Grilled Flank Steak with Tomato Salad*

Recipe from Eating Well

Ingredients

1 pint grape tomatoes, halved

½ cup chopped fresh cilantro

⅓ cup extra-virgin olive oil

1 small jalapeño pepper, seeded and sliced

2 teaspoons finely chopped garlic

½ teaspoon salt, divided

1 1-pound flank steak

½ teaspoon ground pepper

Directions

1. Preheat grill to medium-high or heat a grill pan over medium-high heat.

2. Combine tomatoes, cilantro, oil, jalapeño, garlic and 1/4 teaspoon salt in a medium bowl; set aside.

3. Season steak with the remaining 1/4 teaspoon salt and pepper. Grill until an instant-read thermometer inserted in the center reads 125 degrees F for medium-rare, 3 to 5 minutes per side.

4. Transfer the steak to a clean cutting board, preferably one with grooves for collecting juices, and thinly slice across the grain. Divide the slices among 4 plates. Drizzle any juices that have accumulated on the cutting board over the steak and top with the tomato salad.

Grilled Chicken Rice Bowl

How Sweet Eats

Ingredients

1 pound boneless, skinless chicken

breasts

3 tablespoons freshly squeezed

lime juice

1 ½ tablespoons honey

R E C I P E S

¼ cup fresh cilantro

2 garlic cloves, minced or pressed

¼ teaspoon salt

¼ teaspoon pepper

pinch crushed red pepper flakes

⅓ cup extra virgin olive oil

2 cups cooked jasmine rice

1 cup chopped tomatoes

⅔ cup sweet corn, (off the cob, steamed, etc)

1 avocado, chopped quick pickled onions, for topping

kosher salt and pepper

Directions

1. Place the chicken in a bowl, baking dish or resealable bag.

2. Combine the cilantro lime juice, honey, garlic, salt, pepper, pepper flakes and olive oil in a blender until combined. Pour half of the mixture over the chicken, making sure each piece is coated. Let it marinate in the fridge for at least 30 minutes or up to 2 hours. Place the extra dressing in the fridge. If I’m cooking the jasmine rice, this is where I prep it!

3. Preheat the grill to high for at least 10 minutes. I like mine around 500 or 550 degrees!

4. Remove the chicken from the marinade and let any excess drip off. Place the chicken on the grates and grill for 5 to 6 minutes per side, or until the internal temperature reaches 165 degrees F.

5. While the chicken grills, I also like to throw some corn on the cob directly on the grill. I grill it for about 10 minutes, turning occasionally. You can use corn straight from the cob, a steamed bag of frozen corn or canned - whatever you love!

6. Let the chicken rest for 5 to 10 minutes before slicing or chopping it.

7. To assemble the meal, place the rice

in a bowl. Top with some of the grilled chicken, the corn, tomatoes, avocado and pickled onions. Drizzle with the extra dressing and sprinkle on salt and pepper (if needed) and serve. Enjoy!

Big Mac Salad

Recipe from Wholesome Yum

Ingredients

Salad

1 lb Ground beef

1 tsp Sea salt

1/4 tsp Black pepper

8 oz Romaine lettuce (chopped; or iceberg lettuce if desired)

1 cup Tomatoes (chopped)

3/4 cup Cheddar cheese (shredded)

1/2 cup Pickles (diced)

Sesame seeds

Dressing

1/2 cup Mayonnaise

2 tbsp Pickles (diced)

2 tsp Mustard

1 tsp White vinegar

1/2 tsp Smoked paprika

1 1/2 tbsp Besti Powdered Monk Fruit Allulose Blend

Directions

1. Add the ground beef to a large skillet over medium-high heat. (You can add a little oil if needed.) Break apart with a spatula and season with salt and pepper. Cook for 8-10 minutes, stirring occasionally, until the beef is browned and moisture has evaporated

2. Meanwhile, puree all the dressing ingredients in a blender. If dressing is thicker than you like, thin out with water or oil and puree again. Adjust sweetener to taste. Refrigerate until ready to serve.

3. In a large bowl, combine the lettuce,

tomatoes, shredded cheese, and pickles.

4. Add the ground beef. Drizzle the dressing over the salad. Toss to coat.

5. Garnish with sesame seeds if desired.

Air Fried Fish Tacos*

Recipe from Lillie Eats & Tells

Ingredients

1-2 bell peppers sliced (or 300 g frozen sliced bell peppers)

2 filets of mahi thawed (fresh or frozen)

Trader Joe’s BBQ seasoning (or use a good blend of garlic, chili powder, paprika, salt, pepper)

Salt and Pepper

6 Extra thin mission corn tortillas

2 cups shredded green cabbage

¼ cup skinny chipotle cream

¼ cup pickled onions

¼ cup cilantro lime ranch

Directions

1. Pre heat air fryer to 400 degrees. Spray basket with a mist of avocado oil spray and add bell peppers. Cook for five minutes. While bell peppers cook, season mahi filets liberally with BBQ seasoning and a good sprinkle of kosher salt. *You can always just use a good blend of garlic, chili powder, paprika, salt, pepper. Just season well.

2. When the five minutes are up, scoot bell peppers to the sides to make room for the fish. Add fish and cook for another five minutes until done.

3. Toss cabbage in 2 Tbsp of the cilantro lime ranch. Char tortillas over the stove, or heat in a pan with a little oil spray. Build each taco with 10 grams (2 tsp) of chipotle cream, a pinch of the cabbage, a couple tablespoons of the cooked bell pepper, about 40 grams of cooked mahi, a few pickled onions, and a drizzle of the cilantro lime ranch. Enjoy!

Cinnamon Coffee Cake*

Ingredients

Coffee Cake

1/2 cup salted butter, softened

2/3 cup applesauce

2 eggs

1 cup white sugar

2 tsp vanilla extract

1 cup almond flour

1 1/4 cup oat flour

2 tsp baking powder

1/4 tsp salt

Cinnamon Sugar Filling

2 tbsp salted butter, melted

1 tbsp oat flour

2 tbsp white sugar

1/2 tbsp cinnamon

Crumble Topping

1/4 cup salted butter, slightly softened (room temperature)

1/4 cup light brown sugar

1/4 cup almond flour

1/2 cup oat flour

2 tsp cinnamon

Directions

1. Set the oven to 350 degrees.

2. Cake: In a large mixing bowl combine the softened butter, applesauce, eggs, sugar, and vanilla extract. Next add in the almond flour, oat flour, baking powder, and salt. Combine until smooth.

3. Cinnamon Sugar Filling: Simply combine the melted butter, oat flour, white sugar, and cinnamon evenly.

4. Crumble Topping: Add the brown sugar, almond flour, oat flour and cinnamon to the room temperature butter. I recommend combining with your hands or a fork to form the best crumbles. Set aside.

5. Next grease or line an 8×8 baking dish. Pour half of the cake batter in the dish and spread evenly. Add half of the cinnamon sugar filling on top and swirl into the batter. Then add the remaining half of the cake batter and spread evenly again. Lastly, add the remaining cinnamon sugar filling to the top of the cake. Swirl in again.

6. Bake for 25 minutes.

7. Remove from the oven and softly place the crumble topping on top. Gently press the crumble into the cake, especially in the middle where it will still be underbaked. Bake for another 18 minutes.

8. Remove from the oven, let cool completely, and then cut into squares.

Strawberry Shortcake

Ingredients

Biscuits

2 cups all-purpose flour, spooned and leveled

¾ cup medium-grind cornmeal

⅓ cup cane sugar

2½ teaspoons baking powder

¾ teaspoons sea salt

½ cup coconut oil, hardened and cut into small pieces, or cold butter, cubed

2 tablespoons lemon zest

2 tablespoons fresh lemon juice

2 large eggs, beaten

Mai Tai*

Ingredients

1 oz. dark Jamaican rum

1 oz. white rum

1/4 ounce orgeat

1/2 oz. orange curaçao or Grand Marnier

3/4 oz. lime juice

1/4 oz. rich simple syrup (2:1 ratio of water to sugar)

2-3 mint leaves (for garnish)

1 lime wedge (for garnish)

Directions

1. Add white rum, Curaçao or Grand Marnie, and orgeat into a shaker with crushed ice. Shake for 10 seconds

2. Pour mixture into a rocks glass filled with ice.

3. Float the dark rum over the top by resting a bar spoon over the rocks glass and slowly pouring the dark rum.

4. Garnish with mint leaves and lime wedge
