve witnessed part of the secret to their successful relationship. Romance that isn’t fed regularly has an expiration date, and as the novelty of new romance tends to fade within a couple of years, familiarity will quickly follow. It’s unlikely the old duo you witnessed would still be captivated by one another so many years later if they didn’t choose to build each other up with affection. You must choose love daily. When we’re young, flirting is often a response to a feeling; but when we’re old, feelings are a response to regular flirting.

or most of its first 100 years, the Sacramento Children’s Home operated as an orphanage, founded in 1867 to care for destitute children living along the riverbanks . Later, as orphanages were phasing out, the home refocused to become part of the foster care system, keep children with families, and focus on prevention and early intervention. When it first opened, about 100 children were housed—last year, its 150th, they served nearly 7,000 children and 4,600 families. “The area’s longest-serving nonprofit,” says Todd Koolakian, director of philanthropy, “… has grown to become Sacramento’s most comprehensive child and family services agency.” Small wonder the organization was named the 2017 California Nonprofit of the Year. The organization’s longevity is partly a result of its continual commitment to meet the changing needs of the area, Koolakian says. “Every year we look at ourselves and reflect whether what we’re doing is addressing the kids of our community. As the community’s needs have changed, so have we.” With 200-plus employees and more than 800 volunteers, the home operates eight programs to help children and families struggling with homelessness, mental health problems, and abuse.

• Three Family Resource Centers strengthen families through education, intervention, and social support, and teach parents nurturing skills. • The Wraparound Program supports families to ensure children are received in a safe home. “The whole being of our organization,” Koolakian says, “is built around providing safety to children.” All of the services are free, funded mainly by grants and donations, an annual crab feed (scheduled for February 24 at the Folsom Community Center), and the Casa Garden Restaurant. Founded in 1974 on the home’s grounds near Curtis Park, the restaurant is staffed almost entirely by volunteers and serves fixed lunches each weekday, with proceeds going to the home. The success of the nonprofit’s programs, Koolakian says, is different for each person. “Young men and women who lived with us are now successful members of the community; children that have received counseling or therapy are more capable of living independently; families on the verge of breakdown are thriving.” Koolakian cites the home’s motto: “Giving children a better tomorrow,” and adds, “We’re very passionate about what we do.” kidshome.org

DEEP DARK WALLS From rich charcoal to matte black and even plush currant, there’s a definitive trend toward highly saturated walls, usually accompanied by lush honey and cream accents. In the past, most shied away from dark walls, as they were thought to give a room the sense that it was smaller than it was, but we’re currently seeing a swing toward making rooms feel cozier and inviting—a look you’ll easily achieve with a dark enveloping color. Start with just one wall if you’re not ready to commit to all four.

FLORALS IN BILLOWING FABRICS Florals seem to always be on trend, but we’re talking big graphic florals— petals that overtake the entire pattern and really leave a statement. We’re seeing them in large flouncy fabrics, such as draperies and wall coverings, as well as club chairs and pillows. Start with a few toss pillows to dip your toes in.

VIBRANT Vibrant Colors in Lush TexCOLORS IN LUSH tures TEXTURES Jewel tones seem to be on our list each year, however, we’ve noted gloriously bold fuchsias and richly hued blue-greens in velvet ottomans and emerald-tufted sofas. It’s no surprise then that Ultraviolet was named Pantone’s color of the year; add it in with a little texture, such as a cozy throw in a bright color, to help a neutral chair really come to life.

PALE PINK WITH STATELY NAVY Last year everyone was abuzz with Millennial Pink—a soft ethereal hue of the typically feminine color that we saw nearly everywhere. You can expect more of that color this

year, even bordering on lavender, but what catches our eye is the mixture of these baby pale colors with a bold and sophisticated navy accent—a look that makes the former color a bit more adult and masculine. MARBLE TEXTURES AND PATTERNS Not only are we finding a lot of art marbling, but we’re seeing the pattern of marble too, usually in a pale gray or white with veins of rose gold. We suggest using this trend sparingly and with something you can easily change out if the trend fades, like smaller décor items or artwork—perhaps the face of a clock or the handles of some barware.

THE TECH HOME In 2018, you can expect an extremely smart home. From devices that can order pizza or replenish your refrigerator with more groceries, to security cameras that help you keep an eye on the comings and goings of your home no matter where you are, the tech home is certainly the future of design.

GEODE AS A PATTERN This falls right in with “marbling” as a trend. In recent years, geode slices have taken on a luxe feel when they’re the right size and color for the room. As a large-scale pattern or print, they make lovely and bold art and even wallpaper. Again, this might be a short-lived trend, so decorate sparingly and cautiously.

BOUCLE AS A TEXTURE We love a good boucle. Though oftentimes we see it on clothing, it’s a luxurious texture that can be quite pretty on pillows, slipper chairs, and even placemats for an elegant meal setting. What better way to breathe new life into the year than with a few new décor items or a freshly painted wall? We can’t wait to see which of these trends shake out this year.
BRUSHED BRASS Brushed brass has been trending for some time now, but is something that’ll be more readily available at the mass consumer level. The real

Friends with Benedicts Mimosa House Rise and Dine

inally, someone has c aught on to two essential revelations: Eggs Benedict is a platform for much grander things, and you don’t have to wait until Sunday to have it. (I guess a third would be mimosas follow the same rules as eggs Benedict.) Nowhere are these conventions more evident than the aptly named Friends with Benedicts (FWB) in El Dorado Hills. And so it is that on a Tuesday at 1 p.m., a friend and I found ourselves staring first at a mimosa list containing over 100 bubbly cocktails, and then a brunch menu (it’s always brunch at FWB, btw) with an eclectic array of breakfast foods heavily leveraged by the dome-shaped

egg and its butter-yolk-sauce companion. I began the Benedict bonanza by sampling the “I’m Hungover” offering (in this instance the title was premature), featuring two buttermilk biscuits topped with country sausage patties, and the prerequisite: perfectly poached eggs with country gravy. Everything made from scratch, in-house, with the possible exception of the sausage patty, it’s how I order biscuits and gravy with sausage when I’m at other establishments—but FWB has it in two words, and it’s perfect. Next, it was time to venture a bit out of the standard Benedict corral and head south to the Sope Benedict. Two pan-fried masa cakes, topped with shredded pork carnitas, avocado, cheese, sour cream, and flawlessly cooked eggs with golden, liquidy yolks—finished with red ranchero sauce over the carnitas— resulted in a muy bueno dish. As a devout fan of masa (tamale dough) in the morning with poached eggs, I could’ve devoured aún mas. For my final Benedict, I dove on the sword for all you spicy food lovers—you folks that douse everything in hot sauce before you taste it—the Sriracha Benedict. This one’s perfect for those who’ve exterminated their epitheliums; actually, although it was spicy, even I got right through to the crispy crab cakes, seeking refuge from the heat under the avocado, poached eggs, and hollandaise. If you like spicy, you can leave the cap on the Tabasco here and still taste the food. Since we’re breaking with convention, how about dessert? Not the Tiger’s Blood Mimosa I neglected to mention, but Nutella S’mores French Toast, featuring Texas toast battered and grilled with a Nutella drizzle, marshmallows, and crushed grahams. The campfire never saw this coming…too bad! There are plenty of other good things, too—salads, skillets, burgers, crepes, omelettes, avocado toast, pancakes, and a giant goblet mimosa for the weekend…or?

// For the past three years, Folsom Pizza and Kabob has been serving guests mouthwatering
Mediterranean dishes with a side of friendly service. The cozy, family-run business is more than a hobby—it’s a labor of love. Upon entering, you’re personally greeted by the owners with a warm smile and the enticing aromas of authentic Mediterranean cuisine. For my visit, I tried their Combo Platter with the LambBeef Kabob and Chicken Kabob, and was instantly transported to heaven. The plate came with a heavy helping of both original and spicy hummus, pita bread, a fresh garden salad, the best buttery rice pilaf I’ve ever had, a perfectly seasoned chicken kabob, and a mildly spiced ground beef and lamb kabob. I truly cannot describe how well all the flavors from the rice, the meat, and the sauces melded together. It’s definitely an experience you need firsthand to understand. Though seriously stuffed, I found myself eyeing the dessert menu and decided to take the plunge on their famous Pistachio Baklava. With layers of phyllo dough filled with honey and loads of pistachios, this little pastry packed a punch of deliciousness and more than earned its name for fame. Seasonal Recipe and Beer Pairing CANDIED ORANGE PORK TENDERLOIN If I had a dollar for every time I’ve made this recipe I’d be one wealthy lady. It’s the only meal I make that not one person in my family grumbles about when they sit down for dinner.
What Can I Bring? Southern Food for any Occasion Life Serves Up by Elizabeth Heiskell (Southern Living, 2017, $30)
2 ( 1.5-pound) pork tenderloins, trimmed 1/2 cup frozen orange juice concentrate, thawed 1/4 cup soy sauce, plus 1/2 tsp. 1 (9-ounce) jar sweet orange marmalade (such as Smucker’s) 4 small scallions, finely chopped (about 2/3 cup) 1/3 cup chicken broth 1/2 tsp. Cajun seasoning Dash of hot sauce (such as Tabasco) 1 tsp. kosher salt 1 tbsp. canola oil Chopped scallions, to garnish Cooked long-grain and wild rice (optional)

Combine the pork, orange juice concentrate, and 1/4 cup of the soy sauce in a large ziplock plastic bag. Seal and marinate in the refrigerator at least 12 hours and up to 2 days.

Combine the orange marmalade, scallions, chicken broth, Cajun seasoning, hot sauce, and remaining 1/2
teaspoon soy sauce in a small saucepan over medium-high. Bring to a boil, stirring occasionally; reduce heat to medium-low, and simmer, stirring occasionally, until thickened and reduced to about 1 cup, approximately 15 minutes. Remove 1/4 cup of the sauce for basting; reserve the remaining sauce for serving.

Preheat the oven to 425°F. Remove the pork from the marinade; discard the marinade. Sprinkle the pork with salt. Heat the oil in a large ovenproof skillet over medium-high. Add the pork to the skillet; cook 4 minutes. Turn and cook about 1 minute. Baste the pork with 2 tablespoons of the sauce. Cover the skillet with foil; bake in the preheated oven 5 minutes. Remove foil and discard. Baste pork with remaining 2 tablespoons sauce. Bake, uncovered, until a thermometer registers 145°F, about 5 minutes. Place the pork on a cutting board; let stand about 10 minutes. Cut the pork across the grain into thin slices. Serve with the reserved 1/2 cup sauce. Garnish and serve with rice, if desired. Serves 8.

I’ve also been a volunteer for the Alzheimer’s Association, where I facilitate a support group in El Dorado Hills, for the past six years.

And finally, customer service is…? Customer service means being present. Our staff is available to families 24 hours a day. As an owner, I’m always happy to talk to someone who needs advice and help—we may not be the right service for them, but I want to make sure they get to the resources they need.
