Ingredients
Dressing:
1/2-inch knob of fresh ginger, or a spoonful of ginger paste
1 clove garlic
1/4 cup fish sauce
1/4 cup + 2 tablespoons avocado oil, or another neutral oil
1/4 cup lime juice
2 tablespoons brown sugar
1/2 tablespoon chili crisp (more for spicier)
Crispy Rice Salad:
2 cups cooked jasmine rice
2 tablespoons avocado oil
2 teaspoons red curry paste
2 teaspoons cornstarch (optional)
half an English cucumber, thinly sliced
1 shallot, thinly sliced or minced
1 bunch cilantro, roughly chopped
1 bunch mint, roughly chopped or torn
1/2 cup chopped peanuts
chili crisp to taste

1. Dressing: Blitz everything up in a blender or food processor to make this SUPER yummy, punchy sauce.
2. Crispy Rice: Toss the rice in a bowl with the oil and curry paste. If it’s not sticking together when you squeeze it, add the cornstarch and get your hands wet to mix it again (this happens if the rice is pre-cooked or several days old). Squeeze it into loose, squishy chunks and transfer to the air fryer in a single layer. Air fry at 400 for 7-9 minutes, until golden and crisped.

3. You’re Done! Yum! Break the crispy rice apart into little golden, delightful chunks. Toss with about half of the dressing and however many veggies you want. Garnish it with some peanuts and chili crisp if you want.
Slow-Cooker Al Pastor Bowls*
Recipe from Taste of Home
Ingredients
2 cans (7 ounces each) whole green chiles
1 can (20 ounces) pineapple
chunks, drained
1 medium onion, chopped
1/2 cup orange juice
1/4 cup white vinegar
3 garlic cloves, peeled
2 tablespoons chili powder
2 teaspoons salt
1-1/2 teaspoons smoked paprika
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon ground coriander
4 pounds boneless pork loin roast Hot cooked rice
Optional toppings: Black beans, chopped avocado, corn, sliced radishes, lime and Mexican crema
Directions
1. In a blender, puree first 12 ingredients. In a 5- or 6-qt. slow cooker, combine pork and pineapple mixture. Cook, covered, on low until pork is very tender, 6-8 hours. Stir to break up pork.
2. Serve pork in bowls over rice. Add optional toppings as desired
Lemon Pasta
Recipe from Love and Lemons
Ingredients
8 ounces spaghetti
4 tablespoons unsalted butter, sliced into pats
2 tablespoons lemon zest, plus more for garnish
2 garlic cloves, minced
½ cup freshly grated Parmesan cheese, plus more for serving
1 tablespoon fresh lemon juice, plus more to taste
Sea salt and freshly ground black pepper
Chopped fresh parsley or basil leaves, for garnish
Directions
1. Bring a large pot of salted water to a boil. Prepare the pasta according to the package instructions, cooking until al dente. In the final minutes of cooking, reserve 1 cup of the starchy pasta cooking water.
2. A few minutes before the pasta is ready, add the butter to a large skillet over medium heat. Heat the butter until it foams, then reduce the heat to low and add the lemon zest and garlic. Cook, stirring, for 1 to 2 minutes, or until fragrant. Remove from the heat if your pasta is still cooking.
3. When the pasta is al dente, use tongs to transfer it from the pot to the skillet with the butter mixture. Add ½ cup of the reserved pasta water and cook over low heat, tossing until a sauce forms and lightly coats the pasta. Add half the cheese and toss to incorporate. Add the lemon juice and remaining cheese and toss again,
cooking until the sauce is smooth. If it becomes too thick or clumpy, add more pasta water as needed to loosen it. Season to taste with salt, pepper, and more lemon juice.
4. Garnish with more lemon zest and fresh parsley. Serve with more cheese.
Ground Turkey Sweet Potato Skillet*

Ingredients
1 pound ground turkey
1 medium onion, chopped
1 shallot, finely chopped
3 garlic cloves, minced
1/4 cup tomato paste
1 medium sweet potato, peeled and cubed
1 cup chicken broth
2 teaspoons smoked paprika
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups chopped fresh kale
Dash crushed red pepper flakes
1 medium ripe avocado, peeled and sliced
Minced fresh mint, optional
Directions
1. In a large skillet, cook turkey, onion, shallot and garlic over medium heat until turkey is no longer pink and vegetables are tender, 8-10 minutes, breaking up turkey into crumbles; drain. Add tomato paste; cook and stir 1 minute longer.
2. Add sweet potato, broth, smoked paprika, salt and pepper. Bring to a boil; reduce heat. Simmer, covered, until sweet potato is tender, about 10 minutes, stirring occasionally. Add kale and red pepper flakes; cook and stir until kale is wilted, about 2 minutes longer. Serve with avocado and, if desired, mint.
Grilled Chicken
Caesar Lettuce Wraps*

Ingredients
Caesar dressing:
1 cupmayonnaise
1(2-ounce) can anchovy fillets, drained, and minced
2lemons, juiced
2garlic cloves, smashed, peeled, and minced
2 tablespoon olive oil
1 tablespoon balsamic vinegar
1 1/2 teaspoonWorcestershire, plus more to taste
1 teaspoonfreshly ground black pepper
1 pinchkosher salt, plus more to taste
For the chicken lettuce wraps:
4 chicken breasts, halved horizontally
6 slices bread, ideally crusty and rustic
2 tablespoonolive oil, plus more as needed
1 small head radicchio, halved, cored, and thinly sliced
1 cupgrated Parmesan
2 tablespoondrained capers
3 hearts of romaine, broken into leafs for lettuce cups
Directions
1. Make the Caesar dressing. Combine all ingredients in a bowl. Taste and adjust accordingly.
For the chicken lettuce wraps:
2. Marinate the chicken. Add the chicken breasts to a big plastic bag and add 1/2 cup Caesar dressing. Mush around to completely coat. Marinate for at least 1 hour in the fridge or up to 1 day.
3. Get your grill going. For charcoal: Set up for one-zone, high-temperature cooking. For gas: Heat to high until the temperature reaches about 600° F. Make sure the grill grates are clean, then lightly oil them.
4. Grill the chicken over direct heat for 3 to 4 minutes per side, until charred on the outside and cooked (about 165° F) on the inside. Transfer to a plate to rest.
5. Now grill the bread. First drizzle with olive oil, then grill over direct heat until charred, a couple minutes per side. Transfer to a plate to cool and crisp.
6. Chop the chicken into chicken chunks. Add to a bowl along with the radicchio, parmesan, and capers. Dress with the remaining Caesar dressing—use however much feels right to you. Taste and adjust salt accordingly.
6. Tear the grilled bread slices into crumbs.
7. Serve as such: lettuce cups on one plate, chicken salad in a bowl, crumbs on another plate. To assemble: Fill a lettuce cup with chicken salad and top with breadcrumbs.
Watermelon Popsicles*

6 cups cubed watermelon
2 tablespoons fresh lime juice
Directions
1. In a blender, place the watermelon and lime juice. Blend until completely smooth, then pour into popsicle molds, leaving ½ inch at the top for expansion.
2. Cover and add popsicle sticks if necessary. Freeze until set, 4 hours or overnight.
Basil Vodka Gimlet Cocktail*

2. Add the vodka, then fill the shaker 2/3 full with ice. Cover and shake vigorously for 30 seconds.
3. Strain the cocktail into 2 chilled martini glasses, top each with a small sprig of basil, and serve immediately.

4 ounces tequila
2 ounces lime juice

12 blackberries muddled
