You know the phrase “April showers bring May flowers?”
Well, in tropical countries, wetter weather transforms the landscape into a jungle of rich greenery and flowing waterfalls. Along with these natural shifts come exceptional deals and lighter crowds, since this is considered the slower travel season.
In Costa Rica, the green season typically runs from May through November. While rainy afternoons ebb and flow through the summer, precipitation grows heavier in the months of September and October. Be sure to pack layers, including a
waterproof jacket or poncho. Plastic zip bags and bug repellent will also come in handy.
Monsoon season in Thailand begins as early as April after Songkran (the new year) but reaches different areas at different times. Koh Samui and the Gulf Islands, for example, usually don’t get monsoons until later in autumn, so a good tip is to travel around the country and keep ahead of the weather.

Kenya’s green season runs from

What first interested you about creating cruise culinary programs?
Traveling, exploring and creating gourmet experiences are at the heart of what Chef Kathryn Kelly does with Regent Seven Seas Cruises.® We tapped into her expertise to find out some of the standout moments in her world.
I am passionate about travel and seeing the world through the lens of cuisine, wine and culinary culture.
Can you describe some of your favorite food markets to visit with guests?
I love the African market in Marseille, France. It has authentic items, both fresh and pantry, from Africa — particularly Moroccan ingredients. I also enjoy the Mercado dos Lavradores in Madeira, Portugal. The island has a subtropical climate, and so many interesting fruits,
vegetables and other produce grow there. Scabbard fish, which is local to the area, is available in the fish market (which is also fabulous). At the Catania fish market in Sicily, it’s like an opera listening to the fishmongers call out; I love the lyrical language spoken there.
What are the most enriching shore excursions that you’ve led?
We have over 60 chef-led tours that I curate personally, so asking for a favorite is like asking me to choose a favorite among my three grandchildren. For local authenticity, a new tour in Costa Maya, Mexico, celebrates maize as an ancient
ingredient. After a visit and culinary demonstration by locals, we come back to our cooking school and make several dishes, including corn ice cream! For a single-ingredient deep dive, it’s all about olive oil. We visit an olive farm in Palma de Mallorca, Spain, and then return to the cooking school to make several dishes featuring olive oil. For a meet-the-locals experience, we spend the morning with a Greek family in their restaurant in Rhodes — making several dishes and then enjoying lunch together.
What are some of your favorite dishes you’ve made using ingredients you picked up that day?
Tapas with ingredients from the markets in Bilbao, Málaga or Barcelona. Gravlax prepared with salmon and spices from the local markets in Helsinki. Tzatziki made from cucumbers and yogurt in Corfu.
Which part of the world do you dream about visiting next?
For someone who travels as much as I do, my favorite place is home — being around my family table with my grandchildren, friends, neighbors and siblings.

When you were creating this restaurant, what was your number one priority?
It’s quality. [My] concern from the beginning was, “How can I get fresh products?” I like to go to another country, and I like to see the market, even the fish market and vegetable market. I like to find new products and bring them to the restaurant and start cooking for myself.
Can you talk a little bit about the design of Umi Uma and your thinking behind it?
In the restaurant business, the most important things are good food, good service and good atmosphere. For me, the design is important, and it’s part of the combination.
How would you describe the style of service at Umi Uma?
Umi Uma has only 60 seats, so you have to pay close attention [to guests]. But I’m not looking for Michelin-style service; it’s more casual, with good food and people eating while they’re comfortable.
Can we expect to see you behind the counter?

Black cod with miso is the dish you’re most famous for. Why do you think it struck a chord with so many people?
The miso cod is basically a very traditional Japanese food. [Back then] in Japan, we didn’t have refrigerators. To make the fish keep longer, you marinated or salted. With the black cod, I started to marinate one day, two days, three days. And finally, after three days, I cooked it for myself, and it tasted great. Then I put it on the menu and started recommending it to customers. The first one ate it and loved it. Then the second customer loved it. After a while it became my signature dish and the most world famous.
Do you think you’ll ever retire?
I like to keep working, and I like to keep spending time with my team. I like to see my customers as much as possible. You know, life is beautiful. And I enjoy my life. That means no retirement.
