News From The Kitchen Chef Mike JANUARY 2026 French Onion Baked Potatoes Think of this as a fun and creative twist on your classic loaded baked potato. Tender and fluffy on the inside and perfectly crispy on the outside, the toppings take it to the next level. Sweet and savory frenched onions complement the tangy sour cream and the nutty and pungent Gruyère. Serve with a seared steak for the ultimate steakhouse-at-home dinner. The trick to these crispy spuds is the cooking technique. Baking the potatoes directly on the racks maximizes airflow all around the potatoes, so that even the bottom skin gets evenly crispy. Place a layer of aluminum foil on a lower rack — or on a baking sheet placed on the lower rack — to catch excess oil. Ingredients · 4 large russet potatoes (about 12 ounces each), scrubbed and patted dry · 1 tablespoon olive oil · 1 teaspoon kosher salt, plus more to taste · 1/2 teaspoon black pepper, plus more for garnish · 1/4 cup salted butter, softened · 1/4 cup sour cream · Frenched Onions, warmed (See Recipe Below) · 4 ounces Gruyère cheese, shredded (about 1 cup) · Thyme leaves, for garnish Directions 1. Preheat oven to 400°F. Prick each potato all over using a fork. Rub potatoes evenly with oil and sprinkle with salt and pepper. Place potatoes directly on oven rack and place a sheet of aluminum foil on lower rack to catch any drips. Roast until a paring knife inserted into potatoes meets no resistance, about 1 hour. Remove potatoes from oven and transfer to a small, rimmed baking sheet lined with foil; let cool 5 minutes. 2. Cut a lengthwise slit down center of each potato about three-fourths of the way through, squeeze sides to open potato. Season inside of potato to taste with additional salt, and top with evenly divided butter, sour cream, Frenched onions, and Gruyère. 3. Preheat broiler with oven rack about 5 inches from heat source. Broil potatoes until Gruyère is melted and just starting to brown, 1 to 3 minutes. Garnish with thyme leaves and additional black pepper. Serve hot Frenched Onions Ingredients · 1 tablespoon olive oil · 2 pounds yellow onions (about 4 onions), thinly sliced · 1/2 teaspoon kosher salt · 1/4 teaspoon black pepper · 1 to 2 tablespoons water, as needed · 2 tablespoons unsalted butter · 2 tablespoons dry sherry · 1/2 teaspoon beef bouillon paste Directions 1. Heat oil in a large nonstick skillet over medium. Add onions; cover and cook, stirring occasionally, until softened and starting to brown, about 20 minutes. Stir in salt and pepper. Reduce heat to medium-low; cook, uncovered, stirring occasionally, until onions are very soft and dark golden, 30 to 40 minutes, stirring in 1 to 2 tablespoons water as needed if pan bottom gets too dark. 2. Stir in butter, sherry, and beef bouillon paste. Cook, stirring often, until butter melts and sherry evaporate, about 2 minutes. JANUARY 2026 | 5

Ladies on the Links Happy New Year! 🎉 December was a very busy month, and I hope everyone had a wonderful holiday season. Unfortunately, our first round of the Bolesta was rained out, so we played a one-day tournament on December 9th. The format was Better Ball of Partners, and our winners were Leigh Gregory and Hollyn Johnson. Congratulations to you both! Next up was the Cross Country Scramble. We had some incredibly decorated carts and plenty of fun holiday attire. A big thank-you to Joe and Matthew for designing some fun—but challenging—holes that had us maneuvering over trees and through bunkers. Thank you to Leigh Gregory and Hollyn Johnson for chairing this event, and to Kerry Powers for entertaining us with holiday music on the piano. The Best Cart award went to Tracy Dannewitz, and Best Dressed was Conchita Root, featuring the cutest Elf on the Shelf we’ve ever seen! We’re pretty sure Tracy arrived extra early to get her cart just right. We had a tie for first place: Team Comet: Lisa Ramos, Hollyn Johnson, Susan Hammock, Micky Pickering, and Kim Cox Team Olive: Shannon Williams, Karlene Trosper, Tina Militello, Conchita Root, and Ann Pointer Congratulations to all our winners! GOLF COURSE NEWS As the holiday season is coming to an end and we look to begin the New Year, many believe that this is the perfect time for golf in Florida. Our major projects are behind us, and the course is really starting to show its full potential. Even with the cooler weather we’ve experienced over the past month, the greens remain healthy, denser, and firmer than they have been recently as they continue to gain maturity. With the potential threat of a La Niña weather pattern, we will continue to monitor the putting surfaces and all playing areas for signs of disease. With all major projects from the year behind us, the month of January allows our team to really concentrate on the overall aesthetics and details throughout the course as we prepare for this golfing season. The Agronomy team has also been very busy pruning trees where necessary to aid in more sunlight for the turfgrass, monitoring stress and hydrophobic areas, and continuing to grow in and establish the maturity of the entire golf course. This time of year, it also provides the team with enough time to really evaluate the bunkers on the course, tamp and compact for better consistency and playability for the upcoming season.
As mentioned previously, we will continue to install rope and stakes along many of the cart paths and rough areas, to help limit any thinning due to high traffic and wear. We simply ask that our members and guests are mindful of these areas and follow the “Gate System” as much as possible to aid in the health of the turf throughout the next several months. This, along with the practice of repairing ball marks can go a long way to not only improving the health of the turf, but the overall aesthetics and playing conditions of the golf course and putting surfaces. As we begin this New Year, I am pleased to see the advancement the course has made over the last several months and as mentioned previously, the agronomy team will continue to work efficiently on “details” to enhance the overall playing experience for our members and guests. Hope to see you on the course,

2026 RESOLUTIONS – A NEW BEGINNING Happy 2026 to the few, the proud, the Palma Ceia Physical Fitness Patrol! On behalf of myself and my staff I hope that your holiday season was truly memorable and something special. But now…IT IS TIME TO GET BACK TO WORK, GANG! A brand-New Year has arrived; a perfect time for fresh new beginnings and improvement opportunities. We all start anew with a fresh slate – what we do with it depends on us. The time is now. What are YOU going to do? It is a popular custom to make New Year’s Resolutions. Each and every year at this time, people vow to change something in their lives and personas, be it physical, mental or spiritual. Unfortunately, all too often, these resolutions start off like a runaway freight train only to slow down like an arthritic tortoise until they are finally forgotten or put off until NEXT year. Many of the more popular resolutions involve changing something in the health or fitness field. People resolving to lose weight, exercise more, quit smoking, drink less, get stronger, get in better health are all wonderful, worthwhile goals. Putting in the time, effort and commitment necessary to achieve them is the greater task at hand. Following are a few simple ideas on making resolutions and sticking with them through their fruition. • MAKE RESOLUTIONS ONLY ABOUT THAT WHICH YOU REALLY CARE ABOUT AND ARE MOTIVATED TO CHANGE. • MAKE REALISTIC RESOLUTIONS WHICH ARE ATTAINABLE. LIKE ALL GOALS, ULTIMATE SUCCESS BEGINS WITH SMALL STEPS. FEED OFF THE LITTLE VICTORIES AND WATCH THEM ADD UP TO BIG ONES. • DON’T MAKE TOO MANY RESOLUTIONS- YOU HAVE A GREATER CHANCE OF SUCCESS IF YOU KEEP THE LIST SMALLER THAN SANTA’S.
Fitness Center Notes Accidentally leave someone out this Holiday Season? FITNESS CENTER GIFT CERTIFICATES for Personal Training Sessions are available at the Fitness Desk. Start your New Year’s Resolution of “Getting in Shape” the SAFE, SMART way…Get a PERSONAL TRAINING session. Whether it is a one-time program set up/consultation or multiple sessions to motivate you and show you numerous training modes THIS IS THE WAY TO GO! Call 250-6384 or stop by the Fitness Center for details. Please sign in upon entering the Fitness Center so we may keep an accurate account of usage. Thank You! Children of members under the age of 15 are NOT permitted to use the Fitness Center and member children are NOT allowed to bring guests in to work out. January Group Exercise Classes will be in full swing. Start the year out right, have some fun and make a few new friends!
• WRITE YOUR RESOLUTIONS DOWN AND CARRY THEM AROUND WITH YOU. • TELL FAMILY AND FRIENDS ABOUT YOUR RESOLUTIONS. PUT THE PRESSURE ON YOURSELF TO SUCCEED. • MAKE GROUP RESOLUTIONS WITH FRIENDS AND FAMILY- THIS MAKES FOR A BUILT IN SUPPORT SYSTEM AND GREATER PRESSURE NOT TO BE THE ONE WHO CAVES IN AND FAILS. • KEEP A JOURNAL OF YOUR PROGRESS. • HAVE FUN AND ENJOY KNOWING THAT YOU ARE WORKING TO ACHIEVE SOMETHING THAT YOU REALLY WANT! As always, we at the Fitness Center are here to help you formulate, refine and achieve all your physical fitness resolutions and goals. Let’s all make this year the best one ever! Until Next Time,
Your Coach Gary Troll Weil
