A Return to Sparkling Wine

There’s a resurgence of exceptional sparkling wines being made in the Finger Lakes, an exciting full circle moment deserving of the cork pop, the geyser of froth, glasses filled, raised high, the exuberant clinking applause, myriad bubbles dancing under the nose.

THE ROOTS OF A WORLD CLASS WINE REGION

In 1829, a reverend intent on making sacramental wine planted the first vines in the region in the small town of Hammondsport. By the end of the 19th century, there were over 25,000 acres of vineyards around Keuka Lake alone. At first, the fruit was primarily sold in NYC and other markets as table grapes, but eventually the area gained a reputation for its sparkling wines, in part thanks to Pleasant Valley Wine Company. Founded in 1860, Pleasant Valley was the first American winery to win awards in Europe for sparkling wine (in 1867 and, again, in 1873).

Winemaking in the Finger Lakes was booming, but Prohibition nearly ended all that. As the region regained its footing, a focus on quality sparkling wines remained, first by French winemaker Charles Fournier of Gold Seal Vineyards. At the San Francisco State Fair in 1950, Fournier’s Brut received a Gold Medal marking the first time a New York State champagne received such an honor. The following year, the fair limited entries to California wines only.

A SPARKLING REEMERGENCE

Today, you will find several Steuben wineries making a variety of sparkling wines (like Dr. Frank’s Brut which was named one of the “100 Best Wines of 2023” by Wine Enthusiast).

Whether it’s Château Franc’s award-winners, Château Renaissance’s 400-year-old recipe from the Loire Valley, the various “New York Champagnes” still being made at Pleasant Valley Wine Company, Brut made from estate-grown grapes at Azure Hill, a limited release Sparkling Rosé from Domaine LeSeurre, or the exquisite offerings at Ravines Wine Cellars, the most popular method being used around Keuka Lake is the traditional, labor-intensive Méthode Champenoise which features a second fermentation in the bottle.

Although the technique for making fizzy Pét-nat wines has been around since before the “traditional method,” it has become quite a trend in recent years. Given the diverse grape varieties grown in the region and the penchant of our winemakers for blending tradition with experimentation, Pét-nat feels like a natural fit. No wonder wineries like Keuka Lake Vineyards and Living Roots are tapping into this popular style of sparklers.

In addition to producing what Wine Enthusiast calls “world class traditional method sparkling” wines, Ravines is also crafting a light airy semi-sparkling called Ayre made from a French-American hybrid grape developed by Cornell University. While Weis Vineyards uses another Cornell hybrid and infused carbonation for its fun sparkler Perle. In tribute to Keuka Like, Heron Hill crafts a “Lady of the Lakes” bubbly series (including a Moscato version that tends to sell out quickly). Point of the Bluff, on the other hand, focuses mostly on a Charmant style, soft and easy-drinking bubbly from Riesling and Cabernet Franc, though they will be releasing Pét-nat and classic method sparkling wines in the near future.

The Influence of European Winemakers

In Europe, winemakers have spent centuries identifying the characteristics of world-class wine, learning what grapes grow best in what soils, under what conditions, and honing the skills needed to produce the finest vintages. While winemaking in the Finger Lakes is still in its infancy, at just over 160 years-old, in recent years the region has garnered acclaim as one of the “greatest Riesling regions” of the world and “America’s premier cool-climate wine region.”

Much of the success has been shaped by a handful of European Winemakers who have blended the best of oldworld traditions, training, and experience with new-world innovation, a willingness to experiment and to share ideas, and the flexibility to adjust to any given situation.

You could say the recent upward trajectory began when Charles Fournier, chief winemaker at renowned Veuve Clicquot Ponsardin in Reims, France, was brought to the Finger Lakes following Prohibition to oversee the sparkling wine production at the Urbana Wine Company (later known as Gold Seal). Fournier introduced several important French-American hybrid grape varieties to the region, pushed for the production of champagne, and is considered “one of the greatest wine makers we’ve had in this country.’’

When Ukrainian immigrant Dr. Konstantin Frank arrived, he claimed the delicate Vinifera grapes used to make fine European style wines like Riesling, Pinot, Cab Franc and Chardonnay could be grown in the northeastern United States. For centuries, the country’s brightest minds had failed to grow Vinifera here and nearly everyone in New York’s wine industry had come to accept that it just couldn’t be done, attributing the challenge to the region’s cold climate. Dr. Frank knew better and Fournier gave him the chance to prove everyone wrong.

In doing so, the two helped lay a foundation for the influence European winemakers would have on the region and beyond. Today, while Dr. Konstantin Frank Winery continues to set the standard by which all other Finger Lakes wineries are judged, a few founded by winemakers originally brought to the region to make wine for Dr. Frank’s—like Ravines Wine Cellars, Domaine LeSeurre Winery and Weis Vineyards—have helped to elevate the quality of wine being produced and the experiences visitors can enjoy.

Before moving to the Finger Lakes, Morten Hallgren was raised and trained as a winemaker in France. Hallgren briefly worked at Dr. Frank’s, but has spent the past two decades pioneering the bone-dry Riesling the region is now famous for at his Ravines Wine Cellars which has been named one of the “Top 100 Wineries in the World” (Wine & Spirits) multiple times.

French winemakers, Sébastien and Céline LeSeurre, come from generations of winemaking families and rely on that background as well as experience gained working numerous vintages around the world. The couple uses their taste buds more than technology to determine when to harvest and how to guide the grapes crafting exceptional terroir-driven, food-friendly wines.

After a decade making wine at Dr. Frank’s, Hans Peter Weis started Weis Vineyards showcasing his heritage from the famous Mosel wine region of Germany and quickly demonstrated that Weis is one of the best. Named New York State’s “Winery of the Year” in 2022 and one of Wine Business Monthly’s “Hot Brands” for 2023, Weis continues to set the region apart.

Azure Hill

WINERY

Azure Hill Winery’s first vintage was in 2010. Since then, this boutique winery has been making friends one bottle at a time. Built in 2021, the new tasting room has indoor and outdoor seating as well as a beautiful view of Keuka Lake. Enjoy a unique wine-tasting experience as you are served by the winery’s owners and winemakers. In addition to making the region’s flagship varietal, Riesling, Azure Hill focuses on using both vinifera and hybrid grapes grown in the area. The winery produces small batches of still and sparkling wines.

Deep Root

VINEYARD

Deep Root Vineyard is a micro-production farm winery offering relaxed, comfortable tastings in a rustic setting with an emphasis on sustainable farming. A twoperson team with an annual production of less than 1,000 cases, Deep Root offers an alternative view of production and focuses on making small batches of “limited edition” craft wines ranging from sweet dessert wines to dry reds. Deep Root’s most popular wine is an unoaked semi-sweet table red called Country Red.

Special Note: While the vineyard is over 100 years old as a growing site, Deep Root Vineyard was established in 2007.

Divided Sky VINEYARD

Divided Sky Vineyard is the realization of a dream to start a vineyard and craft world-class wines shared by owners Megan Granata and Alek Ajder. Overlooking majestic Keuka Lake, sits the winery’s tasting room. A sommelier with 15 years in the wine business and a degree in winemaking and viticulture, Alek’s passion is making small-batch dry wines.

Keuka Lake Vineyards is a small, boutique winery turning heads as much for its down-to-earth personality as for the skills of the people working there and the quality of its wines. KLV specializes in growing and making exceptional dry Rieslings and Vignoles and remarkable reds in smaller quantities. Its Cabernet Franc has been cited by the New York Times as outstanding and its Léon Millot made largely from 70-year-old vines, is sought after by those in the know.

Living Roots

Living Roots is a winery in both the Finger Lakes region of New York and the Adelaide Hills region of South Australia. Sixth generation winemaker and Adelaide native Sebastian and Rochester native Colleen Hardy make wines with regional and varietal expression, minimal inputs, and maximum quality.

Special Note: Some wines are made year-to-year while others are one-offs. Each vintage is an opportunity to explore new vineyards and varieties, and to highlight the terroir and natural strengths of these diverse regions.

Point of the Bluff VINEYARDS

Point of the Bluff, an “accidental winery,” was born out of a desire for a beautiful vineyard to decorate the hill of its namesake estate. Grapes from the first harvest could have been sold or made into a small batch of wine. You can guess which happened. Today, the winery has a restored 1800’s schoolhouse tasting room, an additional 16-acre vineyard, bocce courts, a concert venue, two restaurants, a vegetable farm, a new seven thousand square foot production facility, multiple accommodation locations and a spirit to grow.

Special Note: Point of the Bluff continues to delight with innovative offerings, like its creative collaboration on Le Moné, an apéritif The New York Times called out for having “enough bright, citric flavor to cancel winter.” Flavors include Meyer Lemon, Raspberry & Lavender.

Sustainability

Many of our winemakers are dedicated to “transparent” winemaking, breaking from new world philosophies and techniques (which can often be a bit heavy-handed) and circling back to that old world tradition of allowing the grape to express itself and the vineyard with little manipulation.

It makes sense that more and more of our wineries are making concerted efforts toward conserving energy and preserving local ecosystems and wildlife. Some have been eco-minded from the very beginning, earning a reputation for their environmentally-friendly practices as much as their award-winning vintages. Others have been practicing sustainability, in part, as a result of their focus on hybrid varieties which are naturally much more disease-resistant and require less chemicals.

From supplementing the winery’s electrical needs with solar panels to using recycled glass bottles and boxes along with soy-based inks, some have implemented new systems for the purpose of sustainability. Even looking beyond local impact by offering EV chargers for guests. One designed an underground wine cellar to reduce energy consumption while another reuses fryer oil from its restaurant to power tractors for a neighboring farm. Some employ regenerative agricultural techniques like no-till methods in the vineyard, as well as minimal spraying, while others engage in manual weed control and the use of organic sprays. Some practice a very “handson/machine-off approach to viticulture” that, by design, limits the overall impact on the soil. Some mix pomace— leftover stems, skins, and seeds from the winemaking process—with natural fertilizers to spread back into the vineyards, while others have become certified members of New York’s Sustainable Winegrowing program.

A Landscape MADE FOR

WINE

Fly high over New York State and you’ll see eleven long, slender, finger-shaped lakes after which the Finger Lakes region gets its name. Compliments of glaciers of another time. Of course, Keuka Lake stands out as much for it’s distinct Y-shape as for the impact the wineries around it have had on the region and beyond.

As you get closer to the ground, though, you’ll also notice the dynamic landscape that in many ways defines the region. The deep valleys. The lush, rolling, forested hills. The fertile farmland. The steep slopes surrounding the lakes, providing an exquisite patchwork of vineyards that are quite striking against the pristine blue water. You’ll find rugged, dramatic gorges with their myriad waterfalls throughout the region as well, the stunning work of streams that have spent millennia carving stone.

While breathtaking to look at, the landscape of the region is also a significant factor for why this is such a spectacular place for making high quality wines.

TERROIR

Inaddition to the way the lakes (which are some of the deepest in the country) extend the growing season by moderating vineyard temperatures, you’ll hear winemakers talk about Finger Lakes “terroir.” A French word meaning earth and soil, for a vintner it is much more than that. For terroir has to do with the interplay between the geology of a place and the topography, the climate, and the specific types of grapes grown in any one location.

Each of the main Finger Lakes (Cayuga, Seneca, Keuka) has its own microclimate. And each vineyard around those lakes has its own mix of rocky soil. Some with more shale, some more limestone. Some more acidic, some less. So the very same variety of grape (take Riesling for example or Cab Franc), grown in different vineyards around Keuka Lake and Seneca Lake will end up with rather different flavor profiles.

For a winemaker, no year is the same as the last. So even the most seasoned are constantly observing and adjusting. It is the job of the winemaker, after all, to understand the diverse characteristics terroir imparts on different grape varieties, to recognize the varying terroir in the particular vineyards they use, and to often come up with creative methods (in addition to traditional techniques) for unlocking the full potential of those grapes as exceptional wines.

Lucky for us, the winemakers around Keuka Lake are extremely good at doing just that!

Finger Lakes VARIETIES

The Finger Lakes has been a wine region for over 160 years. In the early days, wines were made with native grapes that tended to be much sweeter. Eventually, French-American hybrid varieties were planted as wine drinkers craved some drier-style wines. But it wasn’t until the 1960s when Dr. Konstantin Frank revolutionized winemaking in the region by introducing Vinifera grapes. This allowed winemakers to craft a wide range of wine styles, from sweet to bone dry. While there are dozens of different grapes planted throughout the region, below are the most popular varieties.

ICE WINE

True ice wine requires a few essential things: several days of extremely cold weather, grapes that have survived long enough to freeze on the vine, and a labor-intensive process of harvesting and pressing. Due to all these variables, true ice wines are not made by many wineries and are not made every year. A dessert wine that pairs well with a bold, sharp cheese to balance out the sweetness, or simply as dessert itself.

LÉON MILLOT

A hybrid grape created in 1911 in Alsace, Léon Millot is time consuming to harvest by hand and not a wine most people encounter, but when done right, this red wine is well worth the work. Flavor profiles range from lighter styles like Pinot Noir to more full-bodied styles like Syrah.

You may not have heard of this one, but at one time it was the third-most planted grape varietal in the world. Wine historians believe this grape was growing in the Georgia region of the former USSR over 5,000 years ago. SAPERAVI

Another ancient Georgian grape, Saperavi means “dye” or “paint” in the Georgian language, which is fitting since it is one of the only grape varieties in the world with red pulp and red skin. As a result, this delicious, complex, heavybodied wine has a deep dark color.

VIGNOLES

While the actual origins of this hybrid grape variety may be up for debate, this complex wine has some characteristics similar to Riesling and can, as with other varietals, range in styles from dry to semi-sweet to dessert wines.
